중국유학생의 거주기간에 따른 한국음식 확산 (Adoption Process of Chinese Students to Korean Food Based on Residence periods)

  • This study conducted qualitative research through in-depth interviews on the diffusion process of Korean food in accordance with the length of residence of Chinese students in Korea. As the analysis method, the qualitative analysis method such as NVivo12.0 was used, and the analysis was performed through word frequency, word cloud, and coding matrix. The images of taste of Korean food were revealed as 'Spicy', 'Sweet', and 'Light taste' by both short-term Chinese residents and long-term Chinese residents. The long-term Chinese residents showed their dissatisfaction with the institutional food, and they also pointed out the importance of the matter of cooking for quick adaptation to life in Korea. The long-term Chinese residents also thought of Korean food as 'High-fiber food', and this was influenced by the 'Less-oil' cooking method of Korean food, which is different from the cooking method of Chinese food. The length of residence was used as a main variable of this study, and it was one of the factors having positive effects on the diffusion of Korean food and acculturation. It would be difficult to generalize the results because this study used the convenience sampling method and snowball sampling.

식물성 기름의 혼합을 통한 지방산 조성 및 이화학적 특성 변화 (Characteristics of Fatty Acid Composition and Properties by Blending of Vegetable Oils)

  • 본 연구는 주요 구성지방산이 Oleic acid인 유채유, 동백유, 올리브유와 Palmitic acid가 주요 구성 지방산인 팜유를 기준으로 중량비로 혼합하여 지방산 조성 및 물성변화를 관찰 하였다. 지방산 조성의 변화를 전체적으로 살펴보면 50:50(w/w)비율에서는 Oleic acid은 유채유와 대두유의 혼합 시 42.8%로 가장 낮았고 동백유와 유채유의 혼합비율에서 72.1%로 가장 높았다. 75:25(w/w)유채유와 대두유 혼합비율에서 가장 낮았고 동백유와 올리브유의 혼합비에서 가장 높았다. 팜유를 기준으로 식물성 유지를 혼합하였을 시에는 다른 유지와 혼합 후 총 포화지방산은 감소하였다. 혼합 후 지방산 조절을 통한 산화안정성 및 저온에서의 유동성 개선이 기대 된다. 혼합 후 동백유 > 올리브유 > 유채유 순으로 산가 안전화 경향을 보였으며 이는 Oleic acid 함량에 따라 기인한 것으로 보인다. 또한 혼합을 통한 산화안정성을 개선시킬 수 있을 것으로 판단되며, 색도는 비율 및 유지에 따른 유의적인 변화를 보이지는 않았으나 바이오디젤 생산 정제공정에 있어서 혼합비율 조절에 따른 정제비용 절감이 기대 된다. 본 연구를 통하여 유지간 혼합에 의한 특성변화를 확인하고, 혼합유의 원료 다양성 확보 및 품질개선을 위한 정보를 얻어 향후 연구수행의 기초자료로 활용이 가능할 것으로 생각된다.

Combined Effects of High Pressure Processing and Addition of Soy Sauce and Olive Oil on Safety and Quality Characteristics of Chicken Breast Meat

  • This study was conducted to evaluate the combined effect of high pressure (HP) with the addition of soy sauce and/or olive oil on the quality and safety of chicken breast meats. Samples were cut into 100 g pieces and 10% (w/w) of soy sauce (SS), 10% (w/w) of olive oil (OO), and a mixture of both 5% of soy sauce and 5% olive oil (w/w) (SO) were pressurized into meat with high pressure at 300 or 600 MPa. Cooking loss was lower in OO samples than SS samples. With increased pressure to 600 MPa, the oleic acid content of OO samples increased. The total unsaturated fatty acids were the highest in SO and OO 600 MPa samples. Lipid oxidation was retarded by addition of olive oil combined with HP. The addition of olive oil and soy sauce followed by HP decreased the amount of volatile basic nitrogen during storage and reduced the population of pathogens. Sensory evaluation indicated that the addition of olive oil enhanced the overall acceptance and willingness to buy. In conclusion, the combination of HP with the addition of soy sauce and/or olive oil is an effective technology that can improve chemical, health, sensory qualities and safety of chicken breast.

Emulsion Mapping in Pork Meat Emulsion Systems with Various Lipid Types and Brown Rice Fiber

  • This study was conducted to evaluate emulsion mapping between emulsion stability and cooking yields, apparent viscosity, and hardness of reduced-fat pork emulsion systems. The reduced-fat emulsion systems were supplemented with different lipid types and brown rice bran fiber (BRF) concentrations. Compared to the control with 30% back fat, lower emulsion stability and higher cooking yield of meat emulsion systems were observed in T1 (30% back fat+1% BRF), T2 (30% back fat+2% BRF), T3 (30% back fat+3% BRF), T4 (30% back fat+6% BRF), and T15 (10% back fat+10% canola oil+2% BRF). Lower emulsion stability and higher apparent viscosity were observed in T1, T2, T3, T4, and T8 (20% back fat+3% BRF) compared to the control. Lower emulsion stability and higher hardness was detected in all treatments compared with the control, except T5 (20% back fat), T10 (10% back fat+10% canola oil+2% BRF), T11 (10% back fat+10% olive oil+2% BRF), T12 (10% back fat+10% grape seed oil+2% BRF), and T13 (10% back fat+10% soybean oil+2% BRF). This approach has been found particularly useful for highlighting differences among the emulsified properties in emulsion meat products. Thus, the results obtained with emulsion mapping are useful in making emulsified meat products of desired quality characteristics, partially replacing pork back fat with a mix of 10% back fat, 10% canola oil and 2% BRF was most similar to the control with 30% pork back fat.

  • The food service industry represents one of Korea's fastest-growing and most challenging areas of business but it is at the beginning of the industry. Italian cooking of the food service industry has a lot of merits but it is difficult to manage because of the shortage of domestic customers and the poor management of the industry. This research suggests the marketing strategies in order to systematize Italian food service satisfy the customers requirements and promote the sale of Italian food. The circulation structures should be simplified and systematized in order to enhance the quality of the food and lower the price. Italian food should be recognized as health food cooked with unsaturated fatty acid, olive oil. It is necessary that the Italian food for the Korea especially for the women and children be developed. The information about Italian food the advertisement of it should be structured because 13 percent of Italian food sale has dropped in the current environment.

한국인의 영양식이 상황에 관한 연구 (제 1보) -지방과 비타민 E- (Studies on Nutritional Status of Korean (Part I) -Lipid and Tocopherol-)

  • Seven day's menus consisting of the Korean traditional dietary patterns were prepared according to the Korean nutrition allowances per capital of whole population. After cooking foods one day's meal was collected, homogenized for one week. Nutrients in each day's meal were analysed. The results of this analysis are as follows ; Lipids contents were about 23% higher than the data obtained nationwide nutrition survey conducted in 1984. This suggests the increasing tendency of the fat the oil consumption . PUFA ratio in lipid was 35%, that the customary Korean cooking include high confirmiry amount of vegetable oils. Daily tocopherol intake was 8.3mg . This results is believed to as one reference to set up Korean R.D.A for tocopherol.

A Study of Cognitive Slips According to Contaminants on the Floor

  • Background: This research investigates the degrees of slipperiness felt by the participants who walk on contaminants applied to a floor surface to decide degrees of slipperiness for various contaminants. Methods: For the experiment, 30 participants walked on a floor to which six contaminants were applied. All participants took the analytic hierarchy process (AHP)-based slipperiness questionnaire survey for the six kinds of contaminants, and the results were compared with the coefficient of friction. Results: The results of slip risk from the AHP indicate that grease is the most slippery of the six contaminants, followed by diesel engine oil, hydraulic oil, cooking oil, water-soluble cutting oil, and water in a decreasing order of slipperiness. When the results of slip risk from the AHP are compared with the static coefficient of friction for each contaminant, the order of slip risk follows the same trend. Although the results of slip risk from the AHP coincide with the static coefficient of friction, further study would be needed to investigate this relationship. Conclusion: This study will contribute as reference material for future research on preventing industrial accidents that result in falls from high places due to slipping.

In Vitro Evidence of Anti-Inflammatory and Anti-Obesity Effects of Medium-Chain Fatty Acid-Diacylglycerols

  • Dietary approaches using structured lipids, including medium-chain fatty acids and diacylglycerols, have been adopted for the prevention of obesity-induced chronic inflammation. In an extension to previous studies, medium-chain fatty acid-diacylglycerol enriched dietary oil (MCDG) was prepared by interesterification of canola oil and medium-chain fatty acid-triacylglycerols. The consequent MCDG product was applied to RAW264.7 macrophages followed by the assessment of multiple inflammatory responses. Compared with conventionally used canola and olive oil controls, MCDG suppressed macrophage phagocytosis, as assessed by the uptake of microsphere beads. Furthermore, the production of IL-6 and $TNF-{\alpha}$, transcription of COX-2 and iNOS, and expression of CD80 on cell surfaces were downregulated by MCDG in LPS-stimulated macrophages. Subsequently, differentiated 3T3-L1 adipocytes were evaluated for proinflammatory cytokine production and lipid accumulation. IL-6 production was marginally affected and lipid accumulation was inhibited by MCDG. Taken together, these results suggest that MCDG has potential as an alternative oil for cooking in order to prevent obesity-induced inflammation.

A review on Camellia oleifera Abel.: A valuable material in food and medicine

  • This study aims to provide an overview of the research on the chemical composition, nutritional value, biological activities, and potential applications of Camellia oleifera seeds. Camellia oleifera Abel. (Theaceae) is a type of woody plant found in various regions, including China, Japan, India, and Southeast Asia. This plant is highly valued for its cooking oil, as the oil extracted from its seeds contains many unsaturated fatty acids (90%), mainly oleic acid (80%), and various biologically active compounds. Oil derived from C. oleifera seeds has been shown to possess numerous health benefits, such as reducing low-density lipoproteins cholesterol levels, preventing cardiovascular diseases and cancer, and regulating blood pressure. Apart from its oil, the seeds of C. oleifera also contain remarkable biological compounds that offer additional health advantages. Despite these promising attributes, C. oleifera has yet to be widely recognized as a potential source of raw materials for pharmaceutical purposes. This lack of popularity and awareness has hindered further exploration of its pharmaceutical benefits and other uses. Through this article, we hope everyone can better understand this plant and have more practical applications in the future.

Effects of Replacing Backfat with Fat Replacers and Olive Oil on the Quality Characteristics and Lipid Oxidation of Low-fat Sausage During Storage

  • Effects of replacing pork backfat with a combination (ICM) of isolated soy protein (ISP), carrageenan, and maltodextrin, or with ICM +olive oil, on the quality characteristics of sausages were investigated. Both treatments had lower fat content (p<0.05), but higher protein and moisture contents than the control (p<0.05). The fat content of low-fat sausage containing the ICM was increased on day 30 compared to day 1 and 15 (p<0.05), and that of ICM+olive oil was increased after day 15. The water holding capacity of ICM was lower than the control through day 30 (p<0.05). The ICM+olive oil had a lower cooking loss than ICM on day 1 and 15 (p<0.05). On day 1, the ICM had lower lightness and higher redness values than the control (p<0.05), and the ICM+olive oil had a higher yellowness value than the control and ICM (p<0.05). Both treatments presented higher hardness, cohesiveness, gumminess, and chewiness values than the control (p<0.05). The lipid oxidation values of both treatments were lower than the control on day 15 and 30 (p<0.05), and those were affected by the addition of olive oil. The ICM was rated higher for sensory color and overall acceptability than the ICM+olive oil (p<0.05).
