Working towards the compression of morbidity, we attempted to find the way to contribute to desirable aging and/or healthy old age. By looking into the factors affecting nutrient intake in middle-aged adults, we sought to find ways to improve their health status, Two hundred and fifty middle-aged adults from 40 to 60 years of age residing in Seoul and its vicinity were recruited for the survey. Subjects were interviewed for general characteristics, dietary habits lifestyle, status and food intake by a trained interviewer. Two -day food record was included in addition to the 1 -day 24 hr recall. Date were analyzed for the relationship among nutrient intake, health status, socio-economic status dietary habits and lifestyle using a statistical program (SAS) Although the mean energy intake of the subjects did not reach the recommenced dietary allowances(RDA), mean protein intake was well above the RAD for both sex groups(111.2% and 129.1% for men and women, respectively) The caloric contribution of fat was 15 to 20 % of total energy intake among different groups. Riboflavin was the most deficient nutrient and its mean intake reached only 71.0% of RDA for mean This seemed to be due to the lower intake of milk and dairy products among middle-aged Koreans who are more accustomed to traditional meals. Income and exercise habit were the most important factors influencing the nutrient intake of middle-age adults. Also, BMI, smoking habit, level of education regularity of meal, and hours of sleeping influenced the nutrient intake, In conclusion, middle-age adults appeared to have similar problems with the elderly in terms of nutrient intake and this age group should to included when considering nutritionally vulnerable groups in addition to the elderly and young children. The improvement in the nutrition status of middle-age adults is even more important because that could lead into the better health the elderly.
Even though eating breakfast is an important factor in health and nutrition, especially during growth stages, skipping breakfast in children and adolescents has increased. An important issue to consider in skipping breakfast is the definition of an adequate or substantial breakfast. To examine what constitutes an adequate breakfast in Korean students, we analyzed breakfast consumption of children and adolescents using alternate definitions of breakfast based on calorie contents and food items eaten in the morning. A total of 1344 participants aged 7-18 years from the Korean National Health and Nutrition Survey (KNHNS) 1998 and 1942 participants from the KNHNS 2001 were included. 84% of students surveyed in 1998 consumed some food, while in 2001; it was down to 79.8%. Students that ate a breakfast which included food from at least two of the main five food groups and had a breakfast intake of food energy greater than 15% of the DRIs were 65.8% in 1998 and 53.1% in 2001. However, when breakfast was defined as the consumption of food from three or more food groups and a intake of food energy greater than 15% of the DRIs, students eating breakfast were 51.2% in 1998 and 39.6% in 2001. As the definition of eating breakfast becomes stricter and includes more foods or more calories, the percentage of students who eat breakfast declines. These results show that using various alternate definitions allow us to assess skipping breakfast in better detail and suggest references for the desirable breakfast.
This study was conducted to investigate the effects of smoking on nutrition intake, bone mineral density and blood mineral status. The subjects were composed of two groups: 100 smokers and 100 non-smokers was used along with a questionnaire. Anthropometric measurements, dietary intakes using 24-hours recall method were compared. At twenty subjects from each group were selected, bone mineral density were measured by quantitative ultrasound and plasma mineral levels were analyzed by ICP spectrometer. The average ages of smokers and non-smokers were 23.9 and 22.8 years old, respectively. The height, weight and BMI of the smokers were no significant difference. The average numbers of smoked cigarettes were 11.8/d and the average packyear was 3.1 in the smokers. About $97\%$ of the smokers drank alcoholic beverages, while $85\%$ of the non-smokers did. The smokers tended to eat less meals and dinner meal, but drink coffee more often compared to the non-smokers. The mean daily energy intake and CPF energy intake ratio were 2184. 9 kcal and 57.2 : 13.7 : 26.4 in the smokers and 2262.6 kcal and 55.8 : 13.1 : 28.6 in the non-smokers. The smokers consumed significantly lower intake of $\beta$-carotene. There were no significant differences in bone mineral density of BUA, SOS and QUI. There were no significant differences in plasma levels of Ca, Mg, Fe and Zn. However, plasma Cu level of the smokers was significantly higher than that of the non-smokers. In conclusion, the smokers of this study showed a more undesirable dietary intake in the light of their low ,B -carotene and high alcoholic beverages, and coffee. The plasma Cu level of the smokers was higher than that of the non-smokers, showing that Cu is involved in smoking. Therefore, it could be suggested that more systematic research be conducted with respect to Cu and smoking and that increased nutrition education and guidelines for smokers are required.
The purpose of the present study was aimed to identify dish items applicable in developing dish?based food frequency questionnaire (DFFQ) for a hypertension study of Koreans. The 24-hour recall data of 4,401 subjects aged $20{\sim}65$ years from the 2001 Korean National Health and Nutrition Examination Survey were used for the analysis. Logistic regression model was used to identify the nutrient related with hypertension. Energy, fiber, sodium, calcium, carotene, vitamin B1 and vitamin C were associated with hypertension. Selection the top 30 dish items for these seven nutrients was performed based on their degree of contribution in supplying nutrients in terms of the cumulative percent contribution (cPC), as well as on their degree of explanation for between?person variation, in terms of the cumulative regression coefficient (cMRC). Rice supplied 43% of total energy consumption. Korean cabbage and radish kimchi were two major sources of sodium and it also covered the 27% of between person variation of sodium intake. Soybean paste soup and single item of orange?colored fruits supplied 43% of total vitamin C intake for Koreans and it covered the almost 79% of between person variation among the Korean population. Korean cabbage kimchi was the major source of fiber, calcium, sodium, carotene, and vitamin C for Koreans. In summary, the top 30 selected dish items supplying the 78% to 89% of the 7 nutrients. Those items also covered the 79% to 94% of between person variation of the 7 nutrients consumption. Therefore, the selected 30 dish items in each categories of nutrient could be applicable in developing dish based food frequency questionnaire for hypertension study.

Microbial electrosynthesis has recently been considered a potentially sustainable biotechnology for converting carbon dioxide (CO2) into valuable biochemicals. In this study, bioelectrochemical acetate production from CO2 was studied in an H-type two-chambered reactor system with an anaerobic microbial consortium. Metal-rich mud flat was used as the inoculum and incubated electrochemically for 90 days under a cathode potential of -1.1 V (vs. Ag/AgCl). Four consecutive batch cultivations resulted in a high acetate concentration and productivity of 93 mmol/L and 7.35 mmol/L/day, respectively. The maximal coulombic efficiency (rate of recovered acetate from supplied electrons) was estimated to be 64%. Cyclic voltammetry showed a characteristic reduction peak at -0.2~-0.4 V, implying reductive acetate generation on the cathode electrode. Furthermore, several electroactive acetate-producing microorganisms were identified based on denaturing- gradient-gel-electrophoresis (DGGE) and 16S rRNA sequence analyses. These results suggest that the mud flat can be used effectively as a microbial source for bioelectrochemical CO2 conversion.

Precipitation is the most important component and critical to the study of water and energy cycle. This study investigates the propagation of precipitation retrieval uncertainty in the simulation of hydrologic variables for varying spatial resolution on two different vegetation cover. We explore two remotely sensed rain retrievals (space-borne IR-only and radar rainfall) and three spatial grid resolutions. An offline Community Land Model (CLM) was forced with in situ meteorological data In turn, radar rainfall is replaced by the satellite rain estimates at coarser resolution $(0.25^{\circ},\;0.5^{\circ}\;and\;1^{\circ})$ to determine their probable impact on model predictions. Results show how uncertainty of precipitation measurement affects the spatial variability of model output in various modelling scales. The study provides some intuition on the uncertainty of hydrologic prediction via interaction between the land surface and near atmosphere fluxes in the modelling approach.
The purpose of this study was to examine household food insecurity and the associations of food insecurity with socioeconomic characteristics, food behaviors, health status and nutrient intake among elderly people in a rural area. This study included 191 elderly people (mean age = $72.0{\pm}7.4$) in Jeollabuk-do, Jangsu-gun. House food insecurity was measured using an adapted version of the USDA short form household food insecurity scale, and nutrient intake measured by a 24-hour dietary recall. Only 15.2% of the subjects were in food-insecure households, 84.8% of the elderly households were food-secure. The food-insecure households were significantly lower in the number of family, frequency of shopping, and perceived health status than the food-secure households. In addition, they had serious tooth problems and NSI (Nutrition Screening Index) scores. Food-insecure households were significantly lower in most areas of nutrient intake (energy, protein, fat, Ca, P, Fe, K, Na, Zn, Vit. $B_2$, niacin, Vit. E), and also lower in nutrient intake compared to dietary reference intake (energy, protein, P, Fe, K, Na, Vit. $B_1$, Vit. $B_2$, niacin, Vit. E). These results suggest that the household food insecurity measures used in this study were an important indicator of nutritional well-being among elderly persons in the rural area. Food insecurity should be considered an important issue to public health and food service programs should be expanded for food-insecure households in rural areas.

The prevalence of atopic dermatitis (AD) has increased recently all over the world. Several studies worldwide reported growth retardation associated with AD, but few studies were reported in Korea. Therefore, the objective of this study was to identity the differences in growth and nutrient intakes between Korean children with and without AD. The participants were 71 AD children and age, gender-matched 81 control children aged 10 to 36 months. Demographic information was gathered by questionnaires. Height and weight were measured at clinic and health centers. Height and weight for age, and weight for height were converted as deviation in Z scores using World Health Organization Standard. A 24 hour dietary recall method was performed to estimate nutrient intakes. A higher percentage of AD children had insufficient energy and intakes of calcium, phosphorus, iron, zinc and vitamin B2, defined as intakes lower than 75% of the Dietary Reference Intakes for Korean, compared to the control group (P < 0.001, P < 0.001, P = 0.003, P = 0.001, P = 0.014, P = 0.001, respectively). The percentages of children with height and weight for age Z score below than-1 (stunted) were significantly higher in the AD group (P < 0.001 and P < 0.001, respectively). Multiple food restriction, defined as ${\geq}$ 3 food elimination, was associated with insufficient energy and intakes of calcium, phosphorus, iron, zinc, vitamins A and B2. In conclusion, children with AD need regular nutrient assessment and education about alternative food choices to avoid r food elimination in order to prevent growth retardation or inadequate nutrient intakes. Further longitudinal studies for growth and nutrient intakes should be performed to understand the patterns of growth in children with AD.
The purpose of this study was to find out the information on nutrition labeling and how many calories and nutrients the high school students consumed for 1 day from cookies. A total of 74 male and female high school students in Suwon were surveyed and 56 cookies that they consumed were examined. Background data were collected by questionnaire, cookie intake by 24-hr recall, and the calories and nutrients content in cookies and the amount of intake by nutrition information on the wrapping paper of cookie. The statistical analysis for the data was done by SPSS 12.0. Energy contents in 1 serving size of cookie were $90{\sim}315\;kcal$, average of 170 kcal. The protein contents were $0{\sim}7\;g$, fat $2{\sim}20\;g$, cholesterol $0{\sim}55\;mg$, and sodium $30{\sim}390\;mg$ in 1 serving size of cookie. Most of the cookies(80%) examined contained no trans fat at all, which is desirable. Among the types of cookies, snacks contained higher quantities of calories and sodium, the pie contained more sugar and cholesterol, and the biscuit had more trans fat. One fourth of the cookies examined belonged to 'high calorie, low nutritious food' according to the criteria proposed by The Ministry for Health, Welfare and Family Affairs. Thus the excessive intake of cookies might result in nutritional imbalance. There were large differences in calorie intake among students, from zero who did not intake any cookies at all to maximum 818 kcal/day, an average of 75 kcal/day. When the students who did not intake cookies were excluded, energy 205 kcal. fat 10 g, sodium 177 mg were consumed from the cookie for a 1 day on average.
The purpose of this study was performed to evaluate the prevalence of overweight and to compare the dietary behaviors, nutrient intake and physical activities of specialized game high school students. Total of 163 subjects participated and their weight, height, waist circumference, hip circumference and bone status by a quantitative ultrasound method were measured. The subjects were surveyed by a self-administered questionnaire about general characteristics, dietary behaviors and physical activities. Nutrient intakes of the subjects were assessed by semi-quantitative food frequency questionnaire. The subjects were divided into four groups on their obesity level by BMI. The prevalence of underweight, normal, overweight and obese group was 6%, 58%, 16%, and 20% respectively. BMI was negatively correlated with bone mineral density (p < 0.01) and positively correlated with WHR (p < 0.01). The dietary guideline compliance score for "Enjoy Korean rice food style" was 2.63, followed by "Prepare food sanitarily"2.48, "Do not skip breakfast"2.29, "Eat a variety of vegetables, fruits, dairy products daily"2.25, "Drink water instead of beverage"2.10, "Choose less fried foods"2.09 and "Maintain healthy weight"1.91. The exercise frequency of walking was not significantly different between groups; however, heavy exercise frequency was significantly lower in underweight group than the other groups (p < 0.05). The energy intake was 2153 kcal, which was 81.2% of the Estimate Energy Requirement, and the intake of calcium and vitamin $B_2$ was 66.7% and 77.8% of KDRIs. Particularly, the intake of iron, vitamin A and vitamin C was about 59.4%, 52.2% and 55.4% of KDRIs and INQ was 0.71, 0.63 and 0.65 respectively, and intake of folic acid fell behind 39.1% of KDRIs and INQ was 0.46. Our study suggests that the systematic and continuous nutrition education will have to be provided at schools to improve dietary and health behaviors and prevent chronic metabolic disease for students of specialized game high school.
