Quality Characteristics of White Pan Bread with Garlic Powder (마늘 분말을 첨가한 식빵의 품질 특성)

  • This study investigated the quality characteristics of the white pan breads with garlic powder. Three different powder concentration levels of 1%, 2% and 3% were added to flour to make the breads. The contents of moisture and crude fat of the breads added with garlic powder were lower than that of control group. However, ash content was not significantly different among groups. The pH increased with increasing garlic powder concentration. The weight of breads increased with increasing garlic powder concentration, while the volume and baking loss rate of breads decreased. In color values, with increase of garlic powder concentration, L value decreased, but a and b values increased. The water activity in the breads decreased by increasing garlic powder concentration was the highest in the control group. In the texture analyzer measurement, hardness of the breads increased with increases of garlic powder concentration, but springiness decreased. In the results of sensory evaluation, the quality of the 1% garlic powder breads showed the highest in taste, flavor and overall acceptability. The color, appearance, mouth feel and texture of the breads decreased with the increasing garlic powder content. From the results of this study, the white breads with 2% garlic powder content was shown to have the best quality.

The Effect of La Concentration on The PLZT(x/30/70) Thin Films for NVRAM Memory Device (비휘발성 메모리 소자를 위한 PLZT(x/30/70) 박막에 대한 La 농도변화의 효과)

  • In this paper, the effects of La addition of PLZT(x/30/70) thin films Prepared by sol-gel method are investigated for NVFRAM application. The tetragonality (c/a), the grain size, and the surface roughness of PLZT thin films decrease with an increase of La concentration. As the La concentration increases, the dielectric constants at 10 kHz increase from 450 to 600, while the loss tangent decrease from 0.075 to 0.025. Also, the leakage current density at 100kV/cm decrease from 5.83$\times$10$^{-7}$ to 1.38$\times$10$^{-7}$ 4/$\textrm{cm}^2$. In the results of hysteresis loops measured at $\pm$170kV/cm, the remanent polarization and the coercive field of PLZT thin films with La concentration from 0 to 10㏖% decrease from 20.8 to 10.5 $\mu$C/cm and from 54.48 to 32.12kV/cm, respectively. After a fatigue measurement by applying 10$^{9}$ square pulses with $\pm$5V, the remanent polarizations of PLZT thin films with 0 and 10㏖% La concentration decrease about 64 and 42 % from initial state. In the results of retention measurement after 10$^{5}$ s, PLZT thin films with 0 to 10mo1% La concentration show that the remanent polarization is decreased about 43% and 9% from initial state, respectively.

Changes of Salt and Calcium Concentration in Radish during Salting (무우의 소금절임 과정 중 소금의 침투와 칼슘의 용출)

  • Salt penetration, moisture effluence and elution of calcium of radish were investigated during salting in $3{\sim}10%$ salt solution. The desirable salt concentration of kimchis were also evaluated by sensory method. Among 20 samples collected from domestic and commercially prepared kimchis, 8 samples were found to be desirable salt concentration having the concentration range of $1.2{\sim}2.2%$. Moisture and calcium diffused from radish tissue were increased as the salt concentration increased. The proper salting time were estimated to be two hours at 3%, one hour at 5% and 30 minutes at 10% of salt at $20^{\circ}C$. Salting at high concentration shortened the salting time but brought a significant calcium loss.

  • We have studied the effects of La concentration on the optical and electrical properties of lead lanthanum titanate (PLT) thin films by using sol-gel method. Both the optical and electrical properties are greatly affected by the La concentration. The refreactiv eindices of the films varied from 2.23 to 1.93 with varying La concentration in the range from 15 to 33 mol%. The dielectric constants of the films vary form 340 to 870 with varying La concentration in the range form 15 to 33 mol%. Hysteresis loop becomes slimmer with the increase of La concentration form 15 to 28mol% and little fatter again with the increase of La concentration form 28 to 33 mol%. Among the films investigated in this research, PLT(28) thin film shows the best dielectric properties for the application to the dielectrics of ULSI DRAM's. At the frequency of 100Hz, the dielectric constant and the loss tangent of PLT(28) thin films are 940 and 0.08 respectively. Its leakage current density at 1.5${\times}10^{5}$V/cm is 1${\times}10^{-6}A/cm^{2}$. The comparision between the simulated and the experimental curves for the switching transient characteristics shows that PLT (28) thin films behaves like normal dielectrics.

Change of Biologically Functional Compounds of Pimpinella brachycarpa(Chamnamul) by Blanching Conditions (데침조건에 따른 참나물의 생리활성 성분 변화)

  • Wild edible plants are consumed as raw and/or processed. Analytical data for raw biologically functional compounds were relatively well established. The changes on functional compounds during processing are, however, not well studied. This study was carried out to investigate the change of the quality of wild edible plants, Pimpinella brachycarpa(Chamnamul) at various conditions. Samples were blanched at the salt concentration of 0%, 1% or 2% for 1, 2, and 3 minutes each. The biologically active compounds, vitamin C, ${\beta}-carotene$, chlorophyll, flavonoids, polyphenols and minerals were analyzed. The concentration of vitamin C in Chamnamul decreased as blanching time increased. Beta-carotene in Chamnamul showed high concentration when Chamnamul was treated under longer blanching time. Higher salt concentration of blanching water, however, resulted in the increased concentration of ${\beta}-carotene$ in the blanched Chamnamul. Higher salt concentration of blanching water also reduced the loss of total flavonoids and total polyphenols from the blanched Chamnamul. The change of colors in the blanching water seemed to be corresponding to those of total flavonoids and total polyphenols concentrations in the blanching water.

Comparisons of Soluble Klotho Concentration Between Healthy and Patient Cohorts

  • Since its first identification in 1995, klotho (KL) has become the most promising gene to consider for suppressing aging and aging-related diseases. KL knockout mice exhibited similar phenotypes found in human with premature aging such as short lifespan, osteoporosis, arteriosclerosis and hearing loss. Genetically modified mice overexpressing KL prolonged lifespan more than 20%. Also, clinical reports have indicated decreased concentration of the circulating KL protein in blood, which is called soluble klotho (sKL), is closely related to development of senile diseases. The best way to discover significance of sKL on the development of the diseases might be comparison of sKL concentration between controls and patients. Here we analyzed published clinical reports identified sKL concentration in the cohorts. The sKL concentrations were displayed using heatmap for better comparison. In most of the senile diseases, disease progression was inversely related with sKL concentration. Hypertension was the only disease had no relationship, while schizophrenia was the only disease had direct proportion to the disease progression. Overall, sKL concentration in blood could be a marker to determine current severity of the senile diseases and even to estimate disease progression for the patients at the onset of their senile diseases.

Index Analysis Approach to Identifying Accident Concentration Level of Korean Industries (국내 산업재해집중수준 확인을 위한 지표분석)

  • For monitoring the status of industrial accidents, many statistical indexes have been developed and applied such as fatal rate, frequency rate, and severity rate. These accident indexes are measured by frequency and loss time according to the accidents in the individual industry level. However, it is less considered to use the index of identifying the industrial concentration of accidents in the holistic view. Thus, this study aims to suggest the accident concentration level among domestic industries through index analysis. The concentration level of industrial accidents is calculated by the accident composition of sub-industries. This concentration level shows whether an industry is comprised of a few sub-industries generating more accidents or an industry consists of sub-industries having the similar number of accidents. To this end, the concentration rate (CR) and concentration index (CI) are proposed to take a look at the industry composition of accidents by embracing the concept of market concentration indexes such as Hirschman-Herfindahl Index. As for the case study, four industries of mining, manufacturing, transportation, and other business (usually service) are analyzed in terms of indexes of accident rate, death(fatality) rate, and CR and CI of accident and death. Finally, we illustrate the positioning map that the accident concentration level is compared with the traditional accident frequency level among industries.

Effect of Acid and Salt on Weight toss of Polyester (PET) fabric by Sodium Hydroxide (산과 염이 폴리에스터 직물의 알칼리 감량에 미치는 영향)

  • To control the hydrolysis rate of PET fabric with NaOH, HCl and $CH_3$COOH(HAc), as regulating reagent, were added to the 0.5 M NaOH solution. The concentrations of acids in 0.5 M NaOH were varied. PET fabrics were treated with aqueous solutions of acids in 0.5 M NaOH under different conditions. The weight loss of PET fabric, the rate of hydrolysis, the apparent activation energy (E$_{\alpha}$), the handle value, the etched surface of treated PET fabric, and the effect of salts such as NaCl, $CH_3$COONa(NaAc), and NH$_4$Cl on the weight loss were discussed. Acids in the aqueous 0.5 M NaOH solution decreased the weight loss of PET fabric bacause of neutralization of OH- and the weight loss of PET fabrics treated with corresponding concentration of aqueous NaOH solution to the concentrations of the aqueous solutions of acids in 0.5 M NaOH was lower than that of PET fabrics treated with aqueous solutions of acids in 0.5 M NaOH. The addition of NaCl to aqueous NaOH solution accelerated the reaction of OH- with PET greatly, the addition of NaAc increased the weight loss slightly, but the addition of NH$_4$Cl decreased the weight loss. It was thought that the very remarkable result that NaCl in aqueous NaOH solution promoted the hydrolysis of PET with NaOH would contribute to the conservation of energy and NaOH in the weight loss finishing process of PET fabric. The etched surface and the handle value of treated PET fabric were independent of the difference in the kinds of acids and salts added.nd salts added.

The Power Loss Characteristics of Mn-Zn Ferrites at MHz Region with Sintering Condition (소성조건에 따른 MHz 대역의 Mn-Zn ferrite 전력손실 특성)

  • The power loss characteristics of Mn-Zn ferrite were observed with the sintering temperature. In case of $1150 ^{\circ}C$ sintering, the core loss increased with measuring temperature, and does not have minimum value at the point where the magnetocrystalline anisotropy be 'zero'. This reason mainly due to the change of core loss mechanism with grain size which affects residual loss. The grain size and sintered density slightly increased with equilibrium oxygen partial pressure at$ 1150 ^{\circ}C$ sintering. The resistivity and initial permeability showed no significance with atmosphere, these results due to complex effect of $Fe^{2+}$ concentration and microstructure change. The core loss at $100^{\circ}C$ decreased as the equilibrium oxygen partial pressure increased.e increased.

Cell-Surface Loss of Constitutive Activating and Inactivating Mutants of Eel Luteinizing Hormone Receptors

  • The present study aimed to investigate the mechanism of cell surface receptor loss by two constitutively activating mutants (designated L469R, and D590Y) and two inactivating mutants (D417N and Y558F) of the luteinizing hormone receptor (LHR) in the Japanese eel Anguilla japonica, known to naturally occur in human LHR transmembrane domains. We investigated cell surface receptor loss using an enzyme-linked immunosorbent assay in HEK 293 cells. The expression level of wild-type eel LHR was considered to be 100%, and the expression levels of L469R and D417N were 97% and 101%, respectively, whereas the expression levels of D590Y and Y558F slightly increased to approximately 110% and 106%, respectively. The constitutively activating mutants L469R and D590Y exhibited a decrease in cell surface loss in a manner similar to that of wild-type eel LHR. The rates of loss of cell surface agonist-receptor complexes were observed to be very rapid (2.6-6.2 min) in both the wild-type eel LHR and activating mutants. However, cell surface receptor loss in the cells expressing inactivating mutants D417N and Y558F was slightly observed in the cells expressing inactivating mutants D417N and Y558F, despite treatment with a high concentration of agonist. These results provide important information on LHR function in fish and the regulation of mutations of highly conserved amino acids in glycoprotein hormone receptors.
