Crab Shell로부터 추출한 중금속 흡착제들의 특성 (Characteristics of Heavy Metal Ion Adsorbent Extracted from Crab Shell)

  • This study compared the adsorption characteristics of heavy metal ions by crab shell, treated crab shell with 2N-HCl, treated crab shell with 4%-NaOH, chitin and chitosan.Using crushed crab shell, the heavy metal ions removal rates of $Cd^{2+}$ and $Zn^{2+}$ were about 70-80% in 45minutes, but the removal rates of $Cu^{2+}$, $Cr^{6+}$ and $Pb^{2+}$ was less than 10%, 10% and 30%, respectively. For the by-products crab shell by 2N-HCl treatment, it was shown that the removal rates of $Cu^{2+}$ and $Pb^{2+}$ were about 70-80% in 45minutes reaction. But, some problems were observed, that the contained protein in crab shell was changed into gel in the mixing solution after a few hours. For the by-products of crab shell by 4%-NaOH treatment, the removal rates of Pb and Zn were about 90% in 45 minutes, and those of capacity of chitin and chitosan powder was better than those of the other by-products. The more adding to the adsorbent dosages increased the removal rates, and the adsorption reaction was rapidly occurred in a few minute. Using 1.0 wt% chitin powder, the heavy metal removal rates were ordered $Cu^{2+}$(94%) > $Zn^{2+}$(89%) > $Cd^{2+}$(88%) > $Pb^{2+}$(77%) > $Cr^{6+}$(58%) in 45 minutes. Using 1.0 wt% chitosan powder, the heavy metal removal rates were ordered $Cu^{2+}$(99%) > $Pb^{2+}$(96%) > $Cd^{2+}$(79%) > $Zn^{2+}$(71%) > $Cr${6+}$(46%) in 45minutes. The degree of degree of deacetylation by prepared chitosan was 91%.The Freundlich adsorption isotherm of $Cu^{2+}$, $Cd^{2+}$ and $Zn^{2+}$, when it was applied to 1.0 wt% chitosan powder in minutes, can be acceptable very strictly. The equation constant (1/n) for $Cu^{2+}$, $Cd^{2+}$ and $Zn^{2+}$ were 0.54 0.41 and 0.23 respectively.

Textural and Organoleptic Properties of Tofu Manufactured with Micronized Full-fat Soyflour Fortified with Food Ingredients

  • Textural properties of tofu manufactured with micronized full-fat soyflour (MFS) were enhanced by the addition of soy protein isolate, whey protein concentrate, chitosan oligosaccharide and mushroom powder. The MFS solution (14.2% solid content) was converted to semi-solid tofu by a two-stage heat treatment with the addition of 4% coagulant mix. The MFS tofu was evaluated by a compression test as well as sensory evaluation. To produce the semi-solid gel (MFS tofu) with reasonably high strength and toughness, the MFS solution with 14.2% solid content and 7.0% protein had to be heat treated at 121$^{\circ}C$ for 3min. The relative toughness of MFS tofu was increased by the addition of SPI, showing a 144% increase. The toughness of MFS tofu prepared with the MFS/SPI mixture was greatly increased by the addition of WPC at the level of 0.7% and the water separation from MFS tofu was greatly reduced. Furthermore, the toughness and strength of MFS/SPI tofu was enhanced by the addition of 0.1% chitosan oligosaccharide and 0.2% mushroom powder. The sensory evaluation of the tofu fortified with SPI, chitosan oligosaccharide and mushroom powder was superior to that of MFS tofu, with a higher score for overall preference.

키토산을 첨가한 양념 황석어젓 개발에 관한 연구 (Development of seasoned whangseoke-jeot with chitosan)

  • The purpose of this study was to develop a seasoned Hwangseoke-jeot(a kind of salted and fermented fish) with chitosan having less fishy smell and salty taste. In order to decrease the fishy smell and increase the palatable taste effectively, four types of seasoning were developed, in which minced ginger, garlic and onion were included. In order to improve the color and flavor of seasoned Hwangseoke-jeot, high-quality powdered hot red pepper was also added in all the seasonings. Seasoned Hwangseoke-jeot type 1 had the oil and roasted powder of sesame, which are known to decrease fishy smell and palatable taste, and was the basis of other seasoned Hwangseoke-jeot. Type 2 had the oil and roasted powder of perilla, which also were known to decrease fishy smell and to increase palatable taste effectively. Type 3 had roasted soybean powder and laver to increase savory and palatable taste. It was developed especially for old and young people who like savory taste. Type 4, containing citron syrup, was for the young and children. All the developed seasoned Hwangseoke-jeot samples had better red color and other sensory properies than the control (S-company's seasoned Hwangseoke-jeot), as tested by colorimetry and sensory evaluation. More than 1% (w/v) of chitosan gave an astringent taste to seasoning, so it is recommended not to exceed 1% (w/v) in the seasoning. The developed functional seasonings of jeot would be applicable to other kinds of jeot.

게 껍질분말 첨가식이가 고지혈증 흰쥐의 지진대사에 미치는 영향 (Effect of Crab Shell Powder on Lipid Metabolism in Diet-Induced Hyperlipidemic Rats)

  • This study was performed to investigate the effect of dietary crab shell powder on lipid metabolism in diet induced hyperlippidemic rats. Sixteen male Sprague-Dawley rats were divided into two groups and fed 20% (w/w) carb shell powder supplemented diet for 4 weeks. Energy intake and weight gain were lower in experimental group than in control group. Concentrations of plasma triglyceride, total cholesterol, LDL-cholesterol, and atherogenic index (AI) were decreased and concentration of HDL-cholesterol was increased by crab shell powder supplementation. Concentrations of liver total cholesterol and triglyceride were significantly lower in experimental group. The crab shell decreased triglyceride and cholesterol concentration in plasma and liver, and increased bile acid excretion in feces. Therefore, the crab shell powder is assumed to exhibit function of chitin or chitosan that effects on lipid metabolism and cholesterol reabsorption.

홍화씨 분말 및 키토산의 사료 내 첨가가 종란 생산성 및 후기 난각질에 미치는 영향 (Effects of Dietary Safflower Seed Powder and Chitosan on Hatching Egg Production and Eggshell Quality in Aged Egg-type Breeder Hens)

  • 본 연구는 종계사료 내 홍화씨 및 키토산의 첨가 급여가 산란종계에서 종란 생산성 및 후기 난각질 강화에 미치는 영향을 검토하기 위하여 수행하였다. 54주령 Hy-Line Brown 산란종계 암탉 400수와 수탉 40수를 공시하여 Ca을 3.5%로 수준으로 함유한 실험사료(대조구)에 홍화씨 분말을 0.25% 및 0.50% 수준으로 첨가하거나 키토산을 0.10% 및 0.20% 수준으로 첨가한 총 5개의 실험사료(4반복)를 6주간 급여하였다. 사료섭취량 및 난생산성에서는 처리간에 차이가 없었으나, 종란율은 대조구에 비해 홍화씨 분말 및 키토산을 첨가한 모든 실험구에서 첨가 수준과 관계없이 유의하게 증가하였다(P<0.05). 평균 난각 강도는 홍화씨 분말 및 키토산 첨가에 의해 유의하게 개선되었으며(P<0.01), 난각 두께는 키토산 첨가구가 대조구에 비해 유의하게 높은 것으로 나타났다(P<0.01). 수정율 및 입란대 부화율은 대조구에 비해 키토산 첨가구에서 유의하게 개선되는 결과가 관찰되었다. (P<0.01). 경골 파쇄강도는 처리간에 큰 차이가 없었으나, 경골 내 Ca 및 P 함량은 대조구에 비해 홍화씨 분말 0.5% 첨가구와 키토산 첨가구(T3 및 T4)에서 유의하게 증가하였다. (P<0.01). 혈중 estrogen, calcitonin 및 PTH 등 호르몬 농도에서는 큰 변화가 없는 것으로 나타났다. 상기의 결과로부터 산란종계의 후기 난각질 및 생산성의 개선을 위해서는 사료 내 홍화씨 및 키토산과 같은 Ca의 이용성에 영향을 미치는 성분을 적절히 활용함으로써 후기 난각질과 부화율의 개선을 통해 종란 생산성을 향상시킬 수 있을 것으로 사료된다.

  • The process of coprecipitation of biocomposite hydroxyapatite/chitosan from aqueous solution at low temperature in alkali environnement was examined. We have shown that initially we have the formation of amorphous octocalcium phosphates $(Ca_8(HPO_4)(PO_4)_5,\;nH_2O:\;OCP)$ and the transferring from OCP to amorphous calcium phosphate $(Ca_9(PO_4)_3,\;nH_2O:\;TCP)$, and then from TCP to calcium-deficient hydroxyapatite $(Ca_{10-X}\;(HPO_4)_X(PO_4)_{6-x}(OH)_{2-X}\;:\;ACP)$ and hydroxyapatite $(Ca_{10}(PO_4)_6(OH)_2\;:\;HAP)$. The transformation of ACP to HAP was inhibited in the presence of chitosan. The result suggests that there is an affinity binding between ACP and chitosan and subsequently blocking the active growth site of ACP.

  • Chitosan is a natural polyelectrolytic compound. Researches of adsorption capacity using chitosan have been doing actively. We prepared bead type gel, simple modifier of chitosan, And then experimented adsorption test of heavy metals (Cd etc) using it. According to the result adsorption capacity of chitosan bead was five times higher than chitosan powder. Removal rate of cadmium resulted 90% over in the test that initial concentration of Cd was 100mg/L and bead dosage was 6g/100mL. Adsorption type of heavy metals was similar to general adsorption curve. And optical pH range was 4 - 10 in the adsorption test. In the experiments of other heavy metals (Pb, Zn, Cu, Mn) adsorption types had two stages, highly removal rate-stage at the short time (20minutes) and then slow rate-stage at the after. And removal efficiency at the variable pH ranges revealed relatively good.

키토산을 첨가한 마리보 치즈의 품질 특성 (Effect of Chitosan-Added on the Quality Characteristics of Maribo Cheese)

  • 본 연구는 기능성 성분으로 알려진 Chitosan 분말을 온화한 향미의 마리보 치즈와 접목시킴으로써 기능성 반경성 치즈를 개발하고자 시도되었다. 이를 위해 Chitosan 분말을 일반 Chitosan 분말(CP)과 Nano-Chitosan 분말(NCP)로 나눈 두 개의 처리구로 하여 마리보 치즈 커드에 각각 0.2%와 0.5% 함량을 달리하여 첨가한 치즈를 제조하여 숙성 중 품질 특성과 소비자 기호도를 조사하였다. Chitosan을 첨가하여 제조한 마리보 치즈를 24주간 숙성하면서 숙성 중 유산균 수, pH, 수용성 질소화합물(WSN) 함량, Total phenolic acid 함량, 지방산패도 변화 등 품질 특성을 조사하였다. CP와 NCP를 첨가한 마리보 치즈의 숙성 중 변화에서 pH는 처리구별 유의적 차이 없이 숙성이 경과에 따라 상승하는 결과를 보였으며, NCP 0.2%와 0.5% 첨가구에서 높아지는 결과를 나타내었다. 유산균은 모든 처리구가 숙성이 경과될수록 감소하는 결과를 나타내었지만, Chitosan이 첨가된 마리보 치즈는 대조구에 비해 Chitosan이 가지고 있는 항균성으로 인해 숙성 중 유의적으로 유산균 수가 더 감소 되었다(p<0.05). WSN의 변화는 숙성 전반에 걸쳐 시험구간 유의적 차이 없이 높아지는 경향을 보였으며, NCP 0.2% 첨가구에서 가장 높은 결과를 보였다. 지방산패도는 숙성이 진행될수록 모든 시험구에서 지방산패도가 증가함을 나타내었으며, 숙성 0주차와 4주차에서는 실험구 간의 유의적 차이는 나타나지 않다가 숙성 8주차부터는 대조구보다 Chitosan 첨가구에서 높은 지방산패도를 나타내었다(p<0.05). TP 함량은 4주차를 제외한 모든 구간에서 대조구가 높은 TP 함량을 나타내었다. 치즈의 소비자 기호도 조사에서도 NCP 0.2% 첨가구에서 전반적인 수용도(54%), 향미(65%), 외관(67%) 그리고 구매의사(70%) 등이 비교적 긍정적으로 나타났다. 이상의 결과를 종합하면, CP와 NCP의 첨가가 마리보 치즈의 이화학적 특성을 유지하면서 치즈의 품질상의 특성에 큰 영향을 미치지 않았다. 따라서 향후 키토산을 기능성 소재로 적용하여 마리보 치즈를 제조할 경우, CP보다는 NCP 0.2% 첨가량을 적용하면 최적 품질의 기능성 마리보 치즈 개발이 가능할 것으로 사료되었다.

송죽염과 키토산 함유 치분 및 크림형 세치제의 치면세균막 제거효과 및 치은염 완화효과에 관한 임상실험연구 (Gingival Effect of the Dentifrice with Pine & Bamboo and Chitosan)

  • The authors have studied the 8 weeks clinical experiment on 34 dental patients of age 20s for control group and 32 for experimental 1 group(Paste Type Dentifrice with Bamboo Salt, Chitosan and Powder of Pine Needles and Leaves of Bamboo.) and 32 for experimental 2 group(Powder Type Dentifrice with Bamboo Salt, Chitosan and Powder of Pine Needles and Leaves of Bamboo), in order to find out the effect of plaque removal, prevention of calculus and stain formation. and Gingival effect. The obtained results are as following. 1. Plaque removal effect was the similar level on group 1 and on group 2 as control group. 2. For prevention of calculus formation, there was a little bit better on group 1 at 8 weeks, and for prevention of stain formation, it revealed more or less difference between on group 1, group 2 and control group at 8 weeks. 3. on PMA index, it revealed the significantly differences between group 1, group 2 and the control group at 8 weeks(p<0.05), so it is estimated that there might be signified for gingival subside effect by use of dentifrice with Bamboo Salt, Chitosan and Powder of Pine Needles and Leaves Bamboo.

발효 소목 추출물의 키토산초산 용액과 일라이트 분말에 의한 염색 특성 (Dyeing Characteristics of Fermented Caesalpinia Sappan L. Wood Extract with Chitosan-Acetic Acid Solution and Illite Powder)

  • In this study, silk fabrics was dyed with sappan wood extracts fermented for 5 and 15 days, respectively, and then the dyeability, durability and the functionality of the dyed silk were investigated. Before dyeing, the silk was pretreated with chitosan-acetic acid solution or chitosan acetic acid and illite blend solution. Thereafter, UV-Visible transmittance, color, fastness, antimicrobial activity, and the FIR emissivity were analyzed. As a result, the K/S value was higher in the samples that were not pre-treated or fermented. Regardless of fermentation, the lightfastness was not significantly different. The color fastness to washing was slightly better when the samples were pretreated with chitosan-acetic acid and illite, and then dyed with extracts fermented 5 days. In addition, all samples showed high antimicrobial activity of 99.9%, regardless of the fermentation. Far-infrared emissivity was confirmed to be slightly increased by the illite and chitosan-acetic acid solution treatment compared to the untreated sample.
