미취학아동 대상 영양·식생활교육의 효과 메타분석 (Meta-Analysis of the Effects of Nutrition & Dietary Life Education for Preschoolers)

  • The purpose of this study was to objectively quantify the effects of nutrition and dietary life education on preschoolers through meta-analysis. In addition, it provides basic data for the implementation of nutrition education and development of systematic nutrition and dietary life education programs. In this study, a meta-analysis of 27 papers was conducted that conformed to the selection criteria in the study conducted from January 2012 to August 2019 to derive objective data on the effects of education. As a result of the analysis, the overall effective size of nutrition and dietary life education for preschoolers was 0.829, which indicates a strong effect. According to the education method, the effect size of general education was 0.562, which indicates a medium effect size, the vegetable playing-based experience education was 0.685, which indicates a medium effect size, and cooking activity-based experience education was 1.101, which indicates a large effect size. Judging from this result, experience activity education was more effective than general nutrition education. In addition, the combined size of convergence education conducted through a combination of general and experience education was found to be the most effective at 1.301. In terms of educational effect, it was confirmed that the effect size was 0.898 for improving nutrition knowledge, 0.858 for improving dietary habits, 0.836 for improving unbalanced diet, and 0.756 for improving food preference and intake, and the sizes of effects were all found to be large. As frequency of education increased, the number of education participants decreased and the effect of education increased.

초등학교 저학년을 위한 실천중심의 식생활 교재 및 교사용 지침서 개발 (Development of Practical Dietary Education Textbook and Teaching Manual in Elementary School Students)

  • This study was conducted for researching demand on dietary education of low-level elementary school students and to develop an activity based textbook and a teaching manual on the subject. For necessity of dietary education, 88.8% of subjects answered dietary education is needed. The desirable frequency of the education was once a week (65.7%). The most appropriate time for the education was "school lunch" (37.5%), "special activity" (29.9%), "regular class" (12.4%) and "after school activity" (12.1%). The most preferred educational method was "experiment and practice" (40.1%). The desirable educational materials were "computer materials" (20.7%), "actual objects" (20.1%), "videotapes" (16.5%), "photographs-pictures" (12.2%) and "fairy tales-cartoons" (12.2%). The students wanted dietary information as "cooking" (26.1%), "growth and nutrition" (23.7%) and "right food information" (20.1%). The textbook was composed of five major chapters, which were "Traditional Dietary Culture", "Food", "Dietary Habit", "Hygiene and Environment" and "Cooking". Each major chapter had five to six smaller chapters, adding up to total of 32 chapters. The textbook had fun characters, illustrations, photographs and cartoons to deliver the main theme of each chapter. The textbook was in activity format so that it coul be readily and directly used in actual classes. The teaching manual was composed of background, goals, teaching plans and teaching points. The smaller chapters had learning goals, teaching-learning resources, important points, teaching-learning processes and reference materials. Videos were produced to help cook five snacks in the cooking chapter. Also, "Healthy Song" was created to be used in classrooms. This textbook will be helpful in children's right dietary habits and growth.

식생활 교육활동이 교육만족도와 자아존중감에 미치는 영향 (Influences of Dietary Education Activity on Education Satisfaction and Self-Respect)

  • 본 연구는 식생활 교육활동과 교육만족도를 학력증진, 심리-정서발달로, 자아존중감으로 구성하였으며, 식생활 교육 지식 정도, 교육만족도와 자아존중감의 관계를 실증 분석하였다. 연구의 목적은 식생활 교육 프로그램의 한 부문인 식생활 교육의 중요성을 인식시키고, 식생활 교육에 대한연구자들의 관심을 유도하고, 기초자료를 제공하는 데 그 목적이 있다. 본 연구의 결과를 요약하면 첫째, 식생활 교육활동이 교육만족도 중 '학력증진', '심리-정서발달'에 모두 정(+)의 영향을 미치는 것으로 나타났다. 둘째, 학생들의 교육만족도와 자아존중감의 영향관계를 분석한 결과, 교육만족도 중 '학력증진'과 '심리-정서발달'은 자아존중감에 정(+)의 영향을 미치는 것으로 나타났다. 셋째, 식생활 교육활동이 자아존중감에 미치는 영향을 분석한 결과, 식생활 교육활동은 자아존중감에 정(+)의 영향을 미치는 것으로 나타났다. 따라서 가정뿐 아니라, 학교 교육과정, 범국가적인 차원에서 지속적이고 반복적인 식생활 교육을 실시하여, 단순한 지식의 전달이 아닌 청소년들의 식에 대한 올바른 지식이 자리잡을 수 있도록 지도해야 하며, 이를 통한 자아존중감이 형성될 수 있는 교육이 필요하다고 사료된다.

Inhibitory Effects of Dietary Schisandra Supplements on CYP3A Activity in Human Liver Microsomes

  • Schisandra chinensis and its fruits have been used as a traditional herbal medicine to treat liver dysfunction, fatigue, and chronic coughs. Several in vitro and in vivo studies suggested that dibenzocyclooctadiene lignans present in Schisandra fruits strongly inhibit CYP3A4 activity. However, reports on the inhibitory potential of dietary Schisandra supplements against CYP3A activity are limited despite their increasing consumption as dietary supplements. In this study, we evaluated the CYP3A-inhibitory potential of four dietary Schisandra supplements in human liver microsomes. At a concentration of 0.05 mg/mL, Schisandra supplements from Nature's Way, Swanson, Planetary Herbals, and Only Natural inhibited CYP3A activity by 93.9, 70.8, 33.6, and 24.8%, respectively. Nature's Way, which exhibited the strongest inhibition against CYP3A, had the highest contents of gomisin B and gomisin C, which potently inhibit CYP3A activity. The in vivo pharmacokinetics of this product should be examined to determine whether the clinical relevance of inhibiting CYP3A activity by dietary Schisandra supplementation.

Dietary intake based on physical activity level in Korean elementary school students

  • Prevalence of childhood obesity is increasing significantly worldwide due to energy imbalance perhaps stemming from undesirable dietary behavior and physical activity level. The objective of the study was to examine the effects of physical activity level on nutritional status in elementary school students. The subjects were comprised of 287 elementary school students between 4th and 6th grades in Seoul, Korea. The level of physical activity was scored with a modified Godin leisure-time exercise questionnaire and was categorized as active, moderately active, and sedentary. Dietary intakes were obtained using a 24-hour food recall method. An analysis of variance (ANOVA) was conducted to test for global significant differences of nutrient intakes by physical activity level. Boys were more active than girls. Daily intakes of energy in moderately active boys were significantly higher than in the sedentary group, but intakes of calcium and iron in moderately active boys were lower than active boys. For girls, physical activity level did not affect nutrient density at all. Intakes of calcium, vitamin C, and folate for both boys and girls were below 50% of recommended intake. Physical activity did not affect nutrient density and our participants were exposed to nutritional imbalance. Therefore, the results suggest that nutrition education regarding balanced diet and optimum physical activity is required for children's health and growth.

초등학생의 신체활동, 좌식행동, 식이행동에 대한 권고사항 실천 패턴 및 상호관련성 (Patterns and Interrelationships for Meeting Recommendations of Physical Activity, and Sedentary and Dietary Behavior in Elementary School Students)

  • The purpose of this study was to analyze the patterns and interrelationships for meeting recommendations of physical activity, sedentary behavior, and dietary behavior in elementary school students. A cross-sectional design was used to assess 259 students ages 11 to 13 years. Physical activity (moderate to vigorous physical activity $\geqq$60min/day), sedentary behavior (viewing time for TV, computer, DVD, video, etc<3hr/day), and dietary behavior (servings of fruits and vegetables$\geqq$5times/day) were categorized into two levels: meeting recommendations or not meeting recommendations. Parents' health behaviors and home environmental variables were assessed with self-reported measures. Chi-squared tests and independent t-tests were conducted to compare anthropometric variables and the prevalence of students not meeting the recommendation for the three health behaviors. Comparison between males and females and logistic linear regression were used to determine the interrelationships of three health behaviors. 25.9% of students did not meet the physical activity recommendations. 15.4% did not meet sedentary behavior recommendations, and 41.7% did not meet dietary recommendation. Only 39.8% of students met all three recommendations, but 19.0% did not meet over two recommendations. Patterns that simultaneously did not meet two recommendations were: sedentary and dietary behavior in males (8.1%), and physical activity and dietary behavior in females (10.4%). Students who did not meet dietary recommendations were at greater risk of not meeting physical activity (OR 2.76; 95% CI 1.15 to 6.64), and sedentary behavior (OR 3.07; 95% CI 1.15 to 8.16) compared with students who did meet dietary recommendations. The findings of this study support not an independent behavior approach but a multiple behavior approach taking into account gender and interrelationships among the three behaviors.

Nutritional Status of Thiamin in Elementary School Children Living in Rural Areas of Chungbuk

  • The present study was performed to assess nutritional status of thiamin in 104 elementary school children, living in rural areas of Chungbuk. Dietary intake was obtained by 24 hour recall method and blood was collected to analyze the transketolase activity in erythrocytes. Average dietary intake of thiamin was found to be adequate (1.l5mg, 109.2% of RDA), even though dietary intake of energy was not more than 1,719kcal, 81.5% of RDA. Transketolase activity in erythrocytes was distributed in the range of 0.294-0.744mU/mgHb and the mean value was 0.540mU/mgHb. The mean value of TPP effect was 7.9% and the range was 0-77.4%. It appeared that 7.7% of children were deficient in thiamin, severely or marginally. There were no significant correlations between transketolase activity and dietary thiamin intake, and between TPP effect and dietary thiamin intake. Mean DVS (Dietary variety score) of the children was 14.2${\pm}$3.2 and DVS was apparently correlated with thiamin intake.

Dietary Thiamin Intake and TPP Effect of Elderly Women

  • The present study was conducted to assess the dietary and nutritional status of thiamin in fourty-two elderly women. Dietary intake was determined by 24hour recall method and nutritional status of thiamin was determined by measurement of transketolase activity in erythrocytes. Average dietary intake of energy and thiamin were found to be low, and not more than 78% and 63.2% of Recommended dietary allowances(RDA) respectively. Transketolase activity in erythrocytes was distributed in the range of 0.227-0.589mU/mgHb and the mean value and 0.434mU/mgHb. The mean value of Thiamin pyrophosphate effect(TPP effect) was 24.0% and the range was from 9.36% to 83.9%. It appeared that 95% of 42 elderly women were severely or marginally deficient in thiamin status, showing 22 persons to be above 20% and 18 persons to be 15-20% of TPP effect. Transketolase activity and TPP effect did not show any significant correlation with dietary thiamin intake.

보건소 영양교육 프로그램이 유아의 영양지식, 식습관 및 부모의 식태도에 미치는 효과 (Effect of Nutrition Education Program Developed by a Public Health Center on Preschool Children's Nutrition Knowledge and Dietary Habits and the Parent's Dietary Attitudes)

  • This study was carried out to examine the effects of nutrition education program developed by Jincheon Public Health Center on preschool children's nutrition knowledge and dietary habits and the parents' dietary attitudes. The subjects of this study were five- and six-year-old children as well as their parents. A 5-week nutrition education program was implemented to 104 children in five day care centers, and 107 children in three day care centers were investigated as a control group. Activity tools designed for each lesson such as puzzles, food magnets, story, songs, Pierrot costume, and balls were used. Nutrition knowledge and dietary habits of children and dietary attitudes of parents were evaluated before and after education. Mean nutrition knowledge score in the education group was significantly higher than that in the control group after education (p < 0.001). Mean dietary habit score of three questions (three meals a day, eating at fixed time, eating breakfast) in the education group was also significantly higher than that in the control group after education (p < 0.01). In addition, parents in the education group showed significantly higher mean dietary attitude score than those in the control group even though they did not receive education (p < 0.001). Our nutrition education program was found to be effective in improving nutrition knowledge and dietary habits in preschool children as well as improving dietary attitudes in their parents.

전북지역 영양교사의 식생활교육 실태와 연수 요구도 분석 (Operation and Training Demand on Dietary Life Education of Nutrition Teachers in Jeonbuk Province)

  • The purpose of this study was to investigate the nutrition teachers' operation and demand of dietary life education in Jeonbuk Province. The study was carried out using a self administered questionnaire and the subjects were 190 nutrition teachers. The questions were general characteristics of the subjects, operating status as frequency, place, the main use time, and training demand on dietary life education by elementary school and middle & high school, teaching career, and training hours. The results are as follows. Most of the subjects were female(98.9%), more than half were 40's(52.1%) in their age, school work career was 13.2 years. Frequency of the dietary life education operation was once per month(56.8%), 2~3 times per month(27.9%), and place of education were dinning room (49.7%), classroom(25.9%). Almost of the subjects(90.4%) recognized the facilities for education was lack, 89.3% of them did the education materials was lack, also. The desirable frequency of dietary life education was once per month(48.9%), and once per week(35.3%.) The half of the subjects recognized the objects of the dietary life education was not only students but also their parents and teachers. The proper education time was dietary life education tim (34.2%), discretion activity time(31.1%). Most of the subjects(95.7%) had willing to get training, the proper training program was 30 hours, and they prefer summer vacation(61.0%) than winter vacation(30.5%) and semester(8.6%). Proper experimental practice ratio of environment : health : thanks were 30% : 43% : 27%. It is concluded that the demand of nutrition teachers is necessary for their education program in elementary and middle & high school.
