식이지방 수준이 다른 식이를 섭취한 흰쥐의 체내 지질대사에 대한 난소화성 덱스트린의 섭취 효과 (Effects of Indigestible Dextrin on Lipid Metabolism in Rats Fed Normal or High Fat Diet)

  • The effects of indigestible dextrin on lipids in serum, tissue, and feces were investigated in two experiments carried out with 64 male Sprague-Dawley rats for eight weeks. Experiment I diet(normal fat diet) containing 5% corn oil and experiment II diet(high fat diet) containing 18% fat(13% beef tallow and 5% corn oil) and 1% cholesterol were divided into four groups with 0.5% cellulose(0.5CL : control), 10% cellulose(10CL), 10% Indigestible dextrin I(ID-I) and 10% indigestible dextrin II(ID-II), respectively. ID-I and ID-II diets produced a decrease in serum total lipid and cholesterol concentrations in both normal and high fat diets but more significantly in the groups fed high fat diet. ID-I, ID-II, and 10CL of high fat diet decreased serum glucose concentration. ID-I and ID-II diets also decreased liver cholesterol and triglyceride concentrations in rats fed normal and high fit diets. The fecal excretion of cholesterol in ID-II/high fat diet was significantly higher than that of 0.5CL diet. Bile acid excretion was increased in the rats fed 10CL and ID-II diets of normal and high fat diets. These observations indicat the hypolipidemic and hypocholesterolemic effects of indigestible dextrin on the rats. These effects are mediated by the increase of facal cholesterol and bile acid excretion. (Korean J Nutrition31(6) : 981-990, 1998)

난소화성 덱스트린의 섭취가 흰쥐의 장 기능 및 분변 성상에 미치는 영향 (Effect of Indigestible Dextrin on Large Intestinal Functions and Fecal States of Rats)

  • The effects of indigestible dextrin on serum lipid and glucose concentrations, large intestinal functions, feces states, and gastrointestinal transit time were studied with 90 male Sprague-Dawley rats. Diets contained 0.5% cellulose(0.5CL control), 10% cellulose(10CL), and 10% indigestible dextrin I (10ID-I), respectively and were fed to the rats for 3 weeks. Serum cholesterol and LDL-cholesterol concentrations were lower in rats fed the 10ID-I diet. Serum triglyceride concentration was lower in rats fed the 10CL diet. Cecal content and cecum weight significantly increased in the rats fed the 10ID- I diet. Cecal pH of the rats fed the 10ID-I diet was lower than that of the rats fed the 0.5CL diet. Changes of fecal output were not observed in case of 0.5CL and 10ID-I diets but a significant increase was observed in the case of 10CL. Gastrointestinal transit time of 10ID-I was the longest among the three diets. These results demonstrate that indigestible dextrin delivered to the cecum was not digested and increased the cecal mass. Indigestible dextrin improves colonic health of rats by inducing low pH of the cecum. (Korean J Nutrition 31(6) 991-998, 1998)

동결건조한 Lactobacillus fermentum SK152 균주의 생존율에 미치는 동결보호제의 효과 (Protective Effect of Cryoprotectants on the Viability of Freeze-Dried Lactobacillus fermentum SK152)

  • L. fermentum SK152의 동결건조에 의한 생균수 감소에 동결보호제가 미치는 영향을 조사하기 위해, 균체를 dextrin, skim milk powder, glucose, trehalose 10% 용액에 각각 현탁한 후에 동결건조하였다. 동결건조 후의 생존율은 각각 5.6%(dextrin), 2.2%(skim milk powder), 1.7%(glucose), 1.5%(trehalose)로서, dextrin을 첨가한 경우에 생존률이 가장 높게 나타났다. 동결건조한 L. fermentum SK152를 냉장(4℃) 및 상온(20℃)에 7-8주간 저장하면서 동결보호제의 종류에 따른 생존률을 조사한 결과, 4℃ 보관 시에는 동결보호제의 종류에 상관없이 저장기간이 길어져도 생존률이 서서히 감소하는 경향을 나타내었다. 저장 8주 후의 생존률은 37%(dextrin)-90%(skim milk powder)에 이르렀으며, skim milk powder 첨가시에 가장 높은 생존률을 나타내었다. 한편, 20℃ 보관 시에는 동결보호제의 종류에 상관없이 저장기간에 길어질수록 4℃에 비하여 생존률이 급격히 감소하는 경향을 나타내었다. 저장 7주 후의 생존률은 4%(dextrin)-12%(skim milk powder)에 이르렀으며, 이중 가장 높은 생존률을 나타낸 동결보호제는 skim milk powder이었다.

등외소맥분(等外小麥粉)에서 Caramel제조(製造) 연구(硏究) (A Study on the manufacture of caramel from under grade wheat flour)

  • 1) 등외소맥분(等外小麥粉)의 이용성(利用性)을 향상(向上)시키고저 이것을 원료(原料)로하여 caramel를 제조하고 겸하여 배소로 생긴 잔사로는 간장원액을 만들었다. 2) 등외소맥분(等外小麥粉)에 염산 또는 염화 ammonia을 넣고 배소하여 전분을 dextrin으로 변화시키고 온수(溫水)를 넣고 여과하여 가용성 dextrin을 분리하였다. dextrin액을 산(酸)으로 처리를 하고 농축한다. 농축한 것에 ammonia수(水)를 넣어주면서 초화(焦化)하여 caramel를 만들었다. 3) 배소하고 dextrin을 분리한 나머지 즉 배소잔사를 염산(鹽酸)으로 가수분해(加水分解)하여 간장원액을 만들었다. 4) 등외소맥분(等外小麥粉) 200g에 염화(鹽化) ammonia 7g를 혼합(混合)하고 $140^{\circ}C$에서 90분(分)동안 배소(焙燒)하여 전분을 erythrodextrin정도로 변화시킨 다음 온수(溫水)를 가(加)하고 흡인(吸引)여과하여 얻은 dextrin액 150ml를 염산으로 pH1.8로 하고 옥소액(沃素液) 반응(反應)이 무색(無色)으로 될때까지 가열(加熱)하고 농축한 다음 ammonia수(水)를 넣어주면서 $pH\;5{\sim}6$에서 $120^{\circ}C$에 270분간(間) 초화(焦化)하여 보-메 24도의 caramel액 95g을 얻었다. 5) Dextrin액을 분리하고 남은 배소잔사 25g을 18%염산 75ml로 8시간 가수분해(加水分解)하여 질소분이 2.20이고 보-메 25로의 간장원액(原液) 55ml를 얻었다.

Effects of a soluble dietary fibre NUTRIOSE$^{(R)}$ on colonic fermentation and excretion rates in rats

  • The resistant dextrin NUTRIOSE$^{(R)}$, developed from starch, is expected to act as a prebiotic. The aim of this study was to determine the effects of NUTRIOSE$^{(R)}$ on cecal parameters, short-chain fatty acid (SCFA) concentrations, and fecal excretion in rats. In an initial experiment, twenty-four male Fischer F344 rats were randomly assigned to one of the following four treatments for 14 days: G0 (control diet), G2.5 (control diet+2.5% of dextrin), G5 (control diet + 5% of dextrin), and G10 (control diet + 10% of dextrin). After 14 days, total cecal weight, cecal content, and cecal wall weight were significantly increased in G5 and G10 compared to G0. At the same time, cecal pH was significantly lower in G10 compared to G0. Total SCFA concentration was significantly higher in G10 than in G5, G2.5, and G0, and significantly higher in G5 than in G0. Acetate, butyrate, and propionate concentrations were significantly increased in G5 and G10 compared to the controls. In a second trial based on a similar design, eighteen male Fischer F344 rats were treated with a control diet supplemented with 5% of dextrin or 5% of fructo-oligosaccharide. The results obtained with NUTRIOSE$^{(R)}$ were similar to those obtained with the fructo-oligosaccharide. In a third experiment, two groups of 5 Fischer F344 rats were orally treated with 100 and 1,000 mg/kg NUTRIOSE$^{(R)}$, respectively, and from 18% to 25% of the dextrin was excreted in the feces. The results of these three studies show that the consumption of NUTRIOSE$^{(R)}$, by its effects on total cecal weight, cecal content, cecal wall weight, pH, and SCFA production, could induce healthy benefits since these effects are reported to be prebiotic effects.

식혜의 이소말토올리고당에 관한 연구(III) -시판식혜- (A Study on Sugars in Korean Sweet Rice Drink "Sikhye"(III) -Commercial Sikhye-)

  • 시판 식혜에는 설탕과 프룩토오스, 글루코오스, 말토오스 및 여러 사이즈의 말토올리고당, 한계덱스트린이 함유되어 있다. 그 중 한계덱스트린은 0.09%, 밥알은 0.2%를 나타냈다. 1H-NMR 분석 결과, 한계덱스트린은 $\alpha$-1,4-결합 및 $\alpha$-1,6-결합이 15:1의 비율을 나타냈다. Pullulanase 처리로, 말토오스에서 글루코오스 10잔기 이상의 말토올리고당까지 다양한 분포를 나타냈다. 한계덱스트린은 여러 아미라아제 처리 결과, 전통식혜보다 가수분해율이 훨씬 높았다. $\alpha$-글루코시다아제와 타액 $\alpha$-아밀라아제를 공동 작용시킨 경우는 62% 가수분해되었다. 그러나, 밥알의 가수분해율이 매우 낮았다. 그래서 전통 식혜에 비해 한계덱스트린의 비피두스 인자로서의 효과는 적고, 밥알의 식이섬유 작용은 커졌다.

분지 덱스트린 첨가가 냉동 소프트롤 반죽 및 빵의 저장 중 품질 특성에 미치는 영향 (Effects of Branched Dextrin on the Quality Characteristics of Frozen Soft Roll Dough and its Bread during Storage)

  • In this study, samples of wheat flour and dough were prepared by adding of 1, 3, or 5% branched dextrin, which is produced from the amylopectin of waxy corn starch using a cyclization reaction with a branching enzyme. The samples were then evaluated qualitatively in terms of farinogram, viscogram, and extensogram characteristics. The fermentation power of dough expansion, extensogram characteristics, specific volume, baking loss, external/internal surface appearance, and sensory qualities were also examined after 4 weeks of storage at -20$^{\circ}C$ to determine the effect on freeze-thaw stability and quality improvement of branched dextrins in the soft roll bread formulation. Furthermore, the samples along with a control were compared regarding their quality characteristics, including changes in moisture content, water activity, color, and textural characteristics during a storage period of 4 days at 20$^{\circ}C$ to determine the effect on preventing retrogradation of the branched dextrin. As the branched dextrin content increased, area and extensibility increased, whereas water absorption, fermentation power of dough expansion, resistance/extensibility ratio, baking loss, and brownness of the crust decreased. However, the control group presented significantly higher peak viscosity, resistance, specific volume, taste, overall acceptability, moisture content, water activity, springiness, cohesiveness, and resilience values than those of the branched dextrin samples, whereas lightness, hardness, and chewiness showed the reverse effect. As the storage period increased, lightness, hardness, and chewiness increased, whereas cohesiveness decreased. In conclusion, the results indicate that adding 1~3% branched dextrin into a soft roll bread formulation from frozen dough had no positive effect on freeze-thaw stability or preventing retrogradation but may provide good nutritional properties.

수분 안정성 향상을 위한 천마 추출물 함유 분말의 제조 및 평가 (Fabrication and Characterization of Gastrodia elata-loaded Particles for Increased Moisture Stability)

  • To develop Gastrodia elata (GE)-loaded particles for herbal extract dosage forms, various GE-loaded particles containing dextrin, isomalt, maltodextrin, and silicon dioxide as solidifying carriers in the GE water extract are prepared using the spray drying method. Their physical properties are evaluated using the repose angle, Hausner ratio, Carr's index, weight increase rate at 40℃/75% RH condition, and scanning electron microscopy (SEM). Particles made of dextrin improve the fluidity, compressibility, and water stability. In addition, 2% silicon dioxide increases the fluidity and moisture stability. The best flowability and compressibility of GE-loaded particles are observed with TP, dextrin, and silicon dioxide amounts in the ratio of 6/4/0.2 (34.29 ± 2.86°, 1.48 ± 0.03, and 38.29 ± 2.39%, repose angle, Hausner Ratio, and Carr's index, respectively) and moisture stability with a 2% weight increase rate for 14 h at 40℃/75% RH condition. Therefore, our results suggest that the particles prepared by the spray drying method with dextrin and 2% silicon dioxide can be used as powerful particles to improve the flowability, compressibility, and moisture stability of GE.

Dextrin과 β-cyclodextrin이 생체 내에서 헛개나무 추출물의 알코올성 손상으로부터 간보호에 미치는 영향 (Effects of Dextrin and β-cyclodextrin on Protective Effect of Hovenia dulcis Fruit Extract Against Alcohol-induced Liver Damage in vivo)

  • ${\beta}$-cyclodextrin has an ability to protect compounds from oxidative reaction by collecting them within its ring-like structure. So, In harsh condition ($40^{\circ}C$), marker compound, quercetin, was dramatically reduced in Hovenia dulcis fruit extract containing dextrin at 4 and 8 week compared to 0 week, but not that containing ${\beta}$-cyclodextrin. To evaluate the effects of dextrin and ${\beta}$-cyclodextrin on protective effect of H.dulcis fruit extract against alcohol-induced liver damage, The mice were orally injected alcohol, H. dulcis fruit extract/dextrin (HD) and H. dulcis fruit extract/${\beta}$-cyclodextrin (HCD), respectively, for 7 days. The mice orally administrated with alcohol significantly enhanced the serum concentration of alanine aminotransferase (ALT) and aspartate aminotransferase (AST) and the activity of lactate dehydrogenase (LDH) in serum compared to the control group. HD and HCD significantly decreased the levels of serum ALT and AST and serum LDH activities compared to alcohol group. And also alcohol group significantly increased the level of total cholesterol compared to the control group, but HD and HCD significantly reduced it compared to the alcohol group. However, the levels of TG in blood were not significantly changed in all groups. The activities of alcohol dehydrogenase (ADH) were significantly increased in HD and HCD group although those of aldehyde dehydrogenase showed an increasing tendency. This data suggested that HD and HCD were able to induce alcohol degradation in the liver tissues. All together, the results showed that HCD demonstrated their ability to protect liver from alcohol-induced damage on equal terms with HD.

배합사료의 우지와 덱스트린이 메기(Silurus asotus)의 성장과 체조성에 미치는 영향 (Influence of Dietary Beef Tallow and Dextrin on the Growth and Body Composition of Juvenile Far Eastern Catfish Silurus asotus)

  • This study investigated the utilization of beef tallow and dextrin as non-protein energy sources in the diet of juvenile far eastern catfish Silurus asotus. Three replicated groups of juveniles (initial mean weight of 3.6 g) were fed diets containing high levels of beef tallow or dextrin for six weeks. The final mean weight of fish fed on a 17% lipid diet with a high level of beef tallow was significantly higher than that of fish fed on a 9% lipid diet with a high level of dextrin (P=0.04). No significant differences were observed in the feed efficiency and protein efficiency ratio of fish fed on the experimental diets. Crude lipid content and the C18:0, C18:1n-9 and C18:2n-6 contents of whole-body fish were significantly affected by diet (P<0.05). The results of this study suggest that beef tallow is better than dextrin as a non-protein energy source for improving the growth of juvenile far eastern catfish, and that beef tallow could be economically used as an ingredient in practical feed.
