This paper examined the frequency of skipping breakfast by middle school students for one week. It carried out the study in order to understand the ways skipping breakfast effected other habits. The subjects were 467 middle school students (219 boys, 248 girls). The results of the survey were as follows; average male students were $171.16{\pm}5.9cm$, $61.45{\pm}10.0kg$, and $20.93{\pm}2.9$ in height, weight and body mass index, while the average female students were $159.27{\pm}6.0cm$, $51.62{\pm}7.9kg$ and $20.33{\pm}2.8$. As for the reasons for skipping breakfast, 58.0% of the subjects responded that they had no time. The frequency of skipping breakfast was divided into the eating group (0~1 time) and the skipping breakfast group (2~3times/week, 4~5 times/week, or 6~7 times/week). As the frequency of skipping breakfast increased, so the rate of the subjects eating alone was higher and eating with family lower(p<.05). The dietary behavior change stage was divided into contemplation stage, preparation stage, action stage, and maintenance stage. The eating group(59.2%) was higher than the skipping breakfast group(29.1%~46.3%) in the rate of subjects maintenance stage(p<.01). Accordingly, skipping breakfast was closely connected with eating habits in their families. A dietitian needs to teach the importance of meals and life habits, so as to enhance public awareness of health and nutrition to the students. Subjects of nutrition education must even enlarge their parents as well as the students.

Objectives: This study was intended to provide resources for the development and operation of the elderly's oral health education programs by comparing the difference of oral health behavior, oral health care self-efficacy and oral health levels according to their oral health education experiences and by researching the correlation of oral Health Behavior, self-efficacy, subjective oral health level and oral health education experience. Methods: An interview survey using structured questionaries was done on 180 senior citizens older than 65 years old residing in some areas of Gyeonggi-do from April 19 to May 25, 2018. The data was analyzed with Chi-square, t-test, spearman correlation coefficient with the use of SPSS 20.0. Results: 1. Those who are older than 75 years old and have higher levels of education and finance have more experiences of oral health education. 2. Those who have experiences of oral health education brush their teeth more than three times a day, use more oral health care items and get more regular preventive treatments such as oral examination and scaling. 3. As they has experiences of oral health education, their oral health behaviors, oral health care self-efficacy(tooth care, dietary control, regular checkup) and subjective oral health levels are high. Conclusion: It is necessary to try to improve the elderly's oral health levels by motivating the importance of oral health care and changing their oral health behaviors positively with the implement of oral health education on the elderly. Especially, oral health education programs that are operated on the elderly should be planned with practical programs that can cause the change of their oral health behaviors and should be processed to reinforce oral health care self-efficacy. Furthermore, preventive treatments for the elderly such as oral health education, oral examination and scaling should be implemented systematically and continuously by policy.
This study was intended to collect the baseline information on dietary behavior of adults to develop nutrition education program in the context of healthy weights at community level. Nutrient intakes of 128 housewives were assessed by 24 hour recall method. Also food habits, nutrition knowledge and attitude were investigated by self-administered questionnaires. Subjects were divided to under-weight, normal-weight, over-weight groups by body mass index (BMI). Most under-weight groups evaluated as their current body images were normal. $41\%$ of normal-weight groups judged as their current body images were obese. Energy and fat intakes of over-weight group were significantly higher than that of under-weight and normal weight groups (p<0.05). However, carbohydrate and protein intakes showed no significant differences among the three groups. It appeared that active attitude toward change in nutrition attitude of normal weight group was significantly higher than that of under-weight group (p<0.05). There were no significant differences of food habit score, nutrition knowledge, and obesity habit scores among the three groups. The frequency of eating-out showed significant difference among three groups (p<0.05). Food habit scores were positively related to health-concerned attitude (r=0.174), convenience-concerned attitude (r=0.229) and food enjoyed attitude (0.213) and negatively related to obesity habit score (r=-0.206). Also, positive correlation of body fat mass with frequency of eatingout (r=0.213), instant food (r=0.227) and amount of meal (r=0.187) existed (p<0.05). We concluded that nutrition education programs for housewives should include specific strategies to modify unsound food behaviors and inappropriate perception of body image for a healthy weight.
This study was to evaluate the effectiveness of nutritional counseling for farmers by using computer- based program to estimate pre - and post - knowledge and attitude changes. The desirable change of both knowledge and attitude focused on improving food Intake and early easing of body complaints. 311 agricultural workers in Korea were chosen for this experiment. The score was compared by 2 methods. In the first method, the scores were calculated from nutrient intake quantity and indices. In the second method, the difference of pre and post test of nutritional counseling by count of correct answers of foods and food preparation attitudes was measured according to different body complaints status. Major farming type was rice-planting(39%). The consciousness of health status of the subjects of less than 50 years old was good(42%), but it was only 20% in over 50 years' group. Female farmers felt uncomfortable in body complaints. Their body complaints were 2 times more than the male farmers, particularly, in over 50 years group. Nutrient intakes were lower in male based on the KRDA, except for vitamin C, niacin, and phosphate. Female farmers' nutrient intake was adequate based on the KRDA, but was low in vitamin A, pyridoxin, and iron. From the scores of knowledge and attitude by pre and post tests, counseling was efficient In nutritional education of all age groups, especially the older ones. The effect of counseling by farming type showed that the real agricultural workers had more increased score In the post test. This results Indicated that counseling about food, nutrition. and health to these workers was always effective. Therefore nutritional counseling and education program should be developed for different kinds of health and nutrition. It would be conducted to promote food behavior and improve nutritional and health status of farmers.
The purpose of this study was to obtain the nutritional values and objective data of uncooked powdered food (UPF) in korea. We interviewed 27 healthy female subjects aged over 25 years living in the lksan area. We just replaced common breakfast and dinner of the subjects with UPF. Their dietary intake status was evaluated by 24-hour recall method. Their body compositions were measured using body fat analyzer. Also we conducted hematological and clinical analysis of blood. The intake of energy, lipid and protein has decreased as people started to take UPF, but the intake of vitamins and minerals has increased. The quality of meals has improved after taking UPF. Due to the energy loss by taking UPF, weight and body fat gradually lessened. Among the lost weight the percentage of the body fat was high and we judged that the process of losing weight was successful. It is hard to predict whether weight loss will occur to people who are already in shape or not, but if overweight and obesity people regularly take UPF instead of other food products, we assume that UPF will help lessening body fat. The most positive change among biochemical changes by taking UPF was decreasing of serum lipid contents. The concentrations of total cholesterol and LDL-cholesterol gradually decreased and decreased intently after 12weeks. Serum HDL-cholesterol gradually increased and serum triglyceride showed gradual decrement. When healthy adult women replaced two of three meals with UPF for 3months, we were able to see some useful changes like decrement of body fat and serum lipid control and during this 3month period, no significant nutritional problems occurred. Complete judgement on UPF may be difficult with these conclusions but if people take a nomal meal once and replenish iron from taking UPF twice a day, we assume that replacing UPF with regular meal not be a problem in nutritional status. If other experiments on the effects of UPF proceed, we believe that those experiments will be very helpful in judging the nutritional value of UPF. (Korean J Nutrition 36(1) : 49-63, 2003)

The purpose of this research was to investigate nursing students' attitude toward body weight control, food behaviors according to their recognition, satisfaction on body image and Body Mass Index(BMI). The subjects were 273 nursing students. A survey was conducted using a self administered questionnaire. The data were an analyzed by a SPSS program. The majority of the surveyed participants were normal range for body mass index(BMI). Most of nursing students preferred a thin body image and were not satisfied with their body image. Most also controlled their body weight for appearance by exercising and the other efforts to change the body weight. From the above results, it is considered that nursing students need to establish proper self-recognition and dietary behaviors for their body images and counseling for desirable body weight control methods.
Purpose: The purpose of this study was to investigate the effects of hypertension relevant nutrition knowledge on practices for prevention of hypertension in Chinese college students studying in South Korea. Methods: We conducted a survey of 276 Chinese students studying more than three months in Korean universities who were aged 19 and older about hypertension and sodium relevant nutrition knowledge, intake of salty processed food, hypertension prevention practices, and stages of behavior change for hypertension. Results: The average score on the questionnaire for hypertension relevant nutritional knowledge was 40.62 out of 50 points, and the average score for sodium relevant nutritional knowledge was 24 out of 30 points. Kimchi was the most frequently eaten salty processed food. The average score for hypertension prevention practices was 3.10 out of 5 points. The behavior change stages for prevention of hypertension were contemplation (47.1%), action (32.2%), and pre-contemplation (20.7%). The students received high scores on nutrition knowledge and showed significantly higher scores on the action stage than on pre-contemplation or contemplation. Nutritional knowledge of hypertension and sodium showed positive correlation with hypertension prevention practices, whereas negative correlation with salty processed food intake. Conclusion: Development of an education program for Chinese students in Korea on hypertension and sodium relevant nutritional knowledge is needed so that they can practice for prevention of hypertension.
In a rapidly changing society, the rise in standard of living and level of education has brought about a Qualitative change in consumption, especially food consumption. Accordingly, consumers' interest in and the consumption of health foods has also grown at a rapid pace, expanding the health food market. However. because of the consumer's lack of understanding and knowledge about health foods, the reality is a difficulty in establishing sound consumption. Accordingly, this study was conducted to analyze the consumers' purchase behavior for health food. Through this study, consumers will be able to rationally plan for the use of health food items and further to provide necessary information for planning and executing effective marketing strategies producers and distributors of health foods items. The subjects of this study are the 473 Seoul residents over the age of 20 who have used health food items in the past year. The result of this study showed the use of fatigue rehabilitators, with 93.2% of the respondents saying they have used it. was the highest. with natural products honey, vitamin supplements. restorative foods, mineral supplements, young-gi fellowing in order. Recovery from fatigue. with 3.81, was the top reason the respondents started using health food items, followed by maintenance of health, supplement nutrition. and prevent disease. Family and relatives topped the list of information sources with 3.76. followed by TV and friends. On the other the Internet(2.32) and radio(2.35) were shown to be the lowest information sources. Those surveyed listed quality(4.00), safety(3.99). and nutrition(3.93) as evaluative criteria for health food items, in order of importance. The place of purchase most frequented by consumers in the survey were specialty stores(35.3%) leading the way with department stores and door-to-door sales, pharmacy following behind. On the other hand. purchases from direct mail were the lowest with 1.5% The people who bought health food Items were shown to be parent/siblings(37.2%) , self(33.6%) followed by spouse(23.7%) Purchases made by children were very low with only 4.9%. Finally, the level of satisfaction after using health food products were generally not very high. Consumers seem to be satisfied with the effectiveness(3.37) and safety (3.15) of the products. which is very minute, and they were slightly dissatisfied with the quality of the products.

Most elderly have difficulties in managing food safety and nutrition by themselves. Various nutrition educations for the elderly have been developed, but food safety and nutrition education program and educational tools for the elderly are very limited. The aim of the study was to evaluate a food safety and nutrition education program based on the Health Belief Model (HBM) for the elderly. Education program was implemented for 220 seniors (137 educated group and 83 control group) aged over 65 years at senior welfare community centers. The intervention study was carried out on a weekly basis during each of 5 weeks, and each session lasted about 35 or 40 minutes. The effectiveness of the program was assessed with a questionnaire before and after education. Education program consisted of a 5 week program, and topics were 'Dietary changes for the elderly's healthy life', 'Prevention of food poisoning in everyday life', 'Safe food handling for my health', 'Healthy dietary life to prevent chronic disease', and 'Safety! nutrition! healthy dietary life'. Education program materials such as slides, handouts, videos, leaflet, and booklets were developed. As a result, there were score improvements in knowledge, dietary behaviors, and health belief after intervention in the intervention group, which were higher than those of the control group. In particular, there was a meaningful interrelation between dietary behavior and health belief (r=0.520, P<0.001). This finding suggests that changing beliefs is very important to make desirable dietary behavioral changes. For this reason, we can conclude HBM theory is an effective model to educate nutrition and food safety for the elderly. Furthermore, food safety and nutrition education programs are implemented and delivered continuously at various settings such as a health center or community welfare center, and those will contribute significantly to enhance perception and change their desirable dietary behaviors for the elderly.

The purpose of this study was to investigate the BMI, dietary behaviors, body satisfaction and factors affecting the weight control interest according to gender of middle school students (195 boys and 251 girls) in Wonju area. The average height and weight of the boys were $164.8{\pm}8.3\;cm$ and $55.5{\pm}12.3\;kg$ respectively. Those of the girls were $158.8{\pm}5.0\;cm$ and $48.7{\pm}7.4\;kg$ respectively. The average body mass index (BMI) of the boys and girls was 20.3 and 19.3 respectively. In both boys and girls, 69.7% of them had regular meals and the main reason for skipping meals was insufficient time to eat due to oversleeping (33.6%). Most of the subjects consumed snacks more than once a day (95.5%). The dietary intake attitude score of the girls ($35.08{\pm}5.91$) was higher than that of the boys ($33.81{\pm}5.45$) (p<0.01). The eating disorders score of the girls ($12.92{\pm}6.22$) was higher than that of the boys ($10.70{\pm}9.82$) (p<0.01). Also, 87.2% of the subjects showed normal behavior and 12.8% of the subjects had eating disorders, but there was no significant difference according to gender. The body satisfaction score of the boys ($30.16{\pm}5.08$) was higher than that of the girls ($28.00{\pm}5.52$) (p<0.001). In general, body satisfaction score correlated positively with dietary intake attitude score, but correlated negatively with eating disorders score (p<0.05). Multiple regression analysis revealed that body satisfaction score was the most significant variable which affected the weight control interest. Therefore, development of the nutrition education program for adolescents will be effective not only for the improvement of dietary behaviors but also for the positive change in the misleading perception about the ideal body shape.
