Validation of Broth Model for Growth of Bacillus cereus in Blanched Vegetables (전처리 나물류에서 Bacillus cereus 성장 예측 모델 검증)

  • The objective of this study was to develop a predictive growth model for Bacillus cereus in nutrient broth and validate the developed growth model in blanched vegetables. After inoculating B. cereus into nutrient broth, growth of B. cereus was investigated at 13, 17, 24, 30 and $35^{\circ}C$. Lag time (LT) decreased while specific growth rate (SGR) increased with an increase in storage temperature. Growth of B. cereus was not observed at temperatures lower than $12^{\circ}C$. Secondary growth models were developed to describe primary model parameters, including LT and SGR. Model performance was evaluated based on bias factor ($B_f$) and accuracy factor ($A_f$). In addition, we inoculated B. cereus into blanched vegetables stored at 13, 24, $35^{\circ}C$ and observed the growth kinetics of B. cereus in five different blanched vegetables. Growth of B. cereus was most delayed on Doraji at $13^{\circ}C$ and was not observed on Gosari at $13^{\circ}C$. Growth of B. cereus at $35^{\circ}C$ was significantly (p<0.05) slower on Gosari than on other blanched vegetables. The developed secondary LT model for broth in this study was suitable to predict growth of B. cereus on Doraji and Gosari, whereas the SGR model was only suitable for predicting the growth of B. cereus on mung bean sprout.

Effects of Blanching Time and Power Setting on Ascorbic Acid Retention in Microwave Blanched Vegetables (Microwave Oven으로 채소를 Blanching 할 때 출력과 시간이 Ascorbic Acid 잔존량에 미치는 영향)

  • The effect of blanching time and power settings of microwave oven on the ascorbic acid retention in seven kinds of vegetables were investigated. The vegetable were blanched for 120 or 180 sec. at three different power setting, 650 watt(high power), 500 watt(medium power) and 160 watt(low power). The retentions of ascorbic acid in cabbage, garland chrysanthemum, mungbean sprout, amaranth and carrot were higher when they were blanched at the high power than those blanced at the lower power stettings. Blanching of spinach and yul-moo(small korean radish) showed that the vitamin was more retained by the medium power heating. Blanching at the low power revealed that the ascorbic acid retention was reduced remarkably as the blanching time increased. From the scoring difference tests the 10-panel members indicated that the texture of three-tested vegetables was more acceptable when they were blanched at the high power setting.

  • Changes in quality of blanched vegetables(carrot, green onion, spinach) by microwave heating were evaluated. Ceramic coating treatment(CCT) within microwave oven caused the reduction of blanching time and Hunter's L, a, b values of vegetables. Also, CCT showed the higher cutting force compared to NCCT after microwave heating. Photomicrographs of cross-section of blanched vegetables after heating in ceramic coated microwave oven showed better appearance than those in nonceramic coated microwave oven. CCT process improved retention of vitamin C.

Changes in Physicochemical Properties of Haetsun Vegetables by Blanching (Blanching에 의한 햇순나물의 이화학적 특성 변화)

  • This study was conducted to investigate the physicochemical properties of raw and blanched $Haetsun$ vegetables. The proximate composition, reducing sugar, free amino acid, organic acid, vitamin C and mineral composition were compared between raw and blanched $Haetsun$ vegetables. After blanching treatment, the moisture content of $Haetsun$ vegetables was increased, but the crude ash, crude fat, crude fiber, and crude protein content decreased in all samples. $C.$ $sinensis$ contained the highest level of reducing sugar with 1,518.16 mg% among all samples, and the content of the reducing sugar was decreased after blanching in all samples. Raw and blanched $Haetsun$ vegetables contained all essential amino acids except tryptophan. The vitamin C content of blanched samples was reduced 29~88% compared with raw samples. All $Haetsun$ vegetables contained high levels of potassium and calcium regardless of blanching. From these results, even though this study confirmed that $Haetsun$ vegetables were rich in vitamin C and minerals, their high amount of nutrient was reduced by blanching. Therefore, blanching conditions which can keep food value of $Haetsun$ vegetables must be established, because most of the nutrient composition of $Haetsun$ vegetables decreases by blanching.

Retention of Ascorbic Acid in Vegetables as Influenced by Various Blanching Methods (여러가지 가열방법에 따른 채소의 Ascorbic Acid 잔존량)

  • Retention of ascorbic acid in vegetables as influenced by various blanching methods was measured and the effects of blanching time, amount of water added, and with or without lid on the retention were compared. It was found that blanching with small amount of water and without lid generally retained the higher activity of ascorbic acid. Although steam blanching showed the highest retention of the vitamin, the longer heating time was needed to blanch the vegetables. Blanching by microwave oven has revealed that addition of small amount of water did not affect the retention. From the scoring difference test for texture of blanched spinach, the samples which were indicated as best in texture by the 8-panel members have retained 73~96% of ascorbic acid and samples blanched by microwave oven for 60 seconds showed highest retention.

  • The effect of blanching time, blanching water and power settings of microwave oven on the minerals retention in spinach and broccoli were investigated. The vegetables were blanched for 60, 120 and 180 sec, with water 0ml, 50ml and 100ml every 100 g of raw material at two different power settings (700w, 400w). The retention of minerals(Ca,K,Mg,Cu,Fe,Na,p) in spinach and broccoli were higher at the 400w power than 700w power level, regardless of blanching time. At the high power, the retention of minerals in spinach and broccoli were reduced remarkably as the blanching time increased. The reason for this is that the increasing power level results in greater water coming ou from the vegetable. Also, minerals in vegetable as coming out with this water loss in proportion to the blanching time.

True Retention and β-Carotene Contents in 22 Blanched Vegetables (데치기(Blanching)로 조리된 22가지 채소류의 베타카로틴 함량의 변화와 영양소 보존율(True Retention))

  • In the present study, reversed-phase HPLC was utilized to quantify the ${\beta}$-carotene content of 22 kinds of raw and blanched vegetables consumed in Korea. In addition, true retention (TR) of ${\beta}$-carotene in samples was obtained. For quantification of ${\beta}$-carotene, external standard curve was obtained with limit of detection and limit of quantitation. The ${\beta}$-carotene contents in 22 raw vegetables ranged from 6.29 (bellflower root) to $7,050.73{\mu}g/100g$ (spinach, field culture). After blanching, ${\beta}$-carotene contents of 13 vegetables increased up to 103.05% while nine vegetables resulted in reduced content, ranging from -2.17 to -29.16%. However, even though increased ${\beta}$-carotene content was observed after blanching, TR of some vegetables was lower than 100% due to their weight reduction. The highest TR of ${\beta}$-carotene was found from blanched cabbage (164.46%) while the lowest TR was found from Turcz (Gomchwi) at 59.35%. TR is an effective method to evaluate retention of nutrients in cooked foods, considering changes of nutrient content and weight.

Comparison of Nutritional Compositions of Green Vegetables (나물의 영양성분 비교)

  • This study examined the nutritional compositions of seven raw and blanched green vegetables: Amaranthus mangostanus L. (AM), Aster scaber Thunberg, Taraxacum platycarpum H. Dahlstedt (TP), Oenanthe javanica (Blume) DC, Allium tuberosum Rottler, Ligularia fischeri (Ledeb.) Turcz (LF), and Euonymus alatus (Thunb.) Siebold (EA). Proximate compositions (moisture, protein, ash, dietary fiber, and fat), minerals (calcium, phosphorus, iron, potassium, sodium, and magnesium), and vitamins (riboflavin and vitamin C) were analyzed in the study. In this study, moisture contents of raw and blanched green vegetables were 71.28~92.68 g/100 g and 76.90~92.09 g/100 g, respectively. The protein and fat contents of raw LF (33.38 g/100 g and 4.50 g/100 g dry weight basis, respectively) were higher than those of other cultivars. Ash contents of AM were significantly higher than those of their respective raw samples. Potassium, magnesium, calcium, and sodium contents of AM were 7,710.63 mg/100 g, 1,786.67 mg/100 g, 1,534.44 mg/100 g, and 743.18 mg/100 g, respectively. In the case of raw green vegetables, iron content of TP was 55.23 mg/100 g, which was the highest value among tested green vegetables. Total dietary fiber content of EA was 59.75 g/100 g, which was the highest value. Riboflavin content was highest in the raw and blanched LF (3.10 mg/100 g and 3.05 mg/100 g, respectively). Vitamin C contents of raw and blanched EA were 468.28 mg/100 g and 471.42 mg/100 g, respectively, which were higher than the other values. There were differences in nutritional ingredients according to different types of green vegetables. Therefore, it is advisable to evenly ingest various green vegetables.

Microbiological Quality Evaluation of Foods(Ojingeochaesomoochim : Vegetable Salad with Blanched Squid) That Went through Cooking Process after Heating Treatment in School Food Services (학교급식의 가열조리후처리 음식(오징어채소무침)에 대한 미생물학적 품질 평가)

  • A microbiological quality evaluation on cooked food, food materials and cooking equipment was conducted in 14 school food services in Changwon area, South Korea for Ojingeochaesomoochim (vegetable salad with blanched squid) which went through cooking process after heating treatment. Only 5 schools out of the 14 (35.7%) observed the sanitization criteria of the Korean School Meals Sanitization Management for raw vegetables (concentration of chlorine solution: 100ppm, immersion time of sanitizing: 5 min). The acceptance rates regarding the microbial standards for Korean school meals showed improvement before and after of sanitization: for onions 57.1% vs 71.4%; cucumber 42.9% vs. 78.6%. However, garlic showed adverse sanitizing effect as the acceptance rate went down from 42.9% to 35.7%. Blanched squid and red pepper paste was acceptable in all 14 schools (100%), while squid seasoned with red pepper powder was acceptable in only 42.9% of the schools. Microbial results for knives, cutting boards, mixing bowls were satisfactory, however 35.7% of sanitary gloves that were put on right before the seasoning showed poor sanitization, and this indicated high probability of cross-contamination from the gloves. We calculated that 57.1% of the cooked foods were in accordance with the microbial standards for Korean school meals. Therefore, it is strongly recommended to have verification process, especially on the effectiveness of sanitization of raw vegetables, in cooking foods through cooking process after heating treatment in HACCP system of school food service.

Sensory Properties of $Kalopanax$ $pictus$ and $Cedrela$ $sinensis$ Shoots under Different Blanching Conditions and with Different Thawing Methods (엄나무와 참죽 햇순의 blanching 조건 및 해동방법에 따른 관능품질 특성)

  • The sensory properties of $Kalopanax$ $pictus$ and $Cedrela$ $sinensis$ shoots were analyzed according to their blanching conditions and the thawing methods used. For the Hunter colors, the $K.$ $pictus$ that was blanched without adding salt for 6 min had the highest L value, and the $C.$ $sinensis$ that was blanched with 1% salt for 6 min had the highest L value. The chlorophyll content of $K.$ $pictus$ was 141.1 mg% when it was blanched for 3 min with 2% salt, and the chlorophyll content of $C.$ $sinensis$ that was blanched without adding salt for 6 min was highest (124.8 mg%). When $K.$ $pictus$ and $C.$ $sinensis$ were blanched without salt addition for 3 min, their texture showed a higher value than that of the other samples. The sensory test result showed the highest overall preference for the sample that was blanched without adding salt for 3 min, among all the samples. The L value of the $K.$ $pictus$ that was thawed in a microwave oven was significantly higher than that of the other samples, but the L value of the $C.$ $sinensis$ that was thawed at $4^{\circ}C$ was higher than that of the other samples. As for the overall preference for the samples according to the thawing method used, $K.$ $pictus$ and $C.$ $sinensis$ scored highest in the case of thawing in a microwave oven.
