자이리톨과 에리스리톨을 이용한 유자차의 품질 특성 (Effect of xylitol and erythritol on the quality characteristics of Yuza tea)

  • The effects of xylitol and/or erythritol as the alternative ingredients to sugar on the quality characteristics of Yuza tea were studied. The relative sweetness of xylitol and erythritol to a 10% sucrose solution were 1.10 and 0.71 respectively and there were no change after the addition of the acid and flavoring agent. The sensory characteristics of Yuza tea with xylitol were quite similar in many attributes to Yuza tea with sugar, while Yuza tea with erythritol had many undesirable attributes. Yuza tea with a mixture of xylitol and erythritol(1:1) was less sweet and less acceptable than Yuza tea with sugar. The consumer acceptance test showed that the overall acceptability of Yuza tea made with xylitol was similar to the Yuza tea with sugar. Adding sucralose to the Yuza tea with a mixture of xylitol and erythritol improved the sweetness and overall acceptability in the consumer acceptance test. The pH value of the erythritol Yuza tea was 3.16 and showed a significantly lower value than the 3.39 of sugar and xylitol. The refractive index of the sugar Yuza tea was the highest at 21.03$^{\circ}$Bx. The vitamin C content of Yuzachung with sugar was 34.5mg/100g and the dietary fiber content was 2,80g/100g. Xylitol Yuzachung showed the highest a and b values, but when it was diluted with water to make Yuza tea, the intensity of the color was not significantly different from the Yuza tea with sugar.

Changes in Consumer Color Preference for 'Songpyun', a Korean Rice Cake

  • Color is one of the most important attributes determining the purchase of food products by consumers. Therefore, the purpose of this study was to identify consumer color preferences for songpyun, a traditional Korean rice cake, by a consumer acceptance test and using coated Pantone color chips. Color evaluation tools for the study were developed accordingly. From the results, the songpyun sample designated as product E was given the highest color acceptability score, and was 'slightly liked' (p<0.05). The color of product E was 'very pale red-purple'. All the evaluated pink-color songpyun products were based on this red-purple hue, however, they had differences in tone. The consumer panel favored a pale tone over a bright tone. The color concept for traditional songpyun within the pink color category was identified as 'very pale red-purple', using coated Pantone color chips. This result for the conceptual color preference was consistent with that of the consumer color acceptance test. Thus, color chips could be an effective tool when applied for color standardization in traditional foods production. From the overall results, it seems consumers are perceiving color trends and are willing to adapt to such changes in food applications.

복숭아 분말 첨가 젤리의 품질특성 (Quality Characteristics of Jelly added with Peach(Prunus persica L. Batsch) Powder)

  • 본 연구에서는 복숭아 분말의 첨가량을 달리하여 젤리를 제조한 후 젤리의 물리화학적 품질특성(pH, 색도, 외관색상, 경도)과 소비자 기호도(색, 향미, 씹힘성, 맛, 전체적 기호도)를 비교 분석하였다. 젤리의 pH는 증가하였다(p<0.001). 명도를 나타내는 $L^*$값은 복숭아 분말의 첨가량이 증가할수록 유의적으로 감소하였고(p<0.001), 적색도를 나타내는 $a^*$값과 황색도를 나타내는 $b^*$값은 유의적으로 증가하였다(p<0.001). 복숭아 분말 첨가 젤리의 DPPH 라디칼 소거능에 대한 결과는 복숭아 분말 첨가량이 많을수록 DPPH 라디칼 소거능이 증가하였다. 소비자 검사결과, 15% 첨가군이 모든 평가항목에서 유의적으로 높은 평가를 받아 젤리의 관능적 품질을 최대한 유지하면서 복숭아 분말의 기능적 이점을 최대한 활용하기 위한 젤리의 최적첨가 농도는 15%가 가장 적합한 것으로 판단된다.

반복섭취 실험설계를 활용한 신제품의 시장성 평가 (Application of repeated exposure design for new product development)

  • 본고에서는 제품개발을 위한 소비자 조사에서 반복섭취 설계를 적용하는 접근법에 대해 살펴보았다. 제품에 대한 소비자 기호도는 비교적 역동적으로 변화할 수 있어 1회적 기호도 평가는 신제품에 대한 장기적 기호도 예측에 한계가 있다. 특히 시장이 형성되지 않은 제품군의 신제품에 대한 소비자의 기호도를 측정하기 위해서는 반복섭취 설계가 유용할 수 있다. 식품에 대한 반복섭취 설계는 익숙한 식품보다는 새로운 식품에서의 기호도 형성을 연구하는 것이 효과적이다. 다만 반복섭취 설계에 특성상 비교적 오랜 시간이 소요되기 때문에 실험진행자와 대상자 모두에게 어려운 설계이기도 하다. 향후 장기적인 기호도 변화에 대한 보다 빠르고 정확한 예측이 가능한 실험기법의 개발이 필요한 실정이다.

Guar Gum이 순두부찌개 소스의 품질 특성에 미치는 영향 (Effects of Guar Gum on Quality of Soft Tofu Stew Sauce)

  • 본 연구는 순두부찌개 소스의 품질 특성에 영향을 주는 guar gum의 농도를 다르게 첨가하여 제조한 순두부찌개 소스의 품질 특성의 변화를 알아보고 그 특성들이 소비자 기호도에 어떤 영향을 끼치는지 알아보았다. 그 결과 짠맛은 guar gum 농도의 증가에 따라 유의적으로 감소하는 결과를 보였고 소비자 기호도에 영향을 주는 인자로는 조개맛, 새우맛, 파향이 나타났으며, 모두 부정적인 영향을 주는 인자로 나타났다. 순두부찌개 소스의 유동 특성은 guar gum 농도가 증가할수록 pseudoplastic 한 성질이 증가되는 결과가 나타났으며 guar gum 농도의 증가와 소비자 기호도를 토대로 소비자 기호도 예측 모델을 개발하였다. 그 결과 guar gum의 농도가 증가할수록 소비자 기호도가 감소하였고 소비자 기호도를 보통 이상으로 유지하기 위해서는 겉보기 점도를 0.0114($Pa{\cdot}s$) 이하로 유지해야 할 것으로 사료된다. 따라서 본 연구 결과는 guar gum 함량에 따른 소스 제품의 품질 평가의 기초 연구로 소스 제품의 품질 최적화에 활용될 수 있을 것으로 판단된다.

닭발 젤라틴을 이용한 후식용 gel 제조를 위한 향신료의 최적수준 (Optimum Levels of Flavoring Materials for Gel-type Dessert Using Chicken-feet Gelatin)

  • 닭발에서 추출한 젤라틴을 이용하여 후식용 gel을 제조하기 위한 향신료 수준을 결정하기 위하여 설탕, 구연산 및 딸기향의 수준을 달리하여 gel을 제조하고 소비자기호도검사를 수행한 결과는 다음과 같다. 전체적 기호도, 단맛, 신맛, 및 향의 기호도 모두 향신료에 의한 선형효과 및 순수 2차 효과가 나타나 향신료의 일정수준까지는 모든 항목의 기호도가 증가하다가 그 이후에는 감소하는 경향을 나타내었다. 이와 같은 결과를 고려하여 후식용 젤라틴 gel 제조를 위한 최적 배합비를 설탕 19%, 구연산 0.50%, 딸기향 0.35%로 결정하였다.

대기시간이 서비스 품질평가에 영향을 미치는 과정에 있어서 매개변수 및 조절변수에 관한 연구

  • This study examined the effect of waiting in a service queue on the evaluation of service quality focused on its overall process, mediators and moderators The conceptual model of this paper integrates key variables derived from previous studies of consumer waiting behavior. Data obtained from actual customers in service queue at a hospital was used to test the theoretical framework. First, results from the path analysis confirm that negative affect and acceptability of the wait function as mediators in the process that the perceived duration of the wait affects customer's evaluation of overall service quality. Second, the analysis of the data, with the use of moderate regression shows that disconfirmation of wait time expectations, transaction importance, stability of wait time and wait environment work as moderate variables for the relationship between perceived duration of wait and negative affect. For the relationship between perceived wait time and acceptability of the wait, on the other hand, only transaction import ante shows a significant effect as a moderator.

Physicochemical and Sensory Properties of Baikseolgi Incorporated with Strawberry Powders

  • Strawberry powder was incorporated into Baikseolgi by substituting the non-glutinous rice flour in the range of 0-8% based on the total weight of the non-glutinous rice flour and the effects on physicochemical and sensory properties were investigated. pH decreased significantly with the higher amount of strawberry powder in the formulation whereas titratable acidity showed a reverse trend (p<0.05). Moisture content also decreased significantly with the increasing amount of strawberry. Lightness ($L^{*}$-value) decreased significantly with higher strawberry powder concentration, indicating that the color of Baikseolgi became dark as also indicated by the visual observation. Redness ($a^{*}$-value) and yellowness ($b^{*}$-value), on the other hand, increased significantly with the substitution of strawberry powders up to 8% (p<0.05). Increases in strawberry powder concentration up to 8% in the Baikseolgi formulation significantly increased the intensities of sensory color, flavor, and taste attributes; on the other hand, the intensities of sensory moistness and chewiness decreased significantly (p<0.05). Results from the consumer test revealed that control received the highest acceptability scores in all attributes but 4% sample also obtained the competitive scores. Finally, Pearson correlation analysis revealed several very highly significant linear correlation between the means used to access physicochemical, sensory properties, and consumer preferences.

고문헌을 바탕으로 한 건시죽(乾粥)의 개발과 표준화 (Development and Standardization of Dried Persimmons Gruel on Books)

  • The dried persimmon was effective in caring an inflammation, an ulcer and a burn and preventing hypertension and arteriosclerosis. At the Jejungsinpyun. dried persimmons gruel was beneficial to stomach and intestine and toned down voice. Based on Jejungsinpyuns and Sikryochanyo, dried persimmons gruel was developed for modern people. To standardize the dried persimmons gruel, physical properties and consumer acceptability was examined. The procedures of dried persimmons gruel was to make dried persimmons juice after soaking dried persimmons with same volume water during 24 hr and blending. To decrease the astringent taste of dried persimmons, dried persimmons juice and water with cinnamon (2%) was mixed and simmered during 3 min. Dried persimmons paste with cinnamon was added and the gruel was boiled more during 5 min. dried persimmons gruel was completed. The dried persimmons gruel were divided of 5 groups consisted of each 10, 15, 20, 25, 30 g dried persimmons. As dried persimmons content increased, lightness, apparent viscosity decreased. Acceptability test indicated the sample of dried persimmons : rice ratio at 2 : 5 had the highest overall acceptability and flavor. Considered to each, the sample of the dried persimmons : rice ratio at 2 : 5 met the purpose of the study.

콩고기의 관능적 특성 및 소비자 기호도 분석 (Study on Sensory Characteristics and Consumer Acceptance of Commercial Soy-meat Products)

  • This study was conducted to identify sensory characteristics of soy-meat samples by trained panels and to observe the relationship between these sensory characteristics and consumer acceptability of the samples. Descriptive analysis was performed on eight samples; four types of patty style soy-meat samples (Soy-meat Patty; SP) made with a Ddukgalbi recipe (YSP, VSP, LSP, and SSP) and four types of Bulgogi style soy-meat samples (Soy-meat Bulgogi; SB) made with a Bulgogi recipe (YSB, VSB, LSB, and SSB). Seven panelists were trained, and they evaluated the appearance, odor/aroma, flavor/taste, texture/mouth feel, and after taste attributes of these samples. Forty attributes were generated by panelists, and 37 attributes were significantly different across products (p<0.05). The SB group was characterized by beef, leek, and garlic flavor as well a sweetness, denseness, slipperiness, chewiness, and pepper after taste. The SP group was characterized by roughness, particle size, rancid oil flavor, raw bean flavor, astringent, sourness, and adhesiveness. Consumer test (n=125) showed that the VSB sample had the highest scores for acceptability of appearance, flavor, texture, and overall liking. The PLSR results show that the attributes that were more positively associated with acceptance of soy-meat samples were beef taste, wetness, and chewiness, whereas the raw bean smell and rancid oil flavor attributes were negative.
