The Development of Rice Education Program for University Students through Expert Delphi Method (전문가 델파이 기법을 통한 전공 대학생 대상 쌀 교육 프로그램 개발)

  • The purpose of this study was to develop a rice education program and rice cooking practice for university students majoring in foodservice and nutrition. To achieve this purpose, 2 rounds of delphi survey was used by convenience sampling including total of 27 experts in the food and nutrition industry. Below are the findings. First, both the importance and suitability for macro-theme of theory education were in the following order: 'nutrition and health of rice', 'characteristics of rice in food science', 'history and culture of rice' and 'the consumption of rice. Second, the history and culture of rice(traditional culture related to rice, and the origin & history of rice), nutrition and health of rice(main nutritive components and efficacy of rice and prevention of disease), characteristics of rice as food(processed-products of rice and storage, the structure of rice), and the consumption of rice(current status of rice production and consumption) were found to be suitable for the micro-theme of theory education. Third, the education theme for rice cooking practice was determined. Barley sprout song-pyeon and beet song-pyeon were chosen for rice cake. For bread, coconut & walnut muffin, tofu & bean muffin, citron bread, red bean & sweet persimmon pound cake, and sweet potato bread were selected. Dong-rae-pa-jeon, Kimch-jeon-byeong, fried sweet potato fried shrimp were developed for the main dishes.

  • This study was designed to examine the propensity for conspicious consumption of housewives and its influential variables on it. The purpose of this study also is to suggest some fundamental information of consumer education program and policy, in order to prevent consumers from over consumption. The samples were selected from housewives lived in Seoul, in 1997. The 457 subjects were analyzed by Frequency, Mean, t-test, ANOVA, Duncan’s Multiple Range Test, and Regression. Consequently, the propensity for conspicious consumption of housewives is influenced not only by the individual factor, but also by the more effect of psychological and social effects. Therefore, based on the findings it is required that we will have to reinforce the consumer education, so that they have rational consumer’s conscious based upon desirable values. And this education is treated a matter as important by social view.

  • It is a global consent that we should conserve our energy consumption, due to our awareness to the environmental problems and the limitedness of the natural resource. In the country, the level of energy consumption is more than it is needed, according to its living standard and the proportion of resources imported from other countries. Educational program focused on energy conservation is essential to overcome these problems. This paper outlines a basic study on the development of an energy conservation education program for children. This program makes students aware of the importance and difficulties in energy conservation. The students can then make their own contribution and besides circulation of resources and improvement of health problems.

Development and Evaluation of an Elementary School Nutrition Education Program to Prevent Breakfast Skipping (아침결식 예방을 위한 초등학교 영양교육 프로그램의 개발 및 평가)

  • The purpose of this study was to develop and evaluate a nutrition education program to prevent breakfast skipping for elementary school children. Subjects were 102 5th grade students (51 boys, 51 girls) as the "education group" and 200 5th grade students (102 boys, 98 girls) as the "non-education group." The nutrition education program consisted of 4 lessons over an 8-week period. Teaching materials, including flash animation, panel, PowerPoint, and a bingo game, were developed for this education program. After education, there was significant increase in the percentage of students who had eaten breakfast every day, understood that breakfast has a great effect on health, and will eat breakfast every day in the education group compared to non-education group. Parents' positive behavior toward daily breakfast preparation and the percentage of parents who had their children eat breakfast every day increased significantly. The students of the education group responded positively to the questions of the benefit and importance of nutrition education. The flash animation received high marks, especially in terms of understanding of contents, content clarity, emphasis of the core content, delivery of necessary knowledge, and applicability of breakfast. This study shows the effectiveness of a 4-lesson nutrition education taught during an 8-week time period to induce changes in recognizing the importance of breakfast and in behavior toward breakfast consumption.

Evaluation of Dietary Quality and Nutritional Status based on Nutrition Quotient and Health Functional Food Intake in the Korea Elderly (노인의 건강기능식품 섭취 실태와 영양지수를 이용한 식사의 질 및 영양 평가)

  • This study aim to evaluate dietary quality and nutritional status according to the consumption of health functional food using Nutrition Quotient for Korean elderly (NQ-E) for 288 elderly people attending senior welfare centers in Gyeonggi-do. The questionnaire consisted of items about general information, health functional food, and Nutrition Quotient for Korean elderly (NQ-E). Chi-squared test, Fisher's exact tests, and Analysis of Covariance (ANCOVA) were performed using the SAS program ver. 9.4. Among the male and female subjects, the female subjects consumed more health functional food. The results of the dietary quality and nutritional status difference according to the intake of health functional food showed significant differences only in the areas of variety and abstinence among nutrition quotient factors for men, while no significant differences were observed in any of the nutrition quotient factors for women. In conclusion, focused-nutrition education program and useful guideline is needed for promoting adequate consumption of health functional foods in elderly.

Effectivenes of Weight Control Program for Obese Children in Chuncheon

  • The effects of a four-week weight control program including nutrition, exercise, behavior modification and meditation were studied in 15 obese children who resided in the Chuncheon area. There were no differences in anthropometric value, health perception, self-esteem and nutrition knowledge before and after the nutrition education program. Food behavior significantly improved after the program, especially in the area of binge eating (p〈0.05). Consumption of ramyon and fried chicken significantly decreased (p〈0.05). These results showed that short-term nutrition education programs did not do enough to change the anthroppometric value of study subject. These results suggest that it is necessary to include parents in nutrition education programs for greater effectiveness. And there is a need to develop an apply systematic nutrition education programs to reduce the weight of obese children.

  • Objectives: This study examined the factors affecting the quality of life relating to oral health using OHIP-14 of college students. Also, this was to help college students to enhance their oral health. Methods: A Total of 334 self-administered questionnaires were collected from university student in Cheon-an. The statistical methods used for data analysis were the descriptive statistics, Independent samples t-test, One-way ANOVA, correlation analysis, multiple linear regression analysis. Results: First, A month pocket money and coffee consumption were significantly related to functional and physical Oral health foctor. Second, A month pocket money and coffee consumption were significantly related to Mental and social Oral health foctor. Finally, multiple linear regression analysis showed that a month pocket money, coffee consumption have a negative effect on the quality of life relating to oral health, Whereas an experience of oral health education a positive effect on this. Conclusion: Oral health related quality of life should be improved by investigating the factors affecting oral health and thus developing the program enhancing the oral health to prevent oral disease. In addition, in order to health promotion physical, mental, social, including the oral health, program development and research incessant must be carried out.

Maternal correlates of vegetable preference and consumption in preschool-aged children

  • Purpose: Considering the various health benefits of vegetables, it is necessary to identify maternal correlates of vegetable preference and consumption in children for shaping desirable vegetable-related eating habits. This study aimed to investigate the maternal factors related to vegetable preferences and consumption in preschool-aged children. Methods: This is a cross-sectional study that surveyed 303 mother-child pairs (146 boys, 157 girls) to explore general characteristics, vegetable preferences, and cooked vegetable consumption in mothers and children using a questionnaire method. Maternal correlates of the child's vegetable preference and consumption were tested using a generalized linear model using SAS program. Results: Mothers' vegetable preferences and consumption were significantly higher than those in their children (p < 0.001). Mothers' vegetable preferences showed a significant positive correlation with the vegetable preferences of their children (mother-son, p < 0.001; mother-daughter, p < 0.001). Additionally, mothers' cooked vegetable consumption showed a significant positive correlation with the cooked vegetable consumption of children (mother-son, p < 0.001; mother-daughter, p < 0.001). Mothers' vegetable preferences and consumption respectively increased those of their children, in both boys and girls. Conclusion: Findings that mothers' vegetable preference and consumption correlates of children's vegetable preferences and consumption, indicate the importance of the mothers' role in increasing vegetable consumption in children. Mothers should be aware of the effects of their vegetable eating habits on their children's vegetable consumption and try to develop healthy eating habits. We suggest that the government or local communities provide nutrition education for mothers to adopt healthy eating habits and present information to educate their children on food and healthy dietary habits.

  • The purpose of this study is to develop a practical and efficient school consumer education program for adolescents so they could apply the program in their real life situations and lead a sound and rational consuming life. 'I, Family. Society and Consuming Life' is a program targeted for adolescents and focuses on the resolution of practical problems related to consuming life that an individual faces in everyday lives while living as a member of a family and a society. The content of this program consists of 'I and consuming life', 'I and the consuming life of a family', and 'I and the consuming life of a society'. Through this program, adolescents will be able to improve the ability to solve practical problems they face in their consumer lives. and build the sound values on consumption so they could playa role of sensible consumers in the future.

Effect of red-pepper ingestion on excess post-exercise oxygen consumption in young women (고춧가루 섭취가 운동후초과산소섭취량에 미치는 영향)

  • PURPOSE. The purpose of this study was to investigate the effect of red-pepper ingestion on excess post-exercise oxygen consumption in young women. METHODS. The six female college students involved in this experiment. The subjects participated in two trials, standard meal (650 kcal) and standard meal +10 g red-pepper with 200 ml water. After the subjects allowed to have rest for 60 min, exercised by resistance program for 40 minutes. RESULTS. The excess post-exercise oxygen consumption (EPOC) was not affected by the red-pepper ingestion. However, post-exercise fat oxidation and plasma free fatty acid levels were higher in red-pepper trial than in control trial. CONCLUSION. Therefore, red-pepper ingestion before resistance exercise might be improve body fat reduction.
