Eating patterns of children's favorite foods and its related factors among elementary, middle, and high school students in Korea

  • BACKGROUND/OBJECTIVES: There are limited studies investigating the eating patterns of children's favorite foods. The present study aimed to evaluate a wide range of children's favorite foods, derive its eating patterns, and identify factors related to the patterns. SUBJECTS/METHODS: A nationwide cross-sectional study included 5,458 students in elementary, middle, and high schools. The survey was conducted at each school to evaluate children's favorite food intake, including the intake frequency of 31 food items or food groups, and its related factors, such as demographic, economic, and environmental characteristics and awareness of policies on children's favorite foods. Factor analysis using varimax rotation method and logistic regression analysis were conducted. RESULTS: Two factors were derived as major eating patterns from data of children's favorite foods: the 'unhealthy eating pattern' which mainly involves confectionery, chocolate, ramen, fried food, etc.; and the 'healthy eating pattern' which mainly involves soybean milk, vegetables, fruit juice, and nuts. A stepwise selection procedure through the regression analysis revealed that allowance, use of screen media, less awareness of policies on children's favorite foods, and less interest in health were positively related to the tendency of unhealthy or less-healthy eating patterns (P < 0.05). CONCLUSIONS: This study examined that the eating patterns of children's favorite foods were associated with certain environmental characteristics and awareness about the related policies. These findings suggest that a nutrition education program regarding children's favorite foods needs to be conducted according to the characteristics of students to develop their healthy eating habits and proper choice of favorite foods.

어린이 기호식품에 대한 학부모 인식 조사 (A Study on the Parents' Perceptions of Children's Favorite Foods)

  • The purpose of this study was to investigate the parents' perceptions of children's favorite foods. Mothers of elementary school students in Seoul were asked in a survey about their perceptions of children's favorite foods and their opinions of the related policy. Respondents pointed out the problems of children's favorite foods including insufficient sanitation, concerns with food additives, untrustworthy manufacturer, unsafe food distribution system and overuse of MSG. Overall hazardous perceptions of children's favorite foods were 2.71 out of 4.00. Most respondents believed that the children's favorite foods contained some harmful ingredients or over nutrients, and 69.2% of those respondents knew exactly which ingredients may cause children's health problems. The hazardous perception of chocolate, yogurt, sport drink and fruit drink were low compared to others, whereas hazardous perceptions and accuracy were high in candies, icebars, hamburgers and pizza, In terms of comprehensive countermeasures against unsafe children's foods, the respondents perceived that the establishment of standard amounts of nutrient value and food additives was the most important issue.

아동의 기호식품섭취와 어린이기호식품정책과의 관련성 분석 (Relationship between the Intake of Children's Favorite Foods and Policy based on Special Act on Safety Control of Children's Dietary Life)

  • Objectives: This study examined the status of children's favorite foods intake and the relationship with the policy environment based on the Special Act on Safety Control of Children's Dietary Life for suggesting a supportive policy strategy. Methods: The subjects were 4th grade students (n=1,638) in elementary school from 45 schools collected from seven areas (Seoul, Daegu, Daejeon, Gyeonggi, Chungnam, Jeonbuk, and Gyeongnam). The children participated in a self-administered questionnaire survey in class under the supervision of the teacher. The questionnaire consisted of items, such as social demographic characteristics, frequency of intake of the children's favorite foods, and policy cognition. A t-test and ANOVA were applied to explore the relationship between the frequency of children's favorite foods intake and policy cognition. The survey was implemented from August 2016 to September 2016. Results: For the boys, the frequency of 'high-calorie low nutrient foods intake' (HCLN) was significantly higher than that of the girls (p<0.01). For the children who received information on their favorite foods from the internet, the frequency of HCLN was higher than the other sources (p<0.01). The time of TV viewing and computer usage, and smartphone usage was associated with a higher frequency of HCLN, and a lower healthy favorite food intake (all p<0.001). The intake frequency of healthy favorite foods indicated a positive correlation with the policy cognition, including policy perception, usefulness, necessity and buying intention, and educational experience. Conclusions: This study showed a correlation with the frequency of children's favorite foods intake and policy. In particular, the frequency of children's healthy favorite foods intake indicated a meaningful relationship with the policy than the frequency of HCLN. This study also found that the consumption of children's healthy favorite foods was positively correlated with the educational experience. To develop a supportive policy for a good dietary environment for children, there is a need to focus on how to collaborate with multiple levels of influences, such as the national level, school level, and family.

초등학생의 어린이 기호식품에 대한 의식과 섭취 실태 조사 (Awareness and Behavior of Elementary School Children on Children's Favorite Foods)

  • 본 연구는 어린이 기호식품에 대한 초등학생들의 인식과 섭취 실태/행동을 알아보고, 또 성별 및 학년과의 연관성을 알아보고자 수행되었다. 일개 도시의 13개 초등학교 주변에서 무작위 추출된 초등학생 306명(남 188명, 여 118명)에 대하여 직접면담법에 의한 설문조사를 수행하였다. 전체적으로 20% 이상의 학생이 어린이 기호식품에 대한 지식이 없었으며 또 어린이 기호식품에 대한 정보원이 없었다. 또한 60% 이상의 학생이 1주일에 1~2회 이상 학교 주변 어린이 기호식품 판매업소를 이용하는 것으로 나타났다. 어린이 기호식품에 대한 정보 습득 경로로는 학교가 37%로 가장 많고, 다음으로 가정 16%이었다. 어린이 기호식품에 대한 의식 및 행동을 나타내는 요인들 중에서 지식과 정보 습득 경로는 성별과 유의한 연관성이 있었다(p < 0.05). 또 지식, 정보 습득 경로, 태도, 섭취 이유에 있어 학년과 유의한 연관성이 있었다(p < 0.05). 남자 어린이가 여자 어린이보다 지식 수준은 높았으나(p < 0.05), 태도는 낮고 또 섭취 빈도가 높았다. 학년이 높을수록 어린이 기호식품에 대한 지식과 태도 수준이 높아지고 다양한 정보 습득 경로를 가졌으나(p < 0.05), 또한 섭취 빈도가 높았다. 이러한 결과는 조사대상자의 지식과 태도/행동의 불일치를 나타낸다. 그러므로 학생들의 주요 정보 습득 경로인 학교급식 프로그램과 학교 및 가정에서의 식품위생/안전교육이 더욱 향상되어야 함을 나타낸다. 더불어 학교주변에서 불량식품에 대한 규제도 강화되어야 할 것이다.

아동의 카페인 섭취실태에 관한 연구 (Survey of Caffeine Intake from Children's Favorite Foods)

  • The daily caffeine intake from elementary school children's favorite foods was surveyed and evaluated. Children may respond to caffeine differently from adults because they have different physiological makeup and are functionally immature. Therefore, caffeine exposure may have more serious consequences for children than for adults, irrespective of sensitivity. Their preference, perception, and intake of caffeine from children's favorite foods were investigated by questionnaire for 355 children. The order of children's preference over foods containing caffeine was ice cream and ices, confectionary, milk and milk products, and soft beverage. The daily caffeine intake of children was estimated to range from 0.16 to 917.28 mg/day, with an average of $36.04\;{\pm}\;82.7$ mg/day and $36.9\;{\pm}\;96.0$ mg/day for boys and girls, respectively. The daily caffeine intake according to body weight was $1.08\;{\pm}\;2.23$ mg/kg and $1.12\;{\pm}\;2.66$ mg/kg for boys and girls, respectively. The percentage of acceptable daily intake (ADI) of caffeine was 43.4% for boys and 44.9% for girls. The sources of caffeine for boys and girls were soft beverage (18.3 mg and 16.1 mg), milk and milk products (8.9 mg and 8.5 mg), ice cream and ices (5.7 mg and 7.3 mg), chocolate (1.6 mg and 3.2 mg), and confectionery (1.6 mg and 1.8 mg).

어린이 선호 간식의 Na와 Cl 함량 분석 (Analysis of Na and Cl Contents in Children’s Favorite Foods)

  • 본 연구는 어린이들이 선호하는 패스트푸드, 학교근처 길거리 즉석조리음식, 과자 등 가공식품, 그리고 집에서 먹는 과일류와 우유류 등 총 89종 식품의 나트륨과 염소 함량을 중성자 방사화 분석법으로 분석하여 33개의 식품 종으로 분류하여 제시하였다. 어린이 선호 간식 100 g 당 나트륨 함량은 과일은 0.3~35.1 mg, 우유류는 28.9~82.5 mg의 분포를 보였고, 빵, 케이크, 떡류는 127.2~602.2 mg. 캔디류, 쿠키류, 아이스크림류는 2.5~1169.9 mg의 분포를 보였다. 거리의 즉석조리음식과 서양식 패스트푸드 100 g은 각각 226.9~693.7 mg과 103.4~875.8 mg의 분포를 보였다. 어린이 선호 간식 중 튀긴치킨, 핫도그, 버거류, 도넛은 식품 100 g당 평균 Na 함량은 536 mg, 553 mg, 794 mg, 562.2 mg으로 '고 Na 식품'인 반면에, 과일, 우유류, 캔디류, 초코렛의 Na 함량은 4.9~82.5 mg의 분포를 보여 '저 Na 식품' 임을 보였고, 그 이외 스낵, 빵, 케이크, 떡, 김밥 등의 식품 100 g당 평균 Na함량은 175.2~496.9 mg을 보여 '중 Na 식품' 임을 보였다. 그리고 라면, 만두 및 누들, 버거류 및 피자 1회 분량을 통해서 667 mg 이상의 나트륨을 섭취하여 Na 1일 목표섭취량의 1/3이상을 상회하여 섭취하게 되며, 특히 라면 1회 분량을 통해 Na 목표섭취량의 2/3를 섭취할 수 있어 Na 저감화가 필요함을 보였다. 어린이 식품의 Cl 함량은 식품에 따라 차이를 보이지만, 식빵, 쿠키, 칩류, 버거류의 경우 모두 750 mg 보다 높았다. 본 연구 자료는 어린이 Na 섭취량 감소를 위한 영양교육이나 농촌진흥청에서 8차 개정 식품성분표 구축을 위한 자료로 사용할 수 있다.

고열량·저영양 식품의 관리정책 시행에 따른 어린이 기호식품의 영양성분 변화 (Changes in Nutrient Contents of Children's Favorite Foods after Policy Implementation on Energy-Dense and Nutrient-Poor Foods in Korea)

  • 어린이 식생활안전관리 특별법에 근거한 고열량 저영양 식품의 관리 정책이 본격적으로 시행된 이후, 2010년 3월 말과 2012년 7월 말 기준 생산 판매가 지속된 어린이 기호식품, 단종 어린이 기호식품과 신규 어린이 기호식품을 대상으로 단위용량당 평균 열량 및 영양성분(포화지방, 단백질, 당류, 나트륨)의 개선 여부를 분석한 주요 결과는 다음과 같다. 첫째, 2010년 3월 말과 2012년 7월 말 기준 생산 판매가 지속된 어린이 기호식품은 총 6,174개, 이 중 고열량 저영양 식품은 1,249개(20.2%)였다. 또한, 단종 어린이 기호식품은 총 510개, 이 중 고열량 저영양 식품은 206개(40.4%)였으며, 신규 어린이 기호식품은 총 1,173개, 이 중 고열량 저영양 식품은 총 371개(31.6%)로 조사되었다. 둘째, 생산 판매가 지속된 어린이 기호식품 중 평균 열량 또는 영양성분에서 긍정적인 변화만이 1개 항목 이상 나타난 식품유형은 빵류, 아이스크림류, 과채음료, 즉석섭취식품(이상 1개 항목), 혼합음료(2개 항목), 빙과류(3개 항목)였다. 반면 부정적인 변화만이 1개 항목 이상에서 나타난 식품유형은 과자, 초콜릿류, 유산균음료(이상 1개 항목), 캔디류(2개 항목)였다. 한편 어육소시지, 탄산음료, 유탕면류 및 국수, 피자에서는 긍정적인 변화와 부정적인 변화가 동시에 나타났다. 다만 단위용량당 평균 열량 또는 영양성분의 변화는 대부분 1 kcal 또는 1 g 미만이었다. 셋째, 열량 및 영양성분 함량의 긍정적인 변화는 어린이 기호식품 중에서도 고열량 저영양 식품에서 더욱 뚜렷하게 나타났다. 생산 판매가 지속된 고열량 저영양 식품 중 평균 열량 또는 영양성분에서 긍정적인 변화만이 1개 항목 이상 나타난 식품유형은 과채음료, 유산균음료, 혼합음료(이상 1개 항목), 빙과류(3개 항목), 아이스크림류(3개 항목), 즉석섭취식품(3개 항목)이었다. 반면 부정적인 변화만이 1개 항목 이상 나타난 식품유형은 캔디류, 초콜릿류, 탄산음료(이상 1개 항목)였다. 한편 빵류, 유탕면류 및 국수, 피자의 평균 열량 또는 영양성분에서는 긍정적인 변화와 부정적인 변화가 동시에 관찰되었다. 단위 용량당 평균 열량 또는 영양성분의 변화는 대부분 1 kcal 또는 1 g 미만이었으나, 일부 식품유형(빙과류, 빵류, 즉석 섭취식품, 피자)에서는 상대적으로 큰 변화가 발견되기도 하였다. 마지막으로 신규 어린이 기호식품이 단종 어린이 기호식품보다 평균 열량 또는 영양성분에서 긍정적인 변화만이 1개 항목 이상 나타난 식품유형은 빵류(3개 항목)와 탄산음료(2개 항목)였으며, 부정적인 변화만이 1개 항목 이상 나타난 식품유형은 초콜릿류(4개 항목), 아이스크림류(4개 항목), 즉석섭취식품(3개 항목)이었다. 과자, 캔디류, 과채음료, 혼합음료, 유탕면류 및 국수, 피자에서는 긍정적인 변화와 부정적인 변화가 동시에 관찰되었다. 본 연구 결과 고열량 저영양 식품 관리 정책이 본격적으로 실시된 이후에도 어린이 기호식품의 단위용량당 평균 열량 및 영양성분상에 일부 부정적인 변화를 확인할 수 있었다. 이는 식품회사들이 자율적으로 제품의 긍정적인 개선을 적극 실천하기보다는, 현행 고열량 저영양 식품 분류 기준에 저촉되지 않는 선에서라면 일부 부정적인 방향으로의 제품 변화 역시 시도하고 있음을 시사한다. 따라서 고열량 저영양 식품 관리 정책이 어린이 기호식품의 영양개선을 통하여 어린이를 위한 건강한 식생활 환경 조성에 미친 영향은 아직까지 일부 식품 유형에만 제한적이라 할 수 있다.

제천지역 학부모와 어린이 보육시설 원장들의 어린이 기호식품 품질인증에 대한 인식 및 소비행동 조사 (Study on Recognition and Consumption Behavior of Quality-Certified Children's Preferred Foods of Nursery Directors and Parents in Jecheon Area)

  • Purpose: This study aimed to identify the perception of quality-certified children's preferred foods as well as consumption behaviors of nursery directors and parents. Methods: A total of 243 nursery directors and parents of preschool children were surveyed using questionnaires. Results: Parents' perception scores were lower than directors' scores for many of the questions. Parents showed significantly higher scores for food safety standard questions and nutritional fortifying questions than directors (p<0.001 each). On the other hand, directors showed significantly higher scores for questions about products nutrition and safety (p<0.001, p<0.01). When buying children's favorite food items, food additives and hygiene level of vendors were the most important, in that order. Parents' scores for questions on purchasing behaviors of quality-certified children's preferred foods were significantly higher than those of directors'. Further, respondents with nutritional education experience showed high behavior scores. Conclusion: It can be concluded that promotion of quality-certified children's preferred foods is insufficient. The nutrition education group showed high scores for perception and positive consumption behaviors of quality-certified children's preferred foods. It is important to cooperate with nursery directors and parents of preschoolers to further children's nutritional education.

어린이집 아동들의 식생활 태도에 관한 연구 (A Study on Dietary Attitudes of Preschool Children in Child Care Center)

  • This study aimed at examine dietary attitude, eating behavior and food preferences of children in child care center. The children involved in this study were 153 boys and 134 girls, aged 3 to 6 years old. The eating frequency of breakfast and the number of meal times a day were significant difference according to sex(P<0.01). Reason for skipping breakfast was ‘no appetite’(49.3%). It was found that 51.5% of the children belonged to ‘fair’ in food habit score, while children in ‘poor’ and in ‘excellent’ were 25.0% and 9.7% respectively. There was no significant difference in food habit score between boys and girls. Their preferred staple foods were ‘cooked rice’ and ‘Chajangmyon’, their preferred soup was ‘seaweed soup’. Also, their most preferred side dishes with animal foods were ‘fried chicken’ and ‘Bulgogi’. The preference of ‘hard boiled soybean curd’ and ‘pan fried soybean curd’ among the side dishes with vegetable foods were significant according to the obesity index(P<0.05). Children preferred side dishes with animal foods to those with vegetable foods. First considered item in meal preparation was child's favorite(58.1%). Mother's response to child's unbalanced diet was ‘trying to persuade the child’(56.6%). It was significant according to mother's occupation(P<0.01). The nutritional management program at child care center is required to enhance the nutritional status of children. Also the nutritional education for the children and their meal planners is required for better growth and health promotion of preschool children.

대전지역 급식학교 초등학생들의 음식 기호도 (Food Preference of Elementary School Children Under Meal Service in Taejon)

  • This study was done to provide basic information for nutrition education and meal planning by analyzing children's food preference. For this purpose, 938 children from eleven elementary schools under meal service were randomly selected in Taejon. The survey was conducted by questionnaires, and data were analyzed by SAS program. Children prefered ssalbap to japkogbap and liked kimbap the best among one dish foods. But their most favorite foods were chajangmyun in noodles, miyeokkuk in soups, and chamchichigae in pot stew. Sixth graders like kimchichigae more than third graders. In the case of chims, children like duejigalbichim, sogalbichim, and dalgyalchim. In the jorim, they prefered duejigogi jangjorim, mechurial jangjorim to any other jorims. The preference of bockum, namul, jangachi, and jotgal is generally low. Children's preference is high in fruit, drink, fried food, one dish food and is low in jangachi, namul, bockum. These results suggest that the preference of foods should be fully taken into consideration in school meal service so that they can eat foods with pleasure. Foods, which are low in preference due to the cooking method, should be prepared with new cooking methods developed specifically for children. 'Even though the preference of food is low to the children, the nutritious foods should be utilized in the school menu. Then, the importance of food intake must be taught to them through nutrition education.
