Effects of Chestnut (Castanea sativa Mill.) Peel Powder on Quality Characteristics of Chicken Emulsion Sausages

  • Sausages were prepared with fresh chicken breast meat and pork back fat, and formulated with different amounts of added chestnut (Castanea sativa Mill.) peel and ice water to study the effect on the products. The chicken emulsion sausages formulated with 1%, 2%, and 3% added chestnut peel powder were higher in moisture and ash content, and lower in energy values. The cooking loss, emulsion stability, and viscosity of the sausages were improved by the addition of chestnut peel. The fat content, pH, lightness, hardness, and springiness of the chicken emulsion sausage decreased as the amount of chestnut peel levels increased. The chicken emulsion sausages containing 1% and 3% chestnut peel had a higher overall acceptability than the control.

Effects of Dietary Addition of Surfactant Tween 80 on Ruminal Fermentation and Nutrient Digestibility of Hanwoo Steers

  • A non-ionic surfactant, Tween 80 has been known to exert a number of positive effects on degradative enzymes in in vitro aerobic and anaerobic microbial cultures. An experiment was conducted to examine effects of supplementation of Tween 80 on ruminal fermentation and nutrient digestibility of Hanwoo steers. The experiment was designed as a $3{\times}3$ Latin square with duplication and six Hanwoo steers with rumen cannulae, average weight 497 (SE 61.1) kg. For the experiment the animals were given a basal diet consisting of rice straw and compound feed mixed at 4:6 ratio. The three experimental treatments were (1) the basal diet, supplemented with (2) 5 g/d Tween 80 and (3) 10 g/d Tween 80. Ruminal pH was significantly (p<0.05) affected by Tween 80 supplementation at 6 h after feeding. Increasing supplementation levels of Tween 80 linearly increased the total VFA concentration. CMCase activity by the 10g/d supplementation of Tween 80 were significantly increased (p<0.05) by 24.4% compared with that of control. Digestibility of crude fiber was significantly increased (p<0.05) in Hanwoo steers fed the diet supplemented with 10 g/d Tween 80 compared with those of control, whilst digestibility of ether extract (EE) was linearly increased by increasing Tween 80 supplementation level (p<0.05). In other nutrient components, their digestibilities of Hanwoo fed diets supplemented with Tween 80 tended to increase. It is concluded that Tween 80 has a potential for industrial application as a feed additive to improve ruminant production.

Quality Characteristics of Sponge Cakes Containing Various Levels of Millet Flour (조 분말의 첨가가 sponge cake의 품질특성에 미치는 영향)

  • Effects of normal (non-waxy) and waxy millet flours on properties of sponge cake were examined. Total dietary fiber contents of normal and waxy millets were 5.04 and 5.12%, respectively, while that of soft wheat flour was 2.23%. Alkaline water retention capacity value generally increased with addition of normal and waxy millet flours, whereas peak, minimum, and final viscosities decreased. Mixing time and mixing height decreased with addition of millet flour. Lightness of cake crust increased with addition of normal millet flour, whereas it decreased with addition of waxy millet flour, tightness of cake crumb decreased as the amount of normal and waxy millet flours increased. Increasing proportions of normal and waxy millet flours resulted in significantly decreased loaf volume. Replacement of 10% wheat flour by both normal and waxy millet flours did not significantly affect characteristics of sponge cake, but addition of more than 20% millet flour resulted in significant differences in quality characteristics.

Effects of Skipping Breakfast on Nutrition Status, Fatigue Level, and Attention Level among Middle School Students in Gyunggi Province, Korea (아침 결식이 경기지역 남녀 중학생의 영양섭취상태, 피로자각도 및 주의집중력에 미치는 영향)

  • Eating breakfast provides crucial nutrition for brain function and helps promote overall health. It is especially critical in growing adolescents, as it is known to form good eating habits and better study habits. This study investigated the effects of skipping breakfast on nutritional state, fatigue level, and attention level. A cross-sectional study was conducted in 2010 on total of 828 adolescents composed of 414 boys and 414 girls. Students who ate breakfast never to twice per week were placed in the breakfast-skipper group while students who ate breakfast more than five times per week were included in the breakfast-eater group. Students performed a self-reported questionnaire on food behaviors, amount of food consumption, fatigue level, attention deficient hyperactivity disease (ADHD) level by Conners-Wells' Adolescent Self-Report Scales, depression scale, and self-esteem level. Statistical analysis was conducted using the SAS program (version 9.1). A total of 135 boys (32.6%) and 138 girls (33.3%) were included in the breakfast-skipper group, whereas 241 boys (58.2%) and 223 girls (53.9%) were included in the breakfast-eater group. The breakfast-skipper group showed irregular food behaviors and lacked nutrients. Specifically, energy (p< .001), protein (p< .001), dietary fiber (p< .001), calcium (p< .01), vitamin A (p< .01), thiamin (p< .05), niacin (p< .001) levels in boy breakfast-skippers were statistically lower compared to boy breakfast-eaters. Intakes of all nutrients except fat in girl breakfast-skippers were statistically lower than in girl breakfast-eaters. Girl breakfast-skippers (41.3%) showed significantly higher fatigue risks compared to girl breakfast-eaters (21.5%). Low attention level was also observed only in girls in the breakfast-skipping group. Moreover, students in the breakfast-skipper group showed higher scores for depression and low self-esteem (p< .001). In conclusion, skipping breakfast has effects on young adolescents' nutrition, manifesting as high fatigue level and low attention level, especially in girls.

Preparation and Quality Properties of Extruded Snack using Onion Pomace and Onion (양파착즙박과 양파를 이용한 압출스낵의 제조 및 품질특성)

  • To use onion pomace produced from concentrated onion juice processing, dried onion pomace or dried onions were mixed with com grits at levels of 10, 20, and 30% and were extruded in a twin-screw extruder. Quality properties of extruded onion snack were investigated. Low-lignin dietary fiber of dried onion pomace was approximately 2 times higher than that of dried onion. Browning increased with increasing onion content. Reducing sugar and free sugar in onion snack showed high content by increasing onion concentration and the majority of free sugar consisted of glucose and fructose. Flavonoid in control snack was not detected and the flavonoid content containing quercetin and quercetin glycosides was about 50% less in onion pomace snack than in onion snack. Sensory evaluation of onion snack containing 10% concentration of dried onion pomace or dried onion indicated the products were acceptable in overall eating-quality.

Quality and Antioxidant Characteristics of Sponge Cake with Asparagus (Asparagus officinals L.) Powder (아스파라거스 분말을 첨가한 스펀지 케이크의 품질 특성 및 항산화 활성)

  • Asparagus, which was known to be a good source of dietary fiber and vitamins, has been reported to possess various medical actions such as antioxidant and blood pressure regulating effects. In order to examine the quality and antioxidant characteristics of asparagus, asparagus sponge cakes were prepared with different ratios of freeze dried asparagus powder (0%, 2%, 4%, 6%, 8%, w/w) in this study. With the increase of asparagus powder content in the sponge cakes, the specific gravity and baking loss increased while the dough yield decreased significantly. The moisture contents of the sponge cakes were not significantly different between the control and the cakes prepared with asparagus powder. The pH of the sponge cakes decreased significantly with increased amounts of asparagus powder. Furthermore, the pH of the sponge cake containing 8% asparagus powder was the lowest at 7.49. With the increase of asparagus powder content in the sponge cakes, lightness (L) and redness (a) decreased, whereas yellowness (b) increased. In texture analysis, the hardness and chewiness of the sponge cakes increased as the asparagus powder content increased, while the cohesiveness of the sponge cakes with asparagus powder decreased. Both total polyphenol content and DPPH (1,1-diphenyl-2-picryl hydrazyl) radical scavenging activity increased significantly with increased levels of asparagus powder content in the sponge cakes. In a sensory evaluation using a scale of 1-7, the sponge cake containing 8% asparagus powder had the lowest sensory preference scores. Therefore, the results of this study suggest that sponge cake prepared with 6% asparagus powder is the most appropriate product for quality characteristics.

  • This study was conducted to investigate the anthropometric data, serum profiles, food intakes frequency, and nutrient intakes of women aged 30-49 years. The subjects were divided into two groups: drinking group and non-drinking group. For the study, we obtained data for analysis from the combined 2008-2015 Korean National Health and Nutrition Examination Survey (KNHANES). Height and weight were 159.2 cm and 58.1 kg in the drinking group as well as 158.1 cm and 57.7 kg in the non-drinking group, respectively. Obesity percentage in the two groups were 22.5% and 24.8%, respectively. HDL-cholesterol (P<0.001) and Vitamin D (P=0.0248) levels in the drinking group were significantly higher than those of the non-drinking group. In the drinking group, rates of hypertension, myocardial infarction, and diabetes were significantly lower than those of the non-drinking group. Food and nutrient intakes, including energy, water, protein, fat, retinol, thiamin, riboflavin, and niacin, in the drinking group were significantly higher than those of the non-drinking group. In the two groups, energy, water, fiber, calcium, and potassium intakes were low while Na intakes were extremely high considering KDRIs (Dietary Reference Intakes for Koreans). The mean adequacy ratio (MAR) in the two groups was not significant.

  • Rice(Oryza stiva L.) is a major cereal food providing nourishment to over half of the world's populations and was considered only as a source of energy. However, The recent many researches have been made to suggest that rice may relate to prevention chronic disease and health-promoting properties such as postprandial glucose response, hypocholesterolemic effect and blood pressure-lowering effect. There has been numerous observation supporting that rice has hypocholesterolemic effect. Rice, rice bran, rice bran oil and unsaponifiable matter of rice bran oil reduced plasma cholesterol in rat, hamster as well as human. Components of rice showing hypocholesterolemic effect include dietary fiber(hemicellulose, phytic acid). protein, ${\gamma}$-oryzanol, $\beta$-sitosterol, and tocotrienols. Crapo et al has been studied that the effect of various of starchy foods on the postprandial blood glucose and insulin responses in healthy and diabetic humans. The results showed that rice had lower blood glucose and insulin responses compared to potato, bread and dextrose. The different physical forms in the same starch also produce the different postprandial glucose and insulin responses. In recent years, several studies have shown that some components of rice have potent antioxidant activity against Fe$^{2+}$ -ascorbate induced lipid peroxidation in rat liver microsomal membranes. Cell culture and animal studies have shown that some components of rice have inhibitory effect on the growth and proliferation of several types of human cancer cell. It was also reported that the methanol extract of brown rice has antimutagenic activity against various mutagens. In addition, the pepsine hydrolysate from rice protein is reported to inhibit angiotensin converting enzyme activity. GABA (${\gamma}$ - aminobutyric acid) and GABA enriched rice germ is also effective for lowering blood pressure and triglyceride levels.s.

Anti-inflammatory and antioxidant activities of Sargassum horneri extract in RAW264.7 macrophages

  • [Purpose] In this study, we investigated whether a 70% ethanolic (EtOH) extract of Sargassum horneri had antioxidant and anti-inflammatory effects in lipopolysaccharide (LPS)-stimulated macrophage-like RAW 264.7 cells. [Methods] The proximate composition, fatty acids, amino acids, and dietary fiber of S. horneri, various biologically active compounds, and antioxidant activity were analyzed. [Results] The DPPH and ABTS free radical scavenging activities, as well as the reduction power, of the S. horneri extract used here were significantly increased in a concentration-dependent manner. This indicates that S. horneri contains bioactive compounds, such as phenols and flavonoids, that have excellent antioxidant activity. The cellular viability and metabolic activity results confirmed that the extract had no discernible toxicity at concentrations up to 100 ㎍/mL. The levels of nitrites and cytokines (PGE2, TNF-α and IL-6), which mediate pro-inflammatory effect, were significantly inhibited by treatment with either 50 or 100 ㎍/mL S. horneri extract, whereas that of IL-1β was significantly inhibited by treatment with 100 ㎍/mL of the extract. Similarly, the expression of iNOS and COX-2 proteins also decreased according to 50 or 100 ㎍/mL extract concentrations. NF-κB binding to DNA was also significantly inhibited by treatment with 100 ㎍/mL of extract. [Conclusion] These results suggest that 70% EtOH extracts of S. horneri can relieve inflammation caused by disease or high intensity exercise.

Effects of Dietary Mugwort Powder on the VBN, TBARS, and Fatty Acid Composition of Chicken Meat during Refrigerated Storage (쑥 분말의 급여가 계육의 저장기간 중 VBN, TBARS 및 지방산 조성에 미치는 영향)

  • The goal of this study was to investigate the effects of dietary mugwort on the proximate composition, volatile basic nitrogen (VBN), thiobarbituric acid reactive substance (TBARS) and fatty acid in chicken meats. One hundred sixty broiler chicks (1 d old) were assigned to one or four dietary groups: Control; commercial feed supplemented with 1% mugwort (T1); commercial feed with 3% mugwort (T2) and commercial feed with 5% mugwort (T3). After 42 d, broilers from each group were slaughtered and meat samples were vacuum packaged and stored at $4{\pm}1^{\circ}C$ over a period of 0, 1,2,3, and 4 wk. Chicken breast was not influenced by all treatments in moisture, crude protein and crude fiber, while crude fat was lowered (p<0.05) in chickens fed with the T2 and T3 diets compared to the control and T1 diets. All treatments with mugwort diets tended to have decreased VBN values for chicken breast and thigh compared to control. As storage time increased, VBN was increased for all chickens (p<0.05). No significant differences in TBARS were observed among all treatments at 0 wk. TBARS values were reduced with the T2 and T3 diets and initially increased from 0 through 3 wk, then abruptly decreased at 4 wk. Dietary mugwort supplementation resulted in increased stearic acid (excepted T2) and oleic acid and decreased linoleic acid. Stearic acid in thigh meat was decreased in the T1, T2 and T3, however linoleic acid levels tended to increase with mugwort powder supplementation. It is concluded that dietary mugwort has a positive effect on increasing unsaturated fatty acid contents and decreasing saturated fatty acids.
