육계에 사과박 발효물, 계피의 첨가, 급여가 생산성 및 계육 품질에 미치는 영향 (Effects of Dietary Fermented Apple Pomace and Cinnamon Addition on Meat Quality and Performance in Broiler)

  • 본 시험은 육계 사료 내 사과박 발효물, 계피 및 계피 첨가 사과박 발효물을 첨가 급여시에 육계 생산성, 혈액 성상 및 계육 내 지방산화도에 대해 미치는 영향을 조사하고자 실시하였다. 육계 Cobb 종 수컷 총 600수를 5처리 4반복 반복당 30수씩 공시하여 5주간 실험을 실시하였다. 실험 전 기간 동안 증체율 및 사료섭취량은 사과박 발효물을 급여한 처리구에서 다른 처리구에 비하여 최대 30g 이상의 유의적인 개선효과를 나타내었으며(p<0.05), 계피 및 계피 첨가 사과발효물 처리구에서는 무항생제와 비교하였을 때 유의적인 차이는 인정되지 않았다. 각 처리구간 혈액 생화학 및 혈구 분석에서는 전체 처리구 간 유의적인 차이는 없었지만 Glucose는 계피를 첨가한 처리구에서 감소효과가 나타났으며 향후 이에 대한 좀더 깊은 연구가 필요할 것으로 사료된다. 지방산화도는 각 처리구간 사이에 유의적인 차이가 나타나지 않았다. 결과적으로, 육계 사료 내 사과발효물의 첨가 급여는 육계에서 생산성을 개선시키는 효과가 있는 것으로 사료되며 현재까지 이에 대한 연구가 매우 부족하다는 것을 감안할 때 향후 이에 대한 좀더 깊은 연구가 필요할 것으로 사료된다.

RAPD Fingerprinting for the Species Identification of Animals

  • The studies were based on the RAPD fingerprinting for the species identification of animals. The genomic DNA samples of ostriches, Taiwan local chickens, Aboracres broilers, Leghorn chickens, quails, doves, emus, Beltville small white turkeys, pheasants, Chinese geese, mule ducks, Holstein cattle and Landrace pigs were amplified with random primers by RAPD-PCR for fingerprinting. The results showed that the varied band patterns of DNA fingerprints were generated from templates depending on the kinds of primers or animal species. The same primer applied to the same breed, all of the main bands are similar, but which were different among species. In order to try to identify the species from the mixture of meat by RAPD fingerprinting, the meat of ostrich and cattle was mixed in different ratios for this study. The results showed that it could be easily and precisely distinguished according to the band distribution of RAPD patterns.

Comparison of the Fatty Acid Composition and Small Molecular Metabolites between Yanjin Blackbone Chicken and Piao Chicken Meat

  • The fatty acid composition and small molecular metabolites in breast and leg meat of Yanjin blackbone chickens (YBC) and Piao chickens (PC) were detected by gas chromatography-mass spectrometry and liquid chromatography-quadrupole static field orbital trap mass spectrometry. Thirty-two fatty acids were detected, and the total fatty acid content of PC was significantly higher than that of YBC (p<0.05). Oleic acid, linoleic acid, palmitic acid, stearic acid, and arachidonic acid were the main fatty acids in the two chicken varieties, and the composition of fatty acids in the two varieties were mainly unsaturated fatty acids, being more than 61.10% of the total fatty acids. Meanwhile, 12 and 16 compounds were screened out from chicken legs and chicken breasts of YBC and PC, respectively, which had important contributions to the differences between groups.

Toxicity of Mycotoxins from Contaminated Corn with or without Yeast Cell Wall Adsorbent on Broiler Chickens

  • This study investigated the effects of feeds naturally contaminated with mycotoxins on growth performance, serum biochemical parameters, carcass traits, and splenic heat shock protein 70 (Hsp70) mRNA expression levels in broiler chickens. The efficacy of yeast cell wall (YCW) adsorbent in preventing mycotoxicosis was also evaluated. Three hundred 1-d-old Arbor Acres broiler chicks were randomly allotted to 3 treatments in completely randomized design for 42 d. Each treatment group had 5 replicate pens with 20 birds. The treatments were as follows: i) basal diet (control), ii) naturally contaminated diet (NCD), and iii) NCD+0.2% YCW adsorbent (NCDD). The NCD decreased average daily gain (ADG) (p<0.01) of 0 to 21 d, 22 to 42 d, and 0 to 42 d, and increased feed conversion ratio (p<0.01) of 22 to 42 d and 0 to 42 d. Both the breast meat percentage and thigh meat percentage of the NCD group were significantly higher (p<0.01) than that of the control group on d 21. The NCD group showed significantly increased levels of triglycerides (p<0.05) and cholesterol (p<0.05) on both d 21 and d 42 compared to the control group. However, the NCD significantly reduced (p<0.01) the high-density lipoprotein (HDL) on d 42 compared to controls. Compared with the NCD, supplementation with YCW significantly improved (p<0.01) the ADG of 0 to 21 d and 0 to 42 d, and increased (p<0.01) concentrations of HDL on d 42, and on d 21, and triglycerides (p<0.05) on d 21 and d 42. Supplementation with YCW reduced (p<0.01) the breast meat percentage, the thigh meat percentage, the concentrations of cholesterol (p<0.01) and the low-density lipoprotein (p<0.05) on d 21, and improved (p<0.01) the splenic Hsp70 mRNA expression levels compared with the NCD group. The results of this study indicated that feeding NCD for 42 d had adverse effects on broiler chickens, and that YCW might be beneficial in counteracting the effects of mycotoxins.

Biotite V의 급여가 육계의 성장 능력, 영양소 소화율, 혈청 및 육내 콜레스테롤 함량에 미치는 영향 (Effects of Biotite V Supplementation on Growth Performance, Nutrients Digestibility and Serum and Meat Cholesterol in Broiler Chickens)

  • 본 시험은 육계 사료내 Biotite V의 첨가가 육계의 성장 능력, 영양소 소화율, 혈청 및 육내 콜레스테롤 함량에 미치는 영향을 조사하기 위하여 실시하였다. 총 480수의 2 일령된 Arbor Acre Broiler(male) 병아리를 공시하였고 사양시험은 5주간 실시하였다. 시험 설계는 육계 전기 사료로서 1) CON (basal diet), 2) BV200 (basal diet+200 mesh Biotite V 1.5%) 및 3) BV325 (basal diet+325 mesh Biotite V 1.5%) 를 첨가하여 제조하였다. 처리당 8반복, 반복당 20수씩 완전 임의 배치하였다. 개시시부터 1주까지의 증체량에서는 Biotite V를 첨가한 처리구가 대조구에 비하여 유의적인 증가를 보였다(P<0.05). 전체 시험기간 동안의 증체율, 사료 섭취량과 사료효율에 있어서는 Biotite V 를 첨가한 처리구간에 유의적인 차이를 보이지 않았다(P>0.05). 건물과 질소 소화율에서는 처리구간의 차이를 보이지 않았다(P>0.05). Biotite V 첨가구에서 복강내 지방 무게, 혈청과 육내 콜레스테롤 함량이 대조구에 비해 유의적인 차이는 없었다(P>0.05). 결론적으로, 육계 사료내 Biotite V의 첨가는 성장율, 영양소 소화율, 혈청 및 육내 콜레스테롤 함량에 영향을 미치지 않았다.

Effects of Dietary Wild-ginseng Adventitious Root Meal on Growth Performance, Blood Profiles, Relative Organ Weight and Meat Quality in Broiler Chickens

  • This experiment was conducted to evaluate the effects of dietary wild-ginseng adventitious root meal (WGM) on growth performance, blood profiles, relative organ weight and meat quality of broiler chickens. A total of 480, 2-day-old male broiler chicks (BW = $42.8{\pm}1.38\;g$) were randomly allocated to 1 of 4 dietary treatments (6 cages with 20 broilers per cage). Dietary treatments were: i) CON (basal diet), ii) WGM0.1 (basal diet+0.1% WGM), iii) WGM0.2 (basal diet+0.2% WGM) and iv) WGM0.3 (basal diet+ 0.3% WGM). Birds fed WGM0.3 diet (p<0.05) had a higher feed intake (FI) than those fed the CON diet during weeks 1 to 3. During weeks 3 to 5, dietary WGM0.1 treatment led to a higher (p<0.05) BW gain (BWG) and feed intake (FI) compared with the CON and WGM0.3 treatments. Overall, birds fed WGM0.1 improved BWG and FI compared with those fed the CON treatment. A greater lymphocyte count was observed (p<0.05) in WGM0.2 and WGM0.3 treatments compared with the CON treatment; dietary WGM decreased (p<0.05) the total cholesterol concentration compared with the CON group. The inclusion of WGM increased the relative weight of spleen and bursa of fabricius (p<0.05) compared with CON, while less abdominal fat was observed in the WGM0.3 treatment (p<0.05) compared with CON. The 2-thiobarbituric acid reactive substances (TBARS) of breast muscle were decreased (p<0.05) by WGM supplementation. Overall, our results indicated that the use of WGM at the 0.1% level could enhance growth performance in broilers. The supplementation of WGM could induce a decreased TBARS, abdominal fat and serum cholesterol in broiler chickens.

시판냉장, 냉동 및 포장육 중 식중독균의 분포 및 혈청형 (Prevalence and Serovar of Food Poisoning Bacteria in Retail Fresh, Frozen and Packed Meats)

  • 1996년 3월부터 1998년 10월간에 경남지방 시판 냉장육 888건, 냉동포장육 222건 및 수입 냉동육 117건의 시료로부터 식중독관련 병원균의 분포와 혈청형을 조사하였다. 식중독균의 분리률은 Staphylocorcus aureus. Campylobarter jejuni/coli, Listeria monocytogenes 및 Salmonella spp 순으로 높았고, Escherichia coli O157:H7은 전시료를 통해서 분리되지 않았다. C. jejuni /coli는 냉장육에서 높은 오염률을 나타내고, 냉동포장육에서는 거의 분리되지 않는데 반해서 L. monocytogenes는 냉장육에 이해서 냉동포장 계육에서 높은 분리율을 나타낸 것은 매우 흥미로운 일이다. 분리균의 혈청형 분포는 Sta. aureus의 경우 대부분이 enterotoxin type C와 D였고, Salmonella spp는 돈육유래균에서 모두 A group이었으며, 계육유래균은 대부분 B와 D group이었다. L. monocytogenes는 계육유래균의 대부분이 type 1 이었고, type 4는 소수로 분리되었다.

THE EFFECTS OF DIETARY ENERGY LEVELS ON THE CARCASS COMPOSITION OF THE BROILERS

  • A study was conducted to determine the carcass composition of broilers when fed with three varying levels of dietary energy (3,000, 3,200 and 3,400 kcal/kg ME) at 20% crude protein and 0.79% Total Sulphur Amino Acid. The results showed that there was a significant (p < 0.05) increase in the ME intake of the chickens when the ME of the diet increased. Other factors like the protein intake, dressing percentage, weight gain and feed intake were not significantly affected. On the carcass, the increasing dietary ME levels resulted in a significant (p < 0.05) increase in the abdominal fat percentage and carcass fat percentage and a significant (p < 0.05) decrease in the carcass protein percentage. Similarly, the dietary ME produced a significant (p < 0.05) increase in the amount of and fat percentages of breast meat, thigh meat, and drumstick meat with a significant reduction in the protein percentage. There seemed to be an inverse relationship between the percentages of protein and fat. An increase in fat percentages always resulted in similar reduction in the protein content of the meat. These results also showed major differences between the white and red meat of the chicken.

동일 사육 조건에서 산란계 수평아리 및 육용계의 도체 특성, 계육 품질 및 관능적 특성 비교 (Comparison of Carcass Characteristics, Meat Quality, and Sensory Quality Characteristics of Male Laying Hens, Meat-Type Chickens under Identical Rearing Conditions)

  • 본 연구는 일반적인 육용계 Ross 308과 토종닭 Hanhyup-3 및 산란계 Hy-Line Brown 수평아리의 도체 특성, 계육 품질, 계육 내 핵산 관련 물질 및 관능적 특성을 비교하여 산란계 수평아리의 육용계 활용 가능성에 대해 조사하고자 하였다. 공시동물로 1일령 Ross 308 수평아리(R3), Hanhyup-3 수평아리(H3) 및 Hy-Line Brown 수평아리(HL)를 각 100수씩 배치하였으며, 품종에 대한 차이를 두어 3처리로 설계하였다. 처리구별 시험 종료일은 평균 체중이 1.5 kg에 근접한 일령(R3 35일, H3 49일, HL 84일)으로 하였다. 시험 결과, 생체중은 처리구간 유의적 차이가 없었으나 도체중 및 도체율은 R3 처리구에서 가장 높았으며(P<0.01), 부분육수율 중 가슴의 수율은 R3가, 다리, 날개 목은 HL 처리구가 가장 높았다(P<0.01). H3의 계육은 높은 pH, WHC와 낮은 가열감량을 보였으며, 색도(L*, a*)는 R3에서 높았다(P<0.05). 특히, 계육 내 지방 함량은 HL에서 가장 낮았다(P<0.01). 정미성 핵산 물질인 ATP, Hx, ADP, AMP 및 INO는 R3에서 많았으며, IMP 함량은 HL 계육에서 가장 많았다(P<0.05). 관능적 특성은 가금 품종에 따라 유의적인 차이를 보이지 않았다(P>0.05). 결론적으로, 산란계 수평아리는 낮은 지방 함량, 높은 IMP 함량 등 고유 특성의 계육을 생산하였으며, 다른 품종과 비슷한 관능적 특성을 나타내었다. 하지만, 산란계 수평아리의 육용계 활용을 위하여서는 생산성 향상, 특정 부위의 계육 생산량 개선 등 추가 연구가 필요할 것으로 보여진다.

브로일러의 혈액지질, 닭고기의 지방산 및 지방산패도에 관한 파리번데기 동충하초 급여효과 (Effect of feeding diet containing Cordyceps with fly pupa on blood lipid, fatty acid and TBARS in broiler chickens)

  • The objective of this study was to determine the feeding effect of a diet containing Cordyceps with fly pupa on the changes in blood lipid profile from broiler chickens, fatty acids and thiobarbituric acid reactive substances (TBARS) in chicken meat. A total of 360 chicks (Ross strain 308) were divided on hatch day into four treated groups with respect to a 35-day feeding regimen: T1 (control group), T2 (2.0% Cordyceps with fly pupa), T3 (3.5% Corceps with fly pupa) and T3 (5.0% Cordyceps with fly pupa). Blood triacylglyceride and total cholesterol level was significantly decreased by 5.32-10.63% and 9.23-12.62%, respectively, in groups T2, T3 and T4 when compared to T1 (p<0.05). Water holding capacity was significantly highest in T2 (p<0.05), while there were no significant differences among groups T2, T3 and T. In chicken meat, the ratio of saturated fatty acid to unsaturated fatty acid was high in the T3 and T4 groups, the ratio of n-6 to n-3 fatty acid was low in the T2, T3 and T4 groups and oleic acid (18:1n-9) was high in the T2, T3 and T4 groups, when compared to T1 (p<0.05). TBARS tended to increase according to the storage time (in days), and was significantly lower in the chicken thigh muscles with skin in groups T2, T3 and T4 as compared to T1 (p<0.05). These results suggest that a diet containing 2.0-3.5% of Cordyceps with fly pupa may decrease blood lipid and improve both the shelf-life and quality of broiler chicken meat.
