도토리묵의 특성을 규명하기 위한 기초 연구로서, 도토리 조전분과 정제전분을 대비시켜 이화학적 특성을 비교.분석하였다. 일반성분을 분석한 결과는 수분함량만 정제전분이 약간 높고 나머지 일반성분들은 조전분에 훨씬 많았다. 한편 물결합능력 및 팽화력은 조전분과 정제전분이 거의 유사하기는 하지만 조전분이 다소 높은 값을 나타내었고, 광투과도로 측정한 전분의 호화온도는 모두 68$^{\circ}C$이었다. 그러나 아밀로그래프에 의한 호화온도는 $73 ^{\circ}C$이었고, 호화개시 이후의 점도는 조전분이 정제전분보다 훨씬 높은 값을 나타내었다. 그리고 도토리전분의 아밀로오스 함량은 28.8%로 분석되었고, 아밀로오스의 분자량은 20425, 그 중합도는 126이었으며, 아밀로펙틴을 포도당 100개당 4.77의 분지도를 나타내었으므로 아밀로펙틴 분자내에서 가지와 가지 사이의 평균 포도당 단위의 수는 21이었다.
This study was carried out to investigate the influence of the seeding dates on the yield and feed value in cultivating Italian rye grass on paddy soil. The field experiment was designed in a randomized block design of 3 repetitions with seeding dates of Oct. 19 (T1), Oct. 26 (T2), Nov. 2 (T3), Nov. 9 (T4), and Nov. 16 (T5) treatments. Plant length, fresh yield, dry matter yield and TDN yield were increased with early seeding dates (p<0.05). Crude protein, Crude fat and crude ash were increased with early seeding dates (p<0.05). On the other hand, NDF, ADF and Crude fiber were decreased with early seeding dates (p<0.05). Total mineral contents were higher in the order of T4 > T3 > T5 > T1 > T2 (p<0.05). The total composition amino acid content was decreased significantly (p<0.05) as the seeding dates delayed. Total free sugar content was highest in T1, whereas the lowest in T5 treatment (p<0.05). Nutrition yields (crude protein, crude fat, amino acid and free sugar) were increased significantly with early seeding dates (p<0.05). The above result indicated that it is favorable to seed soon after rice harvest to increase dry matter yield and nutrition yield of Italian ryegrass in the midlands.

This study evaluated the general nutritional ingredients such as crude fats, crude ashes, crude proteins, total polyphenols, and total flavonoids in 18 kinds of edible tree sprouts. The tree sprouts of Philadelphus schrenckii, Lycium chinense, and Morus alba had the highest crude fat, crude ash, and crude protein content, respectively. The tree sprouts of Cedrela sinensis (CSS) with high ABTS+ radical scavenging activities had a high content of total polyphenols (175.65 mg/g ext.) and total flavonoids (75.18 mg/g ext.). The simultaneous determination of flavonoids such as rutin, isoquercitrin, quercitrin, afzelin, and quercetin in CSS was conducted using high-performance liquid chromatography with a wavelength of 270 nm. Among the flavonoids, the content of quercitrin in CSS was the highest at 59.28 mg/g ext. This study also aids the quality control of many edible tree sprouts by analyzing the general components, total polyphenols, and total flavonoids.
The quality of the rice straw silage added with apple pomace was investigated in this study and the amount of apple pomace added in different treatments were 0, 20, 40 and 60%, respectively. Crude protein contents (6.4-7.5%) of rice straw silage added with apple pomace were significantly (P<0.05) higher than that of 100%. rice straw silage (5.3%), however, crude ash contents were lower (P<0.05) in supplementation of apple pomace. The trends of changing chemical composition between raw materials and end products of silages particularly in the contents of crude protein and crude ash were more apparent in the silages added with apple pomace by 40-60%. Values of pH and the contents of lactic acid and total acid in 40-60% apple pomace added silages were 3.9-4.1, 1.0- 1.5% and 2.7-4.5%, respectively which were significantly (P<0.05) higher than those of 4.6, 0.02% and 0.34% in 100% rice straw silage, respectively. In situ dry matter (DM) and neutral detergent fiber (NDF) disappearance rates in the rumen in the treatments of 40- 60% apple pomace added silages were significantly (P<0.05) higher than those of 100% rice straw silage particularly since after 3 and 24 hour incubation on DM and NDF disappearance, respectively. Although quickly degraded fraction (a) among the treatments were not significantly different, 28.4-28.5% of slowly degraded fraction (b) and 27.2-27.4% of effective degradability (ED, k=0.08) for DM were significantly (P<0.05) higher than those of 100% rice straw silage (12.5 and 24.6% respectively). NDF was in the same trend as in DM. 31.6-63.2% of NDF for b fraction and 18.7- 19.4% for ED in 40-60% apple pomace added silages were significantly (P<0.05) higher than those of 100% rice straw silage (12.4 and 17.6% respectively). The biochemical composition of muscle from three deep-sea animals, Tanaka's eelpout Lycodes tanakae magistrate armhook squid Berryteuthis magister, and ocean sunfish Mola mola caught in the East sea in South Korea was determined. The moisture (81.4-93.8 g/100 g), crude protein (5.0-15.6 g/100 g), crude lipid (0.1-1.5 g/100 g), and ash (1.0-1.1 g/100 g) contents of the two fishes were analyzed. The proximate composition of magistrate armhook squid was: moisture 84.0 g/100 g, crude protein 12.4 g/100 g, crude lipid 0.7 g/100 g, and ash 1.5 g/100 g. There was little difference in the proximate compositions of the three animals. The total amino acid contents of Tanaka's eelpout, magistrate armhook squid, and ocean sunfish were 14.64, 10.75, 3.10-9.95 g/100 g, respectively. High levels of glutamic acid, aspartic acid, lysine, leucine, and arginine were found, while low levels of histidine, glycine, and cysteine were detected in the animals. A survey of the free amino acid contents of the animals revealed large amounts of alanine and glycine. Significant differences were found in the fatty acid composition among the three species. Specially, different saturated fatty acids (17.14-40.49%) such as C16:0, and C18:0, monounsaturated fatty acids (19.19-46.88%) such as C16:1, and C18:1, and polyunsaturated fatty acids (35.41-57.08%) such as EPA, and DHA was identified. Our results suggest that each of these deep sea animals possesses nutritional value and should be considered as a foodstuff.
We investigated the nutritional characteristics of the uncooked Skipjack tuna Katsuwonus pelamis frame (U-STF) as a basic resource for preparing flavor-enriching concentrates. The bone rate based on the fish frame (FF) was 53.2% in U-STF, thus lower than those of cooked skipjack tuna frame (C-STF), the uncooked salmon frame (U-SF), and beef leg bone (BLB). The composition of FF had 48.6-58.0% moisture, 18.4-21.3% crude protein, 7.0-15.0% crude lipid, and 12.8-22.1% ash. Compared to the proximate composition of BLB, that of FF was higher moisture and crude protein but lower solids, crude lipids, and ash. The total amino acid contents of FF was 17.6-20.8 g/100 g, which was higher than that of BLB. The levels of calcium and phosphorus of FF were 4.7-8.5 g/100 g and 2.4-4.2 g/100 g, respectively, thus lower than those of BLB. The brix concentration of FF extract was $5.0-8.2^{\circ}$, being highest in U-STF extracts, followed by extracts of U-SF and then extracts of C-STF. Our results indicate that U-STF is an optimal resource for preparing flavor-enriching concentrates.
In this study, we investigated the quality characteristics and optimum conditions of porridge containing rice incubated with Phellinus linteus mycelium (PLMR). Composition measurements of PLMR were moisture 13.05%, ash 0.88%, carbohydrate 78.65%, crude protein 6.29%, and crude lipid 1.13%, also glutinous rice composition was moisture 13.99%, ash 0.32%, carbohydrate 77.18%, crude protein 7.85%, and crude lipid 0.66%. The water absorption rate of PLMR increased with increasing soaking time during 6 hours. However, the water absorption rate of glutinous rice increased until 30 minutes of soaking time. The pH of porridge was decreased as PLMR contents increased. The viscosity of porridge was increased as PLMR contents increased, and it was the lowest for the control at 914.77 cP. However, spreadability of porridge was decreased as PLMR contents increased. In terms of color, lightness was the highest for the 50% level, redness was the highest for the 75% level, and yellowness was the highest for the 25% level. In terms of textural characteristics, hardness and fracturability were increased as PLMR contents increased, whereas springiness, cohesiveness and resilience showed reverse results. In terms of consumer acceptance, flavor, appearance, viscosity, delicate taste, and overall acceptability were not significantly different between samples. Hot taste was decreased as PLMR contents increased, whereas grittiness showed reverse results. In conclusion, the results indicate that adding 25~50% PLMR to porridge is optimal for a recipe.
This study was conducted to develop functional soybean paste with krill (Euphausiacea) as compared to a conventional soybean paste (S1). Soybean containing 10%, 20% and 30% (w/w) krill (S2~S4, respectively) was prepared and quality characteristics (moisture, crude fat, crude protein, ash, reducing sugar, pH, titratable acidity, total acidity and buffering power) were assessed during fermentation for 150 days. As well, antioxidative activities of krill soybean paste were compared to those of control soybean paste based on total phenolic compound content and free radical scavenging activity, including the 1,1-diphenyl-2-picryl-hydrazil (DPPH) scavenging activity and the thiobarbituric acid value (TBA value). The moisture content of all samples decreased to 41.91~53.47% during fermentation, while the crude fat increased to 1.98~5.21% with increasing addition of krill. Additionally, crude protein increased slightly to 8.24~14.08% with increasing addition of krill after 120 days of fermentation. Ash content was 15.96~18.92%. The reducing sugar content of S2, S3 and S4 was higher than those of S1 with increasing length of fermentation. S2, S3, and S4 displayed progressive decreases in pH and progressive increases in titratable acidity compared to S1. The total acidity of all samples was increased, while the buffering power was decreased with increasing fermentation. Especially, the buffering power of S1 was lower than that of S2, S3 and S4. DPPH radical scavenging activity of lipophilic extracts from S2, S3 and S4 was slightly higher than those of S1. However, the radical scavenging activity of hydrophilic extracts from all samples had similar tendencies, regardless of the krill content or fermentation period. Total phenolics increased with increasing fermentation time and TBA value increased with increasing fermentation time and krill content.
Processing condition and pigment maintenance of cockle, Fulvia mutica were studied. Proximate composition of whole meat was $82.3\%$ moisture, $10.8\%$ crude protein, $0.8\%$ crude lipid, $2.5\%$ carbohydrate and $3.1\%$ crude ash, and that of foot muscle was $80.6\%,\;12.3\%,\;0.3\%,\;2.9\%\;and\;3.3\%$ respectively. When the living cockle was soaked in $2\%$ NaCl solutions, about $90\%$ of silt and mud was removed after 10 hours soaking, and over $92\%$ was removed when the pH was adjusted to 7.5. When the pigment destruction was tested by 40 seconds at $75^{\circ}C,\;80^{\circ}C,\;85^{\circ}C,\;90^{\circ}C\;and\;95^{\circ}C$, retention ratios of pigment in cockle were above $95\%$ at all temperature. Soaking in ethanol for 5 minutes resulted in strong adhesion of pigment to meat. Soaking in seasoning liquid containing $10\%$ soy sauce, $5\%$ wasabi, $5\%$ sugar, $2\%$ vinegar, $2\%$ powdered garlic for 3 minutes was effective for instant processing of cooked and frozen cockle after thawing. After 60 days storage at $-20^{\circ}C$, the contents of moisture, crude lipid, carbohydrate, ash and salinity were not changed so much, and pH and TBA values increased to 6.6 and 0.3 compared with 6.2 and 0.2, respectively, while pigment absorbance at 226 nm was decreased from 2.7 to 2.3. However, in case of 60 days storage at $-45^{\circ}C$, there was no change in these compositions.
The purpose of this study was to evaluate the jujube hot-water extraction and antioxidant. After extraction of hot-water jujube, general composition analysis and functional tests were performed. The results of general composition analysis showed 22.33% of moisture content, 0.71% of crude lipid, 5.21% of crude protein, and 3.87% of ash. From DPPH test results, in concentrations of $1,000{\mu}g/mL$ of jujube extracts, electron donating ability was shown with 68.24%. The SOD ability in concentrations of $1,000{\mu}g/mL$ was 13.12%. The nitrite scavenging ability of jujube extracts was 11.79% at $1,000{\mu}g/mL$. The yogurt with 0, 1, 2, 3 and 4% of jujube extracts was made, and the general composition analysis and the functional tests were performed. The results of the general composition analysis of jujube yogurt, showed 74.71~76.56% of moisture contents, 1.31~3.38% of crude lipid, 2.13~3.40% of crude protein, and 1.18~1.28% of ash. The DPPH test results showed 46.33% for 1% added jujube extract, 53.78% for 2% added jujube extract, 90.87% for 3% added jujube extract, and 89.58% for 4% added jujube extract. The SOD ability showed 4.93% for 1% added jujube extract, 7.28% for 2% added jujube extract, 11.38% for 3% added jujube extract, and 11.50% for 4% added jujube extract.
