Effect of Moisture, Relative Humidity and pH on Color and Pigments of Cold Storage Beef Meat (수분함량, 상대습도 및 pH가 냉장 우육의 색도 및 색소에 미치는 영향)

  • This study was investigate correlation of moisture content, relative humidity, pH, color difference, myoglobin(Myo), oxymyoglobin(Oxy) and metmyoglobin(Met). The moisture content, relative humidity of loin and shank were not changed uniformly during storage, the pH was raised according to storage period. The L value was raised at the closing stage of the storage period, the surface of the b value was higher than interior. Between Myo and Met were positive correlation in common with loin and shank. The surface and interior of loin were negative correlation between Oxy and Met, the surface and interior shank were positive correlation between Myo and L value and were negative correlation between Myo and Oxy. The moisture content, relative humidity, pH and color was not correlation uniformly.

Animal Skin Pigmentation Model Using Full Thickness Skin Graft in C57BL/6 Mouse (C57BL/6 마우스의 등에 시행한 자가 전층피부이식편을 이용한 색소침착 동물모델)

  • Purpose: Skin grafting is one of the most commonly used methods in reconstructive plastic surgery field, but complications such as color change, contracture or hypertrophy are common problems. However, pathophysiology of the color change after skin graft is not yet determined and no animal model is established. Methods: Full thickness skin grafts were performed on the dorsum of C57BL/6 mice. Serial chronological gross inspection for color change and pigmentation were examined. Melanin pigments were traced by Fontana-Masson staining and semi-quantitative analysis was performed. In addition, immunohistochemical staining of S-100, Micropthalmia related Transcription Factor (MITF) and Melan-A antibodies were also performed to observe melanocytes and their changes. Results: After skin graft, color change and pigment spots were observed in the graft. Fontana-Masson staining showed melanin pigments in the epidermal and dermal layers in all mice. Immunohistochemistry staining to S-100, MITF, Melan-A antibodies showed melanocytes at the basal layer of epidermis and dermis. Conclusion: In conclusion, we have established an animal model for skin pigmentation after skin graft. We believe this study may be useful in understanding of the behavior of melanocytes after skin graft.

Synthesis and Characterization of (Cr, Fe)-doped Y2O3-Al2O3 Red Pigments ((Cr, Fe)-doped Y2O3-Al2O3계 붉은 안료의 합성과 특성)

  • Perovskite codoped with chromium and iron have been studied. Samples with $YAl_{0.96}(Cr_{0.04-x}Fe_x)O_3$(x=0.01, 0.02, 0.03, 0.04) were prepared by solid state reaction at $1450^{\circ}C$ for 6 h and were characterized by XRD, FT-IR, Raman spectroscopy, SEM and UV-vis spectrophotometer. The color of the synthesized pigments were from red to dark brown(in bulk). Up to 0.02 mole $Fe_2O_3$ for substituting $Cr_2O_3$ development of color in lime-glaze gives good red color but as increasing amount of $Fe_2O_3$ and decreasing $Cr_2O_3$ proportionally produce from brownish red to brown. Increasing $Fe_2O_3$ amount lead to weaken crystal field relatively due to have smaller ionic radius than $Cr_2O_3$ ionic one. The UV-vis peaks were shifted to lower wavelength.

  • An attempt has been made to investigate the nature of the characteristic darkening reaction occurring in the rice bran oil during the storage. Several pigments were separated by using column and thin layer chromatography of the pigments was made in the light of the knowledge of absorption spectral behavior. The presence of trace amount of iron and phytosteryl esters of ferulic acid (3-methoxy-4-hydroxy-cinnamic acid) was found to be responsible for the development of the characteristic color in rice bran oil. The model reactions with the ferulate, iron and fatty acids could be suggested the mechanism.

Characteristics Evaluation of Hobun Pigments according to Shell Types and Calcination (패각의 종류 및 소성 여부에 따른 호분안료의 특성 평가)

  • In this study, the material scientific characteristics of Hobun pigments used as white inorganic pigment for traditional cultural heritage were identified according to the type of shell and calcination and evaluated the stability of the preservation environment. For the purpose of this, we collected 2 different types of Hobun pigments made by oyster and clam shell and its calcined products(at 1,150℃). Hobun pigments before calcined identified calcium carbonate such as calcite, aragonite but calcination derived changing main composition to portlandite and calcite. Results of FE-SEM showed characteristics microstructure for each shell but pigments after calcined observed porous structure. Porous granule highly caused oil adsorption according to increase specific surface area of pigments. In addition, the whiteness improved after calcined pigments compared to non-calcined pigments, and the color improvement rate of Hobun pigment (CS) which made of clam shell was higher. As a result of the accelerated weathering test, the Hobun pigment-colored specimen had a color difference value of less than 2 after the test, which was difficult to recognize with the naked eye. In particular, the color stability has improved as the color difference value of the Hobun pigment is smaller after calcined compared to before non-calcined pigment. However, it was confirmed that the stability of the painting layer was lower in the specimen after calcined pigment. For antifungal activity test, Aspergillus niger, Tyromyces palustris and Trametes versicolor were used as test fungi, and all pigments were found to have preventive and protective effects against fungi. Especially, the antifungal effect of the calcined pigment was excellent, which is due to the stronger basicity of the pigment.

Synthesis of Cobalt Oxide Free Black Color Spinel Pigment (CoO가 첨가되지 않은 스피넬계 흑색안료의 합성)

  • Spinel pigments, developing black color in high temperature glazes at oxidation or reduction atmosphere, without CoO because of its high price were synthesized by solid solution method. Ten mixed compositions consisted of NiO, MnO, $Fe_2O_3 and $Mn_2O_3$ were fired at $1250^{\circ}C$ for 1h. The resulting pigments were characterized by using XRD, FT-IR, SEM and UV-vis spectrometer. Structure of the pigments are spinel and particles' shape are spherical or cubic. Glazed tiles containing 5 wt% pigments were fired at $1260^{\circ}C$ and $1240^{\circ}C$ in reduction atmosphere. Color in glazes were analyzed by UV-vis spectrometer. Colors of NiO 0.875 MnO $0.125{\cdot}Fe_2O_3$ $0.4875{\cdot}Cr_2O_3$ $0.50{\cdot}Mn_2O_3$ 0.0125 mole% and NiO 0.875 MnO $0.125{\cdot}Fe_2O_3$ $0.3875{\cdot}Cr_2O_3$ $0.50{\cdot}Mn_2O_3$ 0.1125 mole% in lime glaze showed black in oxidation, in reduction NiO 0.875 MnO $0.125{\cdot}Fe_2O_3$ $0.4875{\cdot}Cr_2O_3$ $0.50{\cdot}Mn_2O_3$ 0.0125 mole% and NiO 0.875 MnO $0.125{\cdot}Fe_2O_3$ $0.4375{\cdot}Cr_2O_3$ $0.55{\cdot}Mn_2O_3$ 0.0125 mole% showed black. Separation and Characteristics of the Extract Solution from Ginseng Marc by Roasting Process (볶음처리로 생성된 인삼박 추출액의 분리와 특성)

  • Roasting ginseng marc was roasted at different temperatures (140, 170, 200, 23$0^{\circ}C$) and for different periods (10, 20, 30 min) produced aqueous soluble brown pigments, gel filtration of which over Sephadex G-50 yielded 3 fractions A, B, C. The treatment at higher temperature and for longer time lead to increase of peak A and decrease of peak C. The contents of the brown pigments and the degree of brown color increased about 4 times and over 6 times, respectively, by roasting at 23$0^{\circ}C$ and for 30 min as compared to the control. 5-Hydroxymethyl furfural in aqueous and 50% ethanol extracts of treated samples at 23$0^{\circ}C$ and for 30 min was increased to 3.6 times and 8 times, respectively, and carbonyl compound in both aqueous and 50% ethanol extracts was increased 3 times. Also pyroxene-like substance was increased apparently in both aqueous and 50% ethanol extracts of treated samples.

Physicochemical Quality of Boiled-Dried Anchovies during Post-Irradiation Period (감마선 조사가 건멸치의 이화학적 품질안정성에 미치는 영향)

  • Physicochemical changes were determined for the boiled-dried anchovies packaged in a laminated film(nylon 15${\mu}{\textrm}{m}$/polyethylene 100${\mu}{\textrm}{m}$) and stored for one year at ambient and cooling(5~1$0^{\circ}C$) temperatures after gamma irradiation. Lipophilic and hydrophilic browning pigments increased with storage time particularly at ambient temperature, even though initial 5 kGy irradiation did not affect the formation of pigments significantly. This results were confirmed by the instrumental color determinations, Hunter color L, a, b and ΔE. With respect to changes in relative fatty acid compositions, storage period and temperature were more influential factors than gamma irradiation. Irradiation at 5 kGy induced insignificant changes in the total flavor profiles of stored anchovies, which were mainly composed of n-dodecanal(26.7%), n-pentadecane(22.2%), n-octanal(4.9%) and 2-pentylfuran(3.4%).

  • LCD color filters have been manufactured in a process called photolithography to date, but various printing methods have been studied currently in response to the trend of low-end LCD panels. Direct Printing Process is a suitable fabrication technique to develope pigment components whose dimensions are in nano. The success of this process depends on the systematic preparation of pigment millbase. Conventional millbase dispersions are constituted of the organic pigments, monomer, dispersant and solvents. An experimental study on the rheology of millbase dispersions is presented. Subsequently, this thesis attempts to find out the dispersive characteristics as well as the selection of pigments, monomers and dispersants in the part of millbase among the stages of manufacturing LCD color filters using the direct printing methods. The dispersive characteristics were shown through analytic devices such as PSA, Rheometer, etc.
