The purpose of development new variety 'Miho' (Hordeum vulgare L.) is a favorite with livestock feed and develop varieties resistant to disease and lodging. 'Miho' was carrying out the growth habit of group III with green and mid-wide leaf. Awn that is related to preference of livestock is a semi-smooth awn. This cultivar had 96 cm of culm length, 650 of spikes $per\;m^2$. Heading date of 'Miho' was April 27, and maturing date on May 30, which were later than cultivar 'Youngyang'. It also showed strong winter hardiness, and similar resistance to shattering and bariy yellow mosaic virus (BaYMV) compared with those of check one. The best thing among the traits of a good quality with the plant green at the latter growing period. The average forage dry matter yield in the regional yield trial was about 13.1, 12.1 MT per ha in upland and paddy field, respectively, which were 9%, 2% higher than that of the check cultivar. It's also showed 6.8% crude protein, 27.1% ADF (acid detergent fiber), and 67.5% TDN (total digestible nutrients), including higher silage quality for whole crop barley. This cultivar would be suitable for the area whose average minimum temperature was above $-8^{\circ}C$ January in Korean peninsula.

The nutrient contents of pumpkins depend on many factors, including the species, climate, soil type, and plant part. The nutritional compositions of five pumpkin cultivars (red boujjang, mini hong, mini gold, boujjang, and yakhobak) were investigated. To analyze the nutrient contents of the edible parts, the other parts (seeds, skin, and stem) of each pumpkin were removed. The results showed that the proximate compositions of the edible parts of the pumpkins ranged from 74 to 87 g per 100 g for moisture, 1.6 to 3.2 g per 100 g for crude protein, 10.1 to 20.7 g per 100 g for carbohydrate content, and 2.0 to 3.4 g per 100 g for total dietary fiber. The proximate contents of the pumpkin samples were not significantly different. The thiamine contents of the pumpkins, except for red boujjang, varied from 0.03 to 0.15 mg per 100 g, but that of red boujjang had the highest level (0.60 mg per 100 g). The vitamin C contents of the pumpkins, except for boujjang, ranged from 13.0 to 14.0 mg per 100 g, but that of boujjang was the highest (49.0 mg per 100 g). In particular, yakhobak showed the highest total carotenoid and folate levels (279.5 and $74.0{\mu}g$ per 100 g, respectively). These results will be useful for coming up with better pumpkin varieties through breeding, and established the nutrient compositions of pumpkins.
Nutritional components of 4 kinds of red seaweeds, Meristotheca papulosa, Chondrus ocellatus, Gracilaria verrucosa, Gigartina tenella, were investigated to elucidate their functionality. Antioxidant activity and nitrite scavenging activity were analyzed from 70% ethanol extracted from these red seaweeds. Large difference in ash contents was found to exhibit among all samples analyzed in this study; $9.8{\pm}0.2g/100g$ for Gracilaria verrucosa and Gigartina tenella for $17.8{\pm}0.6g/100g$. While its crude fiber content was almost the same as those in other sample within a range between $2.0{\pm}0.4g/100g$ and $6.0{\pm}0.7g/100g$. Phenolic compounds content of Gracilaria verrucosa was also the highest as $78.4{\pm}1.0mg/g$, while the total flavonoids contents of Chondrus ocellatus and Gracilaria verrucosa were $14.9{\pm}0.5mg/g$ and $13.9{\pm}0.8mg/g$, respectively. These amounts were two folds higher than Meristotheca papulosa and Gigartina tenella. The total content of minerals was the highest in Meristotheca papulosa(12,107.7 mg/kg). The amount of glutamic acid was relatively high despite of small variation in measured levels of composition amino acid ($49.1{\sim}125.6mg/g$) for most samples investigated. SOD-like ability was significantly increased with increasing sample concentration, but its activity was lower. Gigartina tenella with highest electron donation ability exhibited increases in activity as $53.96{\pm}0.98%$ in concentration of 250 ${\mu}g/ml$ and $70.52{\pm}1.09%$ in 1000 ${\mu}g/ml$, respectively. In case of concentration of 100 ${\mu}g/ml$, particularly, the level of hydroxy radical scavenging activity were $57.87{\pm}1.70{\sim}62.07{\pm}0.87%$ which was significantly higher activity than ascorbic acid and BHT. Nitrite scavenging activity was the highest in Gracilaria verrucosa. Its activity was also increased from $24.04{\pm}1.9{\sim}27.52{\pm}0.82%$ in $100{\sim}500{\mu}g/ml$ concentration tp $34.81{\pm}1.36%$ in concentration of 1000 ${\mu}g/ml$.

This study was conducted to investigate the effect of tall type mixtures and tall+short type mixtures on dry matter yield, botanical composition and quality. The experimental design includes two mixture types: Tall type mixtures(TM); orchardgrass(Potomac) 40+tall fescue(Fawn) 20+Festulolium braunii (Paulita) 10+perennial ryegrass(Reveille) 10+timothy(Climax) 10+red clover(Kenland) 5+alfalfa(Vernal) 5%) and tall+short type mixtures(TSM); orchardgrass(Potomac) 40+tall fescue(Fawn) 20+Kentucky bluegrass(Newport, turf type) 10+redtop(Barricuda, turf type) 10+perennial ryegrass(Palmer III, turf type) 10+red fescue(Flyer II, turf type) 5+white clover(Regal) 5%. The dry matter(DM) yield was higher obtained in TSM than that of TM, but there was no significant difference between TM and TSM. In the chemical composition, there was no significant difference between TM and TSM, but the content of cellulose, lignin were higher in TM than those in TSM(p<0.05). Also, the content of acid detergent fiber which affected dry matter digestibility was higher in TM than that of TSM. The crude protein dry matter yield was not observed significant difference between TM and TSM, but digestible dry matter(DDM) yield was higher in TSM than that of TM. In botanical composition, tall fescue, alfalfa and orchardgrass were highly maintained in TM but white clover, tall fescue and orchardgrass were highly, and redtop, red fescue were continuously maintained in TSM. In this experiment, DM yields and quality of two mixture types were no difference. However, the tall+short type mixtures(TSM) were more effective in enhancing the dry matter digestibility and DDM yield, and in maintaining the various botanical composition.
Objective of this research was to draw the basic criteria of the compost maturity evaluation, by assessing the stability of chemical and physical properties of the bark and piggery manure byproduct composts during the composting. Colors of the mature composts were black and dark brown for the bark and piggery manure by-product composts, respectively. Good earthy odor was detected for both by-product composts after approximately 40 days composting, by which odors of the original raw materials were disappeared. pH and EC of the mature bark: compost were stabilized at 6.5 and 1dS/m, respectively. The respective values for the piggery compost were stabilized at 7.2 and 6dS/m. Organic matter contents were decreased with time to be stabilized at about 60% at the end of composting. During composting, total N contents of the bark and piggery composts were maintained at $1.1{\sim}1.5%$, and $1.5{\sim}2.2%$, respectively. For both fertilizers, $NH_4-N$ contents were increased at the initial stage bur. decreased after the middle stages of decomposition, resulting in the increase of $NO_3-N$ contents. Total inorganic N contents were increased with time. C/N ratios of both mature composts were stabilized at $25{\sim}27$. CEC of the bark compost was increased logarithmically with time and that of mature compost was 87cmol(+)/㎏. CEC of the piggery manure compost was hyperbolic function with rime and reached at 70cmol(+)/㎏ at the mature stage. Crude fiber analysis indicated that relative contents of lignin were increased with composting by compensating for the decreases of cellulose and hemicellulose contents.
Metabolic trial with 3 fistulated sheep was conducted in a 3 $\times$ 3 Latin square design and feeding trial with 24 Hanwoo steers in 12 month of age for 20 months was conducted to investigate the replacing effect of rice straw with fermented spent mushroom (Flammuliua velutipes) compost (FSMC) on fermentation characteristics, ruminal effective degradabilty and whole tract digestibility of nutrients in sheep, and to examine the growth performance of Hanwoo steers. Experimental diets for the metabolic trial with sheep were commercial concentrates and rice straw in the ratio of 70 : 30 (CON, DM basis). Same concentrate with 30% FSMC and 70% rice straw (FSMC-30) and 60% FSMC and 40% rice straw(FSMC-60). Diets for Hanwoo steers in three treatments were same as for metabolic trial in replacing ratio of rice straw with FSMC. pH of rumen fluid in sheep was not affected by FSMC. Ammonia-N content in the rumen fluid was highest in the sheep fed FSMC-60 at 3h (P<0.045). The CON diet increased (P<0.001) acetate proportion at 1h and 3h post feeding compared to FSMC-60 diet while propionate proportion was highest in the sheep fed FSMC-60 diet for all the sampling times (P<0.027~P<0.002). Increased proportion of butyrate was observed at 30 min prior to feeding (P<0.031), and 1h (P<0.011) and 6h(P<0.039) post feeding from sheep fed FSMC-30 diet compared to those from sheep fed other diets. Effective degradability in the rumen was not influenced by experimental diets. Whole tract digestibility of crude protein (P<0.031) and neutral detergent fiber (P<0.006) tended to be increased in the sheep fed CON diet while corresponding values were lowest in the sheep fed FSMC-60 diet. Total body weight gain of Hanwoo steers for 8 months was not different among diets, thus daily body gain was not influenced by the experimental diets.

The present study was conducted with four ruminally fistulated cattle to examine the fermentation characteristics and effective degradability (ED) in the rumen, and whole tract digestibility and TDN values of various silages (whole crop rye, RS; whole crop barley, BS; Italian ryegrass, IRGS and sudangrass, SGS) which were produced in Korea. The pH of rumen fluid were not greatly affected by silage at most times after feeding but SGS decreased (p<0.049) the ruminal ammonia-N concentration as 7.28 mg/100 ml at 3h after feeding compared to other silages. An acetate proportion from SGS feeding was higher at 1h (p<0.018), 3h (p<0.004) and 6h (p<0.019) after feeding than those from other silages. The propionate ($C_2$) proportion, however, was greater (p<0.001~p<0.042) for the RS and BS than the corresponding values of other silages up to 6h after feeding while the lowest $C_2$ proportion was observed from SGS. The butyrate proportion was lowest (p<0.007~p<0.027) in the cattle fed BS at 1~6h after feeding among silages. An ED of dry matter (DM) in the rumen was highest (P<0.048) for RS as 59.64%, and was reduced in the order of BS (56.12%), IRGS (55.64%) and SGS (54.02%). Similar tendency was observed in the EDs of crude protein (p<0.014) and organic matter (OM, p<0.039). The whole tract digestibility of DM (p<0.032), neutral detergent fiber (NDF, p<0.034) and OM (p<0.041) of SGS was greatly reduced. The TDN value based on whole tract digestibility of silages was highest for RS as 61.1%, and TDN values of BS, IRGS and SGS were 57.1%, 57.9% and 50.7%, respectively. Based on the results obtained from the present study, components in various whole crop silages produced in Korea might affect the ruminal VFA proportion, and especially, NDF content could greatly influence on the TDN value of silage calculated based on the NDF content.
This study was to assess the effects of sowing mixed legume forage and applying fermented cattle manure on the productivity and feed value of whole crop wheat (WCW) as a representative of winter crops and also to estimate feeding capacity of Korean native cattle (Hanwoo) per unit area by defining optimal application levels of cattle manure for more fertile soil and manure recycling for the purpose of reduced environmental pollution and efficient production of organic forage contributable to production of organic animal products. Sowing mixed legume forage significantly (p<0.05) increased yields of dry matter (DM), crude protein (CP) and total digestible nutrients (TDN) for WCW compared to WCW alone sowing, but there were no differences between mixed sowing treatments. The yields of DM, CP and TDN were significantly (p<0.05) higher in 100~150 kg N/ha. The CP and acid detergent fiber (ADF) contents were highest in mixed sowing with hairy vetch, followed by sowing mixed forage pea and WCW alone (p<0.05). There were no differences in CP among cattle manure application levels. As nitrogen application level increased, ADF content increased (p<0.05), but TDN content decreased (p<0.05). Feeding capacity of organic Hanwoo (head/ha) weighing 450 kg of body weight with 400 g of daily gain significantly (p<0.05) increased due to mixed sowing with legume forage, and with increasing application levels of fermented cattle manure, feeding capacity significantly (p<0.05) increased. The results indicated that mixed-sowing of WCW and legume forage not only reduced nitrogen application level of fermented cattle manure by over 50 kg per ha but also increased their feed value and productivity, and feeding capacity. This would be contributable to diversity of forage resources as well as production of organic animal product by creating low cost and high quality of forage.
A hot water extract was prepared from the artificially grown Gastrodia elata to investigate its chemical composition and various in vitro biological activities as an effort to develop G. elata as health/functional food materials. The contents of crude protein, ash, fat, fiber, moisture and total sugar were 5.4, 2.6, 3.6, 3.3, 8.1 and 77% (w/w), respectively. The extract of G. elata had greater amount of potassium (1,150 mg/100 g) than phosphorus (300 mg/100 g). Dose-dependence against human carcinoma (Hep3B, MCF-7, A549 and AGS) were observed from 0.2 mg/ml to 1.0 mg/ml. Especially, the treatment of 1.0 mg/ml extracts showed the highest cytotoxicity with 83% against gastric carcinoma (AGS). The extracts showed weak antimicrobial activities against Bacillus subtilis and Pseudomonas aeruginosa, but practically no antimicrobial activity against the other microorganisms tested. The effect of ${\alpha}$-glucosidase inhibition was 64% at the concentration of 1.0 mg/ml. The inhibitory effect of angiotensin converting enzyme (ACE) of the extract in the range of $0.2{\sim}1.0mg/ml$ showed $63{\sim}89%$, and the highest ACE inhibition was 89% at the concentration of 1.0 mg/ml of extracts. The highest activity of glutathion S-transferase (GST) was 221 % at the concentration of 1.0 mg/ml of the G. elata extracts. These results suggest that G. elata may be used as health/functional food materials.

Physicochemical properties, free sugar and volatile flavor compounds of citrons harvested in different cultivation areas, such as Geoje, Goseong, Goheung, and Namhae, were analyzed and compared. Total weight of citron, ranging from 107.97 g to 154.86 g, was significantly different according to producing area. Weight ratio of flesh to whole citron was higher than one of peel in citron produced from Geoje, Goheung-improved, or Namhae-native. Citron size was the highest in Namhae-native citron, but the color of peel was significantly the higher in Goheung-native and its improved citron. In the peel of citron, hardness of citron produced from Geoje was the strongest (2337.13 $cm/kg^2$) whereas citron produced from Goseong (1592.38 $cm/kg^2$) showed the softest hardness. Moisture content was 85.35~87.81 g/100 g and ash was contained below 0.8 g/100 g in flesh of all samples. Although crude fiber content in Geoje ctiron was significantly the lowest in the peel, peel was 1.88~2.60 times higher than flesh. The order of sugar content seemed to be fructose> glucose> sucrose in all citrons, and content of fructose or glucose was higher in peel than flesh. Content of total sugar was 8.44~12.19 g/100 g in citron, and contents of improved citrons from Goheung and Namhae were significantly higher than those of native citrons. In addition, major volatile compounds were dl-limonene (59.52~74.30%) and $\gamma$-terpinene (5.60~7.88%) among 15 kinds of volatile compounds identified from citron peel. These results suggested that physicochemical properties and volatile flavor compounds of citrons showed some differences with regard to producing areas.
