This study of afterripening conditions during oyster mushroom (Suhanneutari 1ho) cultivation in bottles was investigated. Medium materials were used poplar-sawdust (68%), cotton seed peel (16%), Beet pulp (8%) and cotton seed cake (8%). Mix of materials was used as a percentage of the volume and to adjust moisture content (67%). Autoclaved mediums were placed in low temperature storage ($20^{\circ}C$) and then moved in inoculation room and conducted mechanical inoculation. Mycelial culture temperature was maintained at $20{\sim}21^{\circ}C$ and cultured during 18 days. The afterripening period were 6days, 9days, 12days and 15 days at $25{\sim}27^{\circ}C$. The yield of fruit body was higher for 9 days (163.1g/bottle) and 12 days (160.7g/bottle) than that of other afterripening period. Second, in the changes in moisture content of the medium according to the afterripening period, no significant changes were observed during mycelial grwoth. The longer afterripening period was showed slightly lower weight of media. The moisture content of media after harvest at afterripening for 9 days had the biggest reduction than any other treatments. In addition, weight of media and yield of afterripening for 9 days were the lowest and highest, respectively.

'Miso', a new variety of oyster mushroom was developed for the bottle culture at the Chungnam Agricultural Research & Extension Services. Its mycelium grew rapidly with $8.4{\sim}8.6\;mm/day $ at $25{\sim}28^{\circ}C$ on PDA medium. The optimum pH of the mycelial growth was pH 5.0. It took 24 days for the primitive primordium formation after inoculation on pine sawdust media mixed with 20% wheat bran. Fruiting body color was white, and the shape of pileus was convex-umbonate. In the bottle culture, the yield was 115.7 g per 850 ml bottle. Stipe length was about 54 mm, the number of stipe per bottle was 18.1, the size of pileus was 28 mm, and gill was crowded. The moisture content of 'Miso' was lower than that of Jangan No.5 and Wonhyeong No.1, and contents of protein, ash and sugar of 'Miso' were higher than those of other varieties, and tannin acid content of 'Miso' was lower than that of others. On the basis of AFLP analysis, the 'Miso' was distinct not only from Wonhyeong No.1, but also from their closest relative, oyster mushrooms.
Ventilation effects of bottles($1,100m{\ell}$) for culturing Flammulina velutipes on its mycelial growth and mushroom production were investigated. The degree of ventilation were controlled with hole positions, upper and under, and hole sizes in the bottle lids. The ventilation effects were measured with the contents of carbon dioxide, free sugars, chitin, moisture in the bottles and with the amount of produced mushrooms from the bottles. Carbon dioxide concentrations within the culturing bottles at exponential mycelial growth period vertex were relatively high in the bottles with lids without both a sponge and an aeration hole, and in those with a smaller hole. Free sugar contents in the mycelia were the highest in those with a 47mm hole on both sides, and in those with 26~33mm holes only underside. Chitin content was the highest in those with a 26mm hole only underside. On the other hand, the lids with 42mm~47mm holes on the both sides greatly lost water and decreased the mushroom production. In conclusion, the most efficient ventilation hole sizes on the lids for bottle($1,100m{\ell}$) cultivation of Flammulina velutipes using $1,100m{\ell}$ polypropylene bottle were 19mm on both sides of the lid and 26mm on only underside. They produced more mushrooms than the control by 6~9 %.

To investigated the effect of liquid culture conditions and nutrient sources on the formation with bioactive substance of Paeilomyces japonica and Cordyceps militaris cultivated in the country, the result are as follow; The growth temperature of two mycelia is 25$^{\circ}C$ and the proper temperature for cordycepin growth is around 20$^{\circ}C$. The formation amount of bioactive substance by nutrient sources reached its peak with using 2% glucose and 1% galactose in case of carbon sources and 0.4% inorganic compound in case of nitrogen sources. Also, the ratio of C/N was optimal with 3% glucose 1% peptone. For a natural medium, most grains were sufficient but the soybean oil was superb. The formation amount of protein-binding polysaccharide that are used for anticancer substance was in proportion to the growth rate of mycelium, had lots of aeration and showed a trend of increasing when the acidity lower. and the content of structural protein showed a trend of increasing when the acidity lower. However, the content of the structural hexosamin did not get a great the effect of culture conditions and nutrient sources. The constitution of monosaccharide that organizes a protein-binding polysaccharide greatly changed in proportion to carbon sources. When Paecilomyces japonica cultured in a silkworm larvae for 30 days, the content of cordycepin was 204.5 mg/100mL as a dry weight in the fruiting body, 41.8 mg/100mL in mycelium and larva, and the content for each bottle was average 29.5 mg/100mL. In case of Cordyceps militaris for 45days, the fruiting body was 563.5 mg/100mL, the larva and the mycelium was 86.1 mg/100mL, and the content for each bottle was average 65.0 mg/100mL.
To select the viable alternative substrates among the variable organic substrates for productivity enhancement and production cost-reduction of oyster mushroom in bottle culture, this study was carried out at mushroom research institute of GGRDA in 2007. In bottle culture of oyster mushroom (Plerutus ostreatus), the seedcakes of rape (RS), soybean (SS), coconut (CCS), and kapok (KS) were examined as substitute of cotton seedcake which was primary nutritive material of mushroom growing substrate. The chemical properties of substrate mixed with kapok seedcake is similar to the mixture with cotton seedcake in T-C, T-N, C/N ratio, and other nutrients. Mixed growing substrate containing cotton seedcake and kapok seedcake was superior to other mixtures 99.2% and 99.5%, respectively in spawning ratio and was faster mycellium growth in column test than that of soybeen seedcake, cotton + soybeen seedcake, and coconut seedcake. The period required in first pin-heading was 1-2 days longer in rape and soybeen seedcake mixture. Also there wad no primodia and fruitbody formation at soybeen seedcake mixture which had highest T-N content among the other mixed substrates. Yield per bottle and biological efficiency were highest of 144.6 g and 75.4%, respectively at kapok seedcake mixture. As a result, this study found that cotton seedcake can be replaced with kapok seedcake in bottle culture of oyster mushroom.
This study was carried out to monitor feed-nutritional components, toxic heavy metals (Cd, Pb and As) and pesticide residues through three cultivation stages (1st initial culture stage, 2nd mycelial growth stage, and 3rd fruit body-harvested stage) of king oyster mushroom (Pleurotus eryngii) produced by bottle type cultivation and oyster mushroom (Pleurotus osteratus) produced by vinyl bag type cultivation. For both cultivation types, compared with the initial culture, the weight reduction rate in spent mushroom substrates (SMS) after fruit body harvest was 29% for total wet mass, 21~25% for dry and organic matters and 19 ~22% for neutral detergent fiber. Two thirds to 3/4 of organic matter degraded and utilized by mycelia and fruit bodies was originated from fiber, of which the primary source (50~70%) was hemicellulose. The effect of mycelial growth stage on chemical compositional change in culture was little (P>0.05) for bottle type cultivation of king oyster mushroom but considerable (P<0.05) for vinyl type cultivation of oyster mushroom. Culture nutrients uptake by fruit bodies was very active for the bottle type cultivation. Compared with SMS, harvested fruit bodies (mushrooms) contained higher (P<0.05) crude protein, non-fibrous carbohydrate, and crude ash and lower (P<0.05) neutral detergent fiber. Regardless of stages, no culture samples were contaminated with toxic heavy metals and pesticide residues. In conclusion, the increase of fiber (neutral and acid detergent fibers) and indigestible protein contents and the decrease of true protein content in SMS indicated that the feed-nutritional value of SMS was significantly reduced compared with that of the initial culture and they were safe from toxic heavy metals and pesticide residues.

The steps related to the nutrient solution management were divided into 4 categories. The resistance for water movement in every steps was proposed. The priorities among the steps were set according to the cultural situation, which were used as the basis for the management in perlite bag culture. The enhancement of historical root development is especially critical, as well as how to supply essential water efficiently by minimizing the water movement distance to the root, which is the narrowest neck of a bottle in solution management.
The stromatal forms of T. fuciformis and the mycelia of Hypoxylon sp. were collected. The DNA sequence in the ITS region of the 5.8S ribosomal genes of isolated strain KG103 was very similar to that of T. fuciformis AF042409 with a homology of over 98% in the EMBL/GenBank database through BLAST searching. A second isolate, No KG201, one of the symbiotic strains for cultivating T. fuciformis also exhibited high homology with Annulohhypoxylon stygium AJ390406. Potato Dextrose Medium exhibited the best mycelial growth of 14 mm/14 days and 85 mm/14 days for T. fuciformis and its symbiotic fungi, respectively. Optimum culture conditions for the micelial growth were pH 5 at $25^{\circ}C$. For the optimization of artificial cultivation of T. fuciformis in bottle with sawdust medium, several conditions such as type of sawdust, supplements, pH, moisture content, and incubation temperature were investigated. T. fuciformis and symbiotic fungi showed fast mycelial growth on corn cob media (77 and 52%) followed by oak tree sawdust and cotton seed meal. The optimal temperature for mycelial growth of T. fuciformis and symbiotic fungi on corn cob media was $25^{\circ}C$ at 55% of moisture content.
The cultivation of Sparassis crispa in the beginning of the 2000s in South Korea, and the cultivar 'Neowul' bred in the Chonbuk Agricultural Research and Extension Service were registered first in 2016. However, there is no manual for the cultivation of Sparassis crispa, and therefore, there remains a big difference in its harvest rate across farms. Herein, we aimed to study the primordium formation conditions of Sparassis crispa 'Neowul' according to the medium pH, medium moisture content, and inoculum volume of liquid spawn and develop a stable production technology. We found the annual yield per bottle relating to the cultivation period, harvest rate, and the weight of fruiting body to be the highest at 363.6 g in the area cultivated at pH 3.8. However, it is thought that cultivation by adjusting the pH to 3.9±1 would be necessary for stable production, considering that at pH 3.6, the yield sharply reduced to 189.5 g. Moreover, the culture period was shorter at pH 4.0 compared with that at pH3.8, and the cultivation period at pH 4.0 was the same as that at pH 3.8. No significant difference in the weight of the fruiting body at different conditions was recognized. Additionally, it is difficult to regulate the pH precisely in practical applications in the farms. It is thought that 341.8 g Sparassis crispa will be produced per bottle annually if the medium moisture content is adjusted to 65%, liquid spawn inoculum volume is equivalent to 4% of the medium volume, and the humidity in the culture room is set to below 50%.

Generally, the hidden quality cost does not show in the accounting record, but some time can find in the data of cost accounting or management accounting. How to combine between the hidden quality cost and the accounting method is discussed in the conclusion.
