United States beef quality as chronicled by the National Beef Quality Audits, Beef Consumer Satisfaction Projects, and National Beef Tenderness Surveys - A review

  • Meat quality is a very difficult term to define because it means different things to different people. When purchasing beef, consumers in the United States are likely to consider color, price, marbling level, subcutaneous fat trim, or cut thickness when determining the quality of beef. Once consumers have consumed the product, meat quality becomes exponentially more difficult to define due to the subjective nature of this term. Traditionally, tenderness, juiciness, and flavor have been considered the three most important factors that determine the palatability of beef. Therefore, American meat science beef research and industry focus has turned to measuring and quantifying these 3 attributes objectively and subjectively, and to determining what influences them. In reviewing the scientific literature, attempting to meaningfully summarize the findings of the thousands of studies on beef meat quality is impossible due to the inherent differences in the objective and methodology of studies. Fortunately, the United States beef industry and their national trade association, the National Cattlemen's Beef Association (NCBA), have conducted numerous surveys and audits to characterize the quality of the products being produced and marketed by their cattlemen and the palatability perceptions of their consumers. The data produced by these studies is quite large and impossible to summarize in entirety in this review. Therefore, this review concentrates on the most important attributes that determine the value of a beef carcass and objectively measured and consumer-assessed palatability characteristics of fresh meat from these carcasses from 1987 through 2010.

일반음식점의 쇠고기 원산지 표시에 대한 소비자 인식 연구 (Research on Consumer Awareness Due to Origin Declaration of Beef in General Restaurant)

  • 2007년 현재 한 미 FTA 협상 결과에 따라 미국산 수입 쇠고기의 개방이 본격화되면서 국내 외식시장의 변화가 예상되고 있다. 이에 국내 외식시장은 '쇠고기 원산지 표시제의 정착'과 '국내산 한우와 수입 쇠고기에 대한 소비자 니즈의 충족'이라는 당면과제를 안고 있다. 이와 같이 조사 분석된 연구 결과를 요약하면 다음과 같다. 첫째, 일반음식점의 쇠고기 원산지 표시에 대한 소비자 인식 수준은 비교적 낮은 것으로 나타났다. 둘째, 수입 쇠고기를 선호하는 이유는 한우에 비해 맛은 떨어지지만 가격이 상대적으로 저렴하기 때문인 것으로 나타났으며, 일반음식점에서 판매하는 국내산 한우에 대한 불신감이 큰 것으로 분석되었다. 셋째, 국내산 한우는 맛의 우수성, 안전성, 신선도에서 높은 평가를 받고 있는 반면, 수입 쇠고기는 모든 속성에서 보통 수준 이하의 낮은 평가를 받고 있었다. 이와 같은 조사 결과를 토대로 판단해 볼 때, 쇠고기의 원산지 표시제에 대한 일반음식점의 올바른 인식과 원산지 표시제도의 정착을 통해 소비자들이 믿고 먹을 수 있는 외식 환경이 조성되어야 하며, 국내산 한우와 수입 쇠고기에 대한 소비자 니즈를 충족시키기 위한 노력이 있어야 할 것이다.

근대 이후 한국 육류 소비량과 소비문화의 변화 - 쇠고기·돼지고기를 중심으로- (Transition of Korean Meat Consumption and Consumption Trends after Modern Times - Focused on Beef and Pork -)

  • The purpose of this study was to investigate changes in Korean meat consumption as well as meat consumption trends. During the Japanese occupation period, the supply of meat was considerably insufficient. However, meat consumption mainly in large cities has gradually increased. Especially, 'Pyeongyang cow', a specialty of Pyeongyang, started being raised as edible beef cattle in 1933. During the chaotic period following liberation from Japan, the price of meat sharply increased. However, as the meat supply stabilized, the 'beef grade system' was introduced in 1967. Since then, beef has sold according to region. During the early economic growth period of the mid-1970s, meat consumption rapidly increased, and foreign beef was first imported in 1976. The preference for beef was somewhat attenuated due to the outbreak of mad cow disease and economic slowdown of the 1990s, resulting in an increase in the consumption of pork, a replacement meat. During the recent period of economic development, meat consumption has somewhat fallen and remained low. In late 2003, with the occurrence of mad cow disease in the US, the demand for pork, and especially pork fatback, has sharply increased.

소비자의 사회 경제적 위치가 쇠고기 구매 태도에 미치는 영향 (A Survey on the Effect of Consumer's Social-Economic Status on Beef Purchase Attitude)

  • 본 연구는 도시지역에 거주하는 소비자 1,343명을 대상으로 쇠고기 구매와 관련된 요인과 쇠고기 유통제도에 대한 소비자 의향을 설문조사하여 쇠고기 마케팅에 활용하고자 실시하였다. 가정에서 쇠고기를 구입하는 회수는 소비자의 사회, 경제적 위치에 따라 다르게 나타나, 서울시와 광역시가 일반시보다, 고소득층이 저소득층보다, 40대가 20대보다 더 자주 구입하고 있는 것으로 나타났다. 구입 장소는 서울시, 광역시 등 대도시 거주자와 월 200만 원 이상의 고소득층은 백화점, 할인점을 주로 이용하고 있는 반면, 중소도시 및 저소득층은 전문점 및 정육점을 주로 이용하였다. 시판 쇠고기에 대한 개선 사항은 대도시 거주자, 고소득층 및 30대 이상은 위생, 포장방법을 중소도시, 저소득층 및 20대는 육질의 균일성 및 가격 인하를 요구하였다. 등급제에 대한 인식은 거주지, 월소득 및 연령층에 따라 다르게 나타났으며, 중소도시 거주자, 저소득층 및 20대와 40대에서 부정적으로 나타났다. 구분판매제에 대한 의향은 중소도시 거주자, 200만 원 이상의 고소득층, 30~40대의 가정주부에서 긍정적으로 평가하였으나, 상당비율의 소비자가 이 제도에 대해 모르거나 중요치 않은 것으로 인식하고 있었다. 쇠고기 구매시 고려하는 사항 중 선호 부위는 등심, 양지, 갈비 순이었으며, 구매시 고려요인은 부위, 가격, 원산지 순이었다. 또한 품질 요인으로는 신선도, 색깔 등을, 표시사항에 대해서는 가격, 품종 부위 순으로 중요시 하는 것으로 나타났다.

Multiple Regression Analysis to Estimate the Unit Price of Hanwoo (Bos taurus coreanae) Beef

  • This study were estimated the contribution of carcass traits to unit price, to analyze the marbling score as a categorical variable rather than a numerical variable, and to develop an optimal model that also includes the holiday effect and the raising period. The data for this study were acquired from the Quality Evaluation of the Korea Institute for Animal Products, and consisted of the trading records of 1,613,699 heads at 12 wholesale markets from 2010 to 2014. The unit price of a cow was estimated from the following parameters: -52.50 Won/mm, $8.93Won/cm^2$, 7.20 Won/kg, and -1.04 Won/day for backfat thickness, eye muscle area, carcass weight, and raising period, respectively. Parameters for the dummy variables of marbling scores varied from 0 to 8328.74 Won/kg, which means that each marbling score grade had a different price value. The unit price of a steer was estimated from the following parameters: - 92.12 Won/mm, $20.22Won/cm^2$, 1.30 Won/kg, and -1.72 Won/day for backfat thickness, eye muscle area, carcass weights, and raising period, respectively. Parameters for dummy variables of marbling scores varied from 0 to 7338.80 Won/kg, which means that the grades of each marbling score had different price values. The unit price of sales during traditional holidays was significantly higher (827.71 Won/kg for cows, and 645.15 Won/kg for steers) than during non-holidays.We conclude that the use of categorical values for marbling scores would be needed to evaluate the price of Hanwoo beef using multiple regression analysis based on carcass traits and environmental factors.

육계생산과 도계유통에 관한 조사연구 (A Study on Production, Dressing and Marketing of Broiler)

  • The Purpose of this study is to examine both supply and demand side of broiler chicken in Korea. Especially the paper aims to investigate the broiler chicken production Dressing and marketing pattern which may affect the demand for it. It is generally understood that broiler chicken production becomes unstable because of frequent market price fluctuation mainly due to disequilibrium of quantities demanded ana supplied It is important to point out that marketing in the form dressed chicken has been enforced by the regulation in Seoul area since March 1st, 1983, though live birds have been customarily marketed for year. It is assumed that the subsituation of chicken meat for beef would save foreign exchanges, because increasingly large amount of beef is imported mainly thanked to a chronical shortage in local production. Main findings of this study may be summarized as follows: 1) Broiler chicker production has been rapidly increased recently, estimating 180-200 million head per year with the trend of contineous increase year after year. Price fluctuation during the year is found, especially summer and winter mainly due to seasonal demand change. It is known that mal-funconing of broiler chicken market may be one of the causes for a large Price fluctuation. Accordingly the increase of marketing efficiency may reduce the price fluctuation and also positively impact on creating demand for the chicken consumption. 2) It is also interesting to note that 90 percent of broilers are grown on the floor and almost 86 percent of total broilers composed of so called high-bros, weighing on an average more than 1.6kg per head Approximately 8 weeks are required for of around marketing birds at the feed efficiency of around 2.3-2.5 Average broiler farm raises between 1,000 and 2,000 head, showing a quite small scale of operation. Only a few sampled farmers follow an all-in and all-out method in broiler production.

Contribution analysis of Hanwoo carcass traits on unit price in national slaughter house

  • The aim of this study was to analyze the contribution factors (backfat thickness, eye muscle area, carcass weight, marbling score, and feeding period) affecting meat unit price (South-Korean Won / Kg of meat). The best slaughtering age to maximize unit price was also assumed. All data used in this study were acquired from the Korea Institute for Animal Products Quality Evaluation from 2010 to 2014. Contributions to the estimated unit price of cows by the following factors, backfat thickness, eye muscle area, carcass weights, feeding period, and marbling score were 2.65%, 0.04%, 1.58%, 1.58%, and 95.72%, respectively. Contribution to estimated unit price of steers by the same factors (backfat thickness, eye muscle area, carcass weights, feeding period, and marbling score) were 7.88%, 1.24%, 0.07%, 90.81%, and 95.72%, respectively. Slaughtering ages ranged from 26 to 36 months and the data were separated into each month for an 11 month period. The unit price of meat from Hanwoo slaughtered at 30 months was highest among groups. The lowest unit price was observed in the group belonging to the Hanwoo slaughtered at 36 months. In conclusion, of all contributing factors, marbling score affected unit price the most. Based on our results, it is recommended that the optimal slaughtering age be set at 30 months to maximize unit price. Moreover, the feeding of beef cattle past 30 months of age is not recommended because of the increase in feeding costs.

외식급식산업에 있어서 국(탕)이 고객 충성도에 미치는 영향 (Effect of Korean Soup(Tang) upon Customers Royalty in the Food Service Industry in Korea)

  • This study has been designed to stress the thoughts that soups should be offered taking into account customer's preference aimed at leading to eventual customer's satisfaction and the importance that Korean traditional food should take the lead in shifting dining-out industry's paradigm to customer-orientation instead of product-orientation. From August 15 through August 30, 2003, the drawn-up questionnaires were handed out to 500 numbers of adults aged over 20 living in Seoul, metropolitan city of Korea and the finally collected 361 questionnaires from them have been analysed as a subject for this study. It showed that the male respondents(44%) dined out much more frequently than the female respondents(35%) and their rate of 5,000-7,000 Won for a meal was most preferred as their average expenditure at one sitting in the restaurant. When eating Korean food at home or in a restaurant, the majority(5l,3%) of them think the soups(Tang) should be served coupled with their ordered meals. Among soups using flesh and meat as a staple material, they most preferred beef & bone soup(33.2%), followed by beep rib soup(30.4%) and beef soup with seasoned red pepper(l0.8%), and among soups using fish & shell and crustacean as a staple material, most preferred were hot fish soup(20.6%), loach soup(l5.2%) and hot crab soup(11.4%). Among soups using beans as a staple material, they most preferred soybean paste stew(33.2%), uncurdled soybean curd stew(29.4%) and Dambuk stew(l5.8%). Among soups using fowls and birds as a staple material, chicken soup with ginseng(51.9%), plain chicken soup(l8.4%) and chicken soup with red pepper sauce(l2.3%) falls on the most preferred. Among soups using vegetables and seaweeds as a staple material, most preferred are sea mustard soup(25.3%), Kimchi soup(16.8%), soybean paste soup with Chinese cabbage(13.0%) and bean sprout soup(10.1%). The soups(Tang) most preferred in the morning time are those soups whose staple materials are vegetables and seaweeds, such as sea mustard soup, bean sprout soup, Kimchi soup and soybean paste soup with Chinese cabbage while the soups most preferred for the lunch time are beef & bone soup, beep rib soup, chicken soup with ginseng and beef soup with seasoned red pepper while beef soup with seasoned red pepper, beef & bone soup, soybean curd stew and Kimchi soup are most preferred soups for the dinner time. The survey showed that 41 % of the subject preferred chicken soup with ginseng for a food considered good by themselves for their health. The male respondents preferred Bosin-tang(soup of edible-dog meat) than the female counterparts did, while the female respondents preferred chicken soup with ginseng than the male counterparts did. The survey showed that when eating korean traditional food, 70% of the subject are visiting a restaurant where soups are cooked delicious while 61% of the subject think that price does not matter if only food tastes good, which is reflecting that taste of food is a decisive factor in selecting menu rather than its price is. In conclusion, you can say that taste of soup is the most important factor creating steady customer in the restaurant, taking it into account Korean people most prefer their traditional food when dining out.

Genetic Relationship between Carcass Traits and Carcass Price of Korean Cattle

  • The objectives of this study were to estimate genetic parameters for the carcass price and carcass traits contributing to carcass grading and to investigate the influence of each carcass trait on the carcass price using multiple regression and path analyses. Data for carcass traits and carcass prices were collected from March 2003 to January 2009 on steers of Korean cattle raised at private farms. The analytical mixed animal model, including slaughter house-year-month combination, linear and quadratic slaughter age as fixed effects and random animal and residual effects, was used to estimate genetic parameters. The effects of carcass traits on the carcass price were evaluated by applying multiple regression analyses. Heritability estimates of carcass traits were $0.20{\pm}0.08$ for carcass weight (CWT), $0.33{\pm}0.10$ for back fat thickness (BFT), $0.07{\pm}0.05$ for eye-muscle area (EMA) and $0.25{\pm}0.10$ for marbling score (MS), and those of carcass prices were $0.21{\pm}0.10$ for auction price per 1 kg of carcass weight (AP) and $0.13{\pm}0.07$ for total price (CP). Genetic correlation coefficients of AP with CWT and MS were $-0.35{\pm}0.29$ and $0.99{\pm}0.04$, respectively, and those of CP with CWT and MS were $0.59{\pm}0.22$ and $0.39{\pm}0.29$ respectively. If an appropriate adjustment for temporal economic value is available, the moderate heritability estimates of AP and CP might suggest their potential use as the breeding objectives for improving the gross incomes of beef cattle farms. The large genetic correlation estimates of carcass price variables with CWT and MS implied that simultaneous selection for both CWT and MS would be also useful in enhancing income.

FACTORS INFLUENCING FEED EFFICIENCY AND BACKFAT THICKNESS IN STATION TESTED BEEF BULLS

  • Records taken on 372 young beef bulls tested at the Ellerslie Bull Test Station, Alberta, Canada from November 1981 to April 1987 were analyzed to quantify the effects of age of dam, on-test age, on-test liveweight and herd of origin of bull on feed efficiency (feed/gain, kg/kg) in the test period (n = 231) and ultrasonic measurement of bakcfat thickness (mm) at the end of the test (n = 372). The reduction in $R^2$ due to each influencing factor (i.e. the variation accounted for by the factor) was used to indicate the importance of the influencing factor. Age of dam and on-test age of bull were not important factors on feed/gain and ultrasonic backfat thickness, as they accounted for less than 0.5% of the variation in feed/gain and ultrasonic backfat thickness, respectively (p > 0.1). On-test liveweight had some influence on feed/gain and ultrasonic backfat thickness, accounting for 3.5% (p < 0.01) and 0.4% (p < 0.05) of the total variation, respectively. The regression coefficients of feed/gain and ultrasonic backfat thickness on on-test liveweight were 0.016 (kg/kg)/kg and .013 mm/kg, respectively, both being significant (p < 0.05), indicating that lighter bulls entering the test were generally more efficient in feed utilization in the test period and had less backfat at the end of the test than heavier entering bulls. Herd of origin of bull accounted for a substantial amount of the total variation (> 16%) in feed/gain and ultrasonic backfat thickness (p = 0.08), indicating that a prolonged aqjustment period was needed to reduce the influence of herd of origin when assessing aggregate genetic merit of beef bulls for growth rate, feed efficiency and lean meat production using a central station performance testing program.
