This study analyzed differences between Jumchi-Hanji papers not dyed and dyed with persimmon juice (50% concentration) in five strength properties (tensile, wet tensile, tearing, bursting, and folding strengths). For the analysis, the undyed and the dyed Jumchi-Hanji papers were made by Jumchichigi during 40 minutes and made with the Dakji of different layer (a layer, two layers) and Choji method (Oebal-teugi, Ssangbal-teugi). Differences between Jumchi-Hanji papers dyed with the different concentration of persimmon juice (20% vs 70%) in the five strengths were also identified. For this examination, Jumchi-Hanji papers were made with two layer Dakji (Oebal-teugi Choji method) and by Jumchichigi during 60 minutes. Jumchi-Hanji papers made in this study were used as test samples. As a result, Jumchi-Hanji papers dyed with persimmon juice had higher tensile strength (CD), wet tensile strength (MD, CD), and bursting strength than those of undyed Jumchi-Hanji papers. However, tearing strengths (MD, CD) of dyed Jumchi-Hanji papers were lower than undyed Jumchi-Hanji papers. Folding strengths (CD) of dyed Jumchi-Hanji papers were low but the folding strengths (MD) of them were high compared to undyed Jumchi-Hanji papers. In addition, the concentration of persimmon juice influenced the five strength properties of Jumchi-Hanji. The tensile, wet tensile, and bursting strengths of Jumchi-Hanji papers dyed with a 70% concentration were higher than those one of Jumchi-Hanji papers dyed with a 30% concentration while the tearing and folding strengths of Jumchi-Hanji papers dyed with a 70% concentration were lower than Jumchi-Hanji papers dyed with a 30% concentration.

The purpose of this study is to dye hanji/cotton fabrics using persimmon juice and to investigate the change in the hand fabrics. Using the Kawabata Evaluation System, we have examined the changes in the physical properties, primary hand value and total hand value. The dynamic characteristics of hanji/cotton fabrics have been explored by tensile, shear, bending, compression, surface properties, thickness and weight. As a result, it can be seen that the linearity of load-extension and tensile resilience are increased with the increase of the concentration and dyeing times of persimmon juice and tensile energy is decreased in the same condition. These behaviors are shown in the compression properties. Although the mechanism of persimmon juice dyeing has been widely discussed, it means that the fabrics dyed with persimmon juice become stiffened and the elasticity is increased with the introduction of persimmon on the fabrics studied. Bending rigidity and hysteresis of the bending moment are increased with the increase of the concentration and dyeing times of persimmon juice. Also, Geometrical roughness, expressed in SMD is increased with increasing the concentration and dyeing times of persimmon juice, compared with as-received. It indicates that these results are due to the geometric structure of hanji yarn and the introduction of persimmon juice on the fabrics studied. The fullness and softness with the soft feeing are increased a little due to the tannin component of persimmon juice introduced on the fiber surface.
The inhibitory effects of kale juice on the growh and DNA incorporation of human cancer cells, using HT-29 colon cancer cells, MG-63 osteosarcoma cells, AGS gastric adenocarcinoma cells and K-562 leukemia cells, were studied. The growth of human cancer cells were inhibited in the presence of kale juice (10, 20 nd 40$\mu$l/ml) and the effects were the juice concentration- and incubation time-dependent up to 6 days. When 20$\mu$l/ml of kale juice was added to the media of HT-29, MG-63, AGS and K-562 cancer cells, the cell growth after 6 or 4 days of incubation was retarded by 83~95% of control group. Morphological changes of HT-29 colon cancer cells wre studied under inverted microscope. As the concentration of kale juice increased up to 20$\mu$l/ml, degree of cell aggregation was decreased. Moreover, the DNA incorporation o AGS gastric adenocarcinoma cells and MG-63 osteosarcoma cells which were labeled with [$^3$H] thymidine was significantly reduced after 2 days of incubation at 37$^{\circ}C$ with kale juice. Therefore, we concluded that kale juice strongly decreased the growth of various human cancer cells.
Reverse osmosis (RO) was applied to onion juice to produce concentrated onion juice with improved flavor. The volatile compound profiles of concentrated onion juice and onion juice were compared using solvent-assisted flavor evaporation followed by gas chromatography-mass spectrometry. Onion juice and RO-concentrated onion juice contained 48 and 62 distinct volatile compounds, respectively, and included alcohols, aldehydes, esters, terpenes, furans, ketones, acids, hydrocarbons, and sulfur-containing compounds. The RO-concentrated onion juice contained a greater number of volatile flavor compounds than did onion juice. Notably, sulfur-containing compounds, which are characteristic volatile flavor compounds in raw onions, were more abundant in the RO-concentrated onion juice than in onion juice. The volatile compound composition indicates that RO-concentration produces good quality onion juice.

The performance of ultrafiltration (UF) membranes with molecular weight cut off (MWCO) of 1000 and 3500 Da in clarifying sugar cane juice was investigated, as well as the performance of a nanofiltration (NF) membrane with MWCO of 200 Da and a reverse osmosis (RO) membrane in concentrating sugar cane juice. For both cases the sugar cane juice had been limed and partially clarified. The UF membranes were found to be effective at clarifying the sugar cane juice in terms of purity rise and reduction in turbidity, colour, starch and protein. A purity rise of approximately 6 was achieved by both UF membranes at trans-membrane pressures (TMP) from 15 to 25 bar. However, Brix reduction in the permeate was between 14.5 and 41.85% and 12.11 and 26.52% for 1000 Da and 3500 Da membranes respectively. For the 200 Da and RO membranes the Brix in the concentrate was increased from 7.65 to 12.3 after 3 hours of operation for the 200 Da membrane at a TMP of 10 bar, whilst the Brix in the concentrate was increased from 15.65 to 27.6 after 3 hours of operation for the RO membrane at a TMP of 35 bar. Overall, UF membranes were found to be unsuitable for clarification of sugar cane juice since significant amount of Brix is reduced in the permeate, whilst RO membranes were found to be effective for concentration of sugar cane juice.
We investigated the quality characteristics and antioxidant activities of yogurt supplemented with 1%, 2%, and 3% aronia juice and fermented for 24 h at $37^{\circ}C$. The total acidity increased with increasing levels of aronia juice and incubation time. Lightness and yellowness of the yogurt decreased, but redness increased, with increasing aronia juice content and incubation time. The number of lactic acid bacteria (LAB) increased with increased incubation time, and yogurt containing 2% and 3% aronia juice showed higher LAB counts than 1% aroinia juice-supplemented yogurt. The total polyphenol and flavonoid contents increased proportionally with increasing levels of aronia juice. Antioxidant activity of aronia-containing yogurt was significantly higher than that of the control and increased proportionally with aronia juice concentration. Yogurt with 2% aronia juice had the best taste (P<0.05). Aronia juice may be a useful additive for improving the taste and antioxidant potential of yogurt.
This study investigated the antioxidant activities of wine made with aronia (Aronia melanocarpa). The ethanol concentration of the aronia wine was increased up to 7.8±0.1% on the 8th day of fermentation. Compared to other types of wine, the total amount of organic acids was highest in raspberry wine, followed by grape wine, arona wine, and aronia juice. Because, acetic, oxalic, and succinic acids were not detected in the aronia juice, but were detected in the aronia wine, it was determined that they were produced during alcohol fermentation. The polyphenol content in the aronia juice and wine was higher than in the grape wine and raspberry wine and was twice as much in the aroni wine than in the aronia juice. The flavonoid content in aronia juice and wine was higher than in commercial grape wine and raspberry wine. The DPPH radical scavenging ability was higher than 50% in the aronia wine and juice samples. ABTS radical scavenging activity was higher in aronia juice and wine than in raspberry wine and grape wine. The results of this study suggest that the development of wine with high antioxidant activity is possible if wine is made with aronia.
The clarified apple juice was pre-concentrated by reverse osmosis system as a trial for reduction of heat treating time and quality drop in concentration of the juice. The permeate fluxes through CA 865 and CA 960 membranes were higher than those of HR 95 and HR 98 membranes even at the low operating pressure. In the concentration limit depended on the membranes used, HR membranes operated at 60 bar showed $29.0^{\circ}$Brix, and the time required to reach the limit was 86 min for HR 95 and 71 min for HR 98. In cases of CA membranes run at 30 bar, the juice concentration was linearly increased without the limit, and longer time to reach the same concentration was required in comparison with HR membranes. As the juice concentration was increased, the loss of soluble solids was increased, and the average contents of soluble solids in the permeate passed through HR 95, HR 98, CA 865 and CA 960 were 1.3, 0.5, 7.5 and $2.3^{\circ}$ Brix, respectively, in the juice concentration range of 20.0 -$25.0^{\circ}$ Brix. The lower amounts of sugars, total acid and flavor volatiles were involved in the permeate through HR membranes, especially HR 98 than in the permeate through CA membranes.
This study examines the physicochemical property and antioxidant activity of wild grape juice, and the result is as follows. Total anthocyanin and color intensity contents of wild grape juice were $17.0{\pm}0.1%$ and $33.9{\pm}1.4%$, respectively. The contents of total phenols and flavonoid in wild grape juice were $25.4{\pm}3.1$ mg/100g, $4.4{\pm}1.4$ mg/100 g, respectively. Total mineral content in wild grape juice was $28.5{\pm}8.4$ mg/l00 g and the potassium content($11.3{\pm}0.3$ mg/100 g) was the highest Electron donating abilities of wild grape juice at concentration of $1,000\;{\mu}L$/mL were $94.8{\pm}1.2%$ Reducing power of wild grape juice at concentration of $1,000\;{\mu}L$/mL was 1.134. The electron donating abilities and reducing power were increased significantly with the sample concentration in the reaction mixture increased The nitrite scavenging ability was dependent on pH of the reaction mixture and sample concentration. The nitrite scavenging ability of wild grape juice was $77.1{\pm}1.1%$ at concentration of $1,000\;{\mu}L$/mL under pH 1.2.
Effect of crude saponin and raw ginseng juice on root rot pathogens such as Fusarium solani and Erwinia carotovora for there growth or spore germination was investigated. Macroconidial germination of F. solani was decreased as the incrasee of the crude saponin concentration. especially, percentage of the germination was remarkably reduced when the concentration was more than 500ppm. The spore production of F. solani was also reduced as the increase of the crude saponin concentration and this phenomenon was particularly profound on a solid medium. Mycelial growth was decreased when the crude saponin was added, while the effect of the concentration was not apparently significant. The higher concentration of raw ginseng juice is, the more the growth of F. solani. Growth of E. carotovora was enhanced by crude ginseng saponin and raw ginseng juice. The crude ginseng saponin stimulated the growth of E. carotovora as the increase of the concentration, while more growth of the bacteria obtained at $1\%$ raw ginseng juice added.
