야산에 자생하는 붉나무(Japanese sumac)의 천연자원으로서의 유용성을 확인하기 위하여 잎, 열매 및 수피 등 세부위를 열수로 추출하고, 이들 추출물의 몇 가지 추출특성과 아질산염 소거능 등 생리활성을 측정하였다. 추출물의 수율은 부위에 따라 6.62~13.84%의 범위였고, 유리 아미노산은 잎, 열매, 수피에서 각각 24종 37.9 mg/100g, 23종 27.0 mg/100g 및 27종 39.0 mg/100g의 함량이었으며, 7종의 필수 아미노산이 잎>수피>열매의 순으로 측정되었다. Naringin 상당량으로 구한 총플라보노이드 함량은 수피>열매>잎의 순으로 379.9~587.2 mg/100g이었으며, gallic acid 상당량으로 구한 총페놀성 화합물 함량은 잎>열매>수피의 순으로 80.4~111.2 mg/100g이었다. 붉나무 추출물의 아질산염 소거능은 pH 1.2에서 수피 61.93%>열매 57.38%>잎 55.49%의 순으로 측정되었으며, BHT (butylated hydroxytoluene) 소거능의 78.1~100%에 대응되었다. 추출물의 전자공여능은 열매 47.38%>잎 43.06%>수피 38.55%로서 각각 BHT의 65.6%, 58.8% 및 53.6%의 활성으로 비교되었다. 붉나무의 잎, 열매 및 수피 추출물의 환원력은 대조구로 사용한 BHT의 환원력에 비하여 각각 37%, 43% 및 46% 더 높게 평가되었으며, 금속이온 봉쇄능은 수피 27.3%>잎 20.6%>열매 11.2%의 순으로 상당히 낮게 측정되었다.

The term antioxidant is defined as my substance that, when present at low concentrations compared to that of an oxidizable substrate, significantly delays or inhibits oxidation of that substrate. Synthetic antioxidants such as butylated hydroxyanisole (BHA), butylated hydroxytoluene (BHT), tertiary-butylhydroquinone (TBHQ) and propyl gallate (PG) may be added to food products to retard lipid oxidation. The concentrations of total polyohenolic compound from extract of Paulownia tomentosa Stued. were water-soluble extract 7.98%, methanol extract 12.30% and ethanol extract 11.63%. The free radical scavenger activities of three extracts at the levels of 0.5% were higher than that of BHT(butylated hydroxytoluene). In antioxidative activities measured the concentrations of TBARS(thiobabituric acid reactive substances) in tissues microsome induced with Fe$\^$++/ascorbate, the water-soluble extract was errdctively suppressed in liver and spleen. In antioxidative activities determined by thiocyanate method against lipid peroxidation using linoleic acid, the methanol extract showed the higher compared with other extracts, but BHT showed the highest antioxidative activity. These results suggest that fruit extracts of Paulownia tomentosa Stued. showed to have relatively high concentrations of polyphenolic compounds and antioxidative activities.
This study aimed to assess the antioxidative potential of adding ethanolic extracts from Ulmus davidiana to Yackwa (Korean fried cookie). The reducing power and antioxidant activity of U. davidiana-treated Yackwa were assessed against DPPH, nitric oxide, superoxide anions, superoxide dismutase, and ABTS radicals. Increasing the amount of U. davidiana extract in Yackwa dough resulted in improved antioxidant properties. U. davidiana extracts were effective antioxidants with a radical scavenging potency similar to the potency of butylated hydroxytoluene (BHT) and L-ascorbic acid. The DPPH and nitric oxide radical scavenging activity of Yackwa containing 0.2% U. davidiana resulted in increased oxidative stability relative to control dough. Although the antioxidant effects of Yackwa containing U. davidiana extract were lower than those of Yackwa containing BHT and L-ascorbic acid, these results suggest that U. davidiana extracts have potent antioxidant activity. Accordingly, U. davidiana extract is a potential additive for deep-fried foods, such as Yackwa, to improve their oxidative stability.
This study investigated the effects of bovine plasma protein (PP) hydrolysates on the antioxidant and quality properties of pork patties during storage. Pork patties were divided into 4 groups: without butylated hydroxytoluene (BHT) and PP hydrolysates (control), 0.02% BHT (T1), 1% PP hydrolysates (T2), and 2% PP hydrolysates (T3). Pork patty supplemented with PP hydrolysates had higher pH values and lower weight loss during cooking than the control patties. Results showed that lightness and hardness both decreased upon the addition of PP hydrolysates. All samples containing BHT and PP hydrolysates had reduced TBARS and peroxide values during storage. In particular, 2% PP hydrolysates were more effective in delaying lipid oxidation than were the other treatments. It was concluded that treatment with 2% PP hydrolysates can enhance the acceptance of pork patty.
To assess the antioxidative activity of 12 medicinal plants on lipid peroxidation, twelves traditional medicinal plants extracted with 95% methanol were investigated the antioxidative activity using DPPH, thiocyanate acid method, and thiobarbituric acid (TBA) methods. Out of 12 medicinal plants extracted with methanol, the extraction yields of Sedum kamtschaticum was the highest values (49.46%) among them and Geranicum sibiricum, Saururus chinensis root (R), Agrimonia pilosa leaf (L), Agrimonia pilosa root was the lowest value (9.97%). Radical scavenging effect of the selected traditional medicinal plants extracted from different extract solution were examined by 1, 1-diphenyl-2-picrylhydrazyl (DPPH) radical method. Antioxidative activity of methanolic extracts was higher than those of ethanol and n-hexane extracts. Scavenging effects in Sedum kamtaschaticum (R) determined by DPPH radical showed the highest among the 12 plants. The antioxidative effects of the first four medicinal plants were similar to those of butylated hydroxyanisole (BHA), and butylated hydroxytoluene (BHT), but higher than that of tocopherol, which was used as a handled control. Antioxidative effects of each indicated concentration of the methanolic extracts on linoleic acid by thiocyanate method was the highest in Sedum kamtschaticum and followed by Geum japonicum and Agrimonia pilosa and their antioxidative effect were similar to those of BHA, and BHT, but higher than that of tocopherol. Antioxidative effects of the selected medicinal methanolic extract on linoleic acid by thiocyanate acid method were examined for 15 days. Peroxidation of control and tocopherol group occurred on days 5 and 9, respectively, but BHA, BHT, selected medicinal methanolic extract group did not occur until on day 15. Antioxidative effects of the selected medicinal methanolic extract on linoleic acid by TBA method were examined for 15 days. Antioxidative activity was similar to those obtained by thiocyanate acid method.
본 연구는 리놀레인산에 7종의 산화방지제를 각각 0.02% 농도로 첨가하여 $50^{\circ}C$의 dry oven에서 8일간 자동산화 시키면서 이들 산화방지제의 잔존량 및 산화안정성을 측정하였다. 잔존량은 HPLC를 사용하여 측정하였으며, 산화안정성은 과산화물가를 이용하여 분석하였다. 잔존량은 0일째(100%)에서 시간에 따른 변화율을 측정하였고, 또한 잔존량을 이용하여 100-잔존량(%)으로 손실률(%)을 계산하였다. 산화방지제 손실률과 과산화물가의 상관관계를 분석하여 연관성을 확인하였다. 잔존량 분석 결과 tert-butylhydroquinone(TBHQ)> dodecyl gallate(DG)> octyl gallate(OG)> propyl gallate(PG)> butylated hydroxyanisole(BHA)> 2,4,5-trihydroxybutyrophenone(THBP)> butylated hydroxytoluene(BHT) 순으로 낮은 잔존량을 나타내었으나, BHA 같은 경우 다른 실험군에 비해 8일째의 잔존량이 4일째의 잔존량에 비하여 감소량이 크지 않았으며 TBHQ은 4일째의 잔존량이 이미 0에 가까운 값을 나타내어 8일째의 잔존량과 큰 차이가 없었다. 과산화물가 측정 결과 대조군> TBHQ> DG> OG> PG> BHA> THBP> BHT 순으로 높은 과산화물가를 보였으며 산화방지제 손실률과 과산화물가의 상관관계 분석 결과 상관관계(correlation coefficient, $R^2$)는 0.3913~0.9963의 범위로, 특히 BHT가 가장 높은 상관관계($R^2$=0.9963)를 보였다. BHA와 TBHQ를 제외한 대부분의 실험군에서 $R^2$ 값은 0.8769 이상의 높은 상관관계를 보였다. 본 연구에서 페놀계 산화방지제는 자동산화 과정에서 리놀레인산 기질 내 산화방지제의 잔존량과 기질의 산화안전성 간의 높은 상관관계를 보여주었다.
The study assessed the stability for fresh beef patties with the inclusion of clove extract (CE) as a natural antioxidant in comparison to butylated hydroxytoluene (BHT) and ascorbic acid (AA) at frozen storage. Four different patties were made dependent on the added antioxidants: control (added no antioxidants), added with 0.02% BHT, 0.05% AA, and 0.1% CE. Inclusion of BHT, AA, and CE resulted in a significant reduction of thiobarbituric acid reactive substances (TBARS) and hue angle (h°) value and increase of redness (CIE a*) and chroma (C*) values (p<0.05). BHT, AA, and CE were observed effectively to retard lipid oxidation and increase color stability. BHT and AA revealed significantly (p<0.05) higher thiol content than the control and CE. However, the reduction percentage for thiol content in CE treated patties was lower than the control and AA-treated patties from first to last time of storage. Moreover, inclusion of AA and CE led to significantly (p<0.05) increased heme iron content when compared to BHT and the control. In conclusion, CE can replace the application of AA and BHT while improving lipid stability, heme iron content, and color stableness of fresh beef patties throughout frozen storage.
Lipid oxidation in ascidian was studied when fresh, deshelled and sliced meats were fermented for 50 days at 5$\pm$2$^{\circ}C$ with 8%(w/w) salt and 0.1% papain. Antioxidative effects of butylated hydroxytoluene(BHT) and carotenoid extracts from ascidian tunic on lipid oxidation and oxidationrelated discoloration of ascidian meat during fermentation were investigated. Changes in peroxide value, carbonyl value, thiobarbituric acid value, fatty acids composition, the loss of total carotenoid and sensory evaluation were determined to assess the rancidity. Peroxide and carbonyl values in BHT and carotenoid extract treatments increased less than those of the control during fermentation. TBA value increased until 30 days, hereafter tended to decrease a little in the control during fermentation. TBA value increased until 30 days, hereafter tended to decrease a little in the control but it increased slowly until 40 days in cases of 0.02% BHT or 0.02% BHT with 0.05% carotenoid added. Fatty acids of fresh ascidian composed of polyenoic acid, saturated acid and monoenoic acid of 51.5%, 28.1% and 20.7%, respectively. Saturated fatty acids(C16:0, C14:0, C18:0) and monoenoic acids(C18:1, C16:1) increased while polyenoic acids(C20:5, C22:6) decreased during fermentation. Carotenoid was markedly degraded and discolored in the control during fermentation. But 0.02% BHT and 0.05% carotenoid treatments had bright color like fresh meat during 40 days. The results of sensory evaluation during the fermentation also convinced the retard of discoloration by the addition of BHT and carotenoid.
Effective synthetic antioxidants such as butylated hydroxyanisole(BHA) and butylated hydroxytoluene(BHT) have been widely used in the food industry, but they are suspected to be toxic and carcinogenic effects. Therefore, the development of safely available natural antioxidants such as ascorbic acid, ${\alpha}$-tocopherol, ${\beta}$-carotene, flavonoids and selenium is essential. In particular, flavonoids, 2-phenyl-benzo-${\alpha}$-pyrones, are polyphenolic compounds that occur ubiquitously in food of plant origin. flavonoids occur in foods generally as O-glycosides with sugars bound usually at the C\ulcorner position. And variations in their heterocyclic ring gibes rise to flavones, flavonols, flavanones, flavanols, catechins, anthocyanidins, chalcone and isoflavones. Vegetables, fruits, and beverages are the main dietary sources of the flavonols, primarily as quercetin, kaempferol, and myricetin and the corresponding flavones, apigenin and luteolin. These flavonoids have biological activity such as antioxidant, anti-inflammatory, antithrombotic, antimutagenic, anticarcimogenic antiallergic and antimicrobial activity effects in vitro and in vivo. Flavonoids posses strong antioxidant activities acting as oxygen radicals scavenger, metal chelators and enzyme inhibitor. The antioxidant activity of flavonoids is determined by their molecular structure and more specially, by the position and degree of hydroxylation of the ring structure. All flavonoids with the 3`, 4`-dihydroxy(ortho-dihydroxy) posses marked antioxidant activity. And antioxidant activity increases with the number of hydroxyl groups substituted on the A-and B-rings. There is as yet no certainty about the effect of the presence of a double bond between C\ulcorner and C\ulcorner on the antioxidant activity of flavonoids.
