This study was carried out to investigate the efficacy of sn-2 palmitic acid-fortified vegetable oil (Sn2PA) on calcium absorption and to confirm the synergistic effects of fructooligosaccharide on calcium absorption. Male SD rats were fed 6 kinds of casein based diets containing vegetable oil (control), sn-2 palmitic acid-fortified vegetable oil (Sn2PA) and Sn2PA with fructooligosaccharide(Sn2PAFO) in two levels of calcium (normal 0.5% and high 1.0%) for 3 weeks. Total lipids, cholesterol, triglyceride and calcium in blood were measured. Feces were collected using cages for 4 days. Serum concentrations of total lipids and calcium were not significantly different among groups. However, serum triglyceride was significantly decreased by fructooligosaccharide supplementation regardless of dietary calcium level. The lipid absorption was not significantly different among experimental groups. Calcium absorption was significantly higher in Sn2PAFO group than other groups. Calcium solubility of intestine was increased by sn-2 palmitic acid supplementation. These results suggest that sn-2 palmitic acid and fructooligosaccharide supplementation could be beneficial for baby foods including infant formula, with regard to increasing absorption of calcium by more soluble calcium in the small intestinal content.
This study presents results of surveys conducted Seoul and Kangreung public health center using structured questionnaire developed by researchers to identify factors that were relevant to the method of feeding. To compare the infant's development between the breast-fed infants and formula-fed infants, infant's height, weight, triceps skinfold during 1month and 4months were cheked. The results were as follows : 1. At postpartum, 59.1% infants had formula feeding, while 22.6% had breast feeding. At 1 month old, 49.6% infants had formula feeding, 27.8% had breast feeding. At 4 months old, 60.9% infants had formula feeding, while 26.1% had breast feeding. 2. 'Lack of breast milk' was the predominant reason for formula feeding. 3. The sujects didn't enough eat not only rice and seaweed soup but also any other specific foods during breast feeding period. 4. Factors that affected the method of feeding were the patterns of delivery, mother's height & weight, first baby feeding type(at post partum), infant sex, mother's age, preparation of breast feeding, first baby feeding type, regular clinic visit (at 4months old). 5. The birth weight and height were correlated with mother's weight and height. 6. There were no significant different on infant's weight, height, triceps skinfold between breast-fed infants and formula-fed infants.
Fermented milks have been recognized as healthy foods since ancient times, but those using intestinal bacteria such as Bifidobacterium and lactic acid bacteria (LAB) are even more valuable from the standpoint of view of maintaining health. They have also now come to be recognized as important in the field of preventive medicine. Although advances in the medical sciences in the last 50 years have significantly increased the human lift span, an unfortunate fact is that many of us are now living long enough to experience chronic disorders such as coronary heart disease, hypertension, osteoporosis, diabetes and cancer. In recent years there has been renewed interest in health promotion and disease prevention by incorporating probiotic bacteria into foods to counteract harmful bacteria in the intestinal tract. Therefore, there are now a wide variety of commercial products containing prospective probiotics that claim health-promoting effects, such reductions in large botvel carcinogens and mutagens, antitumor properties, cholesterol-lowering effects, increased lactose digestion, relief from con-stipation, stimulation of immunocomponent cells and enhancement of phagocytosis. Two well-known representative probiotic is LAB and Bifidobaclerium. Traditional probiotic dairy strains of LAB which have been designated as GRAS (Generally Recognized As Safe) bacteria have a long history of safe use and most strains are considered comestible microorganisms with no pathogenic potential. Accordingly, there is considerable interest in extending the range of foods containing probiotic organisms from dairy foods to infant formulas, baby foods, and pharmaceuticals. In addition, the ingestion of probiotics, prebiotics, and symbiotic as wll as combinations of pro- and prebiotics has recently aroused renewed interest as enhancing the beneficial relationship between the host and intestinal microflora in both healthy and diseased indivisuals. Non-communicable chronic diseases such as cancer, cerebral hemorrhage, is chemic heart disease, and diabetes mellitus has recently been recognized as adult diseases in Japan as well as other countries. and are considered to be inevitably associated with aging. These diseases occur as a result of individual life styles. The Japanes Government. Ministry of Health, Labor and Welfare has proposed substituting the term 'adult diseases' with 'lifestyle-related diseases'. It has emphasized the importance of prevention rather than treatment. since the well-known increase in the elderly population in Japan is predicted to result in a variety of socioeconomic problems. n this lecture on the Present status of fermented milk products in Japan, I will report a strategy for the development of fermented milk products in Japan from the standpoint of view of research in Japan on LAB and Bifidobacteria. They could play an important role in preserving human health by controlling intestinal microflora capable of producing toxic effects on the host.
This study investigated differences or similarities of infant rearing practices in Korea, Hong Kong and the United States and in young mothers and grandmothers generations. The silbjects were young mothers(YM) with babies from 2 to 2.5 years and their mothers or mothers-in-law(GM) in Korea(YM=118, GM=118), Hong Kong(YM= 126, GM=78) and the United States(YM= 105, GM= 105). The subjects answered questionnaires on infant rearing practices that were constructed by child study specialists in Korea, Hong Kong and the United States. Statistical analyses were by frequencies, percentages, and $\chi$$^2$ The results of this study were as follows. 1. Kum-Jut was used to announce giving birth to relatives and neighbors only in Korea. Mothers in Korea were more helped in their recovery by their mother or mother-in-law than their husband, but the opposite was the case in Hong Kong and the United States. Most Korean mothers ate special foods after giving birth, but mothers in Hong Kong and the United Slates didn't. Mothers in Korea were more likely to avoid contact with strangers for a given period of time than mothers in Hong Kong and the United States. The babies in Korea were more often named by grandparents than by parents, but most of the babies in Hong Kong and the United States were named by parents. The greater part of babies in Korea didn't have childhood names or nick names, but most babies in Hong Kong and the United States did. 2. Mothers in Korea were more likely to give a banquet, exercise Dol Jab le, share foods with neighbors, and take souvenir pictures on the baby's first birthday than mothers did in Hong Kong and the United States. Most mothers in Korea tended to think that their baby's fiyst birthday was more meaningful than the other birihdays, but most mothers in Hong Kong and the United States didn't. 3. Some differences between young mothers and grandmothers generations in infant rearing practices were found in each culture.

The purpose of this study was to investigate the knowledge and attitude of a group of mothers who had infants about baby bottle tooth decay(BBTD) and dental caries prevention. The sample consisted of 261 mothers who had infants from 6 to 36 months from certain areas of Dae-jeon city. The mothers were asked to answer a questionnaire which included a series of questions regarding general information cencerning the infant and his mother, knowledge about BBTD and methods of prevention using fluoride, knowledge about behavioral risk factors contributing to caries of the infant, attitude toward oral health care of the infant, opinions regarding the effectiveness of methods to prevent dental caries and sources of oral health information. he results of this study were as follow. 1. 85.4% of the respondents thought that prolonged bottle feeding would harm the teeth of the infant, but 77% of the respondents had never heard of baby bottle tooth decay. 2. Levels of knowledge about methods of prevention using fluoride were relatively low and there were significant relationships between the levels of this knowledge and the educational level of the respondents(P<0.05). 3. Only 7.3% of the respondents thought that prolonged breast feeding would harm the teeth of the infant. 4. Overall oral health care of the infants was relatively insufficient. 5. Only 28.7% of the respondents selected either when the first tooth erupt or deciduous dentition complete as the time a infant should first be seen by a dentist. 6. 64.6% of the respondents thought that toothbrushing should be instituted once the first tooth appears. 7. Among the six methods of preventing caries in infants, respondents ranked the effective of fluoride lower than making regular dental visits and reducing intake of sugared foods. 8. Most frequently cited sources of information about dental health were newspapers, magazines and books(65%), followed by friends, neighborhoods and families (55%).

Onto the world-fastest ageing of society, the world-lowest fertility rate prompted a development of various policies and programs for a betterment of the population in Korea. Since the vulnerability of young children of low socio-economic class to malnutrition was clearly shown at the in-depth analysis of the 2001 Korea National Health and Nutrition Examination Survey data, an effort to devise supplemental nutrition care program for pregnant/breastfeeding women, infants and preschool children was initiated. The program was designed to offer nutrition education tailored to fit the needs of the participants and special supplementary foods, using USDA WIC program as a benchmark. Based on the dietary intake of those age groups, target nutrients were selected and their major food sources were searched through nutrient content of foods and dietary pattern analysis. As a result, we developed 6 kinds of food packages using combinations of 11 different food items. The amount of each item in a food package was determined to supplement the intake deficit in target nutrients. Nutrition education in $NutriPlus^+$ aims to improve the nutrition knowledge, attitude, and dietary behaviors of the participants, and is provided through group lessons, individual counseling sessions and home visits. Breastfeeding is promoted with top priority in education for the health of both mother and baby. The eligibility guidelines were set for residency, household income, age, pregnancy/breastfeeding and nutritional risk such as anemia, stunting, underweight, and/or inadequate nutrient intake. Income eligibility was defined as household income less than 200 percent of the Korean poverty guidelines. A pilot study to examine the feasibility of program implementation was run in 3 public health centers in 2005 and expanded to 15 and 20 in the following 2 years. The result of 3-year pilot study will be reported separately along with the ultimate nationwide implementation of the $NutriPlus^+$ in 2008.
In order to obtain baseline data for quality improvement of the catering services, a survey was carried out to investigate the consumer use and satisfaction with catering services. Subjects were 171 women who had used catering services within a year previously, and were replied to a questionnaire. The results were as follows: With respect to the use of the catering service, most reasons for using the catering service were no time and no cooking skills, and most events using catering services were the first birthday party and 100th day party for baby. The preferred meal cost was 8,000-10,000 won per person. With respect to customer satisfaction, over 60% of the people were satisfied with catering service which they had used ; they were satisfied with service quality and quantity of the dishes provided whereas they showed a little bit dissatisfaction in desserts and seasonal foods. It is recommended that supplying of sufficient desserts, and development of new and various menus according to seasons should be required to improve the consumer satisfaction with catering services.

The most commonly used infant formulas contain lactose originating from cow milk. Goat milk has recently been claimed to be nutritionally more effective for infants than other milks. In baby foods, much emphasis is placed on the concentrations of intestinal microflora-promoting oligosaccharides, which are generally transferred into lactose from milk during crystallization process. Here we show that higher level of free sialic acid is present in goat lactose powder compared to cow lactose powder. Without proteinase K treatment, the amount of 3-sialyllactose and 6-sialyllactose were similar in goat and cow lactose powders. However, after proteolysis, 6-sialyllactose was present at higher levels in goat than in cow lactose powder. Galactooligosaccharides, a group of prebiotics, are present in milk in the form of glycoproteins. Galactooligosaccharide content was also higher in goat lactose powder than in cow lactose powder.
The modification of rice powder was attempted by treatment of acetic acid and epichlorohydrin to improve the functional properties of baby food. The initial gelatinization temperature of rice powder determined by amylograph was decreased from $79.5^{\circ}C$ to $63^{\circ}C$ by modification. The apparent and maxium viscosity of rice paste at $95^{\circ}C$ before and after modification were increased from 92B.U. to 236B.U. and from 100B.U. to 202B.U., respectively. The light transmittance of modified rice paste was increased from the temperature of $60^{\circ}C$ and by increasing the degree of substitution at the fixed temperature, while decrease more or less by the treatment of epichlorohydrin. The degree of retrogradation of the paste was decreased from 28.7 to 18.0 upon modification. The rate of syneresis of modified rice powder was decreased with increasing the drgree of substitution and ,the extend of epichlorohydrin treatment. Syneresis was not observed when acetylated rice powder whose DS value is 0.048 was treated with 0.25% of epichlorohydrin for the formation of cross-linkage. The addition of modified rice powder in preparation of semi-solid type infant food could improve the quality without lowering overall digestibility.
The purpose of this study was to get adequate substitute snacks for atopic dermatitis children. For this purpose food preference was surveyed by questionnaires to atopic dermatitis children in the kindergarten of Incheon area. As a result, anthropometric measurements were not significantly different by gender Most of atopic children were severe malnutrition by Rohrer index average 1.375. $13.3\%$ of atopic dermatitis started during newborn baby. $62.3\%$ of atopic dermatitis symptom started from 7 months to 3 years old. $48.9\%$ of atopic children didn't know the causes of the symptom. Though parents didn't thought instant/retort food, fried food, egg, snacks, milk were good for atopic dermatitis, they have offered egg, milk, meat, mackerel to their atopic dermatitis children for growth. Snacks of atopic dermatitis children were positively correlated between children's eating and favorite snacks(r=0.84), children's eating and parents' wishing snacks (r=0.615) and children's favorite and parents' wishing snacks(r=0.23). Therefore $83.7\%$ of atopic dermatitis children and their parents wanted reliable processed foods, $83.3\%$ of them despite high cost.
