The purpose of this study was to assess the energy value of breakfast and its relation to total daily nutrient intake and serum lipid. Dietary intakes were evaluated through the 3-day dietary recalls(interview for 1day and self-report for 2 days) from 333 Korean urban adults aged 20-49 year. Serum lipids in fasting blood samples were measured form 98 of those 333 adults. Low energy breakfast(<15% of daily energy intake) was consumed by 22.6% of males and 18.5% of females. 59.4 of males and 43.3% of females consumed a breakfast of average energy intake(15-25% daily energy intake) ; and 18.1 of males and 38.2% of females consumed a significant contribution to a total daily nutrient intake. The daily nutrient intake except crude fiber and vitamin A, B, B, and C in males and except vitamin C in females significantly increased as the energy value of breakfast increased. The differences in energy and nutrient intakes at breakfast were not made up for by other meals. To make matters worse, the satisfactory-energy breakfast group took more energy at dinner compared with the low-energy and average-energy breakfast group took more energy at dinner compared with the low-energy and average-energy breakfast groups in females. Among serum lipid parameters, TG was negatively correlated with energy provided at breakfast, and total cholesterol and LDL-cholesterol had a negative correlation with energy and carbohydrates provided at breakfast in males. For females TG was positively correlated with the ratio of carbohydrates to energy at breakfast but negatively correlated with the ratio of fat to energy at breakfast. These results suggest that satisfactory energy intakes at breakfast have positive effects on the adequacy of daily nutrient intake and may positively affect the serum lipid status.
This survey was carried out to obtain the information concerning nutritional status, including factors of food intake and health condition of elderly women living in Ulsan city. Main results were as follows. 1) Dietary intake data showed the average daily intake of energy, protein, vitamin A, riboflavin and ascorbic acid were lower than Korean recommended dietary allowances (RDA). According to the percentage of RDA, Vitamin A was the nutrient found to be least sufficient. 2) Among the various influencial factors, pocket money, meal-mate, skip meal and health concern influenced on nutrient intake considerably. A meal condition score based on influencial factors, showed significant correlations with all nutrient intake(P<0.001). A health score based n the subjects complains about health condition, showed significant correlations with intake of energy, carbohydrate, thiamin, and niacin(P<0.05). 3) Average hight was below Korea reference, while average body weight of subjects was close to Korean reference. Average body mass index was 23.0. 4) The average systolic and diastolic blood pressure was 140mmHg/88mmHg, the proportion of hypertension was 32.4 percent. The average hemglobin concentration was 12.7g/dl, only 6.7 percent of subjects were anemic. Serum cholesterol concentration was normal range(140~220mg/dl) in all subjects.
This study was conducted to compare dietary intake and quality obtained by food frequency questionnaire(FFQ) and 24-hour recall method among 1249 Korean adults living in rural area. The survey was conducted twice; first with 65-items FFQ by interview and then with 24-hour recall method two years later. Nutrients intake estimated from two dietary methods showed significant difference. For nutrients except fat and iron, average intake value estimated from the FFQ were significantly higher than that from the 24-hour recall method(p<0.001). Ranking of the subjects by nutrient intake levels obtained by two methods were significantly correlated, but correlation coefficients were low. Percentage of subjects in the lowest or in the highest quintile by 24-hour recalls who belong to the nearest two categories by FFQ ranged from 45% to 61%, while the percentage falling into the opposite category ranged from 7% to 15%. Subjects' percentile rank of nutrient intake by 24-hour recall correlated with their average rank of nutrient intake by FFQ. Information on food groups by two method were not comparable because of the limited number of food items in FFQ. For most nutrients, RDA% or NAR from FFQ were higher than those from 24-hour recall, but INQ from 24-hour recall were higher than those from FFQ. From the results, results of 24-hour recall method seems to be useful in classifying subjects according to their nutrient intake if sample size is large enough.
This study investigated the correlations between nutrient intake and dietary attitudes in Korean school dietitians. A total of 493 school dietitians working in the Kangwon and Kyungnam areas participated in this study. The subjects were classified as the good group(33.5%), fair group(36.9%) and bad group(29.6%) based on dietary attitude score. The results were as follows. The average intake of energy, calcium, and iron were lower than the Korean RDA and average CPF ratio of energy intake was 64 : 17 : 19. The percent RDAs of nutrient intake of energy, calcium, iron and vitamin B$_1$were lower in the bad group than those in the fair group and good groups(p < 0.001). The mean adequacy ratio(MAR), an index of overall dietary quality, were different among the three groups(p < 0.001), the highest was 0.96 in the good group, the lowest was 0.88 in the bad group. The index of nutritional quality(INQ) was significantly higher in the good group than the other groups. The nutrient intakes were positively correlated with dietary attitudes(p < 0.01). The nutrient intakes, INQ, NAR and MAR were significantly increased as the dietary attitude score increased.
The purpose of this survey was to investigate the nutrient and food intake and food habits of the aged Jeju island. The survey was conducted to 102 persons, 50 persons aged 65 to 74 years and 52 persons aged 75 years over from July 5 to 25, 1981. The result obtained was summarized as follows; 1. Average nutrient intake per day Calorie intake was 1408 ㎉(which was 64% of RDA) for male and was 1343 ㎉ (84%) for female aged 65 to 74 years. For male aged 75 years over calorie intake was 1316㎉ (60%) and for female was 1292㎉ (81%). According to the intake of calorie, the ratio of carbohydrate, protein, fat, were average 74.8%, 15.1%, 10.1%. Protein intake was insufficient quantiatively, but the proportion of animal protein to total protein intake were 26.1 to 33.5%. Other nutrient intake, such as Ca, vitamin A and C were lower than the recommended dietary allowance. 2. Food intake In per capita food consumption were 69.1g to 744.7g and average 320.1g of cereal (125.1g of rice and 160.5g of barley) and 63.9g of fishes. Total food consumption and vegetables were diminished by older age. 3. Correlation assessment The correlation coefficient between residental stus lived with family, high activity, good health, and nutrient intake were significant (P<0.05). Poor teeth had influence on less nutrient intake, but was not significant. 4. Food preferences Food liked over 70% of subjects were persimmon, fishes, leef, tomato, and boiled rice with barley, etc. owing to tender food, economical reasons, seasonal influence, and food habits. Food disliked over 20% of subjects were instant noodle, small sardin, boiled rice, and ice-crea, etc. The majority of subjects had never had the processing food, such as ham, sausage, butter and margarine, etc.
This study was conducted to evaluate the nutritional status of the elderly women, who attended the Health Promotion Program of the Seogu Health Center in Daegu. The study subjects were 158 elderly women in an urban community. The general characteristics, dietary behavior (nutritional knowledge, nutritional attitudes and dietary habits), food and nutrient intake were surveyed by an individual interview. The average age of the study subjects was 70.9 $\pm$ 2.3 years of the subject group 79.1% ranged in age from 65 to 74 years and 20.9% were over 75 years. Their average score for nutritional knowledge, nutritional attitudes and dietary habits was 7.3 (total mark of 10), 7.2 (total mark of 10) and 9.1 (total mark of 22) respectively. Specifically, the level of the dietary habits of the study subjects was very low. In relation to food group intake of the study subjects according to age, their food intake was low. The total, plant. and animal food intake were 1078.9 g, 954.4 g (88.5%), and 244.4 g (11.5%), respectively. The mean daily energy intake and nutrient intake according to percentage of the Korean RDA were higher in the from 65 to 74 year group than in those people over 75 years. The average calories and the mean percentage of nutrient intake, except for vitamin C and phosphorus. were below 75% of the Korean RDA. It seems that the nutrient intake was very low. The mean nutrient adequacy ratio (MAR) was 0.59. Nutritional status of age over 75 years old was significantly lower than that of 6574 years old group (Mar = 0.60 VS 0.54, p < 0.05) The correlation coefficients between their dietary behavior (nutritional knowledge, nutritional attitudes, dietary habit) and their mean nutrient adequacy ratio (MAR) showed significant linear relations. In conclusion, if nutritional education is to affect the dietary behavior of elderly women, it should be included in a Program to Promote their nutrition and health status.
This study evaluated the reproducibility and validity of the self-administered semiquantitative food frequency questionnaire used in a large prospective cohort study(Korean Cancer Research Survey) in middle-aged men. The questionnaire was administered twice at an interval of approximately two years(December, 1992-January, 1995), and four or five 24-hour recalls for each subject were collected at intervals of approximately three months. The results were as follows; 1) Although the distributions of the data estimated by the questionnaire were somewhat wider, the mean nutrient intakes of group estimated by our questionnaires and the multiple 24-hour recalls were roughly comparable. 2) The reproducibility determined by correlation of absolute(unadjusted nutrient intake) and calorie adjusted nutrient intakes from two semiquantitative food frequency questionnaires were more than 0.5, and the weighted kappa values were more than 0.4. 3) The Pearson correlation coefficients between unadjusted nutrient intakes values were average 0.40 on the average(Ca, 0.13-Carbohydrate, 0.58) at the first questionnaire vs. 24-hour recalls, and 0.28 at the second questionnaire vs. 24-hour recalls. The spearman rank order correlation coefficients were similar. When energy intake was adjusted, there was a slight reduction : 0.28 at the second questionnaire, 0.25 average on the second. In order to correct the measurement error of 24-hour recall data, the deattenuated correlation coefficient was calculated. It averaged 0.53 on the first questionnaire, 0.37 on the second questionnaire for unadjusted nutrient intake. for calorie-adjusted nutrient intake, it averaged 0.44 on the first questionnaire, 0.37 on the second questionnarie. 4) There was lower agreement(k<0.4) between the questionnaries and the 24-hour recalls. And the subjects classified in the same quartile by 24-hour recalls and first questionnaire were average 37$\%$(energy-adjusted values) and 40$\%$(unadjusted values) on the average. More than k10$\%$(average) of subjects were in the extreme quartile of the questionnarie and 24-hour recall method. But 8.2$\%$(average) of subjects classified in the lowest quartile of unadjusted nutrient intake level by the 24-hour recalls were in the highest quartile by the first questionnaire. These data indicate that our self-administered semiquantitative food frequency questionnarie is reproducible. Correlation coefficients comparing nutrient intakes measured by two different dietary assessment methods were less than 0.5. The validity of our questionnarie is not high enough.
Dietary behavior, body mass index(BMI) and nutrient intake status of 185 boys and 205 girls in 3rd grade middle school students in Daegu area were analyzed. Boys were 168.6cm tall and weighed 61.3kg on the average and girls 158.5cm and 54.4kg, respectively. From their BMIs, 17.9% were classified as the underweight, 54.2% as the average, 14.7% as the overweight and 13.2% as the obesity. The average energy intake per day was 2222.6 kcal for boys, 1796.2 kcal for girls which were 83.3% and 86.6% of the RDA, respectively. Composition rate of carbohydrate, protein, fat in relation to energy intake was 62.4 : 16.5 : 21.1 for boys and 58.8 : 16.0 : 25.2 for girls. Protein was taken low and carbohydrate and fat were high in this study. Particularly, fat intake rate of girls was high. Calcium, iron, vitamin A, and vitamin B2 did not meet the RDA and especially calcium was taken 63.9% for boys and 54.01 % for girls. Most of the students have tendency to eat irregularly and to overeat. For the nutrients intake, calories and calcium intake were lower than the RDA regardless of gender and iron intake was not enough for girls only. In relation to BMI, obesity group students were taking lower calories and proteins than the normal students were. No consistent trend was shown for boys about nutrient intake in relation to eating speed. Students had a correct perception of their body image which was similar to that of their mothers. Nutrient average intake is under the average and the percentile under 70% of RDA was high contrary to the fact that nutrient intake like calcium and iron was exceedingly important particularly in the growth process. Therefore, nutritional education for the proper intake of nutrients was required for the students in Daegu area. Especially, education has to be focused on the balanced diet and correct food choices for the proper dietary behaviors.
The purpose of this study was to compare nutritional intakes of college students in Seoul and Yanbian by ethnic : Korean, Korean-Chinese, Chinese. The questionnaire were applied to individual interviewing method. Statisticai data analysis was completed by SAS 8.0 package program for t-test, ANOVA and multiple comparison. The results of this study were as follows. Average energy intake per day was high in Korean-Chinese. Nutrient Adequacy Ratio(NAR) was highest in iron and lowest in zinc. Mean Adequacy Ratio(MAR) score was $0.68{\sim}0.85$ for each group. The indexes of nutritional quality(INQ) were over 1.0 for most nutrients except 0.41 of zinc and 0.76 of calcium. Average energy intake ranked high in Korean-Chinese, Korean and Chinese.
A survey was carried out to investigate relation between stress and nutrient intake in adults. There was a positive correlation between stress and food intake in adults statistically. It seems that women was significantly influenced by physical, psychological and nuerosensational stress than men(p<0.05). The average calorie intake of men was 1721.25Kcal(68.85% of RDA), the women was 1568.79kcal(78.44% of RDA). Intake of protein, calcuim, Vit $B_1$, Vit $B_2$, Niacin were quite less than the RDA in men, wherase intake of calcuim, iron, Vit $B_1$ were quite less than the RDA in women. In changes of nutrient intake by stress, men was increased as higher stress amount, but women was decreased as higher stress amount(p<0.05). It was lower level of nutrient intake in the below 60 scores of food attitude group that was needed improve of food intake and counseling of professional nutritionist.
