Effect of Calcium Lactate on Physico-Chemical Characteristics of Shank Bone Extract

  • This study was conducted to develop calcium-fortified shank bone extract (SBE) and to determine the effect of adding calcium lactate on physico-chemical characteristics of SBE during cold storage. The following five experiment groups were used: Control (0%, no addition), T1 (0.05% calcium lactate), T2 (0.1% calcium lactate), T3 (0.5% calcium lactate), and T4 (1% calcium lactate). When the concentration of calcium lactate added to the SBE was increased, the pH, redness, and yellowness values were significantly reduced, whereas the salinity, sugar content, and turbidity of SBE were significantly increased. Sensory parameters such as aroma, flavor, and overall acceptability in the control, T1, and T2 had similar scores. The TBARS values of SBE was significantly increased when 1% of calcium lactate was added, and the VBN values of SBE with calcium lactate at day 7 were higher than that of control (p<0.05). However, the addition of calcium lactate showed an inhibition effect on the growth of total microbial counts in SBE until 4 d of storage. The calcium content of SBE was increased by the addition of calcium lactate in a dose-dependently manner. The proper addition level of calcium lactate in the SBE was determined to be 0.1%.

마이크로웨이브를 이용 즉석 백설기 제조 시 대두피 첨가가 품질에 미치는 영향 (Effect of Soybean Peel on the Quality Characteristics of Instant Rice Cake (Baekseolgi) Prepared Using a Microwave Oven)

  • 본 연구는 전자레인지를 이용하여 백설기 제조 시 대두피 첨가량을 달리 제조하여 물리화학적, 관능적 특성을 평가하였다. 수분함량은 저장하는 동안 급격하게 감소하였고, 대두피를 넣은 군들은 넣지 않은 군들보다 수분함량이 덜 감소하는 것으로 나타났다(p<0.05). 무게 감소율은 대두피가 증가할수록 감소하는 경향을 보였다. 색도에서 L 값, a값은 대두피 첨가량에 따른 유의적인 차이를 보이지 않았다. 그러나 b값은 대두피 첨가량이 증가할수록 증가하는 경향을 보였다(p<0.05). RVA측정 결과 대두피 첨가량이 증가할수록 감소하는 경향을 보였으나, pasting temperature의 경우 증가하는 경향을 보였다. 조직감 특성 결과 springiness, cohesiveness는 대두피 첨가량별 유의적인 차이를 보이지 않았다. Hardness, gumminess, chewiness는 대두피 양이 증가할수록 점점 감소하였다. adhesiveness는 대두피 양이 증가할수록 점점 증가하였다. 관능검사 결과 색, 향에는 유의적인 차이를 보이지 않았다. 그리고 대두피 5% 첨가한 백설기의 경우 맛에서 가장 낮은 점수를 받았다. 촉촉한 정도, 단단한 정도에서는 2, 3% 대두피 첨가군이 가장 높은 점수를 보였다. 전반적인 기호도 에서 대두피 2%를 넣었을 시 가장 좋은 점수를 받았다. 결론적으로 대두피 2% 첨가한 백설기가 가장 좋은 평가를 받았다. 따라서 전자레인지를 이용하여 백설기를 제조 시 대두피를 첨가했을 때 물리화학적, 관능적 특성이 개선되고 노화가 지연되는 것으로 나타났다.

녹차 종실유의 제조법에 따른 열산화 안정성 비교 (Effects of Extraction Method on the Thermal Oxidative Stability of Seed Oils from Camellia sinensis L.)

  • Camellia sinensis L. (green tea) seed oils were prepared by roasting at $213^{\circ}C$ and pressing (RP), pressing (P), and nhexane extraction (H). The physico-chemical properties of the RP, P, and H samples, including fatty acid composition, color, and sensory characteristics were analyzed. RP, P and H samples were thermally oxidized at $180^{\circ}C$, and oxidative stability was determined by DPPH, CDA, and p-AV at 0, 20, 40, 60, and 80 min. Compared to the P and H samples, RP resulted in significantly higher thermal oxidative stability according to the DPPH, CDA, and p-AV results (p<0.05). The ratio of unsaturated fatty acids to saturated fatty acids among RP, P, and H samples were significantly different (p<0.05). The oleic acid and linoleic acid contents in green tea seed oils were 58 and 23%, respectively. Hunter's color value of lightness (L) for the RP, P, and H samples was not significant. Redness (a) of RP was $3.47{\pm}0.119$ and yellowness (b) of H was $60.10{\pm}2.483$, which were significantly different. Compared to RP samples, H and P samples had the highest color and off-odor values in the sensory evaluation. RP samples showed the highest taste value and were significant overall (p<0.05). The thermal stability of RP extraction was more stable than any other method. Camellia sinensis L. seed oil extracted by RP had better sensory characteristics than other edible oils, including soybean oil, grape seed oil, and extra virgin olive oil.

Effect of the Addition of Schisandra chinensis Powder on the Physico-chemical Characteristics of Sausage

  • The individual and interactive effects of Schisandra chinensis powder (SCP) and sodium nitrite additions on color, pH, water holding capacity, residual nitrite, 2-thiobarbituric acid reactive substances (TBARS), volatile basic nitrogen, texture properties, fatty acids, amino acids and sensory evaluation of cooked pork sausages were investigated after 20 d of storage at $4^{\circ}C$. The powders (0, 0.5 and 1.0%) were added to sausages either alone or in combination with nitrite (0 and 100 ppm). SCP added-sausages showed lower $L^*$ (lightness) and W (whiteness) values, and higher $b^*$ (yellowness) values than sausage containing no nitrite, and exhibited the highest $a^*$ values at a 0.5% addition (p<0.05). Residual nitrite and TBARS values were found to be significantly reduced as the addition levels of SCP increased (p<0.05). As the addition of SCP increased, the sausage showed gradually decreased brittleness, cohesiveness, springiness, gumminess and chewiness, while adhesiveness increased. Polyunsaturated fatty acid, n-6 and n-6/n-3 fatty acid ratio concentrations were significantly higher in sausages containing SCP (p<0.05). The addition of SCP to sausage significantly (p<0.05) increased the ammonia content (by 0.5% SCP) and aromatic amino acid concentrations (by 1.0% SCP) (p<0.05). Inclusion of SCP in sausage meat resulted in a significant deterioration in quality characteristics of flavor, springiness, juiciness and overall acceptability (p<0.05). As expected, the observed changes in $a^*$, W, pH, shear force, texture property, TBARS, fatty acid, amino acid and sensory score of sausages, depended on the rate of addition of nitrite (p<0.05). These results suggest that SCP addition is not an effective way of improving the sensory evaluation of sausages, but may beneficially affect TBARS, nitrite scavenging activity, fatty acid and amino acid content in pork sausages.

Effects of Various Salts on Physicochemical Properties and Sensory Characteristics of Cured Meat

  • This study was carried out to investigate the effects of refined, solar, and bamboo salt on the physico-chemical properties and sensory characteristics of cured pork loin. Moisture, protein, fat, and ash content, lightness, yellowness, cooking yield, and color, juiciness, and tenderness of sensory properties on curing pork loin exhibited no significant differences regardless of the nature of salts. The pH of raw and cooked cured pork loin with added bamboo salt was higher that of other salt treatments. However, the cooking loss, and Warner-Bratzler shear force of cured pork loin with added refined salt was lower than those of solar and bamboo salt pork loins cured. The flavor and overall acceptability scores of treatments with refined salt was higher than those of solar and bamboo salt treatments. The unique flavor of bamboo salt can render it as a functional material for marinating meat products. In addition, the results of this study reveal potential use of bamboo salt in meat curing.

쑥 분말 첨가 소시지의 이화학적 및 저장 특성 (The Physicochemical and Storage Characteristics of Sausage added Mugwort Powder)

  • This study was carried out to investigate the physico-chemical and storage characteristics of sausages added mugwort powder at $4^{\circ}C$ during 13 days. The composition of fresh sausages was as the following : meat 60 % (w/w), lard 20 %, ice 20 %, salt 1.5 %, sugar 0.5 %, phosphate 0.25 %, mugwort 2 % or 5 %. Sausages were divided into three groups; control group mugwort 0 %, Treatment I mugwort 2 % and Treatment II mugwort 5 %. The pH, TBA(thiobarbituric aid) value, VBN(volatile basic nitrogen), rheology, and sensory evaluation were measured. The changes of pH of all groups were slightly decreased with increasing storage days. But, the significant difference of pH changes were not shown between mugwort 2 % (Treatment I) and mugwort 5 % (Treatment II) groups. The changes of TBA values of all treatments increased during storage periods. TBA values of Treatment I and Treatment II groups were significantly (p<0.05) higher than that of the control group. The change of VBN showed trends to increase during storage periods. The change of VBN of Treatment I was significantly (p<0.05) lower than those of the control and Treatment II. Hardness and brittleness of 2 % and mugwort 5 % groups were significantly (p<0.05) higher than that of the control group. Elasticity and cohesiveness of 2 % and Treatment II were significantly (p<0.05) lower than that of the control group. Also, Treatment I was superior to the other groups by the results of sensory evaluation. Therefore, these results suggest that it may be possible to manufacture sausages added 2 % mugwort powder which can help to increase storage periods, and improve quality of sausage.

대봉감 퓨레의 첨가량에 따른 감 젤리의 이화학적 및 관능적 특성 (Physicochemical and Sensory Characteristics of Persimmon Jelly Added with Different Levels of Daebong Persimmon Puree)

  • 대봉감 퓨레 첨가량을 달리하여 제조한 감 젤리는 대봉감 퓨레를 더 첨가할수록 조단백질, 조지방, 비타민 C, 식이섬유 및 베타카로틴 함량이 증가하는 것을 볼 수 있었다. 그러나 색도 결과 대봉감 퓨레를 더 첨가할수록 명도 값이 감소하였으며, 적색도 값은 퓨레 5% 및 7% 중량부를 첨가한 시료에서 유의적인 차이를 나타내지 않았다. 또한 조직감 결과 대봉감 퓨레를 더 첨가할수록 경도와 씹힘성이 증가하는 것으로 나타나 소비자들에게 불편함을 줄 수 있으며 관능검사 결과 외관, 색, 맛, 향, 씹힘성 및 전체적인 기호도가 퓨레 5% 중량부를 첨가한 것이 가장 높은 점수를 나타내었다. 대봉감 퓨레를 더 첨가할수록 영양학적으로 더 우수한 결과를 나타내었지만 색도, 조직감 및 관능검사의 결과 대봉감 퓨레를 첨가한 감 젤리의 개발은 퓨레 5% 중량부를 첨가하는 것이 가장 적합한 것으로 판단된다.

대추 첨가량을 달리한 대추술의 발효 특성 (Fermentation Characteristics of Jujube Alcoholic Beverage from Different Additional Level of Jujube Fruit)

  • 대추 첨가량을 달리하여 대추술을 제조하고 경시적인 발효 특성을 분석하였다. 품온은 모든 처리구가 담금 2일에 $24{\sim}26^{\circ}C$로 가장 높았고, 총산은 발효 경과기간과 대추의 첨가량이 증가함에 따라 서서히 증가하였다. 환원당과 전당은 모두 2단 담금에서 대추액을 첨가한 후에 각각 $13{\sim}53%$$43{\sim}51%$로 최대가 되었다가 계속 감소하였고 대추의 첨가량이 많을 수록 높았다. 알코올은 발효가 진행됨에 따라 증가하였는데, 특히 발효 1-3일째에 급격한 증가를 보였고 대체로 대추첨가량이 많을수록 증가율이 높게 나타났다. Amylase활성은 2-2.5일에 최대 활성을 보인 후 계속 감소하였다. 대추술의 전체적인 품질은 2그룹으로 구분되었으며 E가 가장 높게 나타났고 A와 F가 가장 낮았다.

원료육 종류에 따라 알칼리 조절법으로 제조한 계육 수리미의 수율, 이화학적 및 관능적 특성 비교 (Comparison of Yield, Physico-chemical and Sensory Characteristics for Chicken Surimi Manufactured by Alkaline Adjustment with Different Raw Materials)

  • 원료육 종류[SF사의 노계육을 이용한 닭가슴살(T1) 및 닭다리살(T2)과 SF사의 MDCM(mechanical deboned chicken meat, T3) 및 JY사의 MDCM]에 따라 pH 11 알칼리 조절법으로 제조한 계육 수리미의 수율, 이화학적 및 관능적 특성을 비교 분석한 결과는 다음과 같다 수율은 T1>T2>T3>T4순이었으며(p<0.05), T1이 수율, 이화학적 및 관능적 특성의 종합적인 면에서 다른 세 처리구들에 비하여 가장 양호하였다. 특히 육색 $L^*$값과 W값, 전단가, 조직감의 모든 항목, 접기 시험 결과, 파괴 강도, 겔 강도, 파괴 강도${\times}$변형 값, 관능 검사의 맛, 육색 및 종합적인 기호도가 높고, 육색 $a^*$값, 가열감량, 콜라겐 및 Mb 함량이 낮아(p<0.05) 양호하였다. 수리미의 품질측면에서 닭가슴살 원료를 대체할 수 있는 것은 T2와 T3보다 T4가 더 효과적이었으며(p<0.05), 그 특성으로는 변형 값, 관능검사에서 향, 다즙성 및 연도는 높고, Met-Mb 함량이 낮은 장점이 있는 반면 경제적 면에서 수율이 낮았다(p<0.05). T2는 육색의 $b^*$값이 낮아 좋았으나, 조지방 함량, 가열 감량 및 Met-Mb이 많고, 조직감에서 표면경도, 경도, 검성 및 씹힘성과 접기 시험, 파괴 강도${\times}$변형 값 및 관능검사에서 향이 낮아(p<0.05) 품질에 나쁜 영향을 미쳤다. 한편 T3는 pH가 높아 좋았으나, 콜라겐과 수분 함량은 많고, 육색 $b^*$값이 높으며, 조단백질 함량, 접기 시험, 육색의 $L^*$값과 W값, 조직감의 응집성 및 관능검사의 연도가 낮아(p<0.05) 품질에 나쁜 영향을 미치는 결과였다. 접기 시험 결과와 다른 분석 항목간에 상관관계는 조단백질 함량, $L^*$, 전단가 및 응집성과 0.8 이상의 정의 상관관계를 나타내었고, 수분 함량과는 부의 상관관계를 나타내었다(p<0.05).

돼지머리편육 제조시 삶는 시간 조건에 따른 제품의 이화학적 특성 변화 (Changes of Physico-chemical Characteristics of Pyunyuk Depending on Cooking Time during Processing)

  • Physico-chemical qualities of pyunyuk depending on the cooking time were evaluated to produce high quality and to reduce labor and processing time. Pork headmeat divided into two parts was cooked for 1~4hrs, trimmed and pressed with 110kg/$\textrm{cm}^2$(gauge pressure) for 3.5hrs at 1$0^{\circ}C$. The contents of general nutrients, yield, texture, color, fatty acid composition, gel structure, and sensory evaluation were observed. Deboning time was very dependent on cooking time. Optimum cooking time observed in this study was 2~2.5hrs for efficiency of deboning and yield. Excess cooking time resulted in low yield and working efficiency. Yield variation depending on the cooking time was 14.3~26.0% and it was reduced by increasing the cooking time. The content of moisture was 53.5~54.8% which was not significantly different by cooking time. The content of crude fat was 14.2~26.0% which was decreased by increasing the cooking time. The contents of crude protein(21.1~26.3%) and mineral(1.4~2.7%) were increased by increasing the cooking time. The color of pyunyuk was significantly different by cooking time(p<0.05). In the texture, hardness and chewiness of the pyunyuk cooked for 2hrs were significantly higher than others processed in this study(p<0.05). However cohesiveness and springiness were not different among pyunyuks. With sensory evaluation, hardness was similar among the pyunyuks cooked over 2hrs. The pyunyuk cooked for 1hr showed higher value in juiciness than the pyunyuk cooked for 3~4hrs(p<0.05). The % of saturated fatty acids was decreased by increasing the cooking time, and gel structure of pyunyuk cooked for 2hrs was the most compact among treaments. In conclusion, 2hrs was proper as a cooking time concerned with working efficiency and physico-chemical quality of pyunpyk.
