식품가열에 따른 Benzo[a]pyrene 생성 및 한국인의 발암 위해성 평가 (Pyrolytic Formation of Benzo[a]pyrene in Foods During Heating and Cancer Risk Assessment in Koreans)

  • The pyrolytic formation of benzo[a]pyrene during the cooking procedure was analysed in beef, pork, pacific saury, rice, and soybean by HPLC. In raw foods, benzo[a]pyrene (B[a]P) was not detected or negligible, but it was increasingly formed when foods were boiled (0.010~0.037 ppb) and more dramatically during broiling (0.302~0.851 ppb) in a time dependent manner. Human daily intake of B[a]P in Koreans and cancer risk assessment were estimated based on food consumption per capita and carcinogenic potency of B[a]P. When cooked foods were consumed for entire life time, cancer risk was estimated to bo 1.77$\times$10-6>1.65$\times$10-7>1.32$\times$10-8 by the order of broiled, boiled, and raw foods consumption. These data suggest that broiled foods produce more benzo[a]pyrene than water boiled foods. Thus cooking procedure is an important factor for the formation of carcinogens and needs to bo modified to reduce cancer risk for man.

흑염소불고기의 조리법의 표준화에 관한 연구 (The Recipe Standardization and Nutrient Analysis of Broiled Black Goat Meat)

  • The present research was designed to collect recipe of set up a standard recipe and analyze the nutrients of broiled black goat meat (a kind of native local foods in Busan and south province). The results of the study are summarized as follows. The recipe for goat(lamb) meat was recorded in Sanlimkyounggae and Jungbosanlimkyounggae between 1715 and 1827. The goat meat was explained as food for health, rejuvenation and recuperation Since late 1800, it has been utilized for such use. The flavor of broiled black goat meat is influenced by seasonings, fruit juice, heating treatment and cooker. And it also could be affected by the method of slaughter and the sex of the goat. There are lot of element in seasoning. Red pepper paste, garlic and ginger holdback the bad smell and make the taste better. Onion help to retain the water and improve the flavor. Starch syrup, sugar and sesame oil make the meat smoother, glossier and more tasty. The meat is usually roasted on grill over charcoal. It helps to remove or suppress the bad smell and make the taste better. Softness and scent of the meat depend largely on the way to butcher. Female goat meat tastes smoother and smells better. Fruit juice also improve the softness of the meat. Energy per 100g of the 'broiled black goat meat' is 170kcal. There are protein (23g), fat(2.4g), Ca(159mg), Fe(1.1mg) and so on. Amino acid is mainly comprised of essential amino acid such as cystine, lysine, leucine, and arginine. Fatty acid consists primarily of unsaturated fatty acid like oleic acid, linoleic acid.

유치원 급식에 적용하기 위한 생선류의 Cook/Chill System용 표준레시피 개발 및 미생물적, 관능적 품질 평가에 대한 연구 - 고등어구이, 가자미조림 및 오징어불고기를 중심으로 - (A study on the Development of Standardized Recipe and the Microbiological Assessment and Sensory Evaluation of Various Fish Dishes for Cook/Chill System for Kindergarten Foodservice Operations (Focused on Broiled Mackerel, Flounder Stew and Squid Bulgogi))

  • Standard recipes of various fish dishes for cook/chill system were developed to provide foodservice managers in kindergarten with more effective management system. Three kinds of fish dishes, Broiled Mackerel, Flounder Stew and Squid Bulgogi were selected as menu items in this study, and the standard recipes for these fish dishes were developed through the sensory evaluation, and microbiological analyses were performed to assure the quality of fish dishes. The microbial counts of the fish dishes which were chilled at 0∼3$^{\circ}C$ and stored for 10 days in refrigerator were as follows : Aerobic bacteria were not detected in Broiled Mackerel; however, those in Flounder Stew were 2.92${\pm}$0.01∼3.84 ${\pm}$0.06 Log CFU/g and those in Squid Bulgogi were 3.16${\pm}$0.01∼4.80${\pm}$0.02 Log CFU/g. Coliform bacteria were not detected in any fish dishes. All the sensory characteristics showed no significant differences between the first and third day of storage, except the feeling after swallowing of Flounder Stew. Overall acceptability scores of chilled stored foods in the first and third day were 6.87${\pm}$0.99 and 6.40${\pm}$1.40 in Broiled Mackerel, 6.87${\pm}$0.35 and 6.73${\pm}$1.10 in Flounder Stew, 6.13${\pm}$0.99 and 6.07 ${\pm}$0.80 in Squid Bulgogi, respectively.

여고생의 한국 전통음식에 관한 기호도 및 섭취빈도에 관한 연구 (A Study on Korean Traditional Foods Preference and Consumption of female High School Students)

  • This study was carried put to investigate the preference and consumption of Korean traditional foods. Questionnaires were completed by 210 academic female high school students and also by 210 vocational female high school students. The family income of academic high school students was significantly higher than that of vocational high school students and the family size of academic high school students was lancer than that of vocational high school students In the food consumption, academic high school students are broiled foods more frequently and vocational high school student ate noodles more frequently. Academic high school student showed a higher average in the preference of salted sea foods than that of vocational high school students. In the intake of salted sea foods, academic high school student had a higher intake frequency. The preference and intake frequency of salted sea foods increased significantly with their family's income. Also academic high school student showed a higher average in Korean traditional food knowledge. And this knowledge increased significantly with their family's income.

초등학생과 중학생의 고온가열조리식품 섭취실태조사 연구 (Study of Elementary and Middle School Students' Consumption of Foods Cooked at High Heat)

  • 지방이 많은 식품의 고온가열 조리시 생성되는 acrolein은 발암물질이며, 인체에 이행축적 되는 것으로 알려져 있다. 본 연구는 학령기 아동과 청소년에 이르는 초등학생과 중학생을 대상으로 그들이 선호하는 튀김, 직화구이 및 간접구이 등의 고온가열조리식품에 대한 섭취실태를 조사하기 위하여 서울 및 수도권의 대도시 소재 초등학교 5학년생 265명과 중학생 396명을 포함 총 661명이 응답한 설문결과를 SPSS 12.0통계 분석 프로그램을 이용하여 분석하였다. 19종류의 고온가열조리식품을 대상으로 한 섭취 빈도조사에서 가장 많이 섭취하는 음식은 꽁치 및 생선직화구이 > 생선튀김 > 삼겹살간접구이 > 튀김류 순으로 한 달에 3회 이상의 빈도로 섭취하였으며, 아동 1인당 고온가열조리식품의 연간 총식품 섭취량은 후라이드치킨(7.50 kg) > 삼겹살구이(6.57 kg) > 돼지갈비구이(4.18 kg) > 꽁치 및 생선구이(4.12 kg) > 소불고기(3.31 kg) > 튀김류(3.18 kg) > 돈까스(3.17 kg) > 제육볶음(3.13 kg) > 숯불소갈비구이(2.74 kg) > 전기통닭구이(간접구이)(2.05 kg) > 닭꼬치구이(1.87 kg) > 탕수육(1.87 kg) > 생선튀김(1.8 3kg) > 햄버거패티(1.21 kg) > 감자튀김(1.01 kg) > 바비큐(0.95 kg) > 도우넛(0.80 kg) > 핫도그(0.66 kg) > 고로케(0.51 kg) 순으로 나타났다. 식품별 가장 좋아하는 조리법은 쇠고기, 돼지고기 및 생선에 대하여 간접구이 조리법을 선호하고, 닭고기에 대하여서는 튀김 조리법을 선호하는 것으로 나타났다. 이번 고온가열 조리식품 섭취실태조사는 acrolein 등 지질과산화물 섭취량 조사연구의 기초자료가 될 수 있으며, 학령기 아동 및 청소년의 고온가열식품 섭취실태를 자각하고 올바른 식생활에 대한 교육의 필요성을 시사한다.

고령자의 선호 식재 및 고령친화식품의 인지, 경험에 대한 분석 (Analysis of Food Preference, Recognition and Experience of Elderly Foods among Elderly People)

  • Development of elderly foods that improve health among the older population is needed. The purpose of this study was to investigate the preference of specific foods for development as elderly foods. A one-to-one survey method was used for data collection from 150 elderly people attending senior welfare centers. The results of the study showed that the preferred cooking materials were vegetables, meats and fishes; and preferred cooking method was soup and stew rather than deep-frying. The elderly preferred meats and seafood but they did not eat them frequently. The results of investigating the preference of specific foods including meats, Kimchi, nuts and rice cakes indicated that old people liked broiled meats, Chinese cabbage Kimchi, walnuts and nonglutinous rice cakes the most, and they did not feel comfortable with chewing the foods. Most respondents were not familiar with the elderly foods. Moreover, the most important factors affecting their choice of elderly foods were hygiene, nutrition and flavor.

노인환자와 중년환자의 병원 음식 만족도 비교 분석 (Comparative Analysis of Satisfaction Level on Hospital Foods in Elderly and Middle Aged Patients)

  • The purpose of this study was to analyze the satisfaction level on hospital foods in elderly and middle aged patients. The subjects were selected among the patients treated in the Inha University hospital during July of 1999. One hundred thirty five elderly patients aged over sixty(68 men, 67 women) and sixty five patients aged in forties(35 men, 30 women) were surveyed through questionnaires in terms of satisfaction level on hospital foods and the food preferences. Satisfaction on general taste, saltiness, serving temperature, appearance, texture and variety of hospital foods was not significantly different according to age. However, elderly men showed significantly higher satisfaction level than elderly women in terms of general taste of hospital foods(p<0.01). The preferences of cooking method for meat, fish, vegetable and the preferred kinds of kimchi and milk & milk products were not significantly different between the two age groups. However, elderly women significantly preferred sauted meat to broiled meat compared to elderly men(p<0.05).

대학생의 음식 기호 조사 (Food Preferences of College Students)

  • The Purpose of this study was to investigate the food preferences of college students of Korea. The survey was conducted on november, 1981 through the questionnaires. The subjects were 1184 male and 1241 female students of 9 universities. The results obtained were summarized as follows : 1) Preferences of staple foods : Cooked rice was preferred most by the subjects. Male liked rice more than female, whereas female liked bread and noodle more than male. Among the different kinds of rice, bread, and noodles, the following food items were favored by the subjects. (plain rice, red bean rice and soybean rice ; salad bread and vegetable bread ; Nangmyun and Bibim Kooksu). The foods not preferred were barley rice, instant noodle and soybean milk noodle. 2) Preference of side - dishes : Among the kinds of side - dishes by different preparation methods, stews were the most favored and the next favored were soups by the subiecls whereas female showed lower preference of soups than male subjects Most disliked kinds of side-dishes were changachi and moochim. For example, side-dishes which showed higher preference in each preparation method were stew (Kimchi stew and Soybean paste stew), soup (Beef soup and Seaweed soup), kimchi (Korean cabbage Kimchi), Bockeum (Sauted beef and Sauted Kimchil, cheon(Beef Cheon, fish Cheon), Kui(broiled saury and broiled yellow tail runner), Chorim(braised cuttle fish and braised fish cake), Namul(sliced radish, cucumber, and spinachi), and Changachi (dried radish). The side-dishes which showed lower preference were Alaskan pollack soup, soybean curd residue stew, cabbage Kimchi, liver Cheon, sauted liver, hairtail Chorim, radish rootNamul, and dried radish root Changachi. 3) Preferences of snacks. Fruits apple, peach, pear) were the most preferred snacks by the subjects. Male preferred ginsang tea whereas famale preferred coffee. Both bate and female subjects showed higher preference of milk and lower preference of sweets. 4) Preference of one-dish meals : No one dish meal were disliked by the subjects. Male liked Bockeum-Bab more than female, and female liked Mandukuk more than male subjects.

성인 남녀의 외식 행동과 한국 음식에 대한 의식 조사 (Eating out behaviors and attitude toward Korean foods in adult)

  • The purpose of this study was to investigate several aspects of eating out behavior especially in relation to Korean food. Self-administered questionnairs were completed by 700 adults living Seoul and Kyunggi-do area from June to July 1994. The results were as follows: 1. The 68.4% of subjects ate outside home either frequently or occasionally. Lunch-eat-out was the most frequent and breakfast-eat-out, the least. Male subjects, adults under the age of 50, and students ate out more frequently. 2. The 70.3% of subjects spent less than 5000 won for the expense of eating out. Those under the age of 25 and students considered reasonable the expenditure of less than 3000 won for lunch and less than 5000 won for supper. But older adults and workers and housewives prefered $3000{\sim}5000$ won for lunch and $5000{\sim}15000$ won for supper. 3. Nayngmyun, bibimbap, jajangmyun, pizza, Broiled galbi, and pork cutlet were favorite eat-out dishes. Among Korean foods, bibimbap, Broiled galbi, nayngmyun, bulgogi and galbitang were frequently selected menues. While Korean dishes had a tendency to be selected as a first choice, noodle type dishes and western style fast food were prefered as a second and third choices. 4. Korean food restaurants received highest score in the food taste and familiarity evaluations. They also received good grade in such points as the nutritive value of food, amount of serving portion and the variety of menu. But as for the sanitation and food price, Korean restaurant scored the lower mark in comparison to noodle restaurant and fast food restaurant.

대구지역 어린이급식관리지원센터 지원 일부 어린이집 급식의 미생물적 품질 평가 (Microbial Quality Analysis of Foods from Daycare Centers Supported by the Center for Children's Foodservice Management in Daegu)

  • This study examined the microbiological quality of daycare center meals. Six menu items from five daycare centers in Daegu included uncooked processed foods (seasoned cucumber and lettuce salad), post-preparation after cooking processed foods (rolled omelet and seasoned soybean sprout), and cooking processed foods (panbroiled beef with oyster sauce and seasoned pork roast). Microbiological analyses were performed for the aerobic plate counts (APC), coliforms, and Escherichia coli. The analyses were conducted in July and November 2017. The mean APC and coliform count of seasoned cucumber decreased significantly from 4.71 log colony forming units (CFU)/g and 2.50 log CFU/g in July to 4.07 log CFU/g and 1.78 log CFU/g in November, respectively (P<0.01 and P<0.001). The APC of panbroiled beef with oyster sauce and seasoned pork roast were significantly lower in July (1.84 and 1.79 log CFU/g) than in November (2.41 and 2.28 log CFU/g) (P<0.001). The coliform counts of panbroiled beef with oyster sauce and seasoned pork roast were significantly greater in November (2.11 and 1.62 log CFU/g) (P<0.001). E. coli was not detected. Among the foods prepared using the three preparation processes, the post-preparation after cooking processed foods had the lowest microbial quality. The APC and coliform counts of cooking processed foods were satisfactory in July, with an acceptable rating for pan-broiled beef with oyster sauce in November. Time-temperature control and the prevention of cross-contamination are essential during meal production for food safety, regardless of the season.
