Vending machines play an important role of giving convenience and simplicity in modem life style. So they became an indispensible element in life of modern people. This study was peformed to investigate customer's actual status in use as well as the degree of satisfaction and requirement of food and beverage vending machines. The results of this study can be summarized as follows. 1. About the advantage of using the vending machines, respondents answered 'convenience' for 50.2% and 'closeness' for 33.6% of all the answers. About the dissatisfaction for vending machine, three factors of 'inappropriate taste, temperature. quantity' and 'unsanitary pakage material and food' were the main causes. 2. About the credit of food quality,48.6% of respondents answered' some what doubtful'.58.1% of respondents pointed out that they couldn't confide in freshness and shelf-life' 3. 48.2% of respondents agreed that vending machines would be needed more in the future. Respondents wanted lots of food to be served from vending machines. The foods which respondents wanted to be served from vending machines were noodle(30.8%), rice(19%), pastry(18.2%), bread(17.45) gruel(7.3%) and snack(7.3%).

501 preschool children from 4 to 6 years were examined for their salivary reductase activity and caries experience by Resazurin Disc Test and dental examination respectively. We asked the parents about their children's oral hygiene habits, between-meal eating habits, and physical exercise habits by the questionnaire. Toothbrushing frequency had negative relation to salivary reductase activity and caries experience. Caries experience was low when parents did toothbrushing for children, when teeth were brushed at bedtime, and when fluoride toothpastes were used. Salivary reductase activity and caries experience were high in bread & cookies group, chocolates & candies group, milk & soft drink group, and fruits & vegetables group in order. Caries experience was high in case of irregular between-meal eating. Sweet food eating frequency had positive relation to caries experience. Caries activity was low in case of eating homemade non-sweet between-meals. Salivary reductase activity and caries experience were low when gum-chewing frequency was high. Salivary reductase activity and caries experience were high when the amount of physical exercise was low.
This study is the present condition of running school based enterprises and tasks in the future, based on the 'regulations for establishment and management of school based enterprises' which came into effect in March, 2004. The investigation showed that 80% of respondents knew about the KIT's school-based enterprise, the bakery. And it seems that the fact that the college is running the bakery does not inspire any special confidence in the products. The students doesn't seem to purchase the products as much as staffs and the professors do, so more active promotions are necessary for student customers. The answer we got to the question 'if you enjoy the our bread and cookies, would you recommend them to your friends or family?' shows that some limit to the 'word of mouth marketing.' And increase in sales of the school based enterprise is closely related to how many times the customers visit the bakery. The school-based enterprise is regarded as one of the most effective alternatives to practice filed based education and innovate teaching methods.
The purpose of this study is to find injurious factors and to propose an improvement plan on workers' musculoskeletal disorders at a bakery workplace through analyzing the symptom, work posture and quantitative estimate. For this study, a survey and ergonomic estimate methods were adopted. According to the survey, it was analyzed that 429 workers corresponding to 68.2% of the response have been experienced the symptoms of musculoskeletal disorders such as an ache, prickle and numbness. The result of QEC analysis shows that shoulder and waist are highly exposed to musculoskeletal disease. The result of RULA analysis shows that injurious factors of muscle, weight and repeated operations are a little higher than those of operation posture. The result of SI estimate shows that pre-treatment of making bread requiring highly repeated operation gets the highest point of 81, on the other hand, chocolate-coating job requiring relatively low speed and short time gets the point of 4.5. Based on the analyzed results, improvement plan to prevent the musculoskeletal disorders against injurious working process of a bakery workplace. The goal of this study is to propose the improved scheme that prevents the workers against musculoskeletal disorders. A questionnaire and an ergonomic assessment method were adopted to analyze the symptoms of workers' musculoskeletal disorders, and an analysis of working postures and a quantitative assessment on various processes were performed to find out harmful factors of workplace.
This research aimed to find out menu preference for middle school students and was conducted in a form of questionnaire sampled form middle school students in 10 schools where the meal program under commission was operating in Seoul. The questionnaire was distributed from Dec. 1 to 20, 2000 and gathered menu preference of staple, soup or stew, side dishes and dessert by each meal, season, gender. Statistical data analysis was completea using the SAS package, such as average and standard deviation, frequency analysis and T-test. The results can be summarized as follows : Most of the schools provided rice for lunch, while the students preferred noodles, mandu and bread. Most of students preferd beef rib soup. Gimchi stew with clear soup was favored for breakfast and stews for lunch and dinner. Side dishes were more favored by female students, in which shows the differences between male and female students. Students preferred dessert the most with fruits(4.49). It is required that the quality of school meals should be improved through the service of various kinds of desserts.
Recently some negative opinions on milk, for instance, 'don't drink, if you want to live long' 'people who drink milk life-long, they suffer from arteriosclerosis' or 'milk is not helpful to osteoporosis, because it's acid food' etc. are confusing the regular consumers who believe milk is one of the best food, although milk has been used for a longtime since it was proved as the most nutritionally perfect food by many scientific researchers and medical doctors. According to the contents of negative assertion, experiments were carried out mostly targeting western people who are eating bread with butter everyday and taking large quantity of meat & milk, probably 2~3 times more than asian people. So, the probability of suffering from many diseases like obesity, hypertension, arteriosclerosis etc. is naturally high. Therefore, comparison itself between westerner and asian is not reasonable because of quite different food culture and fat intake far less. Milk has been contributing to the health of human for hundreds years supplying many nutrients, and this kind of contribution will last as long as humankind exist on the earth. However, milk is good source of many functional components, there are some people who can not drink milk. As a nutritionist said, milk is a kind of food, the only problem is quantity, people who can not digest milk can choose another and who want to drink milk, drink it as much as they need. That's all.
This study was conducted to develop optimal composition of flour brew in order to economically utilize flour brew inoculated by lactic acid bacteria as a starter(mother sponge) in bread-making. Two flour brews were prepared ; one with flour and water, the other with flour, water and NaCl. Various nutrients were added to both flour brews and Lactobacilli deMan Rogosa and Sharpe (MRS) broth to investigate the effect of them on growth and activities of Streptococcus thermophilus, Lactobacillus brevis and their mixed culture in flour brews to be tested with incubation at 37$^{\circ}C$. The growth of Streptococcus thermophilus, Lactobacillus brevis and their mixed culture was stimulated by addition of NaCl with 0.85% concentratin and more by mixed culture than by single lactic acid bacteria, resulting in 3 hrs reduction in cultivation and more by mixed culture than by single lactic acid bacteria, resulting in 3 hrs reduction in cultivation time. the addition of 3% glucose to flour brew with NaCl was observed to enhance acid productioni by mixed culture. Yeast extract greatly affected growth and activities of mixed culture of lactic acid bacteria in flour brew with NaCl and its optimum level of this additive in flour brew with NaCl was approximately 1.0%. The optimal composition of flour brew for mixed culture of lactic acid bacteria was suggested as follows; flour 100g, water 300g, NaCl 3.46g, glucose 12.48g, yeast extract 3.46g.
Purpose: This descriptive study aimed to compare the perception of the acceptable foods for the neutropenic diet between nurses and patients by food type. Methods: The participants were 225 nurses working at chemotherapy wards and 71 patients in chemotherapy treatment. Data were collected with a self-administered questionnaire from January 2 to February 24, 2012, and analyzed with SPSS 12.0 program using descriptive statistics and the ${\chi}^2$-test. Results: Eighty-eight point eight percent of nurses and 76.1% of cancer patients thought the patients needed the neutropenic diets. The most important decisional criteria to determine dietary restriction was neutrophil count for nurses and food type for patients. The two groups showed significantly different allowance to raw fruits and raw vegetables, sterilized canned juice, fried vegetables, yogurt, uncooked tofu, salted fish, cooked fish, cooked shellfish, uncooked grain powder, jellified food, home-made bread/cookies, nuts including peanuts, instant coffee or tea and tea brewed. In general, patients were more permissive about the neutropenic diet than nurses. Conclusion: It is recommended to consider patients' preference as well as nurses' professional knowledge and publish standardized clinical diet guidelines for neutropenic patients with collaboration between nurses and patient representatives.
The objectives of this study were to identify the dietary patterns associated with hypertension among Korean males. Data from the 2001 Korean National Health and Nutrition Survey of 1,869 men aged 20-65 years were used for the analysis. As an initial analysis, a factor analysis was applied to identify major dietary patterns among the subjects. Then logistic regression analysis was conducted to identify the pattern related with hypertension. As a result of the initial analysis, three major dietary patterns were identified. Dietary pattern 1 (traditional) was heavily loaded with vegetables, fish and cereal. Dietary pattern 2 (Western) was loaded with fast foods, bread, meats and dairy products. Dietary pattern 3 (Drinker) was loaded with mostly pork, beer and soju (Korean liquor). From the second stage of the analysis, there was a tendency of positive association between traditional patterns and hypertension risks. However, the tendency did not meet statistical significance level (p<0.05). In summary, unlikely findings from European and American studies, vegetables rich traditional dietary patterns did not show any protective effect on hypertension in Korean males. The Korean dietary practice, which is consuming salted vegetables instead of fresh vegetables, might have played a role in these findings. However, the full explanation of the findings remained to be answered with further investigation since none of the dietary patterns identified showed any statistical significance.
The goal of this study was to determine the nutritional value and nutrients provided by each meal and snack of consumed by university students. Subjects were randomly selected from volunteer students at five universities in Ankara. A sample of 400 students (167 female and 233 male) aged between 19 and 24 years participated in this study. A questionnaire designed to assess general characteristics, anthropometric measurements, and 24 hours dietary records was administered using face to face interviews. According to body mass index classifications, 69.5% of male students, and 77.7% of female students were found to be in the normal weight categories. Overweight categories were found to be 25.1% and 5.6% for males and females, respectively. Breakfast and lunch were the most frequently skipped meals, with a total of 47.7% of students skipping breakfast and 25.2% skipping lunch. The percentages of energy deficiency were found to be 78.4% in males, and 81.1% in females. Dinner was the main meal for consumption of energy and the other nutrients, except saturated fatty acids, for both genders. Also, dinner was the largest contributor of energy in both genders. Students ate more bread, cereals, and meat at dinner than during the other meals and snacks. Fruit was consumed more during snacks than at the other meals by all students. It was concluded that students need more nutritional information about healthy nutritional habits, adequate intake of nutrients, and ideal body weights.
