  • Postweaning performance data were obtained on 187 group fed purebred Angus calves from 12 selected sires (six high and six low feed conversion sires) in 1985 and 1986. The objective of this portion of the study was to develop prediction equations for feed conversion from a stepwise regression analysis. Variables measured were on-test weight (ONTSTWT), on-test age (ONTSTAG), five weights by 28-d periods, seven linear body measurements: heart girth (HG), hip height (HH), head width (HDW), head length (HDL), muzzle circumference (MC), length between hooks and pins (HOPIN) and length between shoulder and hooks (SHHO), and backfat thickness (BF). Stepwise regressions for maintenance adjusted feed conversion (ADJFC) and unadjusted feed conversion (UNADFC) over the first 140 d of the test, and total feed conversion (FC) until progeny reached 8.89 mm of back fat were obtained separately by conversion groups and sexes and for combined feed conversion groups and sexes. In general, weights were more important than linear body measurements in prediction of feed utilization. To some extent this was expected as weight is related directly to gain which is a component of feed conversion. Weight at 112 d was the most important variable in prediction of feed conversion when data from both feed conversion groups and sexes were combined. Weights at 84 and 140 d were important variables in prediction of UNADFC and FC, respectively, of bulls. ONTSTWT and weight at 140 d had the highest standardized partial regression coefficients for UNADFC and ADJFC, respectively, of heifers. Results indicated that linear measurements, such as MC, HDL and HOPIN, are useful in prediction of feed conversion when feed in takes are unavailable.

  • Carcass characteristics data of Hanwoo (N = 1,084) were collected from two stations of the National Livestock Institute of Animal Science (NIAS), Korea and records from thirteen individual cow-calf operators were analyzed to estimate variance and covariance components and the effect of different slaughter endpoints. Carcass traits analyzed were cold carcass weight (CWT, kg), REA (rib eye area, cm2), back fat thickness (mm) and marbling score (1-7). Four different models were examined. All models included sex and contemporary group as fixed effects and the animal's direct genetic potential and environment as random effects. The first model fitted a linear covariate of age at slaughter. The second model fitted both linear and quadratic covariates of age at slaughter. The third model fitted a linear covariate of body weight at slaughter. The fourth model fitted both linear covariates of age at slaughter and body weight at slaughter. Variance components were estimated using the REML procedure with Gibb's sampler. Heritability estimate of CWT was in the range of 0.08-0.11 depending on the model applied. Heritability estimates of BF, REA and MS were in the ranges of 0.23-0.28, 0.19-0.26, and 0.44-0.45, respectively. Genetic correlations between CWT and BF, between CWT and REA, and between CWT and MS were in the ranges of -0.33 - -0.14, 0.73-0.84, and -0.01- 0.11, respectively. Genetic correlations between REA and BF, between MS and BF and between REA and MS were in the ranges of -0.82 ~ -0.72, 0.04~0.28 and -0.08 ~ -0.02, respectively. Variance and covariance components estimated varied by model with different slaughter endpoints. Body weight endpoint was more effective for direct selection in favor of yield traits and body weight endpoints affected more of the correlated response to selection for the traits of yield and quality of edible portion of beef.

  • Fas gene known to associate with intramuscular fat content in Korean cattle was selected for DNA marker development. Fas (APO-1, CD95), a member of the tumor necrosis factor (TNF) receptor superfamily, is a cell membrane protein that mediates apoptosis (programmed cell death). We discovered single nucleotide polymorphisms (SNPs) within Fas gene in order to develop novel DNA markers at genomic level. Of this gene to search for SNP, sequences of whole exon and 1kb range of both front and back of the gene using 24 cattle were determined by direct-sequencing methods. As a result, 16 SNPs in exon, 37 SNPs in intron and 2 SNPs in promoter region, a total of 55 SNPs were discovered. In these SNPs, thirty-one common polymorphic sites were selected considering their allele frequencies, haplotype-tagging status and Linkage Disequilibrium (LD) for genotyping in larger-scale subjects. Selected SNPs were confirmed genotype through SNaPshot method (n=274) and were examined for possible genetic association of Fas polymorphisms with carcass weight (CWT), eye muscle area (EMA), and backfat thickness (BF). So, the SNP have been identified significant g.-12T>G, g.1112T>G and g.32548T>C. These results suggest that polymorphism of Fas gene was associated with meat quality traits in Hanwoo.

  • This study was conducted to evaluate the effects of rumen-protected methionine and lysine (RPML) on the growth performance, carcass characteristics, and meat properties of Hanwoo steers. Fourteen late fattening steers were randomly assigned to either the control (commercial concentrate + rice straw) or the treatment (commercial concentrate + rice straw + 20 g of RPML/head/day) group. The average daily gain (ADG) and feed conversion ratio (FCR) were not different between the treatment and control group. The rib eye area was slightly but not significantly higher in the treatment group than in the control group. The back fat thickness decreased with the RPML supplementation, although not significantly, and the appearance of yield C grade was lower in the treatment group than in the control group. The marbling score was similar between the control and treatment groups. The supplementation of RPML had no effect on the physicochemical compositions, myoglobin values, Commission Internationale de $l^{\prime}{\acute{E}}clairage$ (CIE) color values, fatty acid composition, and thiobarbituric acid reactive substances (TBARS) values in the longissimus muscle. Thus, the supplementation of RPML does not any negative effects on the growth performance, carcass characteristics, and meat properties of late fattening Hanwoo steers.

  • This study was conducted to investigate the effect of the total digestible nutrients (TDN) level of commercial concentrates on growth performance, carcass characteristics, and meat composition of late fattening Hanwoo steers. A total of 28 steers were randomly assigned to one of four dietary groups; T1 (73.30% TDN), T2 (74.50% TDN), T3 (76.40% TDN), and T4 (77.10% TDN). Average daily gain (ADG) was slightly but not significantly higher in the T2 than in the other treatments. Dry matter intake (DMI) and feed conversion ratio (FCR) were higher in the T2 than in the other treatments; however, the differences were not statistically significant. Carcass back fat thickness was thicker in the T4 and marbling score was higher in the T2 than in the other treatments; however, the differences were not statistically significant. The TDN level of concentrates had no effect on the physicochemical characteristics and fatty acid composition of the longissimus muscle. The finding of this study indicate that less than 74% or greater than 75% TDN in the commercial concentrate did not contribute to improve ADG, FCR, marbling score; therefore, in the present study, the recommendable TDN level in the commercial concentrate for late fattening period was 74% to 75% in terms of growth performance and marbling score of Hanwoo steer.

  • This study was done to estimate the effect of progeny numbers and pedigree depth on the accuracy of the estimated breeding value (EBV) using best linear unbiased prediction (BLUP) method in Hanwoo. The experiment groups (sire = 100, 200, and 300; progeny = 4 and 8) were made by random sampling and by genetic evaluation of the following traits: Body weight (BW), carcass weight (CW), eye muscle area (EMA), back fat thickness (BFT) and marbling score (MS9). As a result of the genetic evaluation, the accuracy of the EBV was roughly 30 - 60% with 4 progenies, and the accuracy of the EBV increased by about 50 - 75% with 8 progenies. In the other words, when the number of progenies increased from 4 to 8, the accuracy of the EBV simultaneously increased by about 15 - 20%. Moreover, when the number of sires was higher, variations in the accuracy of the EBV within the groups for each trait decreased. Therefore, this result indicates that not only the number of progeny but also the number of sires can affect the accuracy of the EBV. Consequently, collecting information on the progeny and careful management of that information are very important things in the Hanwoo breeding system. Therefore, the EBV can show more precise results when conducting genetic evaluations.

  • A total of 18 sows with an average body weight (BW) of 211.6 kg (within 24 h after farrowing) were used for a 5-week experiment to determine the effects of the dietary valine : lysine (V : L) ratios on the performance and fecal score in lactating sows and litters. Sows were raised in individual pens and assigned to one of three experimental diets consisting of different V : L ratios (0.83, 0.85, and 0.88%). Sows BW was improved with the 0.85% V : L ratio compared to the 0.83 and 0.88%. However, no significant difference was observed for BW loss, average daily feed intake, back fat thickness and days to return to estrus among the three treatment groups during the experiment period. Furthermore, the growth performance of the piglets, the weaning weight, was improved in the group receiving the diet with the 0.85% V : L ratio compared to the 0.83 and 0.88%. Moreover, the average daily gain of the piglets was increased when the V : L ratio was 0.88% compared to 0.83 and 0.85%. The fecal score of the sows was better (p > 0.05) when the V : L ratio was 0.85% compared to the V : L ratio of 0.83%. In the piglets, the V : L ratios 0.88 and 0.85% had a better fecal score compared to the V : L ratio of 0.83% at day 14. In conclusion, the V : L ratio had no effect on the gut microflora shown by the fecal scores of the sows during lactation.

  • This study was conducted to provide basic data for efficient Hanwoo beef production by conducting a comparison of growth performance, blood metabolites, testosterone, and carcass characteristics of Hanwoo according to complete and hemi-castration. Twelve Hanwoo calves were allotted to two treatment groups as follows: CC = complete-castration and HC = hemi-castration method of removing only one testicle. At the end of the test, the body weight was 66 kg higher in HC than in CC, and the average daily gain increased by 12.6% (p < 0.05). The feed conversion ratio was significantly improved in HC compared to CC (p < 0.05). Serum cholesterol and triglyceride concentrations were significantly higher in CC than HC in both the growing and fattening periods (p < 0.05), and serum testosterone concentrations before castration were similar between HC and CC, but steadily increasing in HC after castration. Back fat thickness and marbling score were significantly higher in CC than HC in the entire period (p < 0.01). In the results of this study, hemi-castration can improve body weight gain and feed conversion ratio due to the influence of male hormones compared to complete castration, but it is considered that there will be difficulties in producing high-quality meat with a high marbling score.

  • This study has evaluated the genomic estimated breeding value (GEBV) of the commercial Hanwoo population using the genomic best linear unbiased prediction (GBLUP) method and genomic information. Furthermore, it analyzed the accuracy and realized accuracy of the GEBV. 1,740 heads of the Hanwoo population which were analyzed using a single nucleotide polymorphism (SNP) Chip has selected as the test population. For carcass weight (CWT), eye muscle area (EMA), back fat thickness (BFT), and marbling score (MS), the mean GEBVs estimated using the GBLUP method were 3.819, 0.740, -0.248, and 0.041, respectively and the accuracy of each trait was 0.743, 0.728, 0.737, and 0.765, respectively. The accuracy of the breeding value was affected by heritability. The accuracy was estimated to be low in EMA with low heritability and high in MS with high heritability. Realized accuracy values of 0.522, 0.404, 0.444, and 0.539 for CWT, EMA, BFT, and MS, respectively, showing the same pattern as the accuracy value. The results of this study suggest that the breeding value of each individual can be estimated with higher accuracy by estimating the GEBV using the genomic information of 18,499 reference populations. If this method is used and applied to individual selection in a commercial Hanwoo population, more precise and economical individual selection is possible. In addition, continuous verification of the GBLUP model and establishment of a reference population suitable for commercial Hanwoo populations in Korea will enable a more accurate evaluation of individuals.
