This study aims to develop chicken stock, which is the base of sauce, soup, etc., using various nourishing elements in chicken bones. For this purpose, we prepared chicken stock with varying the amounts of tomato added in order to produce basic data for enhancing the taste and nutrition of chicken stock, improving the quality of stock-based dishes, and developing stock. Sensory characteristics of tomato chicken stock such as water, ash, color, sugar, pH and sensory tests were studied by adding tomatoes for finding out the effect on free amino acid and various nutrients. The total free amino acid content and general acceptance were highest when 7.4% of tomato added. Based on the results of this study, the optimal tomato content for maximizing the overall quality of chicken stock was 7.4%.

For the purpose of increasing protein dissolution by organic acids, chicken stock with apples (CSA) was manufactured and compared with chicken stock (CS) without apples. The sugar content of CSA showed a relatively higher sugar content than CS. The crude protein content of CSA was significantly higher than that of CS. Since the sugar content was high by adding apples, chicken stock was prepared by reducing the amounts of apples and adding tomatoes and lemons. The crude protein content of the chicken stock added with tomatoes and lemons (CSA-TL) increased by about 35% compared to the chicken stock added with tomatoes (CSA-T). Since the CSA-TL group had the highest protein elution, so nutritional content was compared with CS and commercial chicken stock (CCS) groups. Crude protein content of the CSA-TL group increased about 79% compared to the CS group and about 6.8 times compared to the CCS. The contents of glutamic acid, aspartic acid, and various essential amino acids in the CSA-TL group increased compared to the CS group. The chicken stock developed in this study is expected to be used as a health-oriented product that can replace existing products.

This study investigated quality characteristics of chicken stock with added plum extract (PE) and green tea powder (GP) stock during storage. Plum extract (0, 0.5, 1, 3%) and green tea powder (0, 0.5, 1, 3%) were added at three levels. Chicken stock was stored at room temperature for 14 days. The pH of the chicken stock decreased significantly as the content of PE and GP increased (p < 0.05). The group with 3% plum extract added showed significantly lower pH values (p < 0.05). Total numbers of microorganisms (TMC) showed significant differences according to the storage period (p < 0.05), where the groups with PE and GP added showed lower TMC values than the control group, This indicates that PE and GP could inhibit the growth of microorganisms. The addition of 3% PE or GP decreased lipid oxidation (TBARS) and protein deterioration (VBN) values. In sensory test, the results showed that adding PE or GP has a positive effect on storage characteristics of chicken stock. The addition of PE rather than GP is effective not only in improving sensory evaluation, but also in minimizing changes in quality by suppressing lipid oxidation and protein deterioration during storage. In conclusion, 3% PE addition was found to be the most optimal supplementation choice for increasing the storability of chicken stock.
The objective of this study was to develop a stock that can be used to make a variety of dishes. For this, stock was prepared with beef, chicken, and pork meat as animal meats as well as anchovy, mushroom, and sea tangle as other ingredients. The qualities of six[only four though] kinds of stocks made with beef only (B), beef and chicken (BC), beef and pork (BP), and beef added with chicken and pork (BCP), and seven kinds of stocks made with anchovy (A), mushroom (M), sea tangle (S), anchovy and mushroom (AM), anchovy and sea tangle (AS), mushroom and sea tangle (MS), and anchovy added with mushroom and sea tangle (AMS) were investigated by sensory evaluation. The most preferred stock made with animal meat was mixed with the most preferred stock made with other ingredients at a 5% level to test the synergistic effects of palatability. As a result, BCP stock and AMS stock obtained the highest scores for overall preference. BCP stock within the range of 30%-65% along with the mixed stock containing AMS (35%-70%) showed synergistic effects for palatability.
The objective of this study is to develope natural and economical Naengmyun broth using stock prepared with chicken heads. Proper mixing ratio of chicken head stock and chicken breast broth was determined through the sensory evaluation. In order to find out the attributes of chicken head-chicken breast broth(CH-CB broth), chicken breast broth and beef brisket(BB) broth were mixed to the chicken head stock and compared the preference and chemical elements between the broths were compared. The appropriate mixing ratio for reinforcing the meat broth and savory flavor, of was determined to 3:7(w:w). The comparison of CH-CB broth's and CH-BB broth's elements showed that the amount of crude protein and ash was the same and, in the case of crude lipid, CH-BB broth had 0.01% more than CH-CB broth. In the case of the total amount of free amino acids, CH-CB broth had 1.6 times more than CH-BB broth. A survey with 50 consumers showed that was prefered between CH-CB broth and CH-BB broth. The present study is purposed to suggest accurate guidelines for developing standardized chicken meat stock containing salt, and to develop a product for mass production of uniform quality achieved by applying High Pressure Extraction Cooking(HPEC) using a high.pressure extractor. Through this study, we examined water contents, ash contents, salinity, turbidity and mineral contents of chicken meat stock according to the addition of salt. The ash contents increased with the increase of the addition of salt, but the water contents decreased with the increase of the addition of salt. Salinity increased with the increase of the addition of salt. Turbidity decreased with the increase of the addition of salt, and difference in turbidity according to the addition of salt was regular. Among mineral contents, Na showed the highest content, which was believed to be because of the addition of salt, and it was followed by K and P. The results of this study show that the mineral contents in the stock were different according to the addition of salt, but they were neither proportional to the addition of salt nor showed a regular pattern.
This study was carried out to investigate the free amino acid content, the free amino-nitrogen content and minerals such as Ca, P and Fe of chicken bone stock. The results were as follows. 1. In chicken bone stock, glutamic acid was the most abundant amino acid, Iysine, alanine, cysteine and glycine were followed oderly and these free amino acids seemed to be the most intensive flavor compounds. 2. The free amino acid-nitrogen content of chicken bone stock was increased after 3 hours boiling and began to decrease after 4 hours boiling. 3. After 3 hours boiling, Ca, P were 5.0 mg/100 g chicken bone and 42.5 mg/100 g chicken bone, respectively and began to decrease after 4 hours boiling. The ratio of Ca:P was about 7.8. Fe was increased after 4 hours boiling and began to decrease after 5 hours boiling. These results revealed the low effectiveness of Ca, P and Fe utilization of chicken bone stock, because of the very low extraction of minerals. But these results revealed the significant correlation of free amino acid, free amino-nitrogen contents and brothy flavor. So chicken bone stock on heating at 90-95$^{\circ}C$ for 3∼4 hours seemed to be the most intensive brothy flavor.
The focus of this study was the influence of organic acids such as acetic, citric and malic acid on the dissolution of calcium (Ca), magnesium (Mg), and phosphorus (P) on chicken thigh bone. As the concentration (0, 0.5, 1, 2, 4%) of acetic, citric, and malic acid increased, the resultant contents of calcium, magnesium, and phosphorus were higher than that of the control. When the boiling time (2, 4, 6, 8, 12 hours) was increased, dissolved amounts of several minerals from the chicken thigh bone increased. Calcium dissolved the most when chicken stock was boiled for 12 hours with 4% of malic acid added. In addition to minerals, amino acids and proteins were further extracted by adding organic acids. The soup stock which contains minerals such as calcium, can be obtained by boiling the chicken thigh bone for 12 hours with an organic acid.
Compared to other gene transfer system, the advantages of retrovirus-mediated gene transfer are technical ease, efficient expression and genetic stability. Despite the high potency of the retrovirus vector system in gene transfer, one of the drawbacks is a difficulty in concentration of virus stock. To overcome this problem, we tested a new retrovirus vector system producing the progeny retrovirus particles encapsidated with VSV-G (vesicular stomatitis virus G glycoprotein). The infectivity of this virus was not sacrificed by ultracentrifugal concentration and the host cell range extended from all mammalian to fish embryos. Virus titer after 1,000 x concentration was more than 10$^{8}$ CFU/ $m\ell$ on most of the target cell lines. We applied this pantropic viruses in transgenic chicken production by injecting the concentrated (100$\times$) stock into subgerminal cavity of stage X chicken embryos. The survival rate of chicken embryos after injection was about 20% and gene integration rate in surviving embryos was scored almost 100%. Analyses of RT-PCR and fluorescence microscopy, however, showed no evidence of the transgene expression.
In order to detection of the intestinal parasites, fecal samples were taken from broiler (n=262), laying hen(n=244), parent stock(n=207) and native stock(n=287) in Chonbuk province. The prevalence and identification of intestinal parasites were determined by the fecal examination using the floatation and /or sedimentation methods and microscopical examination, respectively. The results were obtained as follows : 1. The detection rate of parasite-eggs from 4 flocks(total=1,000) was 65.7%. 2. In the breed and type of breeding, infection rate of parasite-eggs was detected 84.0% as native stock (floor breeding, 241 chicken), 79.7% as parent stock (floor breeding, 165 chickens), 73.3% as broiler(floor breeding, 192 chicken) and 24.2% as laying hen(cage breeding, 59 chicken), in order. 3. In the concern of mixed infection such as single, double and triple, the rate was 55.1%, 8.7% and 1.9%, respectively. 4. Ten kinds of infective eggs were isolated from 657 fecal sample of 4 flock. They were classified 51.l% as Eimeria spp., 12.7% as Ascaridia galli, 5.1% as Capillaria spp., 4.1% as Strongyloides avium, 2.3% as Heterakis gallinarum, 0.5% as Hymenolepis spp., 0.3% as Railleina spp. and 0.2% as Syngamus spp., Trichostrongilus spp., or Choanoteania spp., single or in combination.
