사료 내 섬유소의 첨가가 자돈의 성장 성적에 미치는 영향 (Effects of Feeding with Fiber Diets on Growth Performance in Weanling Piglets)

  • 본 실험은 자돈 사료 내 섬유소 공급원 및 첨가 수준의 차이가 이유자돈의 성장 능력에 미치는 영향을 평가하고자 수행되었다. 섬유소 공급원으로 sugar beet pulp와 oat hull을 각 2%, 8% 첨가 수준을 달리하여 자돈에 급이하였으며, 처리구는 사료 내 항생제를 0.1% 첨가한 PC 처리구의 성장 성적에 비해 낮았으나, 항생제를 첨가하지 않은 NC 처리구에 비해 높게 나타났다. 또한 sugar beet pulp 8%를 급이 한 처리구는 PC 처리구와 유사한 성장 성적을 보였으며, 이는 섬유소 공급이 이유 후 자돈의 장내 환경에 긍정적 영향을 미친 것으로 사료된다.

Wild Mushrooms: A Potential Source of Nutritional and Antioxidant Attributes with Acceptable Toxicity

  • This paper describes in detail proximate composition, nutritional profile, phytochemical constituents, antioxidant activities, antimicrobial potential, and antihemolytic activity (towards human erythrocytes) of various fractions of wild Ganoderma lucidum. Proximate analysis established that wild G. lucidum comprises about $87.02{\pm}5.45%$ of moisture, and the remaining part is a rich source of proteins ($8.59{\pm}0.37%$), crude fiber ($54.21{\pm}1.2%$), and carbohydrate (35.16%) with smaller fat content (3.33 %). Similarly, phytochemical screening revealed the presence of flavonoids ($217.51{\pm}0.30mg/g$), ascorbic acid ($116{\pm}7.32mg/g$), phenolics ($360.72{\pm}34.07mg/g$), ${\beta}$-carotenes ($0.42{\pm}0.04{\mu}g/g$), and lycopene ($0.05{\pm}0.00{\mu}g/g$). Extracts of wild G. lucidum in various solvents provided first line protection against Escherichia coli and Pasteurella multocida in the order of ethyl acetate> ethanol> methanol> n-hexane> water. Furthermore, aqueous and methanolic extracts of wild G. lucidum were found to be safe towards human erythrocytes. Overall, wild mushroom (G. lucidum) was found to be a good source of dietary supplements, antimicrobial and antioxidant agents in the pursuance of its commercial utilization in food and pharmaceutical industries.

Effect of Level of Crude Protein and Use of Cottonseed Meal in Diets Containing Cassava Chips and Rice Straw for Lactating Dairy Cows

  • The effects of different levels of crude protein (CP) and cottonseed meal replacing for soybean meal in cassava chips and rice straw-based diets for mid-lactating cows (100-150 day in milk [DIM]), were studied using 32 multiparous Holstein Fresian crossbred dairy cows. Diets containing 10.5, 12.5, 13.7, 14.4% CP of the rations and 0, 12.1, 14.9, 17.8% cottonseed meal were fed to cows for 60 days. Thirty two cows were randomly divided into four dietary treatments using a Randomized complete block design. Four dietary treatments were offered in the form of total mixed ration (TMR) with concentrate to roughage (chopped rice straw) at 60:40 and offered ad libitum. Dry matter (DM) and neutral detergent fiber (NDF) intakes tended to linearly increase with increasing dietary CP levels. Intakes and digestibility of crude protein increased linearly with increasing dietary CP level (p<0.01). Crude protein digestibility of the 10.5% CP diet was lower (p<0.05) than that in diets with higher levels of CP, while there were no significant differences among the other three levels of CP (12.5, 13.7 and 14.4%). Daily milk yield tended to increase with increased CP from 10.5 to 14.4%. Income over feed in terms of US$/kg of milk increased with increased CP from 10.5 to 13.7% and decreased when the CP level was higher than 13.7% (quadratic effect p<0.09). Milk composition was not significantly affected by increasing level of CP, however there were relatively high contents of protein and fat among treatments. The proportion of milk-urea N (MUN), ammonia-N ($NH_3$-N) and bloodurea N (BUN) were closely correlated and increased linearly with increasing CP levels (p<0.01). Balanced diet was found in diet containing 12.5 and 13.7% CP of the rations when BUN and MUN were used as indicators of the protein to energy ratio in the diet. Conclusions can be made that increasing dietary CP levels from 10.5 to 13.7% using cottonseed meal as the main source to completely replace soybean meal was beneficial to cows consuming rice straw and cassava chips based-diets. Increasing the CP level above 13.7% of total ration did not additionally improve milk yield and composition or net income.

섬유소 공급원이 면양의 저작행동에 미치는 영향 (Effect of Dietary Fiber Sources on Chewing Activity in Sheep)

  • 본 연구는 섬유소공급원 7종, alfalfa hay cube (AHC), corn cob(CC), corn silage(CS), cotton seed hull(CSH), peanut hull(PHL), rice straw (RS), sugar cane bagasse(SCB)이 면양에서의 저작행동에 미치는 영향을 알아보기 위하여 실시하였다. 평균체중 37.1 kg인 Corridale종 수컷 면양 5두를 공시하여 실험기간동안 각각의 섬유소공급원 45%와 corn-based 사료 55%의 비율로 하여 1일 2회(09:00, 21:00) 총 800g(dry matter basis)을 급여하였다. 저작횟수는 CC구에서 유의적으로 높은 값을 나타내었으며 CSH구에서 가장 낮은 값을 나타내었고(p<0.001), 그 외의 구에서는 중간정도였다. 반추소비시간은 RS구와 CC구가 각각 352분과 367분으로 높게 나타났다. kg NDF 섭취당 저작횟수는 CC구에서 가장 높았으나 kg NDF 섭취당 반추소비시간은 CSH구(p<0.001)를 제외하고 다른 구에서는 차이가 나타나지 않았다. 입자도의 분포는 RS구에서 더 길었으며 PHL구에서는 더 짧게 나타났다.이상의 결과로부터 섬유소 공급원에 따라 저작행동이 크게 영향을 받는 것을 확인할 수 있었으며, 섬유소 공급원에 따른 저작행동을 반추가축의 사료설계에 지표로 활용할 수 있을 것으로 판단되었다.

괴각(槐角)의 식품영양학적 접근 및 몇 가지 생리활성물질 함량 분석 (Nutritional Characteristics and Some Bioactive Components Contents of Sophorae fructus)

  • 본 연구는 괴각을 대상으로 약이성 음식으로의 활용을 위한 가능성을 타진하고자 계획 수행되었다. 따라서 괴각의 영양성분 분석을 통한 식품영양학적 접근, 생리활성 기능을 기대할 수 있는 관련 물질 함량을 분석하였다. 식품영양학적 접근에서의 괴각의 일반성분은 건량기준으로 당질 75.9%, 조단백질 16.4%, 조지방 2.41% 및 조회분 5.2%이었고 괴각 100 g의 함유 열량은 337.3 kcal로 분석되었으며, 총 식이섬유소 함량은 건량기준으로 총 당질 중 11.45%이었고 수용성 및 불용성 식이섬유소 함량은 각각 1.09%, 10.36%로 나타났다. 또한, 총 18종의 아미노산으로 구성되었으며 필수아미노산과 비필수아미노산 함량은 각각 2,310.91 mg, 5,218.52 mg이었고, 무기질 중 칼륨의 함유량이 가장 높았고 그 다음이 칼슘, 인, 마그네슘 순으로 나타나 알칼리성 재료임을 알 수 있었으며, 지방산 함량의 경우 총 포화지방산 24.94%, 단일불포화지방산 32.40% 및 다가불포화지방산 32.86%로 구성되어 있어 다른 식물류에 비해 불포화지방산의 함량이 높은 것으로 나타났다. 괴각의 생리활성 물질의 분석에서는 생리활성 작용이 기대되는 항산화비타민의 경우 비타민 C의 함량이 가장 높아 혈관의 탄력성 증진에 관여하리라 생각된다. 또한 혈관의 탄력 및 모세혈관 투과성에 관여하는 루틴의 함량이 1.78%를 차지하고 있었으며, 괴각의 물추출물 1 mL당 수용성 항산화물질의 함량은 $4.95\;{\mu}g$ 함유되어 있었으며 이는 mL당 비타민 C 1,560.96 mmol에 해당하는 항산화능력을 가지는 것으로 나타났다.

Effects of alkali-treated dietary keratin on nutrient digestibility and egg production in Korean native chickens and commercial laying hens

  • Two experiments were conducted to investigate the effect of feeding a diet supplemented with swine hair protein (SHP) on the nutrient digestibility of Korean native chickens and their egg production as well as on egg quality. In experiment 1, twenty roosters of the Hanhyup-3 strain were assigned to an individual cage to give 10 replicates per treatment (i.e., 0 and 10% of SHP), and the nutrient digestibility in response to the SHP supplementation was measured. In experiment 2, fifty-four layers of the Hy-Line strain were assigned to an individual cage to give 27 replicates per treatment (i.e., 0 and 10% of SHP), and egg production and egg quality were measured. In experiment 1, no significant difference (p > 0.05) was found in the digestibility of crude protein, crude fat, nitrogen-free extract (NFE), and crude fiber in response to the diet supplemented with SHP. In experiment 2, although no significant difference (p > 0.05) was found with the dietary treatments, the 10% SHP supplemented diet decreased (p < 0.05) the feed intake of laying hens. However, the SHP supplemented diet did not affect (p > 0.05) the laying rate, egg weight and feed conversion ratio of those fed the diet. Eggshell thickness and yolk color decreased (p < 0.05); however, eggshell strength, eggshell color, albumen height and Haugh units increased (p < 0.05) by feeding layers a diet supplemented with SHP. In conclusion, the results suggest that 10% SHP supplemented in a poultry diet could be a useful protein source.

Preparation of Bioactive Kefir with Added Flaxseed (Linum usitatissimum L.) Extract

  • Flaxseed (Linum usitatissimum L.) is an important food, oil, and fiber crop of the family Linaceae. Although flaxseed has been consumed as a food ingredient for several centuries, its nutritional benefits have not yet been completely established. Flaxseed is a good source of lignans, nonstarch polysaccharides, and high-quality proteins. Hence, in this study, we aimed to prepare a bioactive kefir containing flaxseed and to examine the physicochemical characteristics of kefir containing different concentrations of flaxseed. We investigated the pH, and sensory evaluation of bioactive Kefir containing different concentrations of flaxseed. We investigated the pH, total anthocyanins (TAs), and sensory evaluation of bioactive Kefir containing different concentrations of flaxseed. The pH of this bioactive kefir decreased, whereas the TA content increased with increasing incubation time; however, these parameters were not affected by the amount of added flaxseed. As the addition rate of flaxseed increased, the scores for overall acceptability, texture, color, flavor, and taste in sensory evaluations were generally the same as or lower than the control. There were no significant differences in overall acceptability, texture, color, flavor, and taste between the control and treated groups. Therefore, further studies are needed to develop methods for production of health-improving kefir as a dietary supplement based on the functional properties of flaxseed.

Nutritional Values of Red Pepper Seed Oil Meal and Effects of Its Supplementation on Performances and Physiological Responses of Broiler Chicks

  • Two experiments were conducted to evaluate the feeding values of red pepper seed oil meal (RPSOM) and to investigate its dietary supplementation on broiler performances. In Exp. 1, nutritional values of RPSOM were evaluated by analyzing chemical composition and determining true metabolizable energy (TME), nitrogen corrected TME (TMEn) and true available amino acid (TAAA). RPSOM contained 22.50% of CP, 4.75% of ether extract, 27.70% of crude fiber, 4.73% of crude ash and 49.97 ppm of xanthophylls. The contents of capsaicin and dihydrocapsaicin were 34 mg and 31 mg/100 g DM, respectively. The values of TME and TMEn determined by force-feeding 16 roosters were 1.73 kcal/g and 1.63 kcal/g DM, respectively. The average TAAA value of 17 amino acids was 85.22%. In Exp. 2, a total of 225 Ross male broiler chicks, 3 weeks old, were randomly divided into 9 groups of 25 birds each and assigned to three experimental diets containing 0 (control), 5 or 10% RPSOM fed ad libitum for 3 weeks. No significant differences were observed in growth performances and carcass characteristics. The level of serum cholesterol in the 10% RPSOM group was significantly lower than that of the control group (113.92 vs. 137.50 mg/dl). The dietary RPSOM at 5 and 10% levels increased the content of C18:2 ${\omega}{\sigma}$ in leg muscle compared with the control group. The results suggested that RPSOM can be included into broiler feed up to 10% without any negative effects on broiler performances and physiological responses and used as a non-conventional plant protein source, if its nutritional values are well evaluated.

영양소의 변천과 식물육종의 추이 (Changes in the Concept of Nutrients and Transition of Plant Breeding)

  • During the first half of twentieth century, even though the importance of non-calorie essential micronutrients of 13 vitamins and 17 minerals has been known to alleviate nutritional disorder; the primary objective of agriculture and plant breeding programs has been to increase the productivity and seed yields, and macronutrients of proteins, fats, and carbohydrates made up the bulk of foodstuff which were used primarily as an energy source. In the last decade it has been found that non-essential micronutrients encompass a vast group of phytochemicals including antioxidants that are not strictly required in the diet but when present at sufficient levels work as health-promoting chemicals. Nowadays agricultural crops are grown for health rather than for food or fiber, and modifying the nutritional compositions of plant foods has become an urgent health issue. To ensure an adequate intake of essential vitamins and minerals, and to increase the consumption of health-promoting phytochemicals, the researches on plant secondary metabolism have been made. The attempt to improve nutritional quality of crops has been blocked by a lack of basic knowledge of plant metabolism. The advent of genomics era enabled new approaches to make crossing regardless of species, family, or phylum barriers, and the accumulation in our basic knowledge on plant secondary metabolism during the coming decade would be tremendous. As the major staple crops contain insufficient amount of many micronutrients, fortification strategy will be a necessary practice. Elevated intake of specific vitamins, C, E, and $\beta$-carotene, mineral selenium, antioxidants, and phytochemicals significantly reduces the risk of chronic disease such as cancer, cardiovascular disorder, diabetis, and other degenerative disease associated with aging. As the attempt to improve the nutritional quality of crops requires the basic knowledges on plant metabolism, plant biochemistry, human physiology, and food chemistry, strong interdisplinary collaboration among plant biotechnologists, human nutritionists, and food scientists will be needed. Inhibition of cancer, cardiovascular disease, and other degenerative disorder may be the biggest goal facing nutritional plant breeders. But the assumption that simply increasing dietary level of any compound will necessarily improve human health is a dangerous idea because many plant secondary products and dietary contaminants have paradoxical (hermetic) effects. Before biotechnical manipulation is undertaken to elevate or reduce any individual constituent of crops, the contribution of the micronutrient to human health must first be investigated.

오리를 이용한 한방식품 추출액이 흰쥐의 지질함량에 미치는 영향 (Effect of Duck Extract on Lipids in Rats)

  • The aim of the present study was to investigate the effect of duck extract on lipids. Rats in the experimental group were orally administered with duck extract for four weeks. The half of the supplementation was composed of duck meat and the other of the supplementation was composed of oriental herbs. Weight gain, diet intake, and food efficiency ratio were compared between control and experimental groups. Organ weight, lengths of small/large intestines, and the following plasma biochemical parameters were also measured: hemoglobin, hemoglobin, GOT, GPT, blood glucose concentration, lipids of plasma, liver, feces. Spleen index (weight/100 g body weight) of the rats in the experimental group was significantly higher than those in the control group due to increase in fat intake from the supplementation of duck meat. The large intestines of the rats in the experimental group was significantly larger due to the supplementation with dietary fiber derived from herbs in the extract. There were significant higher levels of plasma hematocrit, GOT, total cholesterol, and HDL-cholesterol in the rats of the experimental group. From the results, although duck meat is a source of animal food, the fat profile of duck extract, such as the ratio of polyunsaturated fatty acids to saturated fatty acids appears to be beneficial to human health. These findings suggest a possible anti-hyperlipidemic effect of duck extract. (Korean J Nutrition 36(1): 3∼8, 2003)
