본 연구의 목적은 미국 소비자들의 육류 선택 요인과 동기를 분석하고 소비에 따른 궁극적인 가치를 분석하여 한식 육류 편의식품의 해외 시장 진출을 위한 마케팅 커뮤니케이션 전략수립에 있어 기초 자료를 제공하는 것이다. 이를 위해 육류 편의식품의 소비 실태를 조사하고 수단-목적 사슬을 이용한 소비자들의 육류 편의식품에 대한 가치를 측정하고 분석하였다. 첫째, 육류 편의식품의 소비 실태 조사 결과 선호하는 조리 형태는 구이가 가장 많았고 주로 친구나 부모님등 주변의 권유로 정보를 얻는 것으로 조사되었다. 주 구입처와 희망하는 구입처는 모두 슈퍼마켓이었으며 선호하는 프로모션 방법으로는 무료 시식행사가 가장 많은 것으로 조사되었다. 이를 통해 해외시장 진출 전략제품으로 구이 종류의 한식 육류 편의제품에 대한 가능성을 탐색할 수 있었고 한식 육류 편의제품에 대한 소비증진과 잠재소비자 확보를 위해서는 소비자들이 주로 육류 편의식품을 구입하는 슈퍼마켓이나 대형마트 등에서 무료 시식행사를 통한 제품에 대한 적극적인 홍보와 접근성 증대가 필요한 것으로 판단된다. 둘째, 육류 편의식품에 대한 가치 측정 결과 속성-혜택-가치의 연결 관계는 '맛'-'맛이 좋음'-'기쁨', '맛'-'맛이 좋음'-'행복함', '위생'-'질병이 없음'-'삶의 질', '영양'-'건강한 삶'-'삶의 질'의 순으로 나타났다. 이를 통해 소비자들은 육류 편의식품의 '맛에 대한 만족'을 통해 최종적으로 '기쁨과 행복'의 가치를 추구하고 '위생적이고 영양적인 면'은 소비자들의 '삶의 질'을 향상시키고자 하는 가치에 기여하는 것으로 나타났다. 본 연구의 한계점은 조사 대상자의 65.7%가 남성, 20대가 60.8%로 20대 남성에 편중되어 있어 성별과 연령별로 추구하는 가치가 반영되지 못하였을 것으로 사료된다. 이러한 점을 보완하여 추후 다양한 소비자 계층을 대상으로 소비자의 육류 편의제품에 대한 가치 측정이 수행된다면 보다 세분화된 제품의 개발 방향 및 마케팅 커뮤니케이션 전략을 마련할 수 있으리라 판단된다. 또한 향후 소비자의 가치 측정을 통한 한식의 육류 편의제품이 개발된다면 타깃 소비자층의 니즈를 반영하고 그들의 추구 가치를 충족시키기 위한 브랜드 아이덴티티 정립과 일관성 있는 메시지 전달을 통한 마케팅 커뮤니케이션 활동이 가능하리라 생각된다.
A Korean seasoned meat product, seasoned bulgogi was developed in processing and packaging for improved convenience and extended shelf life. The optimal process conditions were found to consist of aging for $20{\sim}30$ hours at $5^{\circ}C$ and air heating for 20 minutes at $210^{\circ}C$ Aging of 24 hours could attain soft texture with little change in pH, color and total aerobic bacterial count. Appropriate drip level could be achieved at air heating of 20 minutes at $210^{\circ}C$, while the air heating at $180^{\circ}C$ could not give suitable level of texture. Modified atmosphere packaging of 60% $CO_2$ and 40% $N_2$ could preserve the product significantly better compared to control of air package and vacuumed package.
Processed meat products play a vital role in our daily dietary intake due to their rich protein content and the inherent convenience they offer. However, they often contain synthetic additives and ingredients that may pose health risks when taken excessively. This review explores strategies to improve meat product quality, focusing on three key approaches: substituting synthetic additives, reducing the ingredients potentially harmful when overconsumed like salt and animal fat, and boosting nutritional value. To replace synthetic additives, natural sources like celery and beet powders, as well as atmospheric cold plasma treatment, have been considered. However, for phosphates, the use of organic alternatives is limited due to the low phosphate content in natural substances. Thus, dietary fiber has been used to replicate phosphate functions by enhancing water retention and emulsion stability in meat products. Reducing the excessive salt and animal fat has garnered attention. Plant polysaccharides interact with water, fat, and proteins, improving gel formation and water retention, and enabling the development of low-salt and low-fat products. Replacing saturated fats with vegetable oils is also an option, but it requires techniques like Pickering emulsion or encapsulation to maintain product quality. These strategies aim to reduce or replace synthetic additives and ingredients that can potentially harm health. Dietary fiber offers numerous health benefits, including gut health improvement, calorie reduction, and blood glucose and lipid level regulation. Natural plant extracts not only enhance oxidative stability but also reduce potential carcinogens as antioxidants. Controlling protein and lipid bioavailability is also considered, especially for specific consumer groups like infants, the elderly, and individuals engaged in physical training with dietary management. Future research should explore the full potential of dietary fiber, encompassing synthetic additive substitution, salt and animal fat reduction, and nutritional enhancement. Additionally, optimal sources and dosages of polysaccharides should be determined, considering their distinct properties in interactions with water, proteins, and fats. This holistic approach holds promise for improving meat product quality with minimal processing.
Restructuring had made it possible to utilize lower value cuts and meat trimmings from spent animals by providing convenience in product preparation besides enhancing tenderness, palatability and value. Milk co-precipitates (MCP) have been reported to improve the nutritional and functional properties of certain meat products. This study was undertaken to evaluate the influence of incorporation of milk co-precipitates at four different levels viz. 0, 10, 15 and 20% on the quality of restructured buffalo meat blocks. Low-calcium milk co-precipitates were prepared from skim milk by heat and salt coagulation of milk proteins. Meat chunks were mixed with the curing ingredients and chilled water in a Hobart mixer for 5 minutes, followed by addition of milk co-precipitates along with condiments and spice mix and again mixed for 5 minutes. Treated chunks were stuffed in aluminium moulds and cooked in steam without pressure for 1.5 h. After cooking, treated meat blocks were compared for different physico-chemical and sensory attributes. Meat blocks incorporated with 10% MCP were significantly better (p<0.05) than those incorporated with 0, 15 and 20% MCP in cooking yield, percent shrinkage and moisture retention. Sensory scores were also marginally higher for meat blocks incorporated with 10% MCP than product incorporated with 15 and 20% MCP, besides being significantly higher than control. On the basis of above results 10% MCP was considered optimum for the preparation of restructured buffalo meat blocks. Instrumental texture profile analysis revealed that meat blocks incorporated with 10% MCP were significantly better (p<0.05) in hardness/ firmness than control although, no significant (p>0.05) differences were observed in cohesiveness, springiness, gumminess and chewiness of both type of samples.
In this study the perception and consumption of processed meat products by students in food service schools was investigated. The total number of subjects in Seoul and Gangwon province used for this survey was 569. The most preferred processed meat product for students was the fried pork cutlet(17.7%), followed by bacon(11.4%), ham(7.9%) and sausage(7.6%). The main reasons for the consumption of these processed meat products were 'good taste'(52.5%), 'convenience in eating'(18.8%) and 'as the parent buy'(18.8%). The preference for the processed meat products had a relatively high perception value(4.0). However, the effect of consuming processed meat products on nutrition and health had a relatively low perception value(2.9). Reasons for distrusting the processed meat products were attributed to 'bad influence by media'(25.9%) and the 'unsanitary manufacture'(23.6%). In regards to the question about sodium nitrite, most of the students(56.2%) replied that they had 'never heard of it' or 'didn't know it well'. In conclusion, an improvement in public information would be a prerequisite for expanding wholesome use of processed meat products.
In most developing countries consumers purchase retail cuts from hot carcasses and prepare traditional meat products as per their convenience and requirements. In this study, effects of different post mortem handling practices on quality of meat curry from culled sheep meat have been studied. After slaughter, leg cuts were subjected to nine commonly prevalent handling conditions in India viz. deboning (boning out) and cooking within 2-3 h (1), deboning immediately and cooking after 5-6 h (2), deboning after 5-6 h and cooking (3), deboning immediately, storage at $4^{\circ}C$ for 24 h and cooking (4), chilling for 24 h at $4^{\circ}C$, deboning and cooking (5), deboning after 5-6 h, storage for 24 h at $4^{\circ}C$, and cooking (6), deboning after 5-6 h, storage for 48 h at 4??C and cooking (7), deboning after 5-6 h, freezing and cooking (8), deboning after 5-6 h, storage for 24 h at $4^{\circ}C$, freezing and cooking (9). Significant differences were observed in pH, water-holding capacity, cooking loss and shear force values. Sensory scores were significantly higher in conditions (1), (5) and (9), and significantly lower in conditions (4) and (6). From the results, it was concluded that, to have the best quality product, meat should be cooked either immediately after slaughter or should be deboned just before cooking. Storage of deboned meat at refrigerated temperature must be avoided.
The objectives of this study were to provide the basic data for the consumer education and for the new product development by surveying housewives'demands concerning prepared frozen or refrigerated foods and by surveying industry's practices and opinions concerning new product development. 804 housewives and 14 manufacturing companies of prepared frozen or refrigerated foods were surveyed. Data from housewives were analyzed by using SPSS-X progrm in terms of $x^2$-test, one-way ANOVA, t-test. The results of study are summarized as follows : 1. Frozen dumpling, frozen meat, surimi, ham and sausage were identifed as the most frequently used food items by housewives. The mean storage period for either prepared frozen or refrigerated foods was less than 15 days. 2. Housewives with higher educational background showed the greater concerns in packing and sanitary conditions, convenience in cooking procedures and brand name of the product than their counterparts. 3. Most housewives'purchasing motive for prepared frozen or refrigerated foods was the convenience of the cooking procedures(71.1%). Among the member of family, children(72.8%) specially liked prepared frozen or refrigerated foods. 4. Housewives'demands for prepared frozen or refrigerated foods were 'price reduction'and 'nutrition fortification'. These were in accordance with the companys'opimons. 5. Most wanting new product developments from the housewives perspectives were beverages (37.7%), stir-fried menu items(36.1%), pan-fried menu items(34.0%), stewed menu items(30.3%) and soups(20.4%). In case of stew and soups, the industry did not have a plan to develop those menu items.
정어리육을 원료로 한 대중적 소비성향의 대량 소비를 할 수 있는 식품의 중간 소재를 개발할 목적으로 정어리의 연육가공방법과 연육의 성상과 이를 소재로 한 제품의 물성에 관여하는 원료의 선도, 세척방법, 첨가물, 저장조건 등 여러가지 가공조건의 최적화를 검토하였다. 그 결과는 다음과 같이 요약된다. 1. 정어리육의 단백질은 저온에 저장하여 선도를 유지하여도 급격히 불용화하여 제품의 탄력과 물성도 매우 저하하였다. 원료정어리의 저장온도가 $5^{\circ}C$인 경우는 3일이내에 $-20^{\circ}C$의 경우는 20일 이내에 연육의 탄력형성능이 한계에 도달하였다. 2. 연육의 세척에 의한 수용성단백질의 제거와 염용성단백질의 안정화 효과는 세척회수($3{\sim}6$회)에 따른 큰 차는 없이 $3{\sim}4$회의 세척으로 충분하였는데 세칙방법별로는 수세, 알카리세척 및 산용액 세척의 경우 수용성단백질의 제거가 각각 $32\%,\;80\%,\;75\%$로 알카리세척이 보다 효과적이였고 제품의 물성도 좋았으며 지방의 제거는 세가지 경우 모두 $50{\sim}60\%$였다. 3. 정어리연육 저장중의 단백질 안정화와 연육의 탄력형성능의 보존을 위하여 중합인산염과 sorbitol의 첨가효과를 검토하였는데 연육을 $-30^{\circ}C$ 저장하였을 경우 이들의 첨가비에 따라 즉 인산염과 sorbitol이 $0.3\%$와 $3\%$일 때 35일, $0.6\%$와 $3\%$일 때 28일, $0.6\%$와 $6\%$일 때 21일, sorbitol 단독 $3\%$와 인산염 단독 $0.3\%$일 때는 각각 14일, 무첨가의 대조시료는 7일 이내에 탄력형성 굴곡시험 A에 도달하였고, 연제품의 물성도 저하하셨다. 이때 연육의 탄력형성의 한계와 염용성단백질의 함량간에는 밀접한 관계가 있어 염용성단백질소 함량 8.0mg/g가 경계였다. 4. 세척과정에서 유실된 지방을 보충하여 지방함량 $5\%,\;7\%$ 되도록 하였을 때, 연제품의 탄력성과 물성에는 큰 변화가 없었다.
닭고기 및 계란에 대한 소비자의 일반적인 행태조사 결과는 다음과 같다. 1. 닭고기(1) 조사자의 88%이상이 월 1회 이상 닭고기를 구입하고 있으며 과반수가 1∼2마리를 구입하고 있다. (2) 가정소비는 대닭, 중닭이 주를 이루고 있다. (3) 조사자 67.1%가 무게를 달아서 닭고기를 구매하고 있으며 점차 공정한 거래가 이루어지고 있다. (4) 주로 닭집에서 구입하고 있으며 유통의 냉장화 (cold chain)가 이루어지고 있다. 열 가까운 곳. 단골, 위생적인 곳에서 주로 구입하고 있다. (6) 포장, 냉장화, 부위별 판매 등의 요구가 높아지고 있다. (7) 값이 싸서 보다는 좋아하거나 식성이 맞아서 잘먹는 것으로 나타나고 있어 소비확대 가능성은 크다. (8) 닭고기를 안 먹는 이유로 냄새, 영리불편을 꼽을 수 있는데 간편한 새로운 요리법개발(fast food 등)이 요구된다. (9) 부위별 선호도는 다리살, 날개, 가슴살의 순서이며 월등하게 다리살을 좋아한다. (10) 여름철 편중된 닭고기 소비는 계절소비성향이 크므로 산업발전에 저해요인으로 나타났다. (11) 집에서, 튀김집, 야외소풍 등의 순서로 많이 소비되고 있으며 가정소비는 점차 줄고있는 추세이다. (12) 영리방법은 튀김, 삼계탕이 주이고 자라나는 세대에서 닭고기 튀김요리에 대한 기호도가 높다(여고생 61, 1%). 2 계란 (1) 1인당 월간소비는_대다수가 10∼20개이다. (2) 계란구입액은 판떼기 (30개) 66.2%로 현저히 높으며 20개 단위 14.6%. 10개 단위 9.8%로 나타났다. (3) 소비자들은 앞으로 포장난 유통을 희망하며 유통단위는 소포장의 10개 단위를 바라고 있다. (4) 계란크기의 선호도는 중란, 대란, 특란, 왕란의 순으로 소비자의 선호도가 바뀌고 있다. (5) 거래시 계란등급은 거래상점을 믿고 있다. (6) 계란은 주로 계란 도ㆍ소매상에서 구입하고 계란 값이 싼곳 보다는 가깝고 편리한 곳에서 구입한다. (7) 계란품질에 대하여 대체로 믿고 구입하고 있으나 일부(24.8%)는 불결하거나 신선치 못하다는 느낌을 갖고 있다. (8) 난각색에 따라 영양적 차이가 없는데도 불구하고 갈색난을 선호하고 있으며 영양적 가치에 차이가 없다는 인식률이 높다. (9) 계란은 어린이들이 가장 좋아하고 중ㆍ고생, 청년, 미부, 노인의 순으로 선호하고 있다. (10) 소비는 대체로 일정하며 계절에 관계없이 소비되고 있다. (11) 계란기피 이유 중 Cholesterol 때문에 22.0%, 요리방법을 몰라서 12.1%,특이체질 등 몸에 맞지 않아 8.6%, 맛이 없어서 7.5%의 순으로 나타났다. (12) 가정에서는 55.4%가 식사반찬으로 다음이 도시락반찬으로 38.3%를 소비한다. (13) 후라이, 카스테라빵, 오무라이스덮밥, 샌드위치, 토스트, 반숙의 순으로 요리해 먹고있다. (14) 현행 가격이 대체로 적당하다 54.1 %, 싸다 25.6%, 비싸다 9.3%의 순으로 영양에 비해 싼 식품으로 인식되고 있다. (15) 가계소득이 더 증가해도 현재대로 구입하겠다 61.6 %, 더 많이 구입하겠다 29.9%로 나타났다.
Objectives: This study examined the perception of the vegan trend of millennials and their future needs. Methods: This study was conducted online from June 21, 2021, to July 15, 2021, targeting 425 adult men and women born between 1980 and 2000. The contents of the survey were divided into four categories: general information, awareness of vegetables, awareness of vegan trends, and future needs for vegan trends. Results: Most respondents recognized the importance of eating vegetables and perceived vegetarianism and veganism as a lifestyle. Regarding the perception of the vegan trend, the highest response rate was 'The vegan trend is to be satisfied with my life regardless of other people', while the lowest response rate was 'The vegan trend is only a temporary fad'. The reasons for purchasing vegan products with high response rates were 'interest in the earth and environment', 'protection of animal rights', and 'thinking about health'. The type of vegan product wanted in the future was delicious food, and convenience level was in the order of 'completely cooked', 'half-cooked', and 'pre-processed'. Among the sustainable vegetarian types that millennials responded, 'semi-vegetarian', which can consume most animal products excluding red meat, showed the highest response rate. Conclusions: The positive perceptions about vegetables are expected to increase. Efforts should be made to develop convenient meals using vegetables and provide reasonable prices to expand vegetable intake.

일시정지, 이용계약 해지 할 수 있습니다.
제 17 조 (전자우편주소 수집 금지)
회원은 전자우편주소 추출기 등을 이용하여 전자우편주소를 수집 또는 제3자에게 제공할 수 없습니다.
제 6 장 손해배상 및 기타사항
제 18 조 (손해배상)
당 사이트는 무료로 제공되는 서비스와 관련하여 회원에게 어떠한 손해가 발생하더라도 당 사이트가 고의 또는 과실로 인한 손해발생을 제외하고는 이에 대하여 책임을 부담하지 아니합니다.
제 19 조 (관할 법원)
서비스 이용으로 발생한 분쟁에 대해 소송이 제기되는 경우 민사 소송법상의 관할 법원에 제기합니다.

1. (시행일) 이 약관은 2016년 9월 5일부터 적용되며, 종전 약관은 본 약관으로 대체되며, 개정된 약관의 적용일 이전 가입자도 개정된 약관의 적용을 받습니다.
