  • Sawdust, peat, and sawdust+peat were used as bulking agent in the compost production process using three different origin of manure; cow, pig, and chicken. The organic content and individual N, P, K content of the final manure compost were higher when peat or peat+sawdust were used to control the moisture. The carbon to nitrogen ratio and moisture content were low when peat or peat+sawdust were employed. In the case of cow and pig manure compost produced with peat or peat+sawdust, beneficial microorganism content was also higher than that of the manure samples produced with sawdust only. These results indicate that peat can be a useful component in the production of high quality manure compost.

  • Food wastes with different regional origins were mixed with bulking agent such as paper mill sludge or night soil, and aged for 21 days or 28 days. And aged food wastes were fed to the earthworm(tiger worm, Eisenia fetida) for 60 days. There were no significant physico-chemical differences among the food wastes with different regional origins. EC values and NaCl concentrations in food wastes were too high for earthworms to survive. Food wastes mixed with paper mill sludge were vermicomposted more efficiently than food wastes mixed with night soil, but the over-all vermicomposting rates on the food wastes were much lower than that on paper mill sludge because EC values and NaCl concentrations were still high for earthworm to compost the feeds. Earthworm population did not increase its biomass on the food wastes mixed with paper mill sludge or night soil, whereas earthworm population fed with paper mill sludge increased its biomass by 20% for 60 days. It could be concluded that a solution for reducing NaCl concentrations in food waste should be developed to vermicompost food waste.

  • This study was conducted to evaluate sensory properties of sugar cookie containing sucralose. Relative sweetness of sucralose to sucrose in a cookie system was examined with paired comparison tests and the result was applied to low calorie cookie preparation using polydextrose as a bulking agent. Physical and sensory properties and consumer acceptability of sugar cookies containing various levels of sucralose and polydextrose were evaluated. Relative sweetness of sucralose to sucrose was 700 times in sugar cookie. Instrumental hardness and fracturability increased as the levels of replacement with sucralose increased. Spread ratios of sugar cookies where sucrose was partially and totally replaced with sucralose and corresponding amount of polydextrose were higher than that with sucrose only. Intensities of bitter taste, salty taste, hardness and molar packing of sugar cookies where sucrose was entirely replaced with sucralose and polydextrose were higher than that those of the other cookies. Acceptability test indicated 75% replacement with sucralose and adequate amount of polydextrose can be used without harming overall, appearance and flavor acceptability while texture acceptability was slightly lower.

  • This study investigates the react characteristics to suggest the condition of the utilization and disintegration of food garbage as composting by varying the supply amount of air of the fermentation reactors. With the initial temperature and agitation velocity maintained 50$\circ$C and 1 rpm, the supply amount of air gives variety to 0.5, 1, 2, 4 l/kg$\cdot$ min. In the case of the amount of air operated at the 0.5 l/kg$\cdot$ min, reaction temperature shows a rising to the maximum 66$\circ$C after the 48hr, and the oxygen used rate of the micro-organisms shows the largest level at 18.4% after the 8hr. In the case of $NH_3, H_2, H_2S$ and SO$_2$ among the react gas, the sanitary utilization shows the possibility of the microorganisms gas disintegration, with most high gas generate rate. In the case of the amount of air operated at the 1, 2 and 4 l/kg$\cdot$ min, initial react was advanced rapidly and the product of the 72 hr after shows big weight reduction. As the experimentation result, when the amount of air operated at the 1 l/kg$\cdot$ min over, the reduction by disintegration would be more effectively, for the reactor maintains the color tone and shape of the straw (bulking agent).

  • A feasibility test for accelerating composting of sewage sludge irradiated with electron beam(3kGy) was investigated. Dried wood chip and leaves were used as a bulking agent and carbon source, respectively. The test variables included changes in temperature, organics and nutrients, and bioactivities from experimental and control composters. Results indicates that the temperature rose up to $60^{\circ}C$ within 1 day and maintained high temperature above $50^{\circ}C$ for more than 5 days in the irradiated sludge cake composter. It resulted in the fast degradation of organics during the initial 5 days, showing that approximately 70% of total amount of carbon degraded within 20 days was destroyed. It is likely that the composting of electron beam irradiated sludge cake is able to reduce it's maturing period significantly.

  • A fundamental study on composting garbage was performed in a laboratory scale of a high-speed composting reactor. Major parameters were moisture content, temperature and C/N ratio. The results are as follows; pH of the compost was the highest at moisture 60% and anaerobic condition occurred at 70%. It was, also, found that C/N ratio, caused a nitrogen loss due to an occurrence of plentiful $NH_3$. Under controlling Temperature, pH was the highest at $60^{\circ}C$ and an inverse effect for Composting occurred under excessive Temperature as pH at $70^{\circ}C$ was lower than that of soil. The variation of pH and C/N ratio was the lowest when C/N ratio was 25. The results obtained from composting garbage revealed that the best condition of composting occurred under 50 to 60% of moisture content, $60^{\circ}C$ of temperature, and 25 of C/N ratio. It is believed that composting may be finished with in 56 hours if an optimal condition is setting up.

  • The sustainable management of rice straw is essential for protection of human health and environment. This study assesses the impact of stock density of earthworm (Eisenia fetida) and Neem leaves (Azadirachta indica) on the quality of the final vermicompost. The vermicompost is produced using different combinations of rice straw, Neem leaves, and cow dung (bulking agent) by varying stock density of earthworms. The vermicomposting experiments are performed in plastic containers (32 cm × 28 cm × 28 cm) in open for 90 days under laboratory conditions. The stock density of the earthworm is found to be an important factor to influence nutritional quality of the final vermicompost. There is observed significant improvement in the total nitrogen (91.8%), phosphate (73.4%), potassium (38.8%), and calcium (59.05%) content of the vermicompost produced with the highest stock density of the earthworms. All the treatments showed decrease in TOC and C:N content after 90 days of vermicomposting. The treatment with Neem leaves showed maximum growth of earthworms (2.65 fold). Neem leaves brought positive changes in the quality of final vermicompost by enhancing the growth and reproduction of the earthworms. The calcium content increased by 39% in the final vermicompost with the addition of Neem leaves at the same stock density of the earthworms. The stock density of the earthworms and Neem leaves are found to significantly improve quality of the final vermicompost as compared with the compost (control). The surface morphology in SEM images showed high degree of fragmentation in the vermicompost as compared with the compost. The combined action of microbes and earthworms resulted in high degree of disintegration in the vermicompost.

  • This study was initiated to investigate the influence of biophysical condition on the composting characteristics, and conducted to develop technology for using recycled compost as a bulking agent cost to reduce operating cost. To methods of aeration, continuous aeration (CA: run No. I) and intermittent aeration (IA: run No. 2) were performed with three 12.3 liter laboratory scale vessels for ten days. Manure and rice hulls were mixed for thirst trial (I), rice hulls and recycled compost after first trial were mixed for second trial (II), dairy manure and only recycled compost after second trial were mixed for third trial (III). During the composting process, temperatures of the compost mass and ammonia emissions were measured. The quality and maturity of compost were ascertained by examining the characteristics and composition of the compost. Also, loss of mass was determined by measuring the mass of materials in the vessels before and after composting. The results in this study are as follows: 1. The periods of optimum temperature ($>55^{\circ}C$) to kill pathogens were maintained from 38 to 78 hours for CA and from 60 to 98 hours for IA. 2. The more recycled compost mixed, the more ammonia emitted. The maximum ammonia emissions were 287 ppm at CA and 420 ppm at IA. 3. Biofiltration system was required for the compo sting system using only recycled compost as an amendment, because the ammonia emissions was produced above 100 ppm at the end of composting process. 4. The quality and maturity of compost: - Fresh compost, were required drying, because moisture contents of the compost were approximately 70% in all tests. - The pH values were observed to rise smoothly, from 7.9 to 8.3 at CA and from 8.4 to 8.6 at IA. The CfN ratios of the fresh compost were ranged form 21.05 to 16.42 for CA and from 22.81 to 14.75 for IA. The final C/N ratios for test II and III were below 20.were below 20.

  • Recovery conditions and characteristics of a high molecular soluble protein from surimi processing wastewater in marine manufacture using calcium powder of cuttle bone treated with acetic acid (ATC) were examined. Judging from results of total-N, pH, COD, turbidity and yields, optimal treatment concentration of ATC for recovery of high molecular soluble proteins from wastewater was $1.0\%.$ The protein recovered from seafood waste (PRW) was macromolecule weight. The COD value in the wastewater treated with ATC was very high. The PRW had a $78.4\%$ in moisture, $1.0\%$ in crude lipid and $5.7\%$ in crude ash. The proximate composition, except the crude ash, of the PRW was similar to that of commercial surimi. The PRW showed white index and similar in the content and in the composition of total amino acid to those of commercial surimi. From the results of sensory evaluation on white index and texture, the heat-induced surimi gel prepared with $5\%$ subsititution of the PRW for bulking agent of commercial surimi was not significantly different compared to that prepared with the original commercial surimi.
