  • Digital photographs of 16 pork chops were taken and modified images to give 16 treatments: two levels of each of fat cover, color, marbling and drip. Consumers(n = 1,014) were randomly selected and a questionnaire asking for socio-demographic information was completed. Each consumer was asked to select preferred type from 16 treatments and this selection was repeated eight times. There were significant differences in pork selection among age, sex and occupation groups only except income levels. Pork preference choices were different in meat color, fat cover and drip depending on age group. Student consumers aging from 18 to 24 years preferred pork chop having darker color, thinner fat cover and more drip when compared to the other groups(p < 0.05). Male preferred pork having darker and more drip than female(p < 0.05). Marital status had a effect on the preference in meat color and drip. The consumers had different choice in color, fat cover and drip depending on occupation(p < 0.05). This results can provide a fundamental information for industries or processors to develop or produce pork that satisfy each target consumer group in the future.

  • This study was conducted to develop low-sodium Korean food recipes and evaluate consumer acceptability of low-sodium Korean food. A total of 137 consumers assessed the overall acceptability based on a 9-point scale. Statistical analyses were performed using the SPSS package program (ver 20.0). The results of this study are summarized as follows: According to the results of the consumer preference evaluation of low-sodium Korean food, overall acceptability of all menus was over five out of nine points (overall average 6.25). Overall acceptability was highest for grilled beef ribs (7.88), followed by bulgogi (7.63), sauteed dry anchovy (7.46), and simmered beef in soy sauce (7.45). On the other hand, overall acceptability was lowest in blanched and seasoned spinach (5.04). According to the results of Pearson's correlation analysis, overall acceptability was positively related with menu preference of 27 menus, including seasoned and simmered chicken (P<0.001), fiddledhead namul (P<0.001), and grazed lotus roots and burdock (P<0.001). To sum up, overall acceptability of all items used in the consumer preference evaluation was more than five points out of nine. Therefore, low-sodium recipe for Korean food can be effectively applied in commercial or non-commercial foodservice cafeterias.

  • This study aims to measure effects of cause-related marketing by using consumer's preference of cause-related marketing product as a dependent variable. One of main factors influence on preference of cause-related marketing product is a product type. Previous research has shown that hedonic product is more effective for cause-related marketing than utilitarian product. The result was largely explained by the logic of guilt. However, there were conflicting results. In addition, the level of guilt may vary depending on the consumer characteristics or the market environment. Therefore, this study focuses on the impact of product type on the effect of cause-related marketing. For the Korean and Chinese markets, this study examines the effect of interactions between countries and product type. The result was significant. Specifically, there was a difference in preference of cause-related marketing product between Korean and Chinese consumers by product type. Based on the findings, implications and limitations of this study and future research directions were presented.

  • To analyze the consumer's purchase pattern, we must consider a factor which is a cultural, social, individual, psychological and so on. If we consider the internal state by the consumer's purchase, Both the consumer's purchase action and the purchase factor can be predicted, so the corporation can use effectively in suitable goods development in a consumer's preference. These factors need a technology that treat uncertain information, because it is difficult to analyze by directly information processing. Therefore, bayesian network manages elements those the observation of inner state such as consumer's purchase is difficult. In addition, it is interpretable about data that the observation is impossible. In this paper, we examine the seller's know-how and the way of consumer's purchase to analyze consumer's purchase action pattern through goods purchase. Also, we compose the bayesian network based on the examined data, and propose the method that predicts purchase patterns. Finally, we remove the data including unnecessary attribute using the bayesian network, and analyze the consumer's Purchase pattern using Kohonen's SOM method.

Surveys were conducted to obtain information, such as the consumer evaluation for food safety on imported food products from China and the consumer perception of Chinese organic food products, Using the binary probit model, the relationship between consumer's choice of packaged bean curd and potentially important factors that can affect the consumer's choice was analyzed. A summary of this research and some policy implications follow. The results of this study can be used as the basic guideline as to how to extend the safety of imported food products, in general, and how to further develop the packaged bean curd industry in Korea, in particular.

  • This study was conducted to select representative agricultural products (4 types of fruits and 4 types of wild vegetables) in Chungju, define their sensual characteristics, derive suitable flavour-pairing and recipes for each ingredient, and use them as a cornerstone in the development of menus. For the experiment, 10 experts were selected to choose 8 representative agricultural products in Chungju, and 18 menus were selected through a flavour-pairing survey. A consumer panel (a total of 413 people, 105 in their 20s, 103 in their 30s, 103 in their 40s, and 102 in their 50s) for evaluating the characteristics of consumer preferences was selected. After the flavour-pairing survey 'sweet taste', 'light flavour', 'soft flavour', 'savoury flavour', 'familiar flavour', 'harmonious flavour', 'softness', and 'harmoniousness with food ingredients' were determined as drivers of liking, on the other hand, 'disturbance with food ingredients' and 'soybean fishy smell' were determined as drivers of disliking. The degree of consumer preference and overall acceptance were found to be related to the consumers' familiarity, suggesting that if a menu should be developed using unfamiliar local agricultural products, it should be configured with familiar recipes and seasoning methods.

Therefore , consumers' purchasing standard has been also changed as their consciousness has been changed according to the variation of their lire style. Besides, the technique and method of design faces up to the change because of consumers' diverse wishes. Hence, to satisfy consumers' needs and the market front now on characterized as the short durability cycle of products, a distinctive design should be developed in the form of products that can be an important factor to attract consumers preference. So, in this study, 1 will try to understand typology based on a categorization theory and the conceptual structure of aesthetics, which are importantly considered at the same time. In addition, I will establish a new design process by extracting Rhythm affecting aesthetic.
