Quality Characteristics of White Bread with Arrowroot Powder (칡 분말을 첨가한 식빵의 품질 특성)

  • The objective of this study was to investigate the effects and availability of arrowroot powder in making white bread. The characteristics of pasting, farinogram and alveogram of the dough containing arrowroot powder were analyzed. Further, the physicochemical properties of white bread were analyzed by different mixing ratios (0, 3, 5 and 7%) of arrowroot powder during storage periods. When 7% of arrowroot powder was added, the initial pasting temperature of the dough by using a RVA (rapid visco analyzer) was significantly increased. Peak viscosity, holding strength, break down, final viscosity and set back were decreased by increasing added arrowroot powder. With the increasing amounts of arrowroot powder, the values of farinogram and alveogram parameter for the dough showed a tendency to decrement. The texture profile analysis of the white bread revealed that hardness, springiness, cohesiveness and gumminess were increased by adding arrowroot powder and further, the storage time was longer. By increasing the amount of added arrowroot powder, the L value of the white bread was decreased, whereas the a, b value were increased. In the sensory evaluation, the white bread of the control and that of the added 3% arrowroot powder showed the highest preference in total score.

Quality Characteristics of Arrowroot Dasik Prepared With the Arrowroot(Puerariae Radix) Powder (갈근가루 첨가 다식의 품질 특성)

  • To evaluate the effect of arrowroot(Puerariae Radix) powder on dasik, rice dasik was prepared after supplementation with different ratios (0% 3% 6% 9% and 12% respectively, w/w) of the arrowroot powder. No significant difference in the moisture content was observed among the groups. The pH value was reduced when the arrowroot powder was added. The lightness(L-value) and the yellowness(b-value) of the control group was higher than that of dasik with the arrowroot powder, whereas the redness(a-value) of the control group was lower than that of dasik with the arrowroot powder. In the mechanical evaluation, the hardness of the control group was higher than that of dasik with the arrowroot powder. However, no significant difference in cohesiveness, adhesiveness, gumminess and chewiness was observed. The intensity of the color and flavor of dasik with the arrowroot powder was higher than that of the control group. Dasik with the arrowroot powder was significantly higher in taste and overall acceptability than the control group. In conclusion, 6%(w/w) of the arrowroot powder might be appropriate for arrowroot dasik.

  • This study examind the product quality characteristics and industrial application of arrowroot powder added Yanggaeng before its industrial application. Several preliminary experiments were conducted by applying manufacturing conditions and varying the amount of arrowroot powder(1%, 2%, 3%, 4%) added to produce Yanggaeng recipes that can be sold commercially. The moisture content of the produce Yanggaeng was low due to the manufacturing standards, but it showed a significant increase with an increase in the ratio, which was similar to the results of other studies on Yanggaeng. The solubility, particale size distribution, and pH also showed a significant increasing trend. The hardness of arrowroot powder added Yanggaeng decreased with an increase in the amount of arrowroot powder, while springiness, gumminess, and chewiness increased with the addition of arrowroot powder. In terms of color, arrowroot powder showed a dark color, which was well suited to white bean paste and could also be used with black bean paste without any problem. These results were due to the manufacturing ratio being adjusted to meet commercial sales standards, resulting in a lower amount of water being used, and the characteristics of arrowroot powder being applied as they were.

Optimization of Iced Cookie with Arrowroot Powder Using Response Surface Methology (갈근분말 첨가 냉동쿠키의 제조조건 최적화)

  • The aim of this study was to use arrowroot powder to develop a recipe for a nutritional cookie having the optimal composition of ingredients and texture to elict a strong preference response in all age groups. Wheat flour was partially substituted with arrowroot powder to reduce the wheat flour content of the cookie. Measurements were made and analyzed according to the Response Surface Methodology technique, which showed 16 experimental points including 2 replicates for arrowroot powder, yellow sugar and butter. The compositional and functional properties of the test were measured, and the values obtained were applied to a mathematical model. A canonical form and perturbation plot showed the influence of each ingredient on the final mixture product. The result of sensory evaluation showed very significant values for color (p<0.01), appearance (p<0.001), texture (p<0.05), overall quality (p<0.05), and flavor (p<0.05). Instrumental analysis showed significant values for lightness (p<0.001), redness (p<0.01), yellowness (p<0.01) and spread ratio (p<0.001). The optimal sensory ratios were determined to be 15g for the arrowroot powder, 70 g for sugar and 80 g for butter.

Investigation of the Preparation and Cooking Methods of Eungi in the Eighteenth, Nineteenth, and Twentieth Centuries (1700~1900년대 문헌에 나타난 응이류의 종류 및 조리과정 연구)

  • The purpose of this study was to investigate the preparation and cooking processes used to prepare Eungi in cookbooks published from the 1700s to the 1900s. 'Eungi' is a thin gruel made of starch powder. Fourteen historical cookbooks were included and investigated for the preparation of ingredients and processing methods. Fourteen types of eungi were identified. Arrowroot eui and kuseonwangdogo eui were found in 『Kyuhapchongseo』 written in the early 1800s, and many types of eungi (i.e. job's tears eungi, arrowroot eungi, sorghum eungi, lotus root eungi) were mentioned in 『Kunhakhoedeung』, but unfortunately, ingredients and cooking methods were not included. 'Eungi' was made by boiling starch powder prepared using the 'subi method', that is, dried after grinding main ingredients such as job's tears using a millstone followed by soaking and settling. Eungi boiled with water or omija water were seasoned with the sugar or honey, and salt. These eungis were used for stomach complaints and hangovers and to promote longevity.

Quality Properties and Isoflavone Contents of Chungkukjang Containing Isoflavone Extracted from Arrowroot (Pueraria lobata Ohwi) (칡 이소플라본을 첨가한 청국장의 품질 특성 및 이소플라본 함량)

  • This study was conducted to determine the characteristics of chungkukjang with added isoflavone extracted from arrowroot and to determine its utility as a functional food substance. Crude isoflavone was prepared from arrowroot by the ethanol extraction method and frozen dried (AI). Samples of chungkukjang each had different amounts of isoflavone extracts added to them: 0 (control), 1.76 (AC1-chungkukjang), 3.52 (AC2-chungkukjang), and 7.11 (AC3-chungkukjang) g/kg. The pH, color, slime material content, calcium, and isoflavone of each sample were measured to investigate the quality and changes in isoflavone content. As AI increased, the pH of chungkukjang decreased to 7.46~7.53 compared to the pH of control (7.63). The slime material content range increased to 4.46~6.16%. However, there was no significant difference in the general components of chungkukjang between each of the groups (Con, AC1, AC2, AC3). In colors of chungkukjang, values for $L^*$, $a^*$, and $b^*$ decreased as AI increased. Meanwhile, the calcium content of AC1, AC2 and AC3 tended to increase by 11.18~12.82% compared to the control. This may be due to the influence of Ca in the arrowroot extract powder. There was a remarkable increase in total isoflavone content, by 30.81~130.66%, with an order of AC3>AC2>AC1. In all of the groups, the content of genistein and daidzein, aglycone form, increased dramatically, by 65.00~128.34%, and 89.38~142.91%, respectively, compared to the control. In AC3, in particular the genistin and daidzin content increased by 103.47% and 188.13%. These results showed that AI can be used as a source of isoflavone supplementation in chungkukjang.

Effects of Green and Taste Teas on the Growth and Vacuolating Toxin Titer of Helicobacter pylori (녹차 등의 기호차가 Helicobacter pylori의 증식 억제와 공포화 독소 역가에 미치는 영향)

  • This study was undertaken to evaluate the effects of green and taste teas on the in-vitro antimicrobial activity and vacuolating toxin titer of Helicobacter pylori. Crude aqueous extracts prepared by adding 2 g of tea leaf or powder to 100 ml of boiling distilled water, and sterilized by passing through a 0.22 $mutextrm{m}$ membrane filter. Green tea, coffee, and ginger tea showed bactericidal activity on H. pylori within 3 hours. Black tea and ssangwha tea also showed bactericidal activity on H. pylori in 24 hours. Arrowroot tea show no bactericidal effect on H. pylori after 48 hours. Two fold diluted green tea and coffee decreased(1/10,000cfu) the growth of H. pylori in 24 hours, but the two fold diluted black tea, ssangwha tea, and ginger tea showed suppression effect upon of(1/10cfu) H. pylori in 24 hours. The two-fold and 10-fold diluted green tea, coffee and two-fold diluted black tea abrogated the vacuolating toxin titer of H. pylori, but the two-fold and 10-fold diluted ginger, ssangwha, ginseng, and arrowroot tea only reduced the vacuolating toxin titer of H.pylori from 1/2 to 1/8. These result suggest that green tea and coffee have effective antibacterial or bactericidal effects on H.pylori, and that they also have a neutralization effect upon the vacuolating toxin of H.pylori.

Development of Formulation of Ten-bag Type Garlic Tea (마늘분말을 이용한 간편한 tea-bag형 침출차의 개발)

  • This study was carried out to establish the manufacturing formulation of tea-bag type garlic tea. In order to eliminate of garlic-specific odor and taste, the masking effect of various additives against garlic flavor was determined with sensory evaluation. Leaves of green tea, arrowroot and Solomon's seal were screened as highly effective auxiliary ingredients in garlic tea. When two materials among the selected three auxiliary materials were mixed the same percentage, overall flavor of garlic tea synergistically was enhanced. The optimum concentration of garlic powder and stevioside as a sweetener were 20∼30% and 1%, respectively. Therefore, three types formulation of garlic tea was establish. When the color, turbidity and total solid concentration of three formulated garlic teas were compared with those of commercially available formulated green tea containing unpolished rice, the latter was more yellowish color and the former was more superior to turbidity and total solid concentration.

Antimicrobial Activity of Exracts from Spices on Lactic Acid Bacteria Related to Kimchi Fermentation (김치발효 관련 젖산균에 대한 향신료의 항균력)

  • Antimicrobial activities of the extracts from spices microorganisms related to kimchi fermentation were investigated. 32 kinds of spices such as allspice, mount, basil, bay leaves, caraway, cardamon, celery, chilli powder, chives, cinnamon, clover, coriander, cumin, dill, fennel, garlic, horseradish, marjorarm, mugwort, mustard, nutmeg, onion, oregano, paprika, parsely, pepper, peppermint, rosemary, sage, tarragon, thyme and tumeric were extracted with water, ethyl ether, ethyl acetate and ethanol. Fractions were tested for antimicrobial activities against Lactobacillus plantarum and Leuconostoc mesenteroides, The extracts of 28 kinds of spices except caraway, cardamon, paprika and tarragon by water extraction, those of 29 kinds except arrowroot, paprika and tarragon by ethyl ether extraction, those of 30 kinds except paprika and tarragon by ethyl acetate extraction, and those of 29 kinds except clover, paprika and tarragon by ethanol extraction showed strong antimicrobial activities against Lactobacillus plantarum. On the other hand, the extracts of 28 kinds of spices except caraway, cardamon, paprika and thyme by water extraction, those of 27 kinds except cardamon, cumin, paprika, tarragon and thyme by ethyl ether extraction, thou of 30 kinds except paprika and thyme by ethyl acetate extraction, and those of 28 kinds except cardamon, cumin, paprika and thyme by ethanol extraction showed strong antimicrobial activities against Leuconostoc mesenteroides.

Purification and Some Properties of Polyphenol Oxidase from Arrowroot (칡 뿌리의 Polyphenol Oxidase의 정제 및 성질에 관한 연구)

  • Acetone powder was prepared from raw arrowroots and the polyphenol oxidases of crude enzyme prepared from acetone powder were identified 5 isoenzymes by staining with catechol containing 0.05% phenylene diamine. The crude enzyme was passed through the columns of ion exchangers and gel permeation to fractionate the polyphenol oxidases. The main fraction of polyphenol oxidase appeared to be purified by 94-fold, with the activity yield of 45.4%, and its molecular weight was determined as 38,500 by poly acrylamide gel electrophoresis. The optimal pH and temperature for the enzyme activity were pH 7.5 and $50^{\circ}C$, respectively. The purified enzyme showed a high affinity for catechol and pyrogallol. The Michaelis constant for catechol was calculated to be 16.67mM according to the Lineweaver-Burk method. The enzyme activity was strongly inhibited by L-ascorbic acid, sodium bisulfite, EDTA and KCN, and totally inhibited, by $Fe^{3+}$ at a concentration of 1mM. However the enzyme was activated by $Zn^{2+}$ approximately 1.7 times at the same concentration.
