일부 보건소 내원자의 대사증후군 발현과 식품 및 영양소 섭취 실태 (Prevalence of Metabolic Syndrome and Assessment of Food·Nutrient Intakes among Adult Visitors of a Public Health Center in Korea)

  • 본 연구는 서울과 전북지역 보건소 건강검진센터에 내원한 30대 이상 512명, 남녀 각각 271명, 241명을 대상으로 2001년 NCEP-A군TPIII Guideline과 WHO 아시아 태평양 비만기준을 적용하여 3가지 이상 증후를 가진 사람을 대사증후군으로 판정하였다. 24시간 회상법과 Can-Pro 3.0을 이용하여 영양소섭취량을 구하여 2010 한국인의 영양 섭취기준을 적용하여 에너지섭취량은 에너지필요추정량, 영양소 섭취량은 권장섭취량과 비교하였으며 권장섭취량이 정해지지 않은 영양소는 충분섭취량과 각각 비교하였다. 식품군별 섭취량과 섭취식품군 다양성(dietary diversity score, DDS), 1일 섭취식품가짓수(dietary variety score: DVS), 식품군별 섭취유형(GMVDF)을 조사하였다. 대사증후군으로 판명된 사람은 158명(30.9%)으로 남자 89명(32.8%), 여자 69명(28.6%)으로 나타났으며, 대사증후군 요인 중에서 발현비율이 가장 높은 지표는 허리둘레로 40.5%였으며, 허리둘레>고혈압>고중성지질혈증>저HDL-콜레스테롤혈증>고혈당 순으로 나타나는 것을 알 수 있었다. 남자 대사성 증후군은 곡류, 당류, 채소류, 육류, 유지류, 총 식품섭취량이 많았고, 여자 대사증후군군은 감자 및 전분류, 두류, 채소류, 음료류, 조미료류, 총 식품섭취량이 비대사증후군에 비해 유의적으로 많았다. 총 식품섭취량에 대한 식물성식품량 비율은 74.4%~78.2%였다. DDS의 평균값은 3.82~4.04로 비대사증후군과 대사증후군 간에 유의적 차이가 없었다. DVS는 남자비대사증후군 16.3${\pm}$3.5, 남자대사증후군 19.4${\pm}$3.7, 여자 비대사증후군 15.2${\pm}$3.3, 여자대사증후군 17.0${\pm}$3.8로 대사증후군군이 유의적으로 많았다. GMVDF 유형에서 남자는 비대사증후군에서는 11101 유형이 가장 많았으며 나머지군은 모두 11111 유형이 가장 많아 30.7%로 비율이 가장 높았으며 그 다음은 11101 유형, 01111 유형 순이었다. 대사증후군의 영양소섭취가 비대사증후군에 비해 유의적으로 높게 나타난 것은 남자는 열량, 지방, 콜레스테롤이었고 여자는 열량, 지방, 엽산이었으며, 남자 비대사증후군의 식이섬유소 섭취량이 19.0g으로 대사증후군 17.6 g에 비하여 유의적으로 높았다. 2010 한국인 영양섭취기준에서 제시한 권장섭취량 이상 섭취한 영양소는 단백질, 인, 철분, 나트륨, 비타민 $B_1$, 비타민 $B_2$, 나이아신, 비타민 E, 아연이었고, 권장섭취량보다 부족하게 섭취한 영양소는 칼슘, 식이섬유소, 칼륨, 비타민 $B_2$, 비타민 C였다. 비대사증후군에 비하여 대사증후군의 식품섭취량, DDS, DVS가 높아 식사의 질이 높은 것처럼보이나 동물성식품 섭취량, 지방, 콜레스테롤은 많고 식이섬유소는 부족한 식사를 하여 대사증후군을 일으키는데 영향을 주었을 것으로 생각된다. 본 조사는 서울과 전북지역의 2개 보건소 건강검진센터에 방문한 사람을 대상으로 한 제한은 있으나 대사증후군자의 발현 유형과 식품섭취 및 영양소섭취량을 알아봄으로써 대사증후군의 예방과 감소를 위한 체계적이고 지속적인 영양교육을 위한 기본 자료가 될 수 있을 것으로 여겨진다.

Effects of Inclusion Levels of Wheat Bran and Body Weight on Ileal and Fecal Digestibility in Growing Pigs

  • The objective of this study was to determine the effects of graded inclusions of wheat bran (0%, 9.65%, 48.25% wheat bran) and two growth stages (from 32.5 to 47.2 kg and 59.4 to 78.7 kg, respectively) on the apparent ileal digestibility (AID), apparent total tract digestibility (ATTD) and hindgut fermentation of nutrients and energy in growing pigs. Six light pigs (initial body weight [BW] $32.5{\pm}2.1kg$) and six heavy pigs (initial BW $59.4{\pm}3.2kg$) were surgically prepared with a T-cannula in the distal ileum. A difference method was used to calculate the nutrient and energy digestibility of wheat bran by means of comparison with a basal diet consisting of corn-soybean meal (0% wheat bran). Two additional diets were formulated by replacing 9.65% and 48.25% wheat bran by the basal diet, respectively. Each group of pigs was allotted to a $6{\times}3$ Youden square design, and pigs were fed to three experimental diets during three 11-d periods. Hindgut fermentation values were calculated as the differences between ATTD and AID values. For the wheat bran diets, the AID and ATTD of dry matter (DM), ash, organic matter (OM), carbohydrates (CHO), gross energy (GE), and digestible energy (DE) decreased with increasing inclusion levels of wheat bran (p<0.05). While only AID of CHO and ATTD of DM, ash, OM, CHO, GE, and DE content differed (p<0.05) when considering the BW effect. For the wheat bran ingredient, there was a wider variation effect (p<0.01) on the nutrient and energy digestibility of wheat bran in 9.65% inclusion level due to the coefficient of variation (CV) of the nutrient and energy digestibility being higher at 9.65% compared to 48.25% inclusion level of wheat bran. Digestible energy content of wheat bran at 48.25% inclusion level (4.8 and 6.7 MJ/kg of DM, respectively) fermented by hindgut was significantly higher (p<0.05) than that in 9.65% wheat bran inclusion level (2.56 and 2.12 MJ/kg of DM, respectively), which was also affected (p<0.05) by two growth stages. This increase in hindgut fermentation caused the difference in ileal DE (p<0.05) to disappear at total tract level. All in all, increasing wheat bran levels in diets negatively influences the digestibility of some nutrients in pigs, while it positively affects the DE fermentation in the hindgut.

Effects of alfalfa flavonoids on the production performance, immune system, and ruminal fermentation of dairy cows

  • Objective: The objective of this study was to examine the effects of alfalfa flavonoids on the production performance, immunity, and ruminal fermentation of dairy cows. Methods: The experiments employed four primiparous Holstein cows fitted with ruminal cannulas, and used a $4{\times}4$ Latin square design. Cattle were fed total mixed ration supplemented with 0 (control group, Con), 20, 60, or 100 mg of alfalfa flavonoids extract (AFE) per kg of dairy cow body weight (BW). Results: The feed intake of the group receiving 60 mg/kg BW of AFE were significantly higher (p<0.05) than that of the group receiving 100 mg/kg BW. Milk yields and the fat, protein and lactose of milk were unaffected by AFE, while the total solids content of milk reduced (p = 0.05) linearly as AFE supplementation was increased. The somatic cell count of milk in group receiving 60 mg/kg BW of AFE was significantly lower (p<0.05) than that of the control group. Apparent total-tract digestibility of neutral detergent fiber and crude protein showed a tendency to increase (0.05<$p{\leq}0.10$) with ingestion of AFE. Methane dicarboxylic aldehyde concentration decreased (p = 0.03) linearly, whereas superoxide dismutase activity showed a tendency to increase (p = 0.10) quadratically, with increasing levels of AFE supplementation. The lymphocyte count and the proportion of lymphocytes decreased (p = 0.03) linearly, whereas the proportion of neutrophil granulocytes increased (p = 0.01) linearly with increasing levels of dietary AFE supplementation. The valeric acid/total volatile fatty acid (TVFA) ratio was increased (p = 0.01) linearly with increasing of the level of AFE supplementation, the other ruminal fermentation parameters were not affected by AFE supplementation. Relative levels of the rumen microbe Ruminococcus flavefaciens tended to decrease (p = 0.09) quadratically, whereas those of Butyrivibrio fibrisolvens showed a tendency to increase (p = 0.07) quadratically in response to AFE supplementation. Conclusion: The results of this study demonstrate that AFE supplementation can alter composition of milk, and may also have an increase tendency of nutrient digestion by regulating populations of microbes in the rumen, improve antioxidant properties by increasing antioxidant enzyme activities, and affect immunity by altering the proportions of lymphocyte and neutrophil granulocytes in dairy cows. The addition of 60 mg/kg BW of AFE to the diet of dairy cows was shown to be beneficial in this study.

재배 중 황 처리 횟수가 양파의 화학적 조성 개선 및 품질 특성에 미치는 영향 (Influence of the Number of Sulfur Applications on the Improvement of the Chemical Composition and Quality of Onions)

  • 양파 재배 시 국내 토양에 절대적으로 부족한 황을 처리 횟수를 달리하여 재배 생산한 후, 황 함유 성분(sulfur-containing compounds)을 포함한 양파의 화학적 조성과 물리적 관능적 특성이 개선되었는지를 평가하였다. 선행연구를 토대로, 파종 시 토양에 직접 MSM 식이 유황을 1회 공통 처리하고 수확 2달 전황을 1회만 추가 처리한 군(Sulfur-1)과 수확 3달 전부터 수확 1달 전 까지 일정 간격으로 황을 총 4회 처리한 군(Sulfur-4)으로 구별하였으며, 황을 전혀 처리하지 않은 군(Control-S)과 타 지역 양파(Control-M)를 비교를 위한 대조군으로 선정하였다. 황 처리 횟수가 증가함에 따라, 수분은 감소하는 경향을, 총 질소로 측정된 조단백질과 무기질 총량인 회분(p<0.01), 그리고 식이섬유는 증가하는 경향을 나타내었으며, Mg, K, Fe, Zn 등이 증가하여(p<0.05), 전반적으로 무기질을 포함한 화학적 조성이 개선되었음을 시사하였다. 또한, 항산화력의 지표인 총 환원물질의 양도 2배 가량 유의적으로 증가하는 결과가 관찰되었다(p<0.05). 그러나, 황 함유 성분인 thiosulfinate와 함황 아미노산에서는 황 처리 효과가 관찰되지 않았고, 전자코로 측정된 향미 프로파일 역시 향미 성분의 차이를 시사하지 않았다. 이는, 본 실험에서 처리된 황 수준은 질소대사 및 토양의 pH를 변화시키는 간접적 경로를 통한 양파의 이화학적 조성 변화는 가능하게 할 수 있었으나, 황 함유 성분들을 직접적으로 증가시키기에는 충분하지 못했음을 시사하였다. 그럼에도 불구하고, 황 처리 횟수 증가와 함께, 함황 성분들에 의해 주로 인지되는 매운 맛과 매운 향 특성은 관능적으로 강해지는 것으로 평가되었다. 이러한 차이는, 양파 특유의 냄새 성분들이 지닌 낮은 역치에서 기인한 것으로 해석하였다. 한편, Control-S, Sulfur-1, Sulfur-4 양파들은 $4^{\circ}C$에서 4개월 동안 저장한 후, 모두 수분의 큰 증가 없이 총 환원력이 2배 가량 증가하였으며(p<0.01), 황 처리군이 무처리군에 비해 여전히 유의적으로 높았다(p<0.001). 반면, 동일조건에서 Control-M은 유의적 변화가 관찰되지 않았다. 이러한 차이는, 황 처리, 호흡작용으로 인한 환원당의 증가 이외에 지역적 영향이 관여했을 가능성을 시사하였다.

깻잎, 쑥, 참취의 건분 및 에탄올 추출물이 흰쥐의 지방대사와 항산화능에 미치는 영형 (Effect of Dried Leaf Powders and Ethanol Extracts of Perilla Frutescens, Artemisia Princeps Var. Orientalis and Aster Scaber on Lipid Metabolism and Antioxidative Capacity in Rats)

  • This study was performed to investigate the effects of dried leaf powders and ethanol extracts of Perilla frutescens(perilla leaf), Artemisia princeps var. orientalis(mugwort) and Aster scaber(chamchui) on lipid metabolism and antioxidative capacity in rats. Forty-nine male Sprague-Dawley rats weighing 105.9$\pm$1.7g were blocked into seven groups according to body weigth and raised for four weeks with diets containing 5% dried powders of perilla leaf, mugwort and chamchui, or ethanol extracts from the same amount of each dried leaf powder. Food intake was higher in the control and chamchui powder groups than the other remaining groups. Weight gain was not significantly different among all experimental groups. Food efficiency ratio was highest in the perilla leaf powder group. Plasma total lipid and cholesterol, liver total lipid and triglyceride levels were highest in the perilla leaf powder group. In contrast, dried powders of mugwort and chamchui showed hypolipidemic effects in plasma and liver. Plasma and liver TBARS levels in both dried powder and ethanol extract groups of the three plants were lower than control. There was also no significant difference between corresponding dried powder and ethanol extract groups. Catalas and GSH-Px activities in erythrocyte and liver were not different among all the experimental groups. However, SOD activities were significantly different among the esperimental groups. In erythrocyte. SOD activiteis of all dried powder and ethanol extract groups except the perilla leaf powder group were higher than control, and the chamchui power group showed the highest activity among them. In liver, all the plant groups showed higher SOD activities than control. There was no significant difference between corresponding dried powder and ethanol extract groups. In conclusion, the dried chamchui powder and liver. All the dried plant powder and ethanol extract were effective in decreasing the TBARS levels of liver and particularly plasma. Among the antiocidative enzymes, SOD activity was most responsive to the experimental diets. All the plant groups showed increases in liver SOD activities and there were more increments in dried powder groups. Since the effects of dried powder groups on lipid metabolism were better than those of extract groups, it is plausible that the high dietary fiber level in dried powders was effective. Antioxidative effects were not significantly different between corresponding dried power and extract groups, and it was thought that ethanol extracts from three plants also had similar antioxidative effects as dried powderers.

Prediction of Dry Matter Intake in Lactating Holstein Dairy Cows Offered High Levels of Concentrate

  • Accurate estimation of dry matter intake (DMI) is a prerequisite to meet animal performance targets without penalizing animal health and the environment. The objective of the current study was to evaluate some of the existing models in order to predict DMI when lactating dairy cows were offered a total mixed ration containing a high level of concentrates and locally produced agricultural by-products. Six popular models were chosen for DMI prediction (Brown et al., 1977; Rayburn and Fox, 1993; Agriculture Forestry and Fisheries Research Council Secretariat, 1999; National Research Council (NRC), 2001; Cornell Net Carbohydrate and Protein System (CNCPS), Fox et al., 2003; Fuentes-Pila et al., 2003). Databases for DMI comparison were constructed from two different sources: i) 12 commercial farm investigations and ii) a controlled dairy cow experiment. The model evaluation was performed using two different methods: i) linear regression analysis and ii) mean square error prediction analysis. In the commercial farm investigation, DMI predicted by Fuentes-Pila et al. (2003) was the most accurate when compared with the actual mean DMI, whilst the CNCPS prediction showed larger mean bias (difference between mean predicted and mean observed values). Similar results were observed in the controlled dairy cow experiment where the mean bias by Fuentes-Pila et al. (2003) was the smallest of all six chosen models. The more accurate prediction by Fuentes-Pila et al. (2003) could be attributed to the inclusion of dietary factors, particularly fiber as these factors were not considered in some models (i.e. NRC, 2001; CNCPS (Fox et al., 2003)). Linear regression analysis had little meaningful biological significance when evaluating models for prediction of DMI in this study. Further research is required to improve the accuracy of the models, and may recommend more mechanistic approaches to investigate feedstuffs (common to the Asian region), animal genotype, environmental conditions and their interaction, as the majority of the models employed are based on empirical approaches.

제주산 우뭇가사리 유래 한천 가수분해물의 항염 활성 효과 (Agar Hydrolysates Obtained from Jeju Island Attenuates the LPS-induced Inflammation in In Vitro and In Vivo Zebrafish Embryos)

  • Previously, agar obtained from Gelidum sp. has a small molecular weight and has the disadvantage of inherent viscosity properties and poor functionality as a dietary fiber. In order to improve aforementioned disadvantages, agar having a fluidity that can be added to food at a higher concentration that a powder agar having a gelling property at low concertation was manufactured. In addition, the anti-inflammatory activity of agar hydrolysates was evaluated to confirm their potential as a functional material. As a result, agar hydrolysates significantly reduced NO levels secreted by LPS-activated macrophages and inhibited the expression of iNOS and COX-2, which are inflammatory mediators that regulates NO secretion in macrophages. Furthermore, in in vivo zebrafish embryos model results demonstrated significant reduction of LPS induced NO production after the treatment of agar hydrolysate hydrolyzed for 360 min. In addition, ROS production and cell death by stresses were also reduced in LPS-exposed embryos after the treatment of agar hydrolysis product hydrolyzed for 360 min. Taken together, agar hydrolysate hydrolyzed for 360 min can be easily added into food due to their fluidity and used as a food ingredient that inhibits inflammation due to their anti-inflammatory property.

Physico-chemical and Sensory Characteristics of Semi-dried Sausages Containing Different Levels of Kimchi Powder

  • Effects of the addition of kimchi powder on the physico-chemical and sensory properties of semi-dried sausages were investigated at the following kimchi powder concentrations: control (0%), T1 (1%), T2 (2%), and T3 (3%). pH of the semi-dried sausages containing kimchi powder decreased with the addition of kimchi (p<0.05). Also, the addition of kimchi powder to the sausages significantly decreased the CIE $L^*$ and increased the CIE $a^*$ and CIE $b^*$ values (p<0.05). The T3 treatment resulted a higher mositure lose than other treatments. TBARS values of the T2 and T3 groups were significantly lower (p<0.05) than that of the control, while T3 had the highest VBN value among treatments at the end of the storage period. Addition of kimchi powder to semi-dried sausages improved the overall sensory properties of the sausages, and increased the softness and tenderness. These results suggest that addition of 2% kimchi powder to semi-dried sausage is helpful to improve the quality of sausages.

차가버섯 균사체가 Streptozotocin으로 유발된 당뇨 흰쥐의 혈장 포도당과 지질 농도에 미치는 영향 (Effects of Inonotus obliquus Mycelia on the Level of Plasma Glucose and Lipids in Streptozotocin-induced Diabetic Rats)

  • Streptozotocin으로 당뇨가 유발된 흰쥐에 차가버섯 균사체를 2주간 체중 ka당 200 mg으로 경구투여시킨 후 혈장 glucose, total cholesterol, triglyceride, ALT, 및 AST 활성을 관찰하였고, 차가버섯 균사체의 일반성분을 조사하였다. 그 결과 체증증가는 당뇨 대조군에 비해 약 23.5% 증가하였고, 식이섭취량은 21.0% 낮게 나타났으며, 간장 무게는 18.1% 정도 감소하였다. 혈장 glucose 농도는 차가버섯 균사체 투여군이 당뇨 대조군보다 23.1%가 유의하게 감소하였으며, 혈장 total cholesterol과 triglyceride는 각각 12.6%와 22.6%로 낮게 나타났다. 또한 혈장 ALT와 AST 활성은 당뇨 대조군에 비해 차가버섯 균사체 투여군이 27.6%와 21.9% 낮은 활성을 보였다. 상기와 같은 항당뇨 활성을 가진 차가버섯 균사체의 일반성분을 분석한 결과 조회분 5.55%, 조지방 2.35%, 조단백 28.29%, 탄수화물 9.53% 및 식이섬유 54.28%로 구성되어 있었다.

올벼쌀의 이화학적 특성 (Physicochemical Properties of Olbyossal(Parboiled Rice))

  • 환경친화적 저농약 재배로 생산된 쌀을 이용하여 제조한 올벼쌀의 소비를 촉진하기 위한 기초자료로 활용하고자 이화학적 성분을 조사하여 다음과 같은 결과를 얻었다. 일반성분 중 조지방의 경우 올벼쌀이 1.13%로 백미(0.32%) 보다 높게 나타났으며 이는 현미찹쌀과는 비슷한 수준이었고 조회분은 멥쌀보다 약간 높게 나타났으며, 조단백질 함량은 비슷하였다. 총 식이섬유는 올벼쌀이 3.79%, 백미가 1.67%로 올벼쌀이 높게 나타났다. 무기질의 경우 올벼쌀이 Mg, Na, K, P 등은 멥쌀보다 더 많이 함유하고 있었으며, 그 외 성분은 비슷하였다. 지방산 조성과 구성 아미노산은 멥쌀, 올벼쌀, 찹쌀과 현미찹쌀 모두 큰 차이를 보이지 않았으며, 현미상태인 올벼쌀의 경우 C15:0, C22:0 등이 소량 분석되어 멥쌀과는 차이를 보였다. 쌀의 색도 및 경도의 경우 올벼쌀이 멥쌀에 비해 백색도가 더 낮았으며 경도는 올벼쌀이 19.76 kg, 멥쌀이 4.96 kg으로 큰 차이를 보여 올벼쌀의 가공 중 경도가 증가하는 것으로 나타났다.
