한국형 찐빵 제조시 국내산 밀 품종의 적합성 (Suitability of Various Domestic Wheats for Korean-Style Steamed Bread)

  • 국내산 밀 품종의 한국형 찐빵에 대한 가공적성을 알아보기 위하여 여섯 가지 국내산 밀 품종 즉 올그루, 고분, 탑동, 금강, 은파 및 그루밀 등을 제분한 patent 밀가루를 사용하여 밀가루 반죽 물성 및 호화 특성을 farinograph와 amylograph로 조사하였으며, 밀가루 각각의 적정 조건에서 찐빵을 제조한 후 빵 부피, 퍼짐율. broad score, 색도(L, a, b), 조직감 등을 측정하고 관능검사를 실시하여 빵 품질을 비교하였다. 국내산 밀가루 단백질 함량은 올그루 11.05%, 고분 11.66%, 탑동 13.07%, 금강 13.68%, 은파 13.70% 및 그루 13.75%이었고, 회분 함량은 0.34~0.45% 범위에 있었으며, 금강밀과 고분밀은 비교적 강한 반죽물성을 가지며, 다른 품종들은 연진밀에 속하는 품질을 나타내었다. 올그루와 그루밀을 제외한 국내 산 밀 품종으로 만든 찐빵이 강력분과 박력분을 동량 혼합한 혼합분(단백질 10.53%)을 사용한 대조구 찐빵보다 부피와 퍼짐성이 크게 나타났다. 전반적인 기호도는 빵 표면이 매끄러우며 희고 광택이 있었으며 촉촉하고 부드러운 촉감의 고분밀과 금강밀빵이 대조구 빵보다 높게 평가되었다. 빵 부피는 밀가루 단백질 함량, 회분, 밀가루 L값, farinograph 반죽 형성 시간, 안정도와 높은 상관성(p<0.01)을 나타내었으나 빵의 퍼짐성, total bread score, 전반적인 기호도는 단백질 함량보다는 farinograph 안정도나 연화도와 상관성이 높았다.(p<0.01). 이상의 결과로 미루어 볼 때 일부 국내선 밀가루는 시중 수입 밀가루보다 찐빵제조 용도로 더 적합한 것으로 판단되었으며, 찐빵에 적합한 국내산 밀가루 선택은 단백질 함량도 중요하나, 반죽 안정도가 높은 밀가루 품질이 더 중요하게 작용함을 알 수 있었다.

다양한 곡류의 Sourdough를 첨가한 식빵의 품질특성 (Quality Characteristics of Bread Containing Sourdough Using Various Grain Flours)

  • The principal objective of this study was to evaluate the effects of the addition of sourdough to various grain flours in bread, specifically, in regards to the physicochemical characteristics of bread dough, sensory evaluation, and bread storage. As the incubation time of sourdough increased, the total titratable acidity increased. Viable yeast counts of sourdough increased consistently until the third day, while lactic acid bacteria counts increased until the second day. The weight of breads containing sourdough made with rye flour, strong flour, and Korean wheat flour were higher than that of the control. However, the height, volume, and specific volume of control were higher than those of the groups with sourdough made with various grain flours. The pH of breads containing sourdough was lower than that of the control, while the total titratable acidity and moisture content were higher than those of the control. In analyzing the visible mold colony during the five days of storage at $30^{\circ}C$, mold growth in breads containing sourdough made of Korean wheat flour, barely flour, and rye flour was retarded. In the color measurement, the L values of the control and bread containing sourdough made with barley flour were higher than that of the other groups after five days. The a value of bread containing sourdough made of rye flour was higher, and the b values of breads containing sourdough made of Korean wheat flour, barley flour and rye flour were higher than those of the other groups after five days. The hardness of breads containing sourdough increased as storage time increased, where as breads containing sourdough made of Korean wheat flour, Korean whole wheat flour, and rye flour revealed no significant differences with control group. Sensory evaluation scores in terms of after swallowing, taste, and overall preference of bread containing sourdough made of Korean wheat flour was higher than those of the control group.

국내산 전립분을 첨가한 식빵의 품질 특성 (Quality Characteristics of Pan Bread with the Addition of Korean Whole Wheat Flour)

  • This study was designed to investigate the effect of Korean whole wheat flour making pan bread. Korean whole wheat flour was mixed with flour at the level of 10% (WHF10), 20% (WHF20), 30% (WHF30), 40% (WHF40) and 50% (WHF50) in order to make bread. According to mixogram, the CON (control), WHF10, WHF20, WHF30, WHF40, except WHF50 were found to be proper between 3 and 5 min. in terms of peak time. CON and WHF10 for peak value were at the level of over 60%. By increasing the ratio of Korean whole wheat flour, the pH, dough fermentation rate, volume, specific volume and moisture content were decreased, and gumminess, cohesiveness and hardness except springiness, were increased for storage days. In the crumbScan analysis, the addition of Korean whole wheat flour decreased the volume and increased the crumb fineness of pan bread. In the sensory evaluation, WHF30 showed good preference in the aspect of flavor, taste and overall acceptance, but was not significant between WHF20. CON scored the highest points in volume, specific volume, moisture content and texture, but was not significant between WHF20.

Xylanase 첨가에 따른 수수의 제빵 적성 변화 (Effects of Xylanase on the Baking Properties of Sorghum)

  • This study investigated the baking properties of sorghum with the addition of xylanase or Pentopan, which is a baking additive containing xylanase. The control bread was made with a 30% substitution for wheat flour and the optimum level of enzyme addition was 0.75 mg/g flour for Pentopan and 5 mg/g flour for xylanase. The water binding capacity of wheat flour increased with the addition of sorghum, but decreased with the addition of either xylanase or Pentopan. The resistance of dough increased while extensibility decreased with the addition of sorghum; however, resistance decreased while extensibility increased with the addition of the enzyme. Specific volume of bread decreased significantly with the addition of sorghum. However, the specific volume was significantly recovered with the addition of enzyme. Crumb firmness was higher in the sorghum-added sample, but crumb firmness of the bread decreased with the addition of the enzyme. The crumb firmness of bread with added xylanase decreased significantly in 24 hours. These results demonstrated that adding sorghum with either xylanase or Pentopan that included xylanase increased specific volume and decreased crumb firmness whereas sorghum decreased the quality of fermented bread when added to wheat flour. The firmness rate of fermented bread particularly decreased with the addition of pure xylanase.

활성글루텐이 저항전분을 함유한 식빵의 품질 특성에 미치는 영향 (Effects of Vital Wheat Gluten on Quality Characteristics of White Pan Bread Containing Resistant Starch)

  • 저항전분이 10% 첨가된 제품을 대조구로 하여 활성글루텐을 2%, 4%, 6% 첨가하여 식빵을 제조하였다. 활성글루텐이 미치는 효과를 측정하기 위하여 반죽과 제품의 pH, 수분활성도, 비용적, 굽기 손실률, crumb 색도, 조직감, 관능검사 등을 분석하였다. 반죽과 제품의 pH는 대조구에 비하여 활성글루텐 첨가 시 높았다. 수분활성도는 대조구에 비하여 활성글루텐 첨가구에서 다소 낮았으나 유의적 차이가 없었다. 비용적은 활성글루텐 첨가량이 많을수록 높아져 부피가 커지는 것으로 나타났다. 굽기 손실률은 활성글루텐 첨가량이 많을수록 낮아졌다. Crumb 색도의 L, a, b 값 모두 활성글루텐 첨가량이 많을수록 낮아졌으며 유의적 차이가 있었다. 조직감(경도)은 저장기간이 경과함에 따라 대조구에 비하여 시험구들이 낮은 값이었고, 관능검사에서 4% 첨가구가 가장 높은 점수를 얻었다. 이상의 실험으로 활성글루텐 4% 첨가 시에 저항전분이 10% 첨가된 식빵의 품질을 개선하는 것으로 나타났다.

Influence of Extruded Hemp-Rice Flour Addition on the Physical Properties of Wheat Bread

  • Functional foods play an important role in daily diet, human health and the food industry. Hemp was reported to have many advantages for nutritional and medicinal usage. In this study, extruded hemp-rice (EHR) flour, containing 30% hemp, was mixed with the wheat flour to create bread loaves at the concentrations of 5, 10 and 15%. Bread made from 100% wheat flour (with no added EHR flour) was used as a control. The physical parameters, including expansion ratio, specific volume and crust/crumb color were evaluated separately. In addition, changes in hardness of the bread during storage at ambient temperature for 3 days were also studied. The results showed that 10%-EHR bread exhibited the highest hardness value, while 15%-EHR bread presented the lowest. The bread containing EHR flour had lower specific volume and bigger air cells compared to the control. Moreover, the crust and crumb color of EHR-containing bread was significantly darker than those of the control. In this study, the 15%-EHR bread showed higher specific volume, lower hardness and bigger air cell structures.

국내산 밀의 제빵 적성에 관한 연구 (Bread-Making Properties of Domestic Wheats Cultivars)

  • 1997년에 수화된 탑동, 은파, 고분, 우리, 올그루, 금강밀의 6종의 국내산 밀과 표준밀로서 DNS(Dark Northern Spring)의 제빵 적성에 대하여 평가하였다. 회분함량은 DNS가 0.54%인 반면 금강밀을 비롯한 국내산 밀의 회분함량은 고분밀을 제외하고 그보다 낮았으며 단백질함량은 DNS가 11.68%였고, 금강밀이 13.85%, 은파밀 12.53%, 고분밀 12.32%로 표준밀보다 높은 단백질함량을 보였다. Farinograph에 의한 Valorimeter value는 금강, 고분, 은파밀이 표준밀 DNS보다 좋은 결과였으며 Extensograph에서는 저항도가 45, 90, 135분에서 각시간 별로 증가하였으며, 탑동밀과 고분밀이 DNS보다 저항도가 컸다. 전분이 호화될 때의 점도 변화를 나타내는 Amylograph에서는 우리밀과 올그루 밀을 제외한 4종의 국내산 밀의 호화온도가 DNS와 같거나 낮아 제빵용으로 적합하였다. 식빵의 외관 특성에서 올그루밀이 표준밀과 다른 국내산 밀에 비해 낮은 점수로 유의적인 차이를 보였고 금강밀은 껍질의 색과 질에서 다른 시료에 비해 높은 값을 나타내 외관 특성이 가장 우수하였다. 식빵의 내부 특성에서는 식빵 단면의 기공, 색상, 향, 맛에서 올그루밀이 낮은 값으로 다른 시료와 유의적인 차이를 보였고 색상에서 고분, 금강밀이 다른 시료와 유의적인 차이를 보였다.

저장 온도 및 가열 방법이 밀가루겔 및 식빵의 조직 특성에 미치는 영향 (Effects of Storage Temperatures and Heating Methods on the Textural characteristics of Wheat Flour Gels and Loaf Bread)

  • Effects of storage temperature at 18oC and 5oC for 9 days and heating conditions on textural char acteristics in strong wheat flour gels were investigated using a Instron after microwave (2450MHz, 700W). Heating condition did not affect the texture property in the wheat flour gels, but the frozen storage was very effective to prevent the hardening of the samples. Hardness, adhesiveness, and gumminess in the wheat flour gels decreased in increasing moisture content from 45% to 55%, but there was little change in cohesiveness. The storage at room temperature for 2 hours resulted in increased hardness in the heated wheat flour gels. PE wrap package of the wheat flour gels prevented weight loss by 3~6% and hardening effectively. Sugar, or sugar and shotening resulted in increased hardness in loaf bread. The hardness and weight loss in loaf breads were markedly changed by the heating time with microwave. The most critical time point was around 4 minutes following the heating.

우리밀을 이용한 한국형 사워빵 제조에 관한 연구

  • 우리나라에서 생산되는 우리밀을 이용하여 한국형 사워종을 제조하며, 동시에 각각의 글루텐 함량, pH, TTA, 발효율과 mixograph를 측정하고 분석하여 그 중 가장 우수한 sourdough starter를 추출하였다. 그리고 그 starter를 이용한 sourdough bread를 제조하였을 때 나타나는 제품의 특성을 CrumbScan을 통하여 비교 분석하여 우리밀을 이용한 한국형 사워빵의 특성을 알아보았고, 이용할 수 있는 가능성을 알아보고자 하였다. 글루텐 함량분석 결과 강력밀가루와 우리밀 중에서는 KWF 5와 KWF 6이 제빵에 적합한 글루텐 함량을 가지고 있었다. 전반적으로 sourdough starter의 pH 범위는 $4.0{\sim}4.5$ 사이로 사용하기에 적당하였고, TTA값은 대조구와 비교해 봤을 때, 비슷하거나 높게 나타났다. 발효율은 24시간 후 가장 많이 팽창한 것은 KWF 5와 KWF 6이었고 48시간 후에는 반죽의 산성화로 인하여 오히려 감소하는 것이라 사료되었다. mixogram의 분석결과는 강력밀가루가 제빵적성에 적합한 것으로 나타난 반면에 우리밀의 경우는 반죽내구성이 낮고 단백질함량이 적어 빵을 만들기에는 적합하지 않았다. CrumbScan을 통한 영상분석의 결과 강력밀가루와 우리밀 7가지 중에서 기공의 조밀도가 크고 찌그러짐이 적은 KWF 5와 KWF 6이 sourdough starter로 사용하기에 적합한 것으로 나타났다.

밀싹분말을 첨가한 식빵의 최적화 연구 (A Study of the Optimization of White Pan Bread added with Wheat Sprout Powder)

  • The purpose of this study was to determine the optimization mixing ratio of wheat sprout powder (WSP) and hemicellulase for the preparation of white pan bread. Using a response surface methodology, independent variables were WSP and hemicellulase. Dependent variables were physicochemical properties, antioxidant properties and sensory evaluation. Water binding capacity of dough increased with increasing WSP. Color value showed positive correlations with WSP. L value decreased and a, b values increased as WSP increased. The adjusted determination coefficient of texture analysis was calculated to be 0.7230~0.9446 having the p-value less than 0.1. Specific volume of bread showed a positive correlation with hemicellulase and a negative correlation with WSP. DPPH radical scavenging activity and total polyphenol were represented by a linear model and showed positive correlations with WSP. Sensory evaluation were represented by a quadratic model. In conclusion, the optimal formulation for WSP added bread, as assessed by numerical and graphical optimization methods, was WSP 2.36%, hemicellulase 0.069% per wheat flour 100 g. The above results indicate that WSP can be used as health-oriented material in the bread industry. This is also expected to meet demands of consumers who are in the pursuit of healthy food.
