대전 , 충남지역 초등학교 영양사의 업무 실태 조사 (Study on Foodservice Management of Dietitian in the Elementary School in Taejon and Chung Nam)

  • This study was carried out to provide the improvable way of foodservice management to dietitian in the elementary schools. For this purpose the serving pattern of food, menu planning, nutrition education, leftover management and difficulties in foodservice were investigated. The survey was conducted through questionnaires, which were collected from 249 dietitions randomly selected in Taejon and Chung Nam. Data were analyzed by SAS program. The main results of this study are as follows. The children in Taejon took foods in the class room(65.7%) and those in Chung Nam in the dinning hall(89.9%)(p<0.01). In menu planning the balance of nutrition(42.6%) was mainly considered and then food preference(19.7%), variety of menus(16.1%), food cost(16.1%), composition of food color, taste and texture(3.2%), skills of food making(1.6%) and the number of students(0.8%). They referred cooking magazines(47.7%), the previous menu(42.2%), children's opinion(7.2%) for planning menu. The insufficiency of implements and devices for food(24.1%) and lack of season's food(20.4%) were indicated as difficulties in their job. 34.5% of dietitians used a standard menu, 79.5% investigated food preference of children, 74.3% evaluated taste of foods before serving, and 80.7% regularly checked leftover. The major reason for leftover was careless of the teacher in charge in Taejon and bad taste of foods nutrition in Chung Nam(p<0.001). 98.5% of them answered that they had the responsibility for nutrition education in elementary school. They had a hard time in relationship with the staffs in school(40.6%) and employees for food(39.8%), and lack of market information(38.2%). To efficiency of dietitian's work can be enhanced by reflecting the results of children's food preference and leftover, by using standard cooking method and proper cooking utensil, and by performing nutrition education for children by themselves.

아토피 어린이의 친환경 대체식품 개발을 위한 식품선호도 조사 (Food Preference of Atopic Children in Incheon Area)

  • The purpose of this study was to get adequate substitute snacks for atopic dermatitis children. For this purpose food preference was surveyed by questionnaires to atopic dermatitis children in the kindergarten of Incheon area. As a result, anthropometric measurements were not significantly different by gender Most of atopic children were severe malnutrition by Rohrer index average 1.375. $13.3\%$ of atopic dermatitis started during newborn baby. $62.3\%$ of atopic dermatitis symptom started from 7 months to 3 years old. $48.9\%$ of atopic children didn't know the causes of the symptom. Though parents didn't thought instant/retort food, fried food, egg, snacks, milk were good for atopic dermatitis, they have offered egg, milk, meat, mackerel to their atopic dermatitis children for growth. Snacks of atopic dermatitis children were positively correlated between children's eating and favorite snacks(r=0.84), children's eating and parents' wishing snacks (r=0.615) and children's favorite and parents' wishing snacks(r=0.23). Therefore $83.7\%$ of atopic dermatitis children and their parents wanted reliable processed foods, $83.3\%$ of them despite high cost.

결식아동에 제공되는 도시락 지원 수혜자의 만족도, 메뉴 기호도 및 식습관 조사 (Beneficiaries' Satisfaction, Menu Preference and Dietary Habits of Lunch-box Program Provided to Low-income Families)

  • Information regarding the status of lunch box service for children and juveniles from nutritionally vulnerable families is limited and has not been assessed from the view of beneficiaries. Therefore, this study intended to determine the satisfaction, current status, menu preferences, and dietary habits of recipients served lunch-box meals from Pocheon city. There were 41 subjects from primary schools and 73 from secondary schools. Although 94.8% answered that the foods were generally helpful, as much as 28.9% replied that the amount of food provided was too little. Only 77.2% answered that they eat the foods always or usually, 29.5% answered that they throw away leftover foods, and only 71.9% recycled empty containers, suggesting the need for instruction regarding how to deal with leftover foods and containers. Food preferences were high for deep-fried foods and meats and low for fish and vegetables, and that for vegetable egg rolls was relatively high, suggesting the need to increase vegetable intake. Adherences to guidelines regarding street foods was the lowest in both elementary and secondary school students, suggesting that the contents of nutrition education for these students should include materials to improve dietary habits, along with increasing the consumption of milk.

편식하는 비만 아동의 식행동, 맛 선호도 및 영양 섭취 상태 (The Dietary Behaviors, Taste Preferences, and Nutrient Intakes of Obese Children Consuming Unbalanced Diets)

  • This study was designed to evaluate the nutritional status and dietary problems of obese elementary students consuming unbalanced diets. Blood parameters, body-image perceptions, taste preferences, and nutrient intakes of 40 obese elementary students with unbalanced diets were compared to those of 40 additional obese elementary students as a control. The averages for age, height, weight, and obesity index were 11.5 years, 142.0 cm, 51.0 kg, and 35.4% in the study group and 11.8 years, 144.0 cm, 53.5 kg, and 36.3% in the control group, respectively. The major disliked foods by the students in the study group were vegetables (65%) particularly Kimchi (15%), as well as fish(15%), and pulses (10%). Mean serum cholesterol, blood glucose, GOT/GPT, and hemoglobin levels were 175.1 mg/dL, 89.2 mg/dL, 24.1/18.9 IU/L, and 14.3 g/dL in the study group and 182.8 mg/dL, 91.3 mg/dL, 28.3/33.9 IU/L, and 14.7 g/dL, in the control group, respectively. Approximately 60${\sim}$80% of the subjects responded that they eat a meal everyday, and the remainder skipped at least one meal. The preference for salty tasting foods was significantly lower in the study group, but the preference for hot tasting food was higher as compared to the obese control group(p<0.05, p<0.05). The daily energy intakes of the study and control groups were 1,768.3 kcal and 1,572.7 kcal, respectively, but there was no significant differences between them. Daily intakes of animal protein, fat, animal fat, and vitamin $B_2$ were significantly higher in the study group than in the control group. In conclusion, this study found that obese children consuming unbalanced diets strongly disliked vegetables, particularly Kimchi, as well as hot tasting foods; however, they preferred salty foods. Daily intakes of animal protein and fat were higher in the study group as compared to obese children not consuming unbalanced diets.

탁아기관 급식을 위한 식단작성 전산 프로그램 개발 (Development of Computer-based Menu Planning Program for Day-Care Centers)

  • The purpose of the study was to develop computer-based menu planning program for day-care centers maximizing food preference score among children and satisfying such constraints as expense, nutrients, and season. Children's preference about 142 menu items was surveyed among 382 children of day-care centers. A 16-bit personal computer compatible with IBM-PC/AT was used. The data base files were created by dBASE III Plus, and processing programs were created by using FORTRAN language. Children preferred bread or a la carte menu items to cooked rice in main dish category. Deep fat fried or stir-fried menu items were more preferred than kimchi or cooked vegetables in side dish category. Preference scores for menu items were influenced by cooking methods or main ingredients. The contents of the computerized system show that when the program runs, the user should type inputs of cycle, season, and menu pattern, then the computer lists a series of menu satisfying the criteria of constraints. The user can examine and select a set of menu from the menu lists. Menus are generated seasonally. Menu lists are generated weekly and monthly basis with the contents of menu items, preference scores and price. Nutrient reports are also generated on a weekly and monthly basis with the contents of calories, 12 nutrients and price. Recipes for each menu items are also generated.

어머니의 영양지식 및 식습관과 국민학교 아동의 식품기호와의 관계에 관한 연구 (A Study on the Relationship between Nutrition Knowledge and Food Habit of Mothers and Food Preference and other Factors of their Elementary School Children.)

  • This survey was carried out to investigate the correlationship between the nutrition knowledge scores and food habit of the mothers and food preference and other factors of the 272 elementary school children in Masan. The results were summarized as follows : 1. Children's most favorite food was fruits, but they dislike spicy vegetables and some fermented foods. Preferences of the male children to food groups such as protein, calcium and carbohydrate were significantly higher than those of the female children. 2. The rate of the children who take between-meal snacks 2 o 3 times a day was high and those children who skip breakfast take snacks more often. They prefer to eat fruits, dairy products and cakes as their snacks. The body weight of the children who take snacks more frequently was rather lower. 3. As the mother's nutrition knowledge scores rise, so do those of food habit scores. The nutrition knowledge scores go up according to the education degree of the mothers, but the food habit scores seem to have little to do with their education degree. The nutrition knowledge scores of the working mothers were lower than those of the non-working mothers. 4. There was strong positive correlation between the food preference on the food group and those on the other food groups of the children. As the food habit scores of the mothers rise, the children prefer to take calcium and carbohydrate group. Those who take more fat showed higher body weight.

전통식품 기호증진을 위한 초등학생용 미각교육교재 및 지도서 개발 (Development of a Sensory Education Textbook and Teaching Guidebook for Preference Improvement toward Traditional Korean Foods in Schoolchildren)

  • The purpose of this study was to develop a textbook and teaching guidebook on sensory education for lower grade students at elementary schools. The goal of sensory education was to improve preferences for traditional Korean foods. An advisory committee was organized that was composed of 8 professionals in the education field, in order to discuss the adequacy and validity of the textbook's content. The textbook's units consisted of three parts composed of the following: 'feel by the five senses' (2 lessons), 'enjoying traditional Korean foods' (9 lessons), and 'eating together' (1 lesson). The lesson activities were based on experiential learning. The teacher's guidebook contained an overview of the education process, with specific information and practical guidelines for each lesson. Ninety-seven children in 3rd grade from one school participated in a pilot lesson, which evaluated the educational effects and satisfaction. After the lesson, the children had improved preferences for foods which were taught about in the class, along with better eating attitudes. These results reflect that the developed materials were suitable for improving children's preferences toward traditional Korean foods.

영.유아의 연령과 성별에 따른 식행동과 식품 기호도에 관한 연구 (Study of Eating Behavior and Food Preference in Young Children: Differences by Age and Gender)

  • The primary object of this study was to examine both preferences in a variety of foods and snacks and the eating habits among young children (aged 13 months through 50 months old). In addition, this study examined whether there would be significant differences in the preferences and eating habits by of young children of different ages and gender of young children. This study included 193 infants (85 boys, 108 girls) of aged 13 through 50 months of old who were enrolled in early childhood education and care settings in Seoul and Gyunggi Province. The information regarding food and snack preferences among young children were gathered through surveys filled out by their mothers and the children's overall eating habits were assessed by their teachers. The main results of this study were as follows. Overall, there were some patterns in eating bere asss and food preferences in foods and snacks among young children. There were no significant differences in both eating bere asss and food preferences by gender of young children. But, however, there were significant differences in food (p<0.001) and snack preferences (p<0.001) by of children of different ages of young children.

충북지역 아동들의 전통음식에 대한 의식과 기호도 - 명절음식, 떡, 전통음료 - (Perception and Preference of Korean Traditional Foods by Elementary School Students in Chungbuk Province - Tradition Holiday Food, Rice Cake, Non-Alcoholic Beverage -)

  • This study was performed to investigate the perception and the preference of Korean traditional foods such as traditional holiday foods, rice cakes and beverages. The subjects were 598 elementary school students(male 310, female 288) in fifth or sixth grades. The most favorite traditional holiday food was rice cake soup(57.4%) and 92.4% of subjects wanted to keep the traditional holiday foods because of the traditional custom. The traditional beverages mainly drinking at home were sikhye(35.6%), misugalou(30.2%), green tea(18.5%), etc. Children's most favorite beverage was misugalou(90.5%) and they had no taste for ginseng tea(39.6%). Children did not know well about booggumi(64.1%), dootubdduk(63.3%), whajun(39.6%), etc. and liked gguldduk(94.2%) better than the others. They liked the rice cake because of its good taste(69.0%) and disliked it because of chocking(30.9%), not eating frequently(29.5%), hard and tough(18.2%), and so on. And they wanted to make the rice cake softer and sweeter like the cake and mostly ate it on the traditional holidays.

충남지역 고학년 초등학생 학부모의 전통음식에 대한 인식과 선호도 - 떡, 한과, 전통음료를 중심으로 - (The Upper Grade Elementary Student's Parents' Awareness and Preference of Korean Traditional Foods in ChungNam Area - Focusing on Tteok, Hankwa, Korean traditional drink -)

  • In terms of awareness of Korean traditional food, elementary students are most affected by their parents. The objective of this study was to analyze upper grade elementary students' parental awareness and preference of Korean traditional foods in the Chungnam Area. In a survey of 126 parents, 58% of subjects were interested in Korean traditional foods, but there was no significant difference according to age. About 87% of parents thought that inheritance of knowledge on Korean traditional foods was needed. The reasons for inheritance of knowledge on Korean traditional foods were 'To stick to style of Korean traditional foods' (68.2%), 'Palatable' (21.8%), 'Education for children' (6.4%), and 'Beautiful and fine custom' (3.6%). The awareness point of 'Korean traditional foods are easy for cooking' increased with increasing age (p<0.01). In all age groups, subjects highly recognized that Korean traditional foods are good for health. There were significant correlations between overall preferences for Tteok and Hankwa (r=0.351, p=0.001), Hankwa and Korean traditional drink (r=0.374, p=0.001), and Korean traditional drink and Tteok (r=0.406, p=0.001). As a result, preferences for other items also increased when preference for one of the three traditional foods increased. Therefore, education on Korean traditional foods is necessary in order to satisfy parental preferences.
