상백피 분말 첨가 식빵의 품질특성 및 제조조건 최적화 (Quality Characteristics and Optimization of Bread with Mori Cortex Radicis Powder Using Response Surface Methodology)

  • The purpose of this study was to investigate the antioxidative effects of Mori Cortex Radicis powder and to determine the optimal mixing ratio of Mori Cortex Radicis powder and water in the preparation of bread. The optimal sensory composite recipe was determined by producing bread with different levels of Mori Cortex Radicis powder and water. The analysis was performed using response surface methodology and a sensory evaluation was performed with the data. Ten experimental recipes, including two with reference points in the composition, were selected. In terms of the antioxidative effects of Mori Cortex Radicis powder, the $IC_{50}$ for total phenolic content and DPPH free radical scavenging activity were 149.56 GAE/g dry powder and 137.77 /mL respectively. Measurement results of the mechanical properties showed differences in volume (p<0.05), baking loss (p<0.05), yellowness (p<0.01), lightness (p<0.01), redness (p<0.01), hardness (p<0.01) and springiness (p<0.05). The sensory measurements showed significant values for color (p<0.05), appearance (p<0.05), flavor (p<0.01), taste (p<0.01), and overall quality (p<0.01). Overall, based on numerical and graphical methods, the optimal formulation was determined to be 21.16 g of Mori Cortex Radicis powder and 372.47 g of water.

구아바 분말을 첨가한 쌀 쿠키의 품질특성 (The Quality Characteristics of Rice Cookies Added with Guava(Psidium guajava L.) Powder)

  • 본 연구에서는 쌀가루에 구아바 분말을 0%, 10%, 20%, 30%를 첨가하여 쿠키로 제조한 후 품질특성을 살펴보았다. 구아바 분말을 첨가한 쌀 쿠키의 수분함량은 $5.90{\pm}0.12{\sim}6.02{\pm}0.13$이었다. 구아바 분말을 첨가한 쌀 쿠키의 L 값과 b 값은 구아바 분말 첨가량이 증가함에 따라 유의적으로 감소하는 경향을 보였다(p<0.05). 구아바 분말을 첨가한 쌀 쿠키의 경우 구아바 분말의 첨가량이 증가할수록 퍼짐성은 작아지고 구아바 분말 쌀 쿠키의 경도는 유의적으로 증가하는 경향을 보였다(p<0.05). 구아바 분말을 첨가하지 않은 대조구보다 색(color), 맛(taste), 향(flavor), 조직감(texture), 전체적인 기호도(overall acceptability), Top grain score에 있어서 구아바 분말 20% 첨가구가 전반적으로 높게 평가되어 구아바 분말을 첨가한 쌀 쿠키 제조 시 구아바 분말 20%를 첨가하는 것이 가장 바람직할 것으로 사료된다.

양배추 분말 첨가가 제빵 적성에 미치는 영향 (Effect of Cabbage Powder on Baking Properties of White Breads)

  • 양배추 분말을 첨가한 건강 기능성 식빵을 제조하기 위해 밀가루에 양배추 분말을 2.5%~10% 첨가하여 반죽에 대한 물성, 제빵적성 및 관능적 특성을 조사하였다. 첨가한 양배추 분말의 양이 증가할수록 식빵의 색도는 L값은 유의적으로 저하하였고, a값과 b값은 양배추의 첨가량에 따라 증가하는 경향을 나타내었다(p<0.05). 양배추 분말의 첨가에 의해 반죽의 pH값과 제조한 빵의 무게는 증가하였고, 빵의 부피와 비용적 및 굽기 손실률은 감소하였다. 양배추 분말을 첨가하는 양을 증가시킬수록 경도는 유의적으로 증가하였으며, 관능검사 결과 전체적인 기호도에서는 대조구와 2.5%, 5.0% 첨가구 간에는 유의적 차이는 없었으나 맛에서 대조구의 기호도가 다소 높은 것으로 나타났다(p<0.05) 이상의 결과에서 양배추 분말을 제빵공정에 첨가하는 것은 빵의 색, 부피 등 식빵의 물리화학적 특성의 변화를 가져오는 문제점이 있었다. 그러나 대조구와 비교했을 때 식빵 제조시 양배추를 5%까지 첨가하는 것은 관능적 특성에는 의미 있는 영향을 주지 않았다.

'후지' 사과즙을 첨가한 반죽 및 식빵의 품질 특성 (Quality and Antioxidant Properties of Bread Added with 'Fuji' Apple Juice)

  • In this study, bread was prepared using various amount of 'Fuji' apple juice, and quality and antioxidant properties investigated. Bread was prepared with water, butter, yeast, salt, sugar, wheat flour, skim milk powder and 10, 20 and 30% (w/w) 'Fuji' apple juice. Leavening ability and pH of dough were also investigated. Volume, pH, specific volume, baking-loss rate, chromaticity and texture were investigated as quality properties, whereas the total polyphenol content, ABTS and DPPH radical scavenging activity as the antioxidant properties of bread containing various amount of apple juice. The pH and leavening ability of dough were observed to decrease with increasing amount of apple juice. In the quality properties of bread, pH, volume, specific volume, and baking-loss rate decreased. Regarding chromaticity and texture of bread prepared with increasing amount of 'Fuji' apple juice, L (bright) values at crust and crumb of bread decreased, while hardness, chewiness and gumminess increased. Total polyphenol content increased with increasing amount of apple juice, while DPPH and ABTS radical scavenging activities showed no significant differences. Consequently, these results support the possible use of apple juice for baking foods in food industry, as addition of apple juice enhances the quality and antioxidant properties of bread.

쌀을 이용한 약과의 조리과학적 연구 (A Study on Quality of Rice-Yackwa)

  • Yackwa is a Korean traditional fried cake made by went flour, sesame oil and honey. This study was investigated to the Rice-Yackwa for the purpose of the improvement of Yackwa's quality and rice consumption by sensory evaluation and instrumental measurement. It was resulted that taste and flavor of Rice-Yackwas were better than those of Wheat-Yackwa by sensory evaluation. We tested whether the mesh of the rice (80,100,120) and swelling agents (baking power, soju : Korean alcholic beverage) affected the Rice-Yackwa's swelling or not. In result, not by soju but by baking powder Rice-Yackwas were swelled. But Rice-Yackwa was so hard, that the Yackwas were made by the two different compositions of mixed flour (rice : wheat ; 75:25, 50:50) exibited softer than those made by rice. The hardness of 25 g% mixed flour Yackwa was improved. And we examined the softening effect on rice and mixed flour Yackwa by the increasing storage periods (1, 2, 3, 5 days). Rice-Yackwa's hardness was changed more greatly than Wheat-Yackwa's by storage periods. In addition to we inspected the effluence of sesame oil in the pross of frying. Sesame oil (40%) was drown out the Rice-Yackwa.

반응표면분석법을 이용한 우엉가루와 올리고당 첨가 머핀의 제조 조건 최적화 (Optimization of Muffin Preparation by Addition of Dried Burdock (Arctium lappa L) Powder and Oligosaccharide by Response Surface Methodology)

  • This study was performed to determine the optimal composition of a muffin administered dried burdock powder and oligosaccharide. The experiment was designed base on CCD (Central Composite Design), and evaluation was carried out by means of RSM (Response Surface Methodology), which included 10 experimental points with 3 replicates for the two independent variables burdock powder and oligosaccharide. The experimental muffin was made according to a traditional recipe, except that the flour was partially replaced with dried burdock powder (5%, 15%, 25%) and the sugar was partially replaced with oligosaccharide (25%, 50%, 75%). The compositional and functional properties of the prepared products were measured, and these values were applied to the mathematical models. Using the F-test, volume, height, pH, yellowness, chewiness, resilience, springiness, cohesiveness, taste, and overall quality were expressed as a linear model, whereas lightness, redness, adhesiveness, color, flavor, and overall quality were expressed as a quadratic model. The polynomial models developed by RSM for sensory evaluation, color, flavor, texture, taste, and overall quality were highly effective in describing the relationships between the factors (p<0.01). The estimated response surfaces confirmed that the amount of burdock powder had significant effects on color, taste, texture, flavor, and overall quality (p<0.01), whereas and the amount of oligosaccharide had significant effects on color and texture (p<0.01). Increased amount of burdock powder led to reductions of the sensory scores for color, taste, texture, flavor, and overall quality at all oligosaccharide levels. The optimal mixing percentage of burdock powder and oligosaccharide muffin were determined to be 5.00% and 46.25%, respectively.

당유자 껍질 분말을 첨가한 스폰지 케이크의 품질 특성 (Quality Properties of Sponge Cake containing Dangyuja (Citrus grandis Osbeck) Powder)

  • Dangyuja (Citrus gradis), a native citrus fruit of Jeju Island, has sour and bitter tastes. Dangyuja is rich in dietary fiber and enhance antioxidant activity. In this study, sponge cake was prepared by adding Dangyuja peel powder, and its quality characteristics were investigated. The freeze-dried Dangyuja peel powder was added to sponge cakes at a content of 0% (control), 2% (DP2), 4% (DP4), 6% (DP6) and 8% (DP8) of wheat flour weight. The specific gravity and baking loss of dough tended to increase with the amount of Dangyuja peel powder added, but the pH value as well as volume index of the cake were decreased. The symmetry index of cake tended to increase. Color values of sponge cake crust showed no significant difference, but L value and a value of crumb were decreased. The hardness and chewiness were increased with adding Dangyuja peel powder. Springiness was the highest at DP2 (91.79%). Cohesiveness did not showed significant difference among all samples. In a consumer preference test, cake groups with Dangyuja peel powder was higher than DP0 in color, texture, and overall acceptability. From these results, it was concluded that Dangyuja affects characteristics of sponge cakes. When making Dangyuja peel sponge cakes, it is suitable for adding 4% Dangyuja peel powder.

비타민나무열매가루 첨가 식빵의 품질 특성 및 항산화 활성 (Quality Characteristics and Antioxidant Properties of White Pan Bread Added with Sea Buckthorn (Hippophae rhamnoids L.) Berry Powder)

  • The purpose of this study was to prepare bread added with sea buckthorn (Hippophae rhamnoides L.) berry powder (SBBP) (1, 3, and 5%) using a straight dough method. The quality and antioxidant characteristics of the bread were analyzed. The results indicated that the pH value and dough raising power of the dough decreased and the moisture content of the bread added with SBBP increased compared to that without the SBBP. The crust color of the bread did not change significantly. However, the crumb lightness value decreased and the redness and yellowness value increased respectively to the concentration of the SBBP. The texture measurement indicated that the hardness, gumminess, and chewiness of the bread increased with the addition of the SBBP. The total polyphenol content of the bread supplemented with the SBBP was increased (4.60~16.14 mg GAE/g) compare to the control (1.67 mg GAE/g). Dose-dependent, significant-high DPPH (26.86%) and ABTS (42.52%) radical scavenging activities were observed in the bread with the addition of the SBBP up to 5%. Based on these results, the optimum amount of the SBBP to add for baking bread would be 3% and the SBBP could be considered a functional agent.

베이킹 열처리로 제조된 계피 첨가 와플의 이화학적 특성과 산화방지활성 (Physicochemical properties and antioxidant activities of baked waffle added with cinnamon powder)

  • 연구에서는 계피분말의 우수한 산화방지활성이 열처리 식품에 실질적으로 부가될 수 있는지를 확인하고자 하였다. 먼저 관능적 측면에서 계피와 잘 조화되는 와플에 밀가루의 일부(0, 1, 3, 6, 9, 12%)를 계피분말로 대체하여 6종 와플을 제조하였다. 와플을 굽는 동안 계피 첨가군은 무첨가군보다 굽기손실률이 낮았으며, 이는 계피분말에서 관찰된 높은 물 결합력에 의한 결과로 와플의 경도를 감소시키는데 기여한 것으로 나타났다. 계피 첨가량이 증가할수록 와플의 탄력성, 복원력, 응집성도 유의적으로 감소하였고, 이는 밀가루 함량이 비례적으로 감소함에 따라 글루텐 생성량이 감소한 결과로 해석되었다. 계피 첨가로 와플은 전반적으로 어두워지고 갈색을 띠었으며 이러한 색 변화는 계피분말이 부가한 황적색과 와플을 굽는 동안 일어난 갈변반응의 종합적 결과로 볼 수 있다. 한편 계피 첨가량에 비례하여 와플의 총 환원력과 DPPH 라디칼 소거활성이 증가하였다. 이 결과는 계피분말에서 확인된 높은 총 환원력과 DPPH 라디칼 소거활성이 열처리 이후에도 동일했던 현상과 일치하였으며, 계피에 상당량 존재하는 페놀성 물질들이 비교적 열에 안정함을 확인해주었다. 계피 고유의 향미와 신맛은 첨가량에 비례하여 와플에서 인지되었으며 특히 고농도 첨가군에서는 기호도에 부정적 영향을 준 것으로 나타났다. 그러나 6% 이하 첨가군들은 대부분의 관능 평가 항목에서 대조군과 유의적으로 다르지 않은 기호도를 나타내었다. 이 결과들은 계피의 산화방지활성이 열처리 식품의 이화학적 관능적 특성들에 부정적 영향없이 실질적으로 부가될 가능성을 보여주었다.

뽕잎분말을 첨가한 옐로우 레이어 케이크의 품질특성 (Effects of Mulberry Leaves Powders on the Quality Characteristics of Yellow Layer Cakes)

  • 본 연구는 뽕잎분말을 케이크의 제조에 기능성 소재로 이용하고자 실시되었으며, 이를 위하여 밀가루의 4, 8, 12, 16, 20%를 뽕잎분말로 대체하여 yellow layer cake를 제조하였다. 케이크의 품질은 반죽의 점도와 비중, 케이크의 baking 특성 및 저장기간중의 텍스쳐 변화를 측정하여 평가하였다. 뽕잎분말의 첨가량이 증가할수록 반죽의 점도와 케이크의 비체적은 증가하였다. 케이크의 대칭지수는 뽕잎분말의 양이 증가함에 따라서 감소하였으나, 총부피지수나 균일성 지수는 변화가 없었다. 저장기간 중의 경도변화는 뽕잎분말의 첨가량이 증가할수록 경도증가율이 낮았으며, 대조구보다 덜 단단한 것으로 나타났다. 관능검사결과 뽕잎분말을 첨가한 케이크의 부드러움성은 차이가 없었으며 촉촉한 정도는 뽕잎분말을 첨가한 케이크가 더 크게 나타났다.
