Effect of Preventing the Maillard Reaction between Casein and Glucose with Corn Starch and Sucrose (옥수수 전분 및 자당에 의한 Casein 과 포도당 간의 갈변반응 저지효과)

  • To estimate the effect of preventing the Maillard reaction between casein and glucose coated by freeze drying with corn starch slurry or mixture slurry of corn starch and sucrose, the reactants were treated into five groups of nonbrowning material(control), uncoated browning material, browning material coated casein alone with starch slurry, browning material coated both of reactants with starch slurry and browning material coated both of reactants with mixtrue slurry. All samples had a moisture content of about 15%. Browning reaction was carried out by storage for 30 days at $37^{\circ}C$, 67% RH. In vitro available lysine contents were decreased by the browning regardless of coating the reactants and were higher about 20.5% in the browning materials coated with mixture slurry than in the uncoated browning materials. Fructosyl-lysine contents were increased about tenfold by the browning regardless of coating and were decreased about 15.8% in the browning materials coated with mixture slurry as compare with the uncoated browning materials. The materials showing the greatest resistance to the browning reaction in the coated materials were those in which both of reactants were coated with the mixture slurry of corn starch and sucrose.

  • To study the effect of preventing the browning reaction between casein and glucose by protecting the reactants using corn starch with coating material, rats were fed for 30 days nonbrowning diet, nonprotected browning diet, browning diet protected only casein, browning diet protected both casein and glucose and browning diet supplement sucrose simultaneously with protecting both casein and glucose. The amounts of fructosyl-lysine excreted through urine were greater than those through feces regardless of diets and the both side of the excreted amounts of fructosly-lysine through urine or feces were greater for rats fed browning diets regardless protecting compared to rats fed the nonbrowning diet. Through urine, the excreted amounts of fructosyl-lysine were decreased for rats fed the browning diet supplemented sucrose simultaneously with protecting both casein and glucose than those for rats fed the nonprotected browning diet and through feces, were decreased for rats fed protected browning diets regardless of protecting method than the nonprotected browning diet. The excreted amounts of all individual essential free amino acids through feces were increased for rats fed browning diets irrespective of protecting compared to the nonbrowning diet, but through urine, were increased or similar level for rate fed the nonbrowning diet compared to browning diets except histidine. The excreted amount of free lysine through feces were decreased for rats fed protected browning diets than nonprotected browning diet. Fructosyl-lysine contents of serum, liver and small intestinal digesta were increased for rats fed browning diets regardless of protecting by starch compared to nonbrowning diet but, of serum and small intestinal digesta were decreased for rats fed protected browning diets than the nonprotected browning diet.

  • A comprehensive study to evaluate the relative antibrowning activity of 5 known natural juices was conducted. Among the juices tested, rhubarb juice showed the highest inhibitory activity on apple browning (${\Delta}L=0.47$ & ${\Delta}E=1.8$ after 6 storage days at $4^{\circ}C$). Even 50% diluted rhubarb juice was very effective in controlling apple discoloration, showing very limited change in Hunter's L and E values. No significant difference in apple slices browning was observed with respect to the packaging material (LDPE or nylon/PE). However, gas composition inside package was closely related to apple browning.

Quality Characteristics of Pudding Using Fruit of Corni Fructus and Vaccinium Oldhamii Miq. (산수유와 정금나무 열매로 제조한 푸딩의 품질특성)

  • Purpose: This study chose Vaccinium oldhamii as a material to complement the redness of Sansuyu, which is unstable to heat, to Sansuyu pudding. Methods: The level of browning and hunter color of Corni fructus juice supernatant (CFS) and Vaccinium oldhamii extract (VOE) were examined and dependent on heating time and storage period. Results: A value (redness) of VOE was high, browning was moderate during the storage period, and though the storage period was extended, the value stayed stable, meaning overall redness was maintained. With the increase in the amount of added VOD, the color preference of Sansuyu pudding, and D (VOE 10.0%) was marked the highest at 5.80. As for the preference of texture, B (VOE not added) was the highest at 5.35, but C (VOE 5.0%) was marked the highest at 5.10 for overall preference. The DPPH radical scavenging ability of Sansuyu pudding was 15.86-21.39% at a concentration of 1,000 ppm, and the total polyphenol content was 136.76-139.62 mg/100 g. Since the redness of Sansuyu is unstable to heat and then is heated, its degree of browning and b value (degree of yellowness) increases. Conclusion: So if a material with a red color that is stable to heat is added to Sansuyu, the preference of Sansuyu products will improve.

Characteristics of browning Materials in Perilla Oil and Change of Oxidative Stability of Blended Perilla Oil (들기름에 존재하는 갈색물질의 특성과 혼합 들기름의 산화 안정성 변화)

  • This study was performed to investigate the browning intensity and electron donating ability of browning material in perilla oils from seeds roasted at 150~21$0^{\circ}C$ for 10~30 min. It was also investigated the oxidative stability of the blended perilla oil on the basis of sensory property and oxidative stability. The browning intensity in perilla oil increased with the roasting temperature and time increased. The browning intensity of perilla oil from seed roasted at 21$0^{\circ}C$ for 30 min indicated 13 times higher than that of perilla oil from seed at 15$0^{\circ}C$ for 10 min. Electron donating ability on DPPH of browning materials presented in perilla oils increased with the roasting temperature and time increased. The electron donating ability of browning materials in perilla oil from seed reasted at 21$0^{\circ}C$ for 30 min indicated 3 times higher than those of perilla oil from seed at 15$0^{\circ}C$ for 10 min. In conclusion, for the improvement of oxidative stability of perilla oil, perilla seed should be roasted at 21$0^{\circ}C$ for 30 min. These results suggest that browning materials formed between sugars and amino acids attribute to improve quality of oil such as sensory properties and oxidative stabilities. For the improvement of sensory property and oxidative stability of oil, perilla oil from seed roasted at 19$0^{\circ}C$ for 20 min was blended with the oil from seed roasted at 21$0^{\circ}C$ for 30 min as ratio of 85 : 15.

Fermentation of Black-soybean Chungkookjang Using Bacillus licheniformis B1 (Bacillus licheniformis B1을 이용한 검은콩 청국장 발효)

  • Chungkookjang, fermented soybean, is high in microorganism, enzymes, daidzein, and peptides. Using yellow, black, Seoritae, small-black soybeans and Bacillus licheniformis B1, each Chungkookjang (YC, BC, SC, SBC) was prepared, and their fermentation patterns were compared. Changes of pH and browning material formation were taken as an indicative of fermentation. YC had a high pH increase at an early stage of fermentation, and a low change at a late stage. BC, SC, and SBC showed different patterns with a low pH increase at an early stage and a high pH increase at a late stage. Formation rate of browning material was fastest in YC and slow in the rest of BC, SC, and SMC. SC showed the highest value of browning material formation 1 d after fermentation. Anthocyanin in black soybeans seems to suppress the growth of bacteria at an early stage of fermentation. When anti-inflammatory daidzein contents were analyzed by HPLC, BC, SC, SBC showed higher values than YC. It was demonstrated that black soybeans can be fermented with B. licheniformis B1.

Kinetic Models for the Quality Factors of Banana by Different Dehydration Methods (바나나의 건조방법(乾燥方法)에 따른 품질변화(品質變化) 인자(因子)에 대한 반응속도(反應速度) 모델링)

  • Kinetics of ascorbic acid and browning that may use on the optimization of food dehydration were evaluated. Banana was chosen for this as the representative test material. We have described the destruction of ascorbic acid and browning as first and zero order reactions. The temperature dependence between two reactions were conducted with Arrhenius equation. Finally we have operated SPSS computer programs reapeatedly that we found very dose value of the parameter between result of ascorbic acid and browning. The attained Kinetic models were well prepared for the value of result experiments and the models may use on optimization for dehydration progress. Destruction rate of ascorbic acid and browning rate were low at initiation of progress, increased to show maximum at the low moisture on mid-progress and then decreased gradually. Freeze drying showed the most constant quality of product in this case.

  • The objective of this work was to study the effect of far infrared ray-vacuum drying having reflection and dispersion functions(RD-FRVD) and hot air drying(HAD) on the quality changes of dried vegetable flakes. HAD was regarded as a control. Browning degrees, color value, titratable acidity and pH value were measured as chemical evaluations. Rehydration and electron micrographs were investigated as physical evaluation. Microbial cells were counted. The color value and browning degrees were increased in both RD-FRVE and HAD. In case of degree of those changes, RD-FRVD made less changes than HAD. Especially, green bean sprout had no differences in color value and browning degrees between raw material and dried-rehydrated material. There were no significance differences in titratable acidity and pH value between raw material and dried-rehydrated material. The total microbial counts were gradually reduced in RD-FRVD. The rehydration rates of dried vegetable flakes were typically increased in RD-FRVD. Also, these results were investigated electron micrographs evaluation. Therefore, these results showed that the quality of dried-rehydrated vegetable flakes was typically enhanced by using RD-FRVD.

Kinetics Determination of Quality Changes for the Optimization of Food Dehydration (식품건조공정 최적화에의 적용을 위한 품질 변화 Kinetics 결정)

  • Kinetics of ascorbic acid destruction and browning were evaluated by the dynamic test using actual drying data in order to apply in the optimization of food dehydration. Radish was chosen as a test material because it has many typical quality characteristics during drying. Radish was dried in the cabinet dryer with being measured in moisture, food temperature, ascorbic acid and browning. Using moisture and temperature history, proposed kinetic model was integrated and parameters of the model were searched by the iteration scheme to show minimum discrepancy between predicted and experimental data. Ascorbic acid destruction and browning were represented by first and zero order reaction respectively. Arrhenius equation was used to describe temperature dependence. Several mathematical functions of moisture dependence were compared in the model simplicity and residual sum of square. Attained kinetic models were analyzed as functions of temperature and moisture. Rate of ascorbic acid destruction was low at high moisture content, increased with moisture decrease to show a maximum at the moisture of $9{\sim}12g/g$ dry solid, and then decreased up to full dryness. Browning rate increased with moisture decrease to show a sharp maximum at $4{\sim}6g/g$ dry solid and decreased with further moisture decrease.
