Effects of Adding Oyster Crassostrea gigas Shell Powder on the Food Quality of Chinese Cabbage Kimchi (굴(Crassostrea gigas) 패각 분말 첨가에 의한 배추김치의 식품학적 품질 변화)

  • This study investigated the effects of adding oyster shell powder (OSP) from Crassostrea gigas on the food quality of Chinese cabbage Kimchi (CCK). We monitored the changes in microbial levels, pH, acidity and sensory evaluation during the fermentation of CCK treated with various contents of OSP. The microbial assay showed that adding OSP to CCK inhibited the growth of viable cells, total coliforms, and lactic acid bacteria, with the greatest growth inhibition against lactic acid bacteria over the fermentation period. After fermentation for 18 days, the lactic acid bacterial counts in CCK treated with OSP (0.3%, 0.5% and 1%) were at least 1 log CFU/g lower than those of control CCK. In addition, the pH and acidity of CCK treated with OSP were lower than in control CCK over the fermentation period. The overall sensory evaluation of CCK with 0.3% OSP was better than that of control CCK after fermentation for 24 days. In conclusion, OSP treatment, especially 0.3% OSP, enhances the food quality and extends the self-life of CCK, while minimizing the detrimental effects on its sensory characteristics.

  • In this paper, we consider the aortic sinus baroreceptor, which is the most representative baroreceptors sensing the variance of pressure in the cardiovascular system(CVS), and propose heart activity control model to observe the effect of delay time in heart period and stroke volume under the regulation of baroreflex in arotic sinus. The proposed heart activity baroreflex regulation model contains CVS electric circuit sub-model, baroreflex regulation sub-model and time delay sub-model. In these models, applied electric circuit sub-model is researched by B.C.Choi and the baroreflex regulation sub-model transforms the input, the arotic pressure of CVS electric circuit sub-model, to outputs, heart period and stroke volume by mathematical nonlinear feedback. We constituted the time delay sub-model to observe sensitivity of heart activity baroreflex regulation model by using the variable value to represent the control signal transmission time from the output of baroreflex regulation model to efferent nerve through central nervous system. The simulation object of this model is to observe variability of the CVS by variable value in time delay sub-model. As simulation results, we observe three patterns of CVS variability by the time delay. First, if the time delay is over 2.5 sec, arotic pressure, stroke volume and heart rate is observed nonperiodically and irregularly. Second, if the time delay is from between 0.1 sec and 0.25 sec, the regular oscillation is observed. Finally, if time delay is under 0.1 sec, then heart rate and arotic pressure-heart rate trajectory is maintained in stable state.

Effects of Brewer's spent grain (BSG) on larval growth of mealworms, Tenebrio molitor (Coleoptera: Tenebrionidae)

  • Mealworms, Tenebrio molitor (Coleoptera: Tenebrionidae), are widely used as food sourcefor animal rearing as well as human diet. Conventionally, mealworms raised on wheat bran. In this study, we investigated the effects of brewer's spent grain (BSG) on the growth of mealworm larvae to reduce the rearing cost. We prepared five different diets with various BSG content, 0, 10, 30, 50, and 70% of heated air dried BSG with wheat bran. We compared survivorship, larval weight, developmental duration, pupation rate, and pupal weight of five different groups of T. molitor raised on these five diets. The larval survivorships were almost similar with the control group except a group with 70% of BSG. For the larval weight, groups with 30% and 50% of BSG gained more weight than that with control treatment, 0% of BSG. For the developmental period, the groups with 30% of BSG took less time compared to the control group. In all treatment groups, more than 90% of pupation rate were observed. Especially, the group with 30% of BSG showed highest pupation rate among the five groups. Wheat bran with 30~50% of BSG was the optimal diet for successive insect rearing among the five diet treatments. Based on this study, we concluded that adding BSG to wheat bran helps to improve the quality of T. molitor and to reduce the rearing period.

Changes of Allylisothiocyanate Content by Foliar Application of Fertilizer in Wasabia japonica Mastum (엽면시비(葉面施肥)에 따른 고추냉이 근경(根莖)의 행미성분함양(幸味成分含量) 변화(變化))

  • We studied about the changes of Allylisothiocyanate (allyINCS) content in rhizome by growth period or season and the effect of foliar application of fertilizer on allylNCS content in Wasabia japonica. AllylNCS content in rhizome of Wasabia japonica was changed according to growth period or season and it was decreased suddenly in May, the last stage of flowering. Foliar application of 1 % urea increased rhizome weight, but had no effect on allylNCS content in rhizome. Total three times foliar applications of 1 % potassium sulfate from Feb. to April increased rhizome weight by 44% and allylNCS content by 38% compared with control and potassium sulfate was more effective than ammonium sulfate. Even though the use of 1 % urea and 1 % ammonium sulfate caused growth disorder due to high concentration, rhizome weight was similar to the control and allylNCS content of rhizome increased by 47% more than control.

Studies on Anopheles sinensis, the vector species of vivax malaria in Korea

  • Extensive previous studies on taxonomy, behavior/bionomics and control of Anopheles sinensis are reviewed and summarized. Recent molecular identification revealed that the population of An. sinensis complex includes An. sinensis, An. pullus, An. lesteri and at least two new species, and An. yatsushiroensis is synonmy of An. pullus. An. sinensis is the main vector specie of vivax malaria in Korea. Larvae of An. sinensis breed in wide range of habitats which are naturally-made clean water, stagnant or flowing; main habitats include rice fields, ditches, streams, irrigation cannals, marshes, ponds, ground pools, etc. Their host preferences are highly zoophilic. Human blood rate is very low ($0.7-1.7\%$); nevertheless An. sinensis readily feeds on man when domestic animals are not found near by. They feed on hosts throughout the night from dusk to dawn with a peak period of 02:00-04:00 hours; they are slightly more exophagic (biting outdoors); much larger numbers come into the room when light is on. Main resting places are outdoors such as grasses, vegetable fields and rice fields. A mark-release-recapture study resulted that $37.1\%$ was recaptured within 1 km, $29.4\%$ at 1-3 km, $21.1\%$ at 3-6 km, $10.3\%$ at 6-9 km and $2.1\%$ at 9-12 km distance. An. sinensis hibernate outdoors (mostly under part of dense grasses) during October-March. At the end of the hibernation period (March-April) they feed on cows at daytime. Until today any single measure to effectively control An. sinensis population has not been found. Indoor residual spray with a long-lasting insecticide can not reduce vector population densities, but shorten their life spans in some degree, so contributes to malaria control.

Quality Characterization of Red Bean Gochujang prepared with Different Ratios of Meju (고추장용 메주 배합비를 달리하여 제조한 팥고추장의 품질 특성)

  • This study was conducted to investigate quality characteristics of red bean gochujang prepared with different ratios of meju for eight weeks. We determined quality characteristics such as pH, moisture content, total microbial flora counts, amino-type nitrogen content, total polypenol content, and antioxidant activity. The pH decreased by fermentation period, whereas total acidity was 0.36~0.39% in the early stage of fermentation, 0.63~1.16% at four weeks of fermentation, and decreased to 0.43~0.65% after the eighth week of fermentation. Moisture content of the control (no red bean, no rice) decreased 62.13% to 50.93%, but in case of the treatment, it slightly decreased. Total cell counts revealed similar tendency at the beginning of fermentation, and at eight weeks of fermentation. In case of lactic acid bacteria, all samples except RB-1.5 (gochujang added meju made of mixing ratio of rice:soybean:red bean (1:2:1.5) slightly increased. Amino nitrogen and total polyphenol of all samples increased in the fermentation period, especially RB-1.5 sample had the highest levels than other samples. By increasing the amount of red bean, DPPH radical scavenging activities increased. In taste sensing analysis, all treat samples except RB-1.5 revealed lower sourness than the control. Also, in case of bitterness, all samples revealed low content than the control. So, by adding red bean, it can enhance taste and function of gochujang.

Evaluation of the Efficacy of Crude Phytase Prerarations in Broiler Chickens

  • An experiment was conducted with day-old 300 commercial male broiler chicks (Arbor Acres$^{(R)}$) to evaluate the efficacy of crude phytase preparerations produced from a culture of Aspergillus ficcum. The experiment consisted of five dietary treatments; T1, com-soy control diet with 0.45% non-phytate phosphorus (NPP) for starter period and 0.35% NPP for grower period; T2, control - 0.1% NPP; T3, control 0.2% NPP; T4, T3+600 U of crude phytase (broth+cell); and T5, T3+600 U of crude phytase (broth). The body weight gain, feed intake, and feed/gain of chickens fed T1 diet was highest (p<0.01) among treatments. BW gain and feed intake of T4 and T5 were greater than those of T3 but were less than those of T1 and T2. T3 was highest in mortality among treatments. Decreasing the NPP level lowered availability of DM, crude ash, ether extract, crude fiber, Zn, and Fe but supplementation of crude phytase preparations improved the availability of these nutrients as well as those of Ca, P and Cu. Excretion of P and Cu significantly decreased as the NPP level in the diet decreased. Further reduction of P and Cu excretion and reduction of Ca, Mg and Fe excretion were achieved by supplementation of crude phytase preparations. The serum concentrations of Ca, P, Mg, Zn, Fe, and Cu were significantly increased by crude phytase supplementation. The weight and length of tibia, and contents of crude ash, Ca, P, Mg, and Zn were adversely affected by lowering NPP level but partially recovered by supplementation of crude phytase preparations. In conclusion, lowering NPP level in the broiler diet significantly depressed the performance. Supplementation of crude phytase preparations produced from Aspergillus ficuum could partially recover the depression.

Effect of the Fatigue to Insole Types During Treadmill Exercise (트레드밀 운동 동안 인솔의 종류가 피로도에 미치는 영향)

  • The purpose of this study was to assess the effect of applied insole types to lower extremities muscle fatigue during treadmill exercise. The control group and each different insole type group consisted of ten healthy male subjects. In the control group and each different insole type (soft type; 10 shore, semi-rigid type; 33 shore, rigid type; 50 shore) treadmill exercise was performed in twenty-five minutes. The electromyography (EMG) signals of four muscle (tibialis anterior, gastrocnemius medialis, rectus femoris, biceps femoris) were recording at sampling rate of 1024 Hz during treadmill exercise. The localized muscle fatigue (LMF) can be investigated using power spectral analysis. When did data analysis that excepted initial five minutes. The raw EMG signals was processed using the fast Fourier Transformation (FFT) and the median power frequency value was determined in initial ten second period and in last ten second period. Fatigue index was calculated and collected data were statistically analyzed by SPSS version 10.0 two-way using analysis of variance (ANOVA) with repeated measures ($4{\times}4$) was used to determine the main effect and interaction. Post hoc was performed with least significant difference. A level of significance was .05. Muscles fatigue index were significantly decreased in insole types (p<.05) and not significantly different in muscle (p>.05). Post hoc analysis shows that fatigue index in soft insole type, semi-rigid insole type and rigid insole type were lower than that control group (p=.028, p=.146, p=.095). There were no interaction between insole type and muscles (p>.05). The finding of this study can be used as a fundamental data when insole is applied and insole can be used to decreased of a fatigue during the dynamic exercise.

Study on the Development of a Probiotics Complex for Weaned Pigs

  • This study was conducted to investigate the effects of supplementation of a probiotics complex on growth performance, nutrient digestibility, diarrhea score and microbial population in pigs weaned at 21 days of age. Treatments were 1) control A (0.2% antibiotics, Avilamycin), 2) control B (0.1 % $Ractocom^{(R)}$), 3) 0.1%, 4) 0.2% and 5) 0.3% probiotics complex; 80 pigs were used and each treatment had 4 replicates with 4 pigs per replicate (16 pigs per treatment). During phase I period (d 0 to 14), although there was no significant difference, pigs fed control B diet showed higher ADG (average daily gain) and better F/G (feed/gain) than any other treatments. During late experimental period (d 15 to 28), pigs fed diet supplemented with 0.2% probiotics complex showed slightly higher ADG. Overall (d 0 to 28) the diet that contained 0.2% probiotics complex gave slightly higher ADG and ADFI (average daily feed intake) than the other diets. In a metabolic trial using 20 piglets, nutrient digestibility showed the best results in pigs fed 0.2% probiotics complex diet, but not significantly different from other groups. Diarrhea score and microbial population status in intestine, colon and feces were not affected by dietary treatments. In conclusion, this study suggested that a newly developed probiotics complex can replace antibiotics in weaned pigs.

Improved UPC Algorithm Adopting a Dynamic Spacer for Traffic Control in ATM Networks (ATM망에서 트래픽 제어용 동적 지연기를 적용한 개선된 UPC 알고리즘)

  • In this paper, an improved User Parameter Control (UPC) algorithm is proposed for controlling traffic in ATM networks. The present algorithm consists of Cell Buffer, Red Token Pool, Green Token Pool, and Spacer. A token is generated at a certain time period, and the tokens are consumed one each time a cell arrives. At this time, if the delay element, named Spacer, is empty, the cell comes into the network. On the other hand, if Spacer is not empty, the cell cannot come into the network. In addition, in the case that tokens do not exist in Token Pool, the corresponding cell is thrown away The arbitrary function of the token used in this paper is removed. Instead, the token is used only to control network traffic. This research proposes new UPC Algorithm to improve the current cell delay rate and cell loss rate by dynamically adopting the delay element, named Spacer, with respect to the traffic condition, which is different from controlling that the cell comes into the network after a certain delay time period.
