단마(Dioscorea aimadoimo)의 열풍건조 시 갈변 억제 방안 연구 (Studies on the browning inhibition of yam(Dioscorea aimadoimo) during hot air dehydration)

  • 건강식품에 대한 기호도가 높아짐에 따라 최근 그 수요가 증가하고 있는 단마의 열풍건조 시의 건조특성과 건조 시 갈변 억제 방법에 관해 조사하였다. 단마의 일반 성분은 수분 81.17%, 조단백질 1.43%, 조섬유 0.29%, 가용성 무질소물이 15.81%었다. 단마를 세척 박피 후 0.5 cm 두께로 세절하여 plastic tray에 박층 및 적층($4{\sim}5$겹)으로 건조온도 $50,\;65,\;80^{\circ}C$에서 중량의 변화가 없을 때까지 건조하면서 건조 중의 중량을 측정한 결과, 각 온도에서 분말화가 가능한 수분함량(18%, 습량기준)까지는 박층의 경우 10, 6, 3시간, 적층의 경우에는 12, 7, 5시간 정도의 건조시간이 요구되었다. 고온 건조 조건($80^{\circ}C$)에서의 갈변을 억제하기 위해 열풍건조 전 blanching, steam 및 가정용 전자랜지를 이용한 microwave 처리를 각각 30초, 60초간 실시한 결과, 30초간 steam 처리한 구가 대조구에 비하여 비교적 갈변도가 적었다. Ascorbic acid, cysteine, citric acid, NaCl 등을 이용하여 각각 1000 ppm, 500 ppm의 농도에서 열풍건조 전 단마를 1분간 dipping하여 건조 분말 제품의 색도를 측정한 결과 cysteine, citric acid, NaCl에서 갈변 억제 효과가 있는 것으로 나타났으며, 이틀을 두 가지 씩 조합한 복합 갈변 억제액에 dipping시에는 갈변 억제 효과가 더욱 우수한 것으로 나타났으며 citric acid 500 ppm, cysteine 1000 ppm 처리구가 가장 갈변 억제 효과가 뚜렷하였다.

냉동 비빔밥 제조 공정 중 콩나물, 무채 및 돈육의 품질 변화 (Changes in the Quality Characteristics of Bean Sprout, Radish, and Pork During the Unit Processing in Frozen Bibimbab Production)

  • 본 연구에서는 냉동비빔밥 제조 공정 중 주요 식재료인 콩나물, 무채 및 돈육의 이화학적 특성 변화를 평가하였다. 콩나물의 품질은 원료의 데치기 공정, 해동 공정 및 최종조리 단계에서 변화가 야기되었으며, 특히 데치기 공정이 이후 단위 공정에 따른 품질에 영향을 미치는 중요한 공정 단계로 평가되었다. 무채는 해동 및 최종 조리 단계에서 높은 중량 감소를 보였지만, 다른 식재료에 비하여 감소 폭이 현저하지 않았다. 반면 취반미 혼합 공정에서 조직이 물러지는 현상이 야기되었다. 돈육은 취반미 혼합 및 최종조리 등 열처리에 의하여 중량 감소 및 연도 저하가 현저하게 발생하는 것으로 평가되었다. 이상의 결과에 의하면, 원료 단계에서 콩나물의 데치기 온도 및 시간에 대한 최적화 공정이 요구되며, 특히 모든 식재료에서 공통적으로 발생하는 취반미 혼합 공정에서의 품질 변화 억제를 위하여 냉동밥과 식재료를 분리하여 개별 냉동 후 포장할 수 있는 공정의 개선이 요구되었다.

염화칼슘을 이용한 시금치의 연화방지 연구 (Study on the Prevention of Spinach Softening Using Calcium Chloride)

  • The purpose of this study was to prevent excessive softening of seasoned spinach by heating and freezing through the pre-heating treatment in calcium chloride solution. The pre-heating temperature was set at 60℃, which supports the highest activity of pectinesterase around 60℃. Pre-heating spinach in calcium solution does not affect the chromaticity characteristics of spinach leaves and significantly improves its texture compared to conventional blanching only and pre-heating in water. The improvement of the firmness is related to the formation of strongly cross-linkages between carboxyl groups and Ca2+ by the action of the pectinesterase in spinach. For reheated spinach, the firmness of calcium chloride treated stems were 37.80~44.44 kg, and the control was 28.73 kg. The firmness of calcium chloride treated leaves was 19.73~40.79 kg, and the control was 9.63 kg. Additionally, the total aerobic bacteria in the fresh samples were 3.25~3.99 log CFU/g and 1.97~2.72 log CFU/g in the reheated samples. And the total coliform was not detected in the reheated samples. Considering the color, texture, microbial characteristics and taste quality, the optimum pre-treatment conditions to prevent excessive softening of spinach were 3% calcium chloride solution and 15minutes of treatment.

  • 건조방법을 달리한 께묵(Hololeion maximowiczii) 뿌리의 색도변화에 대해서 조사하였다. Hunter value에서 분말의 경우에는 HADB가 더 진한 편이었으나 용액의 경우에는 HADB가 제일 연한 색깔을 띄었다. 수용액 색소의 420nm에서의 흡광도는 FD group이, 자외부에서 흡광도는 HADB group이 가장 강하였다. 께묵의 색소는 분말상태에서보다 용액상태에서 더 불안정하였으며, 색소분해에 대한 활성화에너지는$(90{\sim}100^{\circ}C)$ 약 20.9kcal/mole이었다.

가공 전 열처리가 Fresh-cut Muskmelon의 품질변화에 미치는 영향 (Influence of Preheating on Quality Changes of Fresh-cut Muskmelon)

  • Fresh-cut 멜론의 연화 억제를 위해 열처리를 행하였으며 그에 따른 저장 중 품질 특성과 texture를 조사하였다. 직접적인 열처리에 의한 과실의 품질 열하를 방지하기 위하여 전과(全果, whole fruit)를 저온(5$0^{\circ}C$)에서 열처리하고 저온(5$^{\circ}C$)에서 24시간 저장한 후, 멜론 cylinder를 가공하였다. 저장중의 포장 내 가스 조성의 변화를 통한 호흡특성, 색도 변화, pH, 가용성 고형분 함량 등의 품질 특성 및 texture를 측정하였다. 열처리한 멜론 cylinder의 호흡 특성은 저장 기간이 증가함에 따라 포장 내 산소 함량은 감소하고 이산화탄소 함량은 증가하였다. 특히 무처리구에 비하여 열처리한 멜론 cylinder의 포장내 산소 소비량 및 이산화탄소 발생량이 크게 나타났다. 전과상태에서 저온(5$0^{\circ}C$) 열처리는 멜론 cylinder의 경도 유지에 크게 영향을 주었으며 저장 6일의 경도에서 열처리 시간에 관계없이 무처리구에 비하여 경도가 크게 나타났다. 특히 5$0^{\circ}C$에서 20분 열처리한 구의 경도가 가장 큰 값을 나타냈다. 열처리 시간에 따른 색도의 차이는 미비하였으나 무처리구에 비하여 색도 변화 정도가 작게 나타났으며 특히 모든 열처리구의 L-value와 coma value가 대조구에 비해 높게 나타났다. 또한 5$0^{\circ}C$에서 20분 열처리 하여 가공한 멜론 cylinder의 pH와 가용성 고형분 함량이 저장 기간의 경과에도 유지되었으며 품질 변화가 가장 작게 나타났다.

조리 방법이 상용채소의 비타민 및 무기질 함량에 미치는 영향 -시금치, 양배추, 콩나물, 당근을 중심으로 - (Effects of Cooking Method on the Vitamin and Mineral Contents in Frequently Used Vegetables)

  • Purpose: We have investigated for the purpose of studying change of vitamins and minerals in frequently used vegetables by low moisture cooking method. Methods: Vitamin B complex, vitamin C and mineral (Mg, Ca, K, Zn, Fe) contents are analyzed in vegetables such as spinach, cabbage, bean sprouts and carrot which are heat-treated with degrees of water contents. Low moisture cooking method represents heat-treated vegetable (LM experiment group) with 25 wt.% water content for the vegetable weight while general blanching method includes heat-treated vegetable (GB experiment group) with 500-1,000 wt.% water content for the vegetable weight. Results: Retention rate of vitamin B1 (thiamin) in the LM experiment group is relatively high (87.50-95.68%) and dosen't show considerable differences from raw vegetables. On the other hand, the retention rate of vitamin $B_1$ in GB group's cabbage and spinach dramatically decreased to 19.46-25.00%. Retention rate of vitamin B2 (riboflavin) is sustained stably in LM experiment group (75.00-87.50% in bean sprouts, cabbage and spinach), represents that low moisture cooking method has relatively higher contents in vitamin $B_2$. The LM experiment group has 71.43-85.71% on retention rate of niacin while the GB group shows relatively lower niacin (57.14-64.58%), represents conflicting results from the general idea that vitamin $B_3$ is relatively stable in heat treatment and blanching. Retention rate of pantothenic acid is considerably higher in both LM and GB experiment group, indicates vitamin pantothenic acid is relatively stable in the various cooking condition such as amount of water and heat treatment. In the experiment under various water contents, vitamin C is not detected in both bean sprouts and carrots, while the contents in cabbage and spinach are 19.87 mg/100 g and 26.65 mg/100 g respectively. In the same experiment, the retention rate of Vitamin C in LM experiment group (91.65%, 92.23%) is considerably higher than GB group (58.08%, 61.61%). Retention rate of Mg, K, Fe in the LM experiment group is relatively higher than GB group. Conclusion: Resultingly, the observations suggests that minimum water quantity and minimum heat treatment processes should be established in cooking vegetables which have soluble vitamins and minerals.

건조방법에 따른 건조대추의 성분 변화 (Changes in the Components of Dried Jujube Fruit by Drying Methods)

  • This study was carried out to investigate change in the components according to drying methods of jujube. Raw jujube was dried with five methods such as sun-drying, hot-air drying after pretreated with sunlight, blanching, microwave treatment, respectively. The contents of soluble sugar and protein in sun-dried jujube were higher than those of other drying methods. The free sugars of dried jujube were consisted of sucrose, glucose and fructose. And the contents of free sugar was not different by drying methods. The major organic acids of dried jujube were oxalic acid, citric acid and malic acid. The contents of glutamic acid, glycine and alanine were higher than those of other amino acids, and the content of each amino acid was not different by drying methods.

꾸지뽕나무 (Cudrania tricuspidata)의 폴리페놀 화합물 함량과 항산화 활성 (Antioxidative Activities and Contents of Polyphenolic Compound of Cudrania tricuspidata)

  • Polyphenolic compounds widely occurring in the traditional medicine plants have been reported to possess strong antioxidant activity. The antioxidative substances of water soluble extract from leaves, stem bark, root bark and fruit powder of Cudrania tricuspidata were tested in three different in vitro experimental models. In oxidation models using DPPH( , ' diphenyl picrylhydrazyl) method, Fe2+ induced linoleic acid peroxidation, and autooxidation of hepatic microsomal membranes, the antioxidative activities of water soluble extract from stem bark were strong than that from leaves and root bark. Fruits of Cudrania tricuspidata contained the highest amounts of polyphenolic compounds among the parts of this plant. The changes in polyphenolic compound contents of fruit powder caused by heat treatment (20oC, 40oC, and 60oC) were also monitored. After water blanching, contents of phenolic compounds was increased slightly in the following order; 20oC(1454mg), 40oC(1487mg), and 60oC(1511mg). These results supports that water soluble extracts from Cudrania tricuspidata contain antioxidative compounds.

세침흡인 세포학적 검사로 진단한 폐의 Nocardiosis - 1예 보고 - (Pulmonary Nocardiosis Diagnosed by Fine Needle Aspiration - A Case Report -)

  • Nocardia, aerobic members of the order of Actinomycetaceae, produces infections in human lung. Nocardial infection is associated with underlying diseases of immuno-suppression or treatment with corticosteroid. It is difficult to detect Nocardia by sputum examination or histologic sections and it has rarely been diagnosed by fine needle aspiration of the lung. We describe a case of pulmonary nocardiosis in a 72 year-old man, diagnosed by fine needle aspiration, which was confirmed by culture of aspirates. The aspirates showed neutrophil-predominant inflammatory cells with microorganisms demonstrated by Gomori methenamine silver and Gram stain. The organisms had characteristic long blanching filamentous structures. The lesions on chest X-ray were in resolution with antimicrobial therapy.

Optimization of the Processing Parameters for Green Banana Chips and Packaging within Polyethylene Bags

  • The demand of quality green banana chips is increasing in the world snacks market, therefore, the preparation of quality chips and their subsequent shelf life in packaging were evaluated in this study. Banana slices were fried in hot oil to the desired moisture content (2-3%) and oil content (40%) in chips at 3 different temperatures, and the impact of different pretreatments were compared by sensory assessment. A linear relationship between time and temperature was used to achieve the optimal processing conditions. Banana slices fried at the lower temperature of $145^{\circ}C$ took longer to reach the desired chip qualities, but gave the best results in terms of color and texture. Blanching was the most effective pre-treatment for retaining the light yellow color in finished chips. For extending the shelf life of chips, moisture proof packaging in double layer high density polyethylene was more effective than single layer low density polyethylene.
