소비자의 식단 요구도 분석을 통한 쌀빵의 학교급식 적용 가능성 분석 (Possibility Analysis of a Rice Based Bread by Analyzing Customers' Needs of Menus for School Foodservice)

  • School foodservice customers are likely to be tired of repeated cycle menus and their satisfaction for meals offered in school is inclined to be low. The menu variety is an important factor in increasing customer satisfaction. The purpose of this study was to investigate customer perspectives for applying rice based bread menus in order to add menu variety and promote using rice processed products in school foodservice. The questionnaire was distributed to 760 parent samples in elementary schools and 520 student samples in middle/high schools and a total of 665 and 387 usable data were collected, respectively. Food habits such as preference for cooking method, menu preference, food allergy and nutritional perspectives for menu and customer perception for rice based bread like quality, reliability, price, and purchasing convenience were investigated using 7 Likert scale. Also expected menu types applying rice based bread and offering frequency of rice bread menu were examined. Preference level for bread-based meals were moderate and students' preferences were slightly higher than parents. Menu types applying rice bread expected by middle/high school students were western food (49.4%), spaghetti (28.4%), set menu (13.7%), noodle (17.6%), Korean food (11.1%), Chinese food (10.9%) and porridge (4.5%). The most occupied rate was once in a week for expected offering frequency. Most respondents perceived that rice bread was more nutritive and qualitative than the wheat based one.

부산광역시 외국인 유학생의 거주기간에 따른 한국 식생활 적응 및 교내급식 만족도 조사 (A Study on the Adaptation to Korean Food and Satisfaction with University Foodservice by Residence Period of International Students in Busan)

  • This study was conducted to investigate the dietary adaptation and use of the university foodservice (UF) in Korea according to the residence period of foreign students. The average length of residence in Korea of t he subjects was 8.2 months. The period of residence was divided into quartiles: 1-4 months in the first quartile (average 2.2 months), 5-7 months in the second quartile (average 6.3 months), 8 months in the third quartile, and 9-66 months in the fourth quartile (average 18.3 months). The regularity of meals tended to be the highest in the 1st quartile and lowest in the 2nd quartile and then increased in the 3rd and 4th quartiles. The frequency of consumption of delivery food and convenience store food was lowest in the first quartile and highest in the second quartile and then decreased with the period of residence. The frequency of night eating increased according to the period of residence after the second quartile. The degree of adaptation to Korean foods was highest in the first quartile. The use of the university cafeteria was significantly higher in the 1st and 4th quartiles than in the 2nd and 3rd quartiles (p<0.05, p<0.01, respectively). The satisfaction with the UF decreased as the residence period increased. Based on these results, since international students are very positive and try to adapt to the dietary life in Korea in their early years of studying in Korea, it would be desirable to intensively support them to adjust to their dietary life at this time. In addition, since it takes about 18 months or more to assimilate the Korean food culture and show positive changes, it is necessary to continuously operate the Korean food culture adaptation program for international students over this period.

부천 지역 주부의 식문화 의식과 가사행동과의 관계 (Relationship Between Dietary Consciousness of Housewives and Their Attitude of Households - in Puchon City -)

  • The purpose of this study was to investigate the understanding of dietary consciousness and define the relationship of housewife attitude of middle class residence in Puchon city. Questionnaires were collected 282 housewives in Puchon city. Data were analysed with SAS software package for F-test and Duncan's multiple range test. The main findings of the research were as follows: The food related perchasing place was supermarket(91%), ordinary market(77%), department store(68%), special store(58%), common purchase(37%), convenience store(22%) and communication marketing(13%). The clothing perchasing place showed in the order of department store(71%), special store(65%), ordinary market(52%), common purchase(23%), supermarket(18%), convenience store(15%) and communication marketing(10%). Dietary cosciousness of housewife on foods, clothing, and housing related items was significantly different, specially 20's housewife was concerned about foods and 30's housewife was housing(p<0.05). The behavior consciousness of housewife was significantly different between age, education level, family type and income(p<0.05). Highly educated housewife showed a tendency to spend money and times for food related fields, and to buy clothes in a department store for breaking stress(p<0.05). However, low education level and extended family type housewife got more conservative consciousness on traditional fermented food making(p<0.05). Most of young housewife answered that the making of bread, cookies, soybean paste soup, children clothes and handicraft led to positive consciousness(p<0.05). Especially high life satisfaction housewife preferred to make a dosirak(lunch box), dinner, children clothes and handicraft(p<0.05).

위탁급식사와 고객사 간의 관계특성이 관계의 질과 장기지향성에 미치는 영향 (A Study on the Effects of The Relationship Characteristics Between Contracted Foodservice Companies and Its Client Companies to Relationship Quality and Long-Term Orientation)

  • The objective of this study was to examine the effects of relationships between food service companies and their client companies by surveying employees working at cafeterias among a food service companies' client companies. For this purpose, previous research was reviewed, and confirmatory research was conducted using a questionnaire. In the questionnaire survey, the subjects were sampled through convenience sampling from the client companies of A Food Service Company, and 182 valid questionnaires were used in the analysis. The results of this study are summarized as follows. First, the characteristics of the relationship between the food service company and its client companies, which were reputation, communication, operation skill, and contact-point employees' service quality, had a significant effect on trust, and the effect was high in the order of contact-point employees' service quality, communication, operation skill, and reputation. Satisfaction was significantly affected by reputation, operation skill, and contact-point employee' service quality, but not by communication. The effect was high in the order of contact-point employees' service quality, reputation, and operation skill. In addition, reputation, communication, operation skill, and contact-point employees' service quality had a significant effect on long-term orientation, and the effects were high in the order of reputation, contact-point employees' service quality, communication, and operation skill. Second, with regard to the quality of relationships between a food service company and its client companies, trust had a significant effect on satisfaction. Third, among the factors related to the quality of relationships between the food service company and its client companies, trust and satisfaction had a significant effect on long-term orientation, and the effect of satisfaction was higher than that of trust. This study has scientific significance as one of only a few studies on factors affecting the long-term relationship between food service companies and their client companies, along with managerial implications that contact-point employees' capabilities are most important in service businesses, and thus efforts should be made at employing and educating them properly.

중국인 유학생의 외식 만족도에 영향을 주는 요인 분석 (Analysis on Factors Influencing Foreign Chinese Students' Off-Campus Restaurant Satisfaction)

  • 중국인 유학생 대상 외식업소의 음식과 서비스 품질 개선 방안과 마케팅 전략 수립을 위한 기초자료를 제공하고자 경북지역 4년제 대학교에 재학 중인 중국인 유학생을 대상으로 외식 선택속성에 대한 중요도와 만족도를 평가하고 외식 선택속성 요인이 전체적인 만족도에 미치는 영향을 SPSS 통계 프로그램을 이용하여 분석한 결과, 외식 선택 속성에 대한 중요도 평가 결과 음식의 위생(6.33점), 음식의 신선도(6.25점), 음식의 맛(6.09점)의 순 으로 높았고, 만족도 평가 결과 음식의 맛(5.70점), 음식의 온도(5.46점), 음식의 신선도(5.45점) 순으로 높았다. 또한 IPA 결과, 평균 점수에 비해 중요도는 높으나 만족도는 낮아 우선적으로 개선이 필요하다고 평가된 항목은 '종사원의 친절도', '음식의 적정 가격', '식당의 환기상태' 등이었다. 그리고 외식 선택속성에 대한 요인 분석 결과 5개 요인이 추출되었고, 외식에 대한 전체적인 만족도와 5개의 외식 선택속성 요인간의 상관관계 분석 결과 모든 항목에서 유의적인 정(+)의 상관관계를 나타냈다(p<0.01). 또한 외식 선택속성 요인이 외식에 대한 전체적인 만족도에 미치는 영향을 살펴보고자 다중회귀분석을 실시한 결과 '음식의 질과 가격', '물리적 환경과 가치', '서비스 환경', '서비스의 질' 등 총 4개 요인이 전체적인 만족도에 유의적인 영향을 주는 것으로 분석되었다. 따라서 중국인 유학생 고객의 외식 만족도 향상을 위해서는 음식과 서비스의 질 개선 뿐만 아니라 물리적 환경과 서 비스 환경의 개선이 필요하다고 판단된다.

부산지역 외국인 유학생의 식습관 및 한국 식생활 적응 실태 연구 (Study of the Dietary Behaviors and Adaptation for Korean Foods among International Students in Busan)

  • Despite the rapid increase in the number of foreign students, there has been a lack of research to help them adapt to Korean food culture and develop healthy eating habits. This study examined the dietary habits and problems of foreign students studying in universities of Korea. Although 97.0% of the 604 people surveyed live in dormitories, the visiting rate of the school cafeteria was low. In addition, only 30.2% of them ate three meals a day, and the frequency of eating midnight snack and convenience store foods was high. International students were positive about experiencing new Korean food, but food satisfaction in Korea was not high because of the difficulties in food selection due to religious problems and maladjustment to Korean sauces and seasonings. Information on Korean eating habits was obtained mainly from other foreign students from the same country (49.5%) and the Internet (33.8%), and there was very little interaction with Korean students at meals. The ratio of subjects who ate halal foods was 33.3%, and they were shown to have difficulty obtaining halal foods in Korea. Therefore, based on the results of this study, a support program should be developed in order to improve the dietary habits of international students.

RMR(레스토랑간편식) 상품의 선택속성이 브랜드이미지, 만족도에 미치는 영향 (Effect of Restaurant Meal Replacement Product Selection Attributes on Brand Image and Satisfaction)

  • 본 연구는 최근 외식 소비자의 RMR 상품에 대한 관심과 이용 빈도가 상승함에 따라 RMR(레스토랑간편식)상품 선택속성의 요인과 브랜드이미지, 만족도 간의 영향관계를 규명하고자 하였으며, 외식기업 및 레스토랑에서 출시 된 RMR상품 이용경험이 있는 소비자를 대상으로 편의표본추출을 사용하였다. 조사기간은 2020년 8월 10일부터 약 20일간 진행되었으며, 최종 291부를 분석에 사용하였고, 가설 검증을 위해 SPSS 21.0 통계 패키지 프로그램을 이용하였다. 분석결과 가설1의 위생(��=.160), 메뉴(��=.203), 포장(��=.291)은 신뢰성에 유의한 영향이 있었고, 가설2의 메뉴(��=.270) 편의성(��=.201), 포장(��=.195)은 차별성에 유의한 영향이 있는 것으로 나타났다. 가설3의 브랜드 이미지의 중 신뢰성(��=.328)과 차별성(��=.443)은 만족도(��=.428)에 유의한 영향을 미치는 것으로 나타났으며, 가설4의 위생(��=.388) 메뉴(��=.229), 편의성(��=.243)은 만족도에 유의한 영향이 있는 것으로 분석되었다. 마지막으로 본 연구를 통해 RMR 상품 관련 기초 연구 자료로 제공되길 기대하고 외식기업 및 레스토랑의 RMR 상품개발에 방향성 제시와 마케팅의 활용 할 수 있는 이론적 근거로 제시하고자 한다.

HMR 밀키트 상품의 선택속성이 소비자만족 및 타인추천의도에 미치는 영향 (Effect of HMR Meal Kit Product Selection Attributes on Consumers Satisfaction and Other Recommendation Intention)

  • 본 연구는 언택트 시대의 외식 트랜드에 따라 소비자의 관심과 수요가 계속적으로 증가하고 있는 밀키트 상품에 대해 실증분석 연구를 시도 하였다. 또한 HMR 밀키트 상품 선택속성의 요인과 소비자만족, 타인추천의도 간의 영향관계를 규명하고자 하였으며, 외식기업 및 스타트업 기업에서 출시 된 밀키트 상품 이용경험이 있는 소비자를 대상으로 편의표본추출을 사용하였다. 조사기간은 2020년 7월 01일 부터 약 1달간 진행되었으며, 최종 285부를 분석에 사용하였고, 가설 검증을 위해 SPSS 21.0 통계패키지 프로그램을 이용하였다. 분석 결과 가설1의 가격(β=.241), 편리성(β=.317), 다양성(β=.191)은 소비자만족에 유의한 영향이 있었고 가격(β=.482)과 편리성(β=.133), 다양성(β=.342)은 타인추천의도에 유의한 영향이 있는 것으로 나타났으며, 가설3의 소비자만족(β=.443)이 타인추천의도에 유의한 영향이 있는 것으로 분석되었다. 마지막으로 본 연구를 통해 밀키트 상품 관련 기초 연구 자료로 제공되길 기대하고 외식기업 및 레스토랑의 밀키트 상품개발에 방향성 제시와 마케팅의 활용 할 수 있는 이론적 근거로 제시하고자 한다.

외식서비스기업의 물리적 환경이 고객이 인지한 서비스품질, 메뉴품질, 고객만족에 미치는 영향 (A Study on the Effects of Physical Environment on the Perceived Service Quality, Menu Quality and Customer Satisfaction)

  • 본 연구의 목적은 서비스기업의 물리적 환경이 고객이 경험하고 소비하게 되는 서비스상품과 메뉴품질지각에 어떠한 영향을 미치는지 그리고 고객태도에 어떠한 영향을 미치는지를 확인하는 것이다. 연구목적을 달성하기 위해 물리적 환경, 서비스품질, 메뉴품질 그리고 고객만족에 관하여 이론적 고찰을 실시하였으며, 가설검증을 위해 실증 조사 분석을 실시하였다. 분석결과는 다음과 같다. 1) 서비스기업의 물리적 환경은 매력도, 청결도, 주변요소, 공간 및 편리성요인으로 확인되었다. 2) 물리적 환경요인 중 매력도, 청결도, 주변요소 요인은 고객이 지각하는 서비스품질에 유의한 영향을 미치는 것으로 나타났다. 3) 물리적 환경요인 중 매력도, 청결도, 주변요소 요인은 고객이 지각하는 메뉴품질에 유의한 영향을 미치는 것으로 나타났다. 3) 고객이 지각한 서비스품질은 메뉴품질에 유의한 영향을 미치는 것으로 나타났다. 4) 고객이 지각하는 서비스품질과 메뉴품질은 고객만족에 유의한 영향을 미치는 것으로 나타났다.

한국과 일본여성의 식문화 의식과 전통식품 소비실태 비교 연구 (A Comparative Study on the Dietary Culture Consciousness and Their Consumption Attitude of Traditional Foods between Korean and Japanese Women)

  • We conducted a survey on Japanese women's consciousness of food culture and their traditional food consumption by self filling-out questionnaire during January, 2000 for the period of a month, For the survey we selected 250 women residing in Kyoto, Japan. For the statistic work we used SAS package system, and t-test, $\cal{X}^2-test$ and Duncan's multiple range test were also used to verify the results significance. The purpose of this survey lies in gathering a basic data on the comparative direction of Korean and Japanese women's food culture in the future 1. Comparing the preferred food purchase place, In case of Korean women, traditional market was comparatively more preferred while Japanese women relatively preferred convenience store (p<0.001). 2. In case of Japanese women, they answered there is no difference from ordinary days on New Year's Day (71%) and Christmas (40%) while 38% answered they prepare food at home. 40% said they prepare food on parents-in-law's birthday, and 41% said no difference from ordinary days. 52% said they prepare food at home on husband's birthday. For their own birthday, 32% said yes to preparing food at home while 45% said no difference and 22.3% said eating out. For children's birthday 65% said preparing at home, 16.3% said no difference and 14.9% said eating out. 3. Comparing the conception on traditional food, Korean women answered 'complicated' (77%) most while 'simple' (5%) least, which indicates their demands for simplified recipes. In case of Japanese women, 'complicated' (44%) was most while 'scientific' (6%) was least which indicates their demands for scientific way of recipes. There were differences shown by age (p<0.001) and the older the more said 'simple' or 'logical' (p<0.01). 4. As the reason for the complicity of traditional food recipes, Koreans said 'too many hand skill' (60%) most while 'too many spices' (8%) least. For Japanese, 'various kind of the recipe' (55%) was most while 'too many hand skill' (7%) was least. There were significant differences shown by academic background (p<0.01) and income(p<0.01), and the lower the academic background, the more said 'too many spices' as the reason for the complicity in making traditional food. Generally, the lesser the income, the more tendency to say 'various kinds of the recipe'. 5. In case of Koreans, 'the recipe is difficult' (56%) was high while 'uninterested' (9%) was low in answer which showed differences by academic background (p<0.05), and in case of Japanese, 'no time to cook' (44%) was high while 'uninterested' (7%) was low. 6. The following is the reasons for choosing traditional food as a snack for children. In case of Koreans, they answered as 'traditional food' (34%), 'made from nutrious and quality materials' (27%), 'for education' (22%) and 'suites their taste' (17%) revealing 'traditional food' is highest. In case of Japanese, it was revealed in the order of 'made from nutrious and quality materials' (36.3%), 'traditional food' (25.2%), 'suites their taste' (22.6%), 'for education' (12.8%) and 7. Comparing the most important thing for the popularization of traditional food in the world, Koreans answered 'taste and nutrition' (45%) most while 'shape and color' (6%) least. In case of Japanese, 'taste and nutrition' (75%) was answered most while 'hygienic packaging' (4%) was least. Both considered 'taste and nutrition' as most important thing for the popularization of traditional food in the world. 8. In case of Koreans, they answered they learn how to make traditional food 'from mother' (47%), 'media' (18%), 'school' (15%), 'from mother-in-law' (14%), 'private cooking school' (4%) and 'close acquaintances' (2%). In case of Japanese, they said mostly learn 'from mother', but it was also shown that the lower the academic background the lesser the tendency of learning 'from mother' but 'from school' (p<0.001). 9. About the consumption of traditional fermented food, Koreans said they make kimchi (90%), pickled vegetables (39%), soy sauce (33%), bean paste (38%), salted fishery (12%) and traditional liquors (14%) at home while 67% for salted fishery and 48% for traditional liquors answered they buy rather than making at home. On the other hand, Japanese answered they mostly buy kimchi (60%), soy sauce (96%), bean paste(91%), natto(92%), salt fermented fish foods (77%) and traditional alcoholic beverage (88%) to eat. This difference was shown very distinct between Korean and Japanese women (p<0.001). 10. About the most important thing in food, Koreans answered in the order of 'liking and satisfaction' (33%), 'for health' (32%), 'for relieve hunger' (18%) and 'convenience' (17%). In case of Japanese, it was revealed in the order of 'for health' (61%), 'liking and satisfaction' (20%), 'to relieve hunger' (16%) and 'convenience' (3%). This shows that Japanese women take comparably more importance to health than Korean women. The conception of food was shown different between Korean and Japanese women (p<0.001), and Koreans showed level 4-5 of food culture while Japanese showed level 5.
