Brown Color Characteristics and Antioxidizing Activity of Doenjang Extracts (된장의 지용성ㆍ수용성추출물에 대한 갈색 특성 및 항산화 효과)

  • Brown color characteristics and antioxidizing activities were investigated for Doenjang under different processing conditions. Doenjang A was prepared directly from Meju and saline solution whereas Doenjang B was Prepared after separating soy sauce by soaking for 45 days. Both Doenjangs were aged for up to 180 days. Antioxidizing activity was studied in relation to the brown color characteristics using fat-soluble extract and water-soluble extract of Doenjang. The intensity of brown color was higher in the water-soluble Doenjang extract than the fat-soluble Doenjang extract. In the UV-VIS scanning spectra, water-soluble Doenjang extracts showed significant changes as the aging proceeded, but fat-soluble Doenjang extract did not. Antioxidizing activity of fat-soluble Doenjang extract increased as the aging period extended; however, no significant difference was detected in the water-soluble extract. Overall, Doenjang A showed higher contents of amino acids, reducing sugar, brown color, and antioxidizing activity, and the antioxidizing ability was higher in water-soluble Doenjang extract rather than in the fat-soluble Doenjang extract.

Changes in Physicochemical Properties and Antioxidant Activities of Brown Rice (Oryza sativa L.) throughout Germination

  • The objective of this research was to investigate the changes in the contents of physicochemical properties including $\gamma$-aminobutyric acid (GABA), total dietary fiber (TDF), amylose, protein, and fat content in brown rice through germination for 2 different years. Total phenolic contents and antioxidant activities of DPPH and ABTS radical scavenging capacities were also determined in different solvent extracts. For the physicochemical properties, GABA, TDF, protein, and fat content increased, whereas amylose levels decreased. Specially, GABA and TDF levels showed the greatest variations among cultivars and harvest years. Total phenolic content and antioxidant activity significantly increased. The average total phenolic content at a concentration of 0.5 mg/mL in different extract solvents occurred in this order: methanol>ethylacetate>chloroform>hexane extracts. Additionally, 'Keunnun' exhibited the highest GABA levels, highest total phenolic content, and highest antioxidant activity after germination, with increases of approximately 3.7, 2.0, and 1.9 times, respectively, compared to levels before germination. These results suggest that, because of its high physicochemical contents and strong radical scavenging activities, germinated brown rice can be used as beneficial supplement.

Varietal Difference of Germination, Fat acidity, and Lipoxygenase Activity of Rice Grain Stored at High Temperature (벼 고온저장시 발아율, 지방산도 및 Lipoxygenase 활성의 품종간 차이)

  • This study was conducted to investigate the germination rate, fat acidity and lipoxygenase activity of brown rice after storage of 6 and 12 weeks at high temperature ($35^{\circ}C$) with fifteen Korean and two Japanese rice varieties. Germination rate in rough rice and palatability value in cooked rice by rice taster were lower with longer storage period, while protein content, fat acidity, and lipoxygenase activity in brown rice were higher with longer storage period. Fat acidify was negatively correlated with germination rate. However fat acidity was positively correlated with lipoxygenase activity. Seventeen varieties were classified into two groups on the basis of germination rate, fat acidity and lipoxygenase activity after 12 weeks' storage at high temperature; Group I including eleven varieties of Odaebyeo, Sangmibyeo, Unkwangbyeo, Ilpumbyeo, Nampyeongbyeo, Ilmibyeo, Donganbyeo, Jungsanbyeo, Koshihikari, Hitomebore and Chucheongbyeo showed high germination rate, low fat acidity and low lipoxygenase activity, while Group II including six varieties of Sindongjinbyeo, Hoanbyeo, Gyehwabyeo, Daeyabyeo, Hopyeongbyeo, and Dongin 1 showed lower germination rate, high fat acidity and high lipoxygenase activity.

Interaction of Beef Growth Type${\times}$Production System for Carcass Traits of Steers

  • Steers (n=335) of known genetic backgrounds from four fundamentally different growth types were subjected to two production systems to study differences in carcass traits. Growth types were animals with genetic potential for large mature weight-late maturing, intermediate mature weight-late maturing, intermediate mature weight-early maturing and small mature weight-early maturing. Each year, in a nine-year study, calves of each growth type were weaned and five steers of each growth type were developed on pasture or feedlot and slaughtered at approximately 20 and 14 months of age, respectively. Data collected were pre-slaughter shrunk body weight (SBW); hot carcass weight (HCW); dressing percentage (DRESS); fat thickness at the $12^{th}$ and $13^{th}$ rib interface (FAT); percentage kidney, pelvic, and heart fat (KPH); longissimus muscle area (LMA); marbling score (MARB); quality grade (QG); and yield grade (YG). Year and growth type were significant for all carcass traits. The growth type${\times}$production system interaction was an important source of variation in SBW, HCW; FAT, YG and MARB. The same interaction was non-significant for DRESS, KPH, LMA and QG. Carcass differences in measures of fatness were greater in the feedlot system than in the pasture system. These data could aid producers in matching beef growth type to the production system most suitable for efficient use of resources.

Less Weight Gain in Obese Rats by Feeding Biocellulose

  • This study evaluated the effect of biocellulose and the diet formulation on reducing body weight gain of obese rats induced by high-fat diet for 10 weeks. Thirty male Sprague-Dawley rats were randomly assigned to high-fat diet group (OB-CON), high-fat diet group containing 5% biocellulose (OB-BIO), and high-fat diet group containing 5% dietary formulation (OB-DF). After feeding each diet for additional 10 weeks, body weight gains of OB-BIO and OB-DF groups were lower by 3.3 and 4.8%, respectively as compared with that of OB-CON group. Although not significant, measured values of the perirenal and visceral fat pads of OB-BIO and OB-DF groups were lower than those of the OB-CON group. The weight of interscapular brown adipose tissue did not show significant difference in all groups. The size of adipocyte in rats was lower in both OB-BIO and OB-DF groups. Thus, biocelluose and the diet formulation showed the anti-obesity effect.

Study on Cooking Properties of 'Bodeurami' Rice Cultivar (보드라미 쌀 품종의 취반특성에 관한 연구)

  • Purpose: The aim of this study was to compare the cooking properties of Bodeurami and Ilmi to promote consumption of rice. Methods: The properties of Bodeurami and Ilmi such as proximate composition, Hunter's color value, water absorption rate, and cooking properties as well as Hunter's color value, texture properties, and sensory evaluation of cooked rice were analyzed. Results: Crude protein, crude fat, and crude ash contents of Bodeurami and Ilmi were higher in brown rice than in white rice. Regardless of rice cultivars, L-value was lower, whereas a and b-values were higher in brown rice than in white rice. The water absorption rate of rice grains was higher in white rice than in brown rice and increased rapidly to 75 min for white rice and 4 hr for brown rice. Cooking properties, water absorption, and expansibility of white rice were higher than those of brown rice, and there were significant differences between Bodeurami and Ilmi. Immediately after cooking and after storage at warm ($70^{\circ}C$) and room temperatures ($25^{\circ}C$), hardness of cooked rice increased after storage, but was not significantly different between Bodeurami white rice and Ilmi brown rice. The sensory evaluation shows that Bodeurami brown rice scored the highest for taste, texture and overall preference. Conclusion: Thus, the results of this study shows that Bodeurami brown rice is characterized by high cooking quality without any mixed white rice, and Bodeurami white rice could be used for the rice processing industry as well as cooked rice.

Effect of Germination Condition and Drying Methods on Physicochemical Properties of Sprouted Brown Rice (발아조건 및 건조방법이 발아현미의 이화학적 특성에 미치는 영향)

  • This study was carried out to investigate the effect of germination condition and drying temperature on growth and physicochemical properties of brown rice. Three brown rice seeds of Ilpumbyeo, Dasanbyeo and Heugjinjubyeo were stored at room temperature for six weeks to test the time-sequence germination viability. Relatively stable germination ratio was maintained until 2 weeks after storage. However, 3 weeks after storage, germination ratio of brown rice seeds started to decrease rapidly and their germination ratio was lower than 80%. For this reason, brown rice was recommended for seeding within 2 weeks after hulling. During the initial 5 days, germination ratio of 24 hours pre-soaking brown rice was higher about 2-3% than that of non-soaking brown rice. The $25^{\circ}C$ was considered as the most favorable temperature for brown rice germination, because of the high germination ratio and desirable coleoptile growth of the brown rice, and little seed rotting symptoms. The scanning electron micrographs showed the structural differences between hot-air dried and freeze dried germinated-brown rice kernel. In the freeze dried germinated-brown rice, seed coat (pericarp, tegmen and aleurone layer) was mechanically disrupted from the endosperm, and many cleavages were observed among starch storing cells and starch granules. The endosperm of freeze-dried brown rice kernels formed the sponge-like structures and showed the fragile traits. For this reason, hot-air drying is considered as more suitable method than freeze drying for germinated-brown rice. The crude protein and amylose contents were slightly changed, but there were no significant differences during the germination period. Crude fiber content was decreased, but crude Int and total amino acid contents were increased as seeding days increased. A rapid increase in $\alpha$-amylase activities of germinating brown rice was observed at S days after seeding, and $\alpha$-amylase activities were decreased from 8 days after seeding. Total free sugar contents were decreased during the germination period. There was continuous decline in the contents of sucrose and glucose until 8 days after seeding, but fructose and maltose content were gradually increased from the 5 days after seeding.

Effect of Processing Treatment on Physicochemical Characteristics of Brown Rice Varieties with Different Amylose Content (아밀로오스 함량이 다른 현미의 품종별 가공 처리에 따른 품질 특성 비교)

  • The quality characteristics of brown rice polished with grains of four rice varieties (Hwaseonchal, Baegjinju, Ilpum and Goami) were examined. For the physical properties of native and fried brown rice starches, the gelatinization temperatures and enthalpies (determined with differential scanning calorimetry) of brown rice starches decreased with increasing amylose content. The pasting viscosities of native brown rice starches in distilled water were higher than those in $HgCl_2$ solution (as an ${\alpha}$-amylase inhibitor). The highest viscosity of gelatinized starch was observed for the starch of Ilpum rice variety relative to other varieties. Cystal packing arrangement of brown rice starches subjected to deep-fat frying converted A-type (typically observed for cereal starches) into V-type (formed by retrogradation and recrystllization of amylose molecules).

Antioxidant Compounds and Antioxidant Activities of Ethanolic Extracts from Brown Rice Cultivars (현미 품종별 에탄올 추출물의 항산화 성분 및 항산화 활성)

  • This study investigated chemical components, antioxidant compounds, and activity of brown rice cultivars, to select good cultivar to be used for processing of mixed-rice in the food industry. Proximate compositions, phytic acid, phenolic compounds, and antioxidant activity of brown rice were significantly different among cultivars. Moisture, crude ash, fat, protein, and carbohydrate contents of brown rice were 9.51~12.82, 1.05~1.93, 1.84~6.24, 5.90~9.60 and 71.75~80.34 g/100 g, respectively. Phytic acid content of brown rice cultivars was 7.39~0.87 mg/g. Total polyphenol content of Joeunheukmi and Geonganghongmi cultivars, were 615.25 and $311.14{\mu}g\;GAE/g$, total flavonoid content was 267.75 and $100.67{\mu}g\;CE/g$, respectively. DPPH radical scavenging activity of Geonganghongmi, Joeunheukmi and Hyeugkwang cultivars was 89.17, 87.94 and 43.17%, ABTS radical scavenging activity was 113.57, 113.34, and $93.53{\mu}mol\;TE/g$, and ferric reducing antioxidant potential was 951.67, 1,075.75, and $508.33{\mu}M/g$, respectively. As a result, phenolic compounds and antioxidant activities of pigmented brown rice were high, and it could be used as a functional material.
