Application of lactic acid bacteria in the markets are divided into four categories: dairy industry, health food industry, animal feed industry and pharmaceutical industries. Recently, Lactobacillus acidophilus have been used in the food industry and have obtained great attention as key cultures for health benefit. Since commercial application of L. acidophilus has become a common practice, characterization of these cultures were made. Futhermore, the strains selected should produce a final dairy product possessing good taste and acceptable body and texture, a selection step that cannot be achieved unless the product is actually manufactured. Conjugated linoleic acid (CLA) have been recognized as antioxidants, cancer inhibitors, cholesterol depressing agents, and growth promoting factors. Food products from ruminants, particularly dairy products, are the major dietary source of CLA f3r humans. The CLA content in yogurt or cheese can be increased by action of the starter cultures. The finding of the production of CLA by food starter culture opens interesting perspectives far the future in producing fermented products enriched in CLA.
Nano-delivery systems, such as nanoparticles, nanoemulsions, and nanoliposomes, are carriers that have been used to enhance the chemical as well as physical stability and bioavailability of bioactive compound. Food-grade nano-delivery system can be produced with edible biopolymers including proteins and carbohydrates. In addition to the low-toxicity, biocompatibility, and biodegradability of these biopolymers, their functional characteristics, such as their ability to bind hydrophobic bioactive compounds and form a gel, make them potential and ideal candidates for the fortification of bioactive compounds in functional dairy foods. This review focuses on different types of nano-delivery systems and edible biopolymers as delivery materials. In addition, the applications of food-grade nano-delivery systems to dairy foods are also described.
Dairy products eatable instantly have lots of nutriment, but on the other hand they are susceptible to putrefy with careless. Therefore, dairy products should be implemented the critical control points to produce both standard good qualities and hygiene ones without the contamination of hazards, because they could not been produced the perfect products only with ISO 9000 application like other industry. The application of HACCP system for dairy products produced domestically is important to certify hygiene quality and safety. It is necessary to examine regular inspection for the persistent maintenance of HACCP system. If environmental changes and improvement of manufacture facilities by expansion of new system in factory turn shift into HACCP plan, then, it is persistently accomplished the supplementation of deficiency for new hazard analysis through the periodical inspection. So far, HACCP system is mainly applied in dairy plants. If farms producing milk directly set up a sanitary plan, it can also practice sanitary control from farm to table in our country. The only dairy products produced in these conditions can be compatible to ones of other countries, they can be provided consumers over forty million with reliable foods, and contributed to the improvement of public health.
This study was to investigate principle of freeze concentration such as nucleation, crystal growth and procedure of freeze concentration, essential factor and application of freeze concentration. Especially, quality of milk was emphasized. For exemple, in sensory evaluation of freeze concentrated and reconstituted skim milk and whole milk, taste, color, mouth feel and texture were superior to control. Recently developed technique of freeze concentration for quality milk and dairy products may be expected for advanced quality of various milk and dairy products in near future.
Comparative studies of the effects of rates and frequency of application of dairy slurry on herbage yield and stand persistence of alfalfa and various forage grasses have not previously been conducted. The results being reported here are part of a larger study having a primary objective of comparing the effectiveness of alfalfa (Medicago sativa L.), various grasses and alfalfa-grass mixtures for utilizing nutrients from applied dairy slurry. The objectives of this part of the study were to evaluate the effects of various rates and frequencies of application of slurry on herbage yield and stand persistence of orchardgrass (Dactylis glomerata L.), reed canarygrass (Phalaris arundinacea L.), and alfalfa-orchanrdgreass and alfalfa-reed canarygrass mixtures managed as a 4-cutting management system. A randomized complete block design with treatments in a split plot arrangement with four replicates was used. The main plots consisted of 9 fertility treatments: 7 slurry rate and time of application treatments, one inorganic fertilizer treatment, and an unfertilized control. The sub-plots consisted of the two grasses and two alfalfa-grass mixture mentioned above. Slurry was composed from stored solids scraped from the alleyways of a free-stall housing barn and water added to form a slurry having about 8% solids. Manure was pumped from a liquid spreader tank into 10.4 L garden water cans for manual application to the plots. Herbage yields within species were generally unaffected by various rates of application in the first production year. Herbage yields of grasses and alfalfa-grass mixtures the second year were generally not affected by frequency of application for the same rate of slurry applied. Slurry application resulted in greater herbage yield increases in grasses than alfalfa-grass mixtures in the 4-cutting management system. In general, herbage dry matter yields of grasses from the dairy slurry treatments equaled or exceeded yields from the inorganic fertilizer treatment. Stand ratings of grasses and alfalfa-grass mixtures were not changed by manure application rates. In this study, the highest rate of slurry ($967kg\;total\;N\;ha^{-1}$ in 1995 plus $2,014kg\;N\;ha^{-1}$ in 1996) was not detrimental to herbage yields or stand persistence of any of the species. It was concluded that applying dairy slurry to these cool-season grasses and alfalfa-grass mixtures managed in a 4-cutting system is an acceptable practice from the standpoint of herbage yield and satnd persistence and by doing so the utilization of inorganic fertilizers can be reduced.
The objective of this study was to compare the accuracy analysis and the effect of field application of a newly developed automatic heat detector in dairy cows. From 2009 to 2010, we used 48 Holstein cows (mounting cows : 38 heads, standing cows : 10 heads) raised in experimental barn of National Livestock Research Institute (RDA) for the accuracy analysis of automatic heat detector, and 14 Holstein cows raised in three commercial dairy farms of Cheonan and Pochun area for comparison of the effect of field application. The accuracy of response in cows attached with automatic heat detector was 86.8% (33/38) displayed on board when mounting activity observed, and 100% (10/10) when standing activity observed, and on average, 90.0% (43/48) displayed on board. The accuracy of automatic heat detector in on-farm test was 85.7% (12/14), and conception rate was 75.0% (9/12).

Tall fescue significantly outyielded all other forage species at all manure and the inorganic fertilizer treatments in the second year when rainfall during the growing season was unusually high. Grasses generally had a greater response to manure applications than alfalfa and alfalfa-orchardgrass. Increasing rates of manure did not increase herbage yields of alfalfa and alfalfa-orchardgrass. Herbage yields within each species were not affected by frequency of application of the same total rate. Stand ratings of alfalfa, orcahrdgrass and alfalfa-orchardgrass were significantly lower for the very high manure application rate compared to the control treatment. Based upon the results of this study, multiple annual applications of slurry manure can be made onto these species at rates up to $1,700kg\;total\;N\;ha^{-1}\;yr^{-1}$ without detrimental effects on herbage yield and stand persistence.
To determine changes in nitrogen contents and optimal rates as N fertilizer, we investigated nitrogen characteristics in the slurry in the respond to the application of 0, 0.5, and 1 g of ferrous sulfate or alum /25g of dairy slurry. Additions of ferrous sulfate or alum increase total nitrogen, inorganic nitrogen, available nitrogen, and predicted available nitrogen contents in dairy slurry, resulting in reduction in pH. The best results were found in the treatment with 0.5 g of ferrous sulfate or alum /25 g of dairy slurry. In conclusion, the use of ferrous sulfate or alum as on-farm amendment to dairy slurry should be represented an alternative to improve N in dairy slurry.
The aim of this study was to evaluate the biomass production and dairy wastewater treatment using Chlorella vulgaris. The results indicated that the maximum percentages of biochemical oxygen demand, chemical oxygen demand, suspended solids, total nitrogen, and total phosphorus removed were 85.61%, 80.62%, 29.10%, 85.47%, and 65.96%, respectively, in dairy effluent at 10 d. A maximum of 1.23 g/L dry biomass was obtained in 7 d. The biomass productivity was strongly influenced by the nutrient reduction in the dairy effluent. The biodiesel produced by the C. vulgaris in the dairy effluent was in good agreement with the American Society of Testing and Materials-D6751 and European Standards 14214 standards. Therefore, using dairy effluent for microalgal cultures could be a useful and practical strategy for an advanced, environmentally friendly treatment process.
Thirty dairy cows with pododermatitis were selected and treatment effect of ozone ointment for bovine pododermatitis was investigated. In addition, bactericidal effect of ozone ointment on etiological agent of bovine pododermatitis was evaluated. The pathohistological examination for the pododermatitis, according to application with ozone ointment was investigated. Thirty dairy cows were divided two groups: control group(vaseline group: 15 cows), treatment group(ozone ointment group: 15 cows). Various parameters were evaluated in terms of the lameness score, swelling score, lesion score, WBC, neutrophil, pathohistological finding, and antimicrobial action. As compared with vaseline group, ozone ointment group revealed significant decrease of lameness(p<0.05), swelling(p<0.01) and lesion score(p<0.05) were shown in hoof lesions on 14 days after application. The number of neutrophils was slightly higher than that of normal, however, this was improved on 14 days after application of ozone ointment. In pathohistological findings, normal dermal tissue was found in tissues with pododermatitis on 14 days after application of ozone ointment. In antimicobial action, marked decrease rate of bacteria was observed in feet of all cases treated with ozone ointment. The decreasing rate of bacteria in anaerobic culture was higher than that in aerobic culture.
