콩의 미기녹(未記錄) 병(病)인 Cylindrocladium(Calonectria) crotalaria에 의한 흑색(黑色) 뿌리썩음병 (An Investigation of Undescribed Black Root Rot Disease of Soybean Caused by Cylindrocladium(Calonectria) crotalariae in Korea)

  • An undescribed black root rot of soybean, caused by Cylindrocladium crotalariae, was observed in Suweon area. The diseased plants showed yellowing at the top and dry rot at the root. Lesions of roots and stems in the soil were red to brown and main roots were cracked. Although not observed the disease in the field, leaves of inoculated test plants in the greenhouse exhibited circular, brown lesion surrounded by chloratic halos. The fungus was recovered in culture from the infected stem and root, and the perithecia of Calonectria crotalariae were demonstrated to be present as well as the cylindrocladium state. The fungus was pathogenic to the root, stem, petioles and leaves of soybean. The probable source of primary inoculum was microsclerotia formed in infected soybean root and stem from the previous season's soybean debris. Black root rot by this fungus was considered to be one of detrimental factors to the maximum yield of soybean. From the morphological and physiological characteristics and pathogenic behaviors, this fungus was identified as Cylindrocladium(Calonectria) crotalariae.

Effects of Replacing Corn with Chinese Brown Rice on Growth Performance and Apparent Fecal Digestibility of Nutrients in Weanling Pigs

  • This experiment was conducted to study the effects of replacing corn with Chinese brown rice on performance and apparent fecal digestibility of nutrients in weanling pigs. Seventy-two cross-bred (Duroc${\times}$Landrace${\times}$Large White) weanling pigs, weighing an average of $7.38{\pm}0.06kg$, were randomly assigned to either a corn-soybean meal diet (treatment 1), a corn-brown ricesoybean meal diet (treatment 2) and a brown rice-soybean meal diet (treatment 3). The brown rice used in this experiment was husked from one kind of early, long grain, non-glutinous rice (ELGNR, indica rice). The growth performance of weanling pigs in the experiment was similar during weeks 1 and 2, but feed conversion ratio (FCR) was significantly better in treatment 2 during weeks 3 and 4. During week 2, only the digestibility of organic matter in treatments 2 and 3 was significantly higher than that in treatment 1. During week 4, the digestibility of gross energy, ether extract, organic matter and dry matter in brown rice treatment, especially in treatment 3, were significantly higher than in treatment 1. At the end of the experiment, the concentration of serum urea nitrogen of pigs in treatment 2 was lower than that in treatment 1 and 3 and no difference was found in serum glucose and phosphorus. It could be concluded from this experiment that replacing 50% of corn with brown rice in the corn-soybean meal diet caused no negative effects to weanling pig performance, and apparent fecal digestibility was unaffected. It is feasible to replace corn with brown rice in weanling pig diets in southern China.

  • Casein or soybean protein was subjected to there action with caffeic acidtyrosinase system at 30-35$\circ$C, pH 6.8 with aeration for 5hr. The resulting brown proteins were washed with acetone until the washings were on longer colored. However, modified protein still retained a light brown. The effects of the modified proteins and brown compounds on male Wistar strain rats were studied by pair-feeding of a cholesterol-free diet for 14days. Significant decrease in protein digestibility for the rats fed with the modified proteins were observed. Weight gain and protein digestibility were not influenced by feeding brown compounds, but the feeding of brown compound from casein caused an enlargement of caecum. The concentrations of serum cholesterol and triglyceride in the rats fed with modified proteins and brown compounds were mostly unchanged against the rats fed with untreated proteins. These results suggest that the decrease in protein digestibility induced by enzymic browning-reaction did not cause the decrease in concentration of serum cholesterol.

  • 대두(大豆) 갈색무늬병에 대한 저항성(抵抗性)의 포장검정(圃場檢定)에 적합한 생육시기(生育時期)를 결정하고 수집재래종(蒐集在來種)으로부터 저항성인자원(抵抗性因子源)을 찾기 위 하여 본실험(本實驗)을 수행하였던 바, 1. 갈색무늬병에 대한 저항성(抵抗性) 품종간(品種間)에 차이(差異)가 현저하였으며 수직감염율(垂直感染率)과 병반면적율간(病斑面積率間)에는 상관(相關)이 있었다. 2. 병반면적율(病斑面積率)과 병진전곡선면적(病進展曲線面積)과의 상관도(相關度)는 대두(大豆) 생육기중(生育期中) 개화기(開花期)에서 가장 높아 포장에서의 저항성 검정시기는 개화기(開花期)가 적당한 것으로 보였다. 3. 수집재래종(蒐集在來種) 1,428계통의 저항성(抵抗性) 검정결과(檢定結果) 고도저항성(高度抵抗性) 계통(系統)은 발견할 수 없었고 중도저항성(中度抵抗性)인 4 계통(系統)을 선발할 수 있었다.

수집재래 검정콩의 작물학적 특성 (Agronomic Characteristics of Black Soybean Collections in Korea)

  • 양질의 우량 밥밑콩 육성 및 유전자원 확보의 가능성을 검토하고자 전국에서 수집된 검정콩 965계통들에 대한 형태적, 생태적인 작물학적 특성을 조사한바 그 결과는 다음과 같이 요약된다. 1. 수집검정콩 계통의 엽형은 97%가 광엽이었다. 2. 검정콩 수집계통의 90%가 자색꽃을 지녔으며 백색인 계통도 전국적으로 고르게 분포하였다. 3. 수집 검정콩계통의 9a%가 갈색 모용을 지니고 있었다. 4. 검정콩 수집계통들의 협색은 갈색이 60%, 담갈색이 27%, 암갈색이 10%를 차지하였다. 5. 검정콩 수집계통들의 개화일수는 35~78일의 변이폭을 보였는데 전 계통의 61%가 61~70일 사이에 본포하였다. 6. 결실일수는 89%가 61~80일 사이에 분포하였으며 생육일수는 92~147일의 변이폭을 나타내었다.

가열처리에 의한 백미, 현미, 노란콩 및 검정콩의 식이섬유 함량 변화 (Effects of Heat Treatments on the Dietary Fiber Contents of Rice, Brown Rice, Yellow Soybean, and Black Soybean.)

  • 가열방법 및 시간에 따른 백미, 현미, 노란콩 및 검정콩의 식이섬유 측정치의 변화 양상은 다음과 같다. 불용성 식이섬유는 가열처리 방법에 따라 변화 양상이 각각 다르게 나타났으며 노란콩을 제외한 다른 시료에서는 가열시간에 크게 영향받지 않는 것으로 나타났다. 수용성 식이섬유는 가열처리에 의해 대체로 증가하는 경향을 보였으며 가열방법에 따라 변화양상이 다르게 나타났다. 가열시간이 길어짐에 따라 백미의 수용성 식이섬유는 증가하였으나 현미는 감소하는 경향을 나타내었다. 그러나 노란콩은 가열시간에 따른 일정한 경향을 나타내지 않았으며 검정콩은 가열시간에 영향받지 않는 것으로 나타났다. 가열처리에 의한 총식이섬유의 변화는 대체로 불용성 식이섬유와 비슷한 경향을 나타내었으며 이는 모든 시료들이 수용성 식이섬유 보다는 불용성 식이섬유의 함량이 현저히 많고 본 실험에서 총식이섬유를 불용성 식이섬유와 수용성 식이섬유의 합으로 계산했기 때문이라 생각된다.

재래종 대두의 갈문병 저항성에 관한 연구 (Studies on Resistance to Septoria Brown Spot(Septoria glycines Hemmi) in Native Soybean Collection)

  • 대두 갈문병에 대한 저항성 인자원을 개발하기 위하여 수집재래종대두의 저항성을 검정하고 낙엽률과 수량구성형질간의 관계를 구명한 결과를 다음과 같이 요약하였다. 1. 본시험에 공시한 수집재래종대두 1428계통의 약60% 이상이 심한 황변현상과 조기낙엽에 이르는 가장 높은 리병성 반응(리병지수 5)을 보였으며 약 9%인 136계통은 병반은 형성하나 병반 주위조직의 황변현상이 나타나지 않았으며 이들의 대부분은 녹색종피 계통이었다. 2. 대두 갈문병의 접종시기는 제2~3 복엽기가 효과적이었으며 신엽보다는 성엽에서 병의 진전속도가 빨 간다. 3. 대두 갈문병의 접종 4주 후에 조사한 초생단업의 낙엽률은 비접종구에 비해 약 82% 증가하였으며 황변현상이 나타나지 않는 연색종피 계통과 황변환상을 나타내는 품종간에 차이가 없는 것으로 보아 이들 연색종피 계통을 저항성으로 간징하기는 어려웠다. 4. 대두의 조기낙엽은 초장과 분지수에는 영향이 없었으나 절수, 협수 및 백립중에는 유의성 있는 부의 상관을 보임으로서 수량감소의 중요한 요인이 될것으로 보였다.

콩의 볶음 조건에 따른 청육장의 이화학적 특성 연구 (Physico-chemical Properties of Chungyuk-jang on Different Roasting Conditions)

  • Chungyuk-jang is one of korean traditional soy food made by boiling with meat, seafood and soybean which is fermented after roasting. To investigate the difference in the physicochemical characteristics of the Chungyuk-jang fermented with roasted soybean in different conditions, Chungyuk-jang was made from soybean roasted on the three condition, 140℃ for 21 min (CY140), 180℃ 9.5 min (CY180), 220℃ 6 min (CY220) which was decided by pre-test and compared to one made without roasting (CY0). The moisture of Chungyuk-jang was 79.98~81.87% and pH was 6.15~6.25. The lightness and yellowness of CY0 was higher than Chungyuk-jang made of roasted bean whereas redness and brown pigment was the highest on CY220. The contents of free sugar of CY140 was the highest among the treatment. The contents of amino-N of Chungyuk-jang (CY140, CY190, CY220) was higher significantly than CY0. The contents of total free amino acid and glutamic acid was highest on fermented soybean roasted for 140℃, 21 min (CY140) and followed by fermented soybean roasted on 180℃ 9.5 min (CY180), 220℃ 6 min (CY220) and CY0 (without roasting).

대두 갈색무늬병에 의한 수량감소의 평가 (Assessment of the Soybean Yield Reduction due to Infection of Septoria Brown Spot, Septoria glycines Hemmi)

  • 2년간에 걸쳐 조사한 대두의 수량감소는 갈색무늬병을 접종한 경우 농약 살포구에 비해 $15.7-16.4\%$ 감소 차였으며 자연감염의 경우에는 $8.2-9.2\%$의 감소를 나타냈다. 갈색무늬병의 감염은 초장, 주당절수(株當節數), 주당분지수(分枝數)에는 큰 영향이 없었으나 주당협수(狹數)와 종실중(種實重)에는 현저한 감소 현상을 보였다. 대두의 수량감소율을 갈색무늬병의 이병율과 정(正)의 상관을 보였으며 그 상관도는 Van der Plank's infection rate (0.156) 보다는 병 진전국선면적(AUBC) 과의 상관도가 높았다$(r=0.388^*)$. 병진전곡선 면적으로 표시된 갈색무늬병의 감염율과 대두수량 감소율과의 관계는 y=4.38+0.5X $(r=0.686^{**},\;df=25)$으로 나타났다.

Variation of β-carotene Concentration in Soybean Seed and Sprout

  • In this study, ${\beta}$-carotene concentrations was determined in soybean cultivar according to seed size, usage, seed coat color and cotyledon color as well as the process of seed germination. The total average concentration of ${\beta}$-carotene was $6.6{\mu}g/g$ in soybean seed, $33.3{\mu}g/g$ in soybean sprout. According to seed size, the total ${\beta}$-carotene concentration of soybean was $6.9{\mu}g/g$ in large soybean seed, $6.7{\mu}g/g$ in medium soybean seed, and $6.31{\mu}g/g$ in small soybean seed. In soybean sprout, the total ${\beta}$-carotene concentration was $21.4{\mu}g/g$ in large soybean sprout, $30.5{\mu}g/g$ in medium soybean sprout, and $43.5{\mu}g/g$ in small soybean sprout. According to the utilization of seed, the total ${\beta}$-carotene concentration of soybean seed was $7.2{\mu}g/g$ in cooked with rice soybean seed, $6.1{\mu}g/g$ in paste and curd soybean seed, and $6.3{\mu}g/g$ in sprout soybean seed. In soybean sprout, the total ${\beta}$-carotene concentration was $25.9{\mu}g/g$ in cooked with rice soybean sprout, $32.4{\mu}g/g$ in paste and curd soybean sprout, and $41.9{\mu}g/g$ in sprout soybean sprout. When comparison with seed coat color, the total ${\beta}$-carotene concentration of soybean with brown seed coat ($8.8{\mu}g/g$) was slightly higher than those of soybean with yellow ($6.1{\mu}g/g$). In soybean sprout, the total ${\beta}$-carotene concentration was $21.8{\mu}g/g$ in black seed coat sprout, $38.7{\mu}g/g$ in brown seed coat sprout, $34.1{\mu}g/g$ in green seed coat sprout, $39.5{\mu}g/g$ in yellow seed coat sprout, and $30.5{\mu}g/g$ in mottle seed coat sprout. The results of this study suggested the functional characteristics of soybean through quantitative analysis of ${\beta}$-carotene.
