일부 서울지역 대학행의 식생활 현황 및 질적평가 (Qualitative assessment of dietary intake of college students in Seoul area)

  • This study was conducted to assess the nutrient intake and diet quality of college students in Seoul. Dietary survery data were obtained by 24-hour recall method from 774 students, 553 males and 191 females. Mean daily intake of energy was 2,480kcal with 56.4% of energy intake from carbohydrate, 14.6% from protein, and 25.5% from fat. Percentage of fat was higher than mean values of National Nutrition Survey(NNS), adults in rural area or younger students in previous studies. Mean daily intakes of calcium and vitamin A did not meet RDA levels in both sexes and intake of iron in females was insufficient to meet RDA level. The percentage of animal food to total food intake was 25% and consumption of meat, beverage and milk group was higher than those of National Nutrition Survey(NNS). When the consumption of 5 major food groups(grain, meat, milk, fruit, vegetable) were evaluated, 22% of students consumed all 5 groups and 47% consumed 4 groups, which show more balanced food group intake than adults in rural area. Food groups which were omitted frequently were milk and fruit. These results show that college students in Seoul consume better diet than subjects of National Nutrition Survey(NNS) or adults in rural area. However, high fat intake, low calcium and vitamin A intake and low iron level in women were observed. Majority(78%) of students had at least one food group omitted in their diet. Appropriate nutrition education may help to improve the quality of diet in these students.

Interaction of Dietary Wheat Bran and Dietary Calcium Levels ell Calcium Utilization and Bone Mass in Post-breeding Female Rats

  • This study was conducted to determine the interaction of dietary wheat bran and dietary calcium levels n)n calcium utilization in post-breeding female rats. It was designed to compare the effects of four different levels (2.5, 5, 10 and 20%) of wheat bran and two different levels (0.5 and 1%) of calcium on bone and calcium balance in post-breeding female rats over a ten-week period. The effects of diet on animal weight gain, serum calcium, femur weight, femur calcium concentration, bone mass and calcium balance were determined and statistically analyzed. The addition of 20% wheat bran significantly (p$\leq$0.05) decreased the weight gain of rats. Serum calcium and bone calcium contents were more affected by dietary calcium level than by dietary wheat bran level. There was no significant difference in fat-free solid, ash, percentage of ash to fat-free solid and percentage of calcium to ash among groups. Groups fed the 1% calcium diet had a higher percentage of calcium to fat-free solid. All rats were in positive calcium balance during the three-4ay experimental period. The average calcium balance of the rats fed 1% calcium diet ranged from 25.34 to 53.90mg and the average calcium balance of the rats fed the 0.5% calcium diet ranged from 26.71 to 32.90mg. In rats receiving 2.5% wheat bran, the difference in calcium balance between the group fed the 1% calcium diet and the group fed the 0.5% calcium diet was only 1.37mg, which was not significantly (p$\leq$0.05) different. In rats receiving 20% wheat bran, the difference in calcium balance between the group fed the 1% calcium diet and the group fed the 0.5% calcium diet was 19.S7mg, which was significantly (p$\leq$0.05) different. The addition of wheat bran caused an increase in the calcium balance of the rats adminslesed the 1% calcium diet. On the other hand, the addition of wheat bran had no effect on the calcium balance of the rats adminislesed the 0.5% calcium diet. In conclusion, calcium utilization of rats wire more positively affected by the interaction of both dietary wheat bran levels and dietary calcium levels than either dietary wheat bran levels or dietary calcium levels alone. Moderate wheat bran consumption did not interfere with the calcium metabolism of rats when calcium intake was high enough.

The effect of high fat dietary modification and nutritional status on the outcome of critically ill ventilated children: single-center study

  • Background: Ventilator dependency constitutes a major problem in the intensive care setting. Malnutrition is considered a major determinant of extubation failure, however, attention has been attracted to modulating carbon dioxide production through decreasing carbohydrate loading and increasing the percent of fat in enteral feeds. The detected interrelation between substrate oxidation and ventilation outcome became the base of several research to determine the appropriate composition of the nonprotein calories of diet in ventilated patients. Purpose: We aimed to assess the effect of high-fat dietary modification and nutritional status on ventilatory and final outcomes of pediatric intensive care. Methods: Fifty-one ventilated children (1 month to 12 years of age) with pulmonary disease who could be enterally fed, in the Cairo University Pediatric intensive care unit, were divided into 2 groups: group A included 25 patients who received isocaloric high-fat, low-carbohydrate diet; group B included 26 patients who received standard isocaloric diet. Comprehensive nutritional assessment was done for all patients. Results: Group A had a significant reduction in carbon dioxide tension, but no similar reduction in the duration or level of ventilatory support. Assisted minute ventilation was predicted by weight-for-age and caloric intake rather than the type of diet. Poor nutritional status was associated with higher mortality and lower extubation rates. Mild hypertriglyceridemia and some gastrointestinal intolerance were significant in group A, with no impact on the adequacy of energy or protein delivery. Conclusion: The high-fat enteral feeding protocol may contribute to reducing carbon dioxide tension, with mild hypertriglyceridemia and negligible gastrointestinal intolerance as potential adverse effects. Optimization of nutritional status rather than dietary modification may improve ventilatory and survival outcomes in critically ill-ventilated children.

  • The effects of dietary cellulose on the lipid metabolism in albino rats were observed, especially the effects of dietary cellulose from three different sources; cereal, vegetable and pure-cellulose. The results were summarized as follows. 1. Dietary cellulose from rice bran and vegetable resulted in lowering of reserved lipid in the body and the effect of rice bran was remarkable as compare to that of vegetable. 2. But the fatty acids composition in serum, liver, gastrocnemius, small intestine and epididymal fat pad was unchanged by dietary cellulose. This means the effect of dietary cellulose was only to change the body fat in quantify and not in quality. 3. Cellulose from rice bran increased serum cholesterol content and maintained medium level of serum total lipid. Cellulose from vegetable decreased serum total lipid and cholesterol content. Pure-cellulose decreased also serum total lipid and cholesterol content but the effect was not as low as vegetable cellulose. 4. It need to be further investigated on the different effects of cellulose from three sources on serum cholesterol content, particularly the increasing effects of rice bran.

  • this study is conducted to evalute the effect of ginseng fraction components(ginseng extract siolution; GES ginseng protein ; GP ginseng saponin ; GSA ginseng residue ; GR) upon hy-perlipidemia and fatty liver induced by high fat administration. In doing so the serum liver and epididymal adpoid tissue have been examined for lipid component level cortisol and insulin level. The change of liver tissue has been observed by light and electron microscope. In the cortisol level all experimental groups were lower compared to control group. The liver of rats observed histochemically. Control group appeared to be fatty liver but GP and GSA group looks normal electron-microscopically. GES and GP group showed a slight improvement compa-red with control group.

비만 개선 효과를 지닌 탄수화물 및 지방 흡수 억제 기능성 식이조성물 개발 (Development of an anti-obesity dietary supplement inhibiting the digestion of carbohydrate and lipid)

  • In a previous study, we developed a new food additive as an egg yolk antibody (IgY) against carbohydrate digestion enzymer for the regulation of blood glucose level and weight control. The IgY delayed and decreased the increment if blood glucose level after administration of sucrose in human being by 30% in 20∼30 min. We also developed a lipase inhibitor as a water extract of two kinds of herb, Platycodon grandiflorum and Solanum Melongena, Twenty three volunteers were subjected to the intake of the egg yolk IgY Plus the herbal extracts for 50 days. In average, the treated subjects appeared to lose 1.96 kg of body weight and 3.4 kg of body fat mass during the treated period. Furthermore, Panniculus adiposus and breech size were significantly decreased during the experimental period. Above results suggested that the administration of the dietary additives composed of egg yolk IgY and natural herbal extract improve the obesity by the decrement of body weight and body fat mass.

사회복지 시설 여자 노인의 영양 건강 상태 -I. 영양소 섭취량 및 생화학적 건강상태- (The Nutritional Status of the Female Elderly Residents in Nursing Home -I. Nutritional and Biochemical Health Status-)

  • Nutritional and health status was assessed in the 86 healthy elderly women who aged 65 through 96 and resided in nursing home in chonbuk area. Nutritional status was determined by dietary intake, anthropometric and hematological indices and hair elements. Correlation analysis among nutritional indices were performed to identify the factors which related specifically to nutritional status of the elderly. Nutrients intake below two-thirds of the RDA were Ca, riboflavin and niacin. Especially mean Ca intake was only 51.9% of RDA and most of nutrients intake were decreased as theri age increased. Height, body weight and mid upper arm circumference were decreased with age but W/H ratio did not differ among age groups. These data suggested that body fat accumulation did not change with age but lean body mass was decreased with age in the elderly. Waist circumference was positively correlated to dietary fat intake, and body weight, BMI, waist and hip circumferences and total body fat were positively correlated with serum LDC/HDL ratio. It could be concluded anthropometric indices were good indicator that reflect the lipid nutritional status in elderly women. Hematological indices, Hb, RBC, MCH, albumin, globulin, transferrin levels, belonged to normal ranges of aged women. However, the lowest Hb level showed in the oldest-old group(aged 85 and over years group). The avalilavilty of hair analysis to measure nutritional status was tested. There were not found any significant correlations between many kinds of nutritional indices and hair elements except hair Zn content which was positively correlated with BMI.

불포화 고지방식을 섭취한 흰쥐의 체내지질대사에 대한 대두 단백질과 칼슘의 섭취 효과 (Effects of Soy Protein and Calcium on Lipid Metabolism in Rats Fed Unsaturated Fat Diet)

  • This study was performed to observe how soy protein and calcium in rats fed unsaturated fat-enriched diet affect the total lipid and cholesterol contents of blood and tissues male Sprague-Dawley rats weighing approximately 220g were fed four purified diets which contained 18% (w/w) corn oil, 1% (w/w) cholesterol, two sources of protein : casein or isolated soy protein (ISP) and two levels of dietary calcium : 0.1% or 1.0%, first for four weeks (Expt. 1) and second for eight weeks (Expt. 2). The contents of total lipid, cholesterol and triglyceride in blood, liver, heart and feces were determined. After four weeks feeding, the serum lipid and cholesterol concentration was not significantly different among the groups. After eight weeks feeding, these concentrations were significantly lower in ISP-High calcium group. The serum lipid concentration was influenced by dietary protein sources and calcium levels. These results indicated that the hypolipidemic effects of soy protein and high calcium intake were partly due to decrease in lipid absorption and these effects were not detected at 4 weeks feeding but 8 weeks feeding.

비타민 E와 불포화 지방과의 관계 - 들깨유(油)를 중심으로 한 동물의 비교 연구 - (Relationship between Vitamin E and Polyunsaturated Fat - A comparative animal study emphasizing perilla seed oil as a fat constituent -)

  • Perilla (frutescens) seed oil, which is widely used as a source of vegetable oil in Korea, contains a strikingly large amount (58.4% of total fatty acids) of polyunsaturated linolenic acid (18 : 3) which is one of the essential fatty acids. Our hypothesis was that vitamin E contained in this oil would not be enough to prevent peroxidation of this polyunsaturated oil. A comparative study was carried out using rats and chicks devided into seven groups with various diet combinations emphasizing fat sources for the period of four weeks. The level of fat in each diet was 15% and animals were fed ad libitum. Various diet combinations were as follows; perilla seed oil and sesame seed oil with and without vitamin E supplementation, tallow as a saturated fat source and perilla seed hull group (10% at the expense of carbohydrate). The fat constituents of control group were consisted of 50% vegetable oil and 50% animal fat. A few important findings are as follows: 1. Rats fed perilla seed oil lost their hair focally around the neck and suffered from a bad skin lesion at the same place. In chicks, yellow pigmentation both of feather and of skin was clearly observed only in groups fed perilla seed oil with or without vitamin E supplementation. The basis of biochemical mechanisms of this phenomena remains as an important research interest. 2. The mean value for hematocrit was significantly lower for the chicks fed perilla seed oil than for those fed control diet. This result seems to be attributable to the effect on the red cell membrane known as peroxidation-hemolysis of vitamin E deficiency. 3. The serum cholesterol level was higher for the rats fed perilla seed oil than for those fed control diet, whereas in chicks the group fed perilla seed oil showed lower value than the control group indicating that different animal species could vary in their responses to the same diet. 4. In pathological examinations, the sign of hepatic fibrosis was seen in the perilla seed hull group and it was noticeable that the level of hepatic RNA was significantly increased in the rat recovering from vitamin E deficiency. It is hoped that more detailed studies on perilla seed oil and hulls will soon be carried out in many aspects especially i) at various levels of fat in the diet, ii) in relation to dietary selenium level and iii) to find an optimum level of dietary essential fatty acids in terms of P/S ratio using various animal species. In the mean time, the public should be informed to preserve this particular oil with care to minimize fatty acid oxidation and should be discouraged from overconsuming this oil. 베타-글루칸의 고지방 식이 유도 비만쥐에서 체지방 및 혈청지질 개선효과 (The Improvement Effects of β-Glucan on Adiposity and Serum Lipids Levels in High Fat Diet-Induced Obese Rats)

  • 본 연구는 미생물 유래 베타-글루칸의 항비만 효과를 검증하기 위하여 동물실험을 통해 식이 베타-글루칸이 체지방 형성과 혈중 지질에 미치는 영향을 조사하였다. Sprague-Dawley종 흰쥐를 6주간 고지방 식이로 사육하여 비만을 유도한 후 베타-글루칸을 각각 식이 무게의 0%(고지방 대조군), 0.1%, 0.5%로 함유한 식이로 5주간 사육하였다. 정상 대조군은 AIN-76A 식이로 사육하였다. 고지방식이군에서 단위체중당 체지방이 많았으며, 0.1% 베타-글루칸 공급은 고지방 식이에 의해 유도된 복막지방, 내장지방 축적을 각각 16%와 19% 억제하였고, 혈중 렙틴을 28% 감소시켰다(P<0.05). 정상 대조군과 비교하여 고지방 대조군의 평균 지방세포 크기는 1.7배 높았으며, 베타-글루칸 섭취군에서는 감소하여 정상대조군 수준으로 낮아졌다(P<0.05). 0.1% 베타-글루칸 섭취에 의해 혈청 유리지방산 농도는 19% 감소하였고, 반면 HDL 콜레스테롤 50% 증가하였다(P<0.05). 결론적으로 베타-글루칸 공급은 렙틴과 같은 호르몬 분비와 지단백질 대사 변화로 지질 대사 개선을 유도하고 체지방 형성과 축적을 억제하는 것으로 보인다. 본 연구 결과 베타-글루칸은 고지방 식사에 기인하는 비만과 이상지혈증 개선에 도움이 되는 기능성 식품 소재로 사용될 수 있을 것으로 사료된다.
