  • The Aroma components analysis of raw and boiled mushroom (Agaricus bisporus) by GC, GC-MS is as follows; 1) The volatile aroma component of raw mushroom was identified as 13 Kinds, ana among them, 4 Kinds of aroma component such as 1-octen-3-ol (73.13%), 2-octenol (7.44%), 3-octanone (3.09%), 3-octanol (1.42%)-consists 85.08% of total aroma component. 2) Meanwhile, the volatile aroma component of toiled one was indentified as 13 Kinds and 5 of them 1-octen-3-ol (68.86%), 2-octenol (8.42%), 3-octanone (3.15%), Benzyl alcohol (3.23%), 3-octanol (1.97%)-consists 86.23% of total aroma component.

  • The aroma component analysis of raw and cooked Korean edible mushroom (Trichloma matsutake) by GC, GC-MS is as follows; 1) The volatile aroma component of raw mushroom is identified as 13 kinds, and among them, 4 kinds of aroma component such as 1-octene-3-ol (73.95%), methyl cinnamate (12.52%), 2-octanol (7.62%) and octyl alcohol (2.78%)-consists 95.87% of total aroma component 2) Meanwhile, The volatilearoma component of cooked one is identified as 9 kinds and 4 of them-1-octen-3-ol (64.94%), methyl cinnamate (22.03%), 2-octanol (7.68%), and octyl alcohol (3.31%)-consists 89.61% of total aroma component. 3) The major composition of aroma component of both raw cooked ones are carbonyl compounds and alcohols. Their number of carbons is $C_8$ short chain aliphatic compounds.

  • The aroma components analysis of raw and boiled mushroom (Lentinus edodes) by GC, GC-MS is as follows; 1) The Volatile aroma component of raw mushroom was identified as 10 Kinds, and among them, 4 Kinds of aroma component such as 1-octene-3-ol(71.05%), ethyl acetate(1.17%), 2-octenol(1.22%) and octyl alcohol(1.05%)-consists 74.47% of total aroma component. 2) meanwhile, The Volatile aroma component of boiled one was identified as 8 kinds and 5 of them 1-octene-3-ol(83.68%), ethylacetate(2.24%), 2-octenol(1.55%), octylalcohol(1.28%) and 1,2,4-trithiolane(1.91%)-consists 90.56% of total aroma component. 3) 1,2,4-trithiolane and 1,2,4,5-tetrathiane were proved to be a characteristic aroma component as sulphur compounds in Lentinus edodes.

  • The aroma component analysis of raw and cooked Korean edible mushroom (pleurotus ostreatus) by GC, GC-MS is as follows; 1) The volatile aroma component of raw mushroom is identified such as 3-octanol (46.01%), 3-octanone (18.75%), 1-octen-3-01 (15.39%), isobutyl alcohol (3.48%), and isoamyl alcohol (3.07%) consists 89.04% of total aroma component. 2) Meanwhile, the volatile aroma component of cooked one is identified as 16 kinds and six of them 1-octen-3-ol (66.50%), 3-octanol (10.99%), 3-octanone (9.77%), 1-octene-3-one (1.23%), octyl alcohol (1.12%), and octanol (0.96%) consists 89.61% of total aroma component. 3) The major compositions of aroma component of both raw and cooked ones carbonyl compounds and alcohols. Characteristic Classification of Aroma Oil with Gas Sensors Array and Pattern Recognition (가스센서 어레이와 패턴인식을 활용한 아로마 오일의 특성 분류)

  • An evaluation system for an electronic-nose concept using three types of metal oxide gas sensors that react similarly to the human olfactory cells was constructed for the quantitative and qualitative evaluation of aroma fragrances. Four types of aroma fragrances (lavender, orange, jasmine, and Roman chamomile), which are commonly used in aromatherapy, were evaluated. All the gas sensors reacted remarkably to the aroma fragrances and the good correlation of r=0.58-0.88 with the aromatic odor intensities by olfaction was confirmed. From the results of the analysis of an electronic-nose concept for classifying the characteristics of aroma oil fragrances, aroma oils could be classified using the fragrance characteristics and oil extraction methods with the cumulative variability contribution rate of 95.65% (F1: 69.65%, F2: 26.03%) by principal component analysis. In the pattern recognition based on the artificial neural network, the four aroma fragrances were 100% recognized through the training data of 56 cases (70%) out of 80 cases, and the pattern recognition rate was 57.1%-71.4% through the validation and testing data of 24 cases (30%). The pattern recognition success rate through all confusion matrices was 82.1%, indicating that the classification of aroma oil fragrances using the three types of gas sensors was successful.

Analysis and Evaluation of Degrees of Contribution of Aroma Components in Hongro Apples (홍로사과의 향에 영향을 주는 향 성분 분석과 기여도 평가)

  • In this study, "Hongro" apples for test samples were selected from a market for aroma analysis. Analysis was done after 1 hr, in a forming headspace while maintaining a temperature of $25^{\circ}C$. First, the complex aroma of the apples was assessed by a Direct Sensory Method. Secondly, the complex aroma was analyzed under individual aroma conditions separated by GC/FID/Olfactometry. Finally, aroma component analysis by GC/MS was performed. Degrees of contribution of aroma components were evaluated by an aroma value calculation considering aroma duration time, frequency, and intensity. The contribution rate (%) of the aroma induction component influencing apple aroma was determined by aroma component analysis and aroma contribution degree. As a result, it was found that the top four components were as follows, by contribution rate (%): acetic acid (23%), 1-hexanol (16%), butyl ethanoate (13%), 4-methoxy-2-methylbutane (9%). These four components constitute the complex aroma tested by the direct sensory method, and was largely recognized by the apple aroma test panel. Consequently, it was found that these components are the key factors in apple aroma. If the mechanism of formation of these components can be found, it could have a significant influence on consumers' acceptance of new varieties of apples.

The Aroma Components of Green Tea, the Products of Mt. Chiri Garden (지리산 녹차의 향기성분)

  • The aroma components of Korean green tea in the south western part of Mt. Chiri prepared by the traditional method from native variety were analyzed using GC and GC-MS. The patterns on GC chromatograms of the three samples from the flushes plucked in early spring were similar, though they are prepared by different producers in the area of Hadong-kun, Kyung sang nam-do. A total of 51 aroma compounds were identified in all samples. Main component in the aroma compounds of these teas were geraniol, benzyl alcohol, 2-phenylethanol, $\beta$-ionone, benzyl cyanide and linalool oxides. The aroma components of green teas manufactured by the different plucking periods were also compared. The amounts of geraniol, typical rose floral aroma were particularly decreased in the final plucking period. The amounts of pyrazines and furfuryl alcohol, typical roasted aroma and nutty aroma were slightly increased in later plucking period.

Chemical and Sensory Characterization of Korean Commercial Rice Wines (Yakju)

  • Chemical and sensory profiles of 5 Korean commercial rice wines (yakju) were developed using descriptive, physicochemical, and volatile analyses. Color, 6 aroma, and 5 taste attributes of these rice wines were evaluated by a panel of 13 judges. Sample wines were analyzed for titratable acidity, ethanol content, pH, Hunter colorimeter value, organic acids, and free sugars. Volatile analysis of the samples revealed the presence of 2 acids, 7 alcohols, 19 esters, and 5 miscellaneous compounds. Based on principal component analysis of the descriptive data, rice wines were primarily separated along the first principal component, which accounted for 57% of the total variance between the rice wines with high intensities of 'color' and 'sweet aroma' versus 'ginseng' aroma.

Sensory Profiling of Commercial Korean Distilled Soju (시판 증류식 소주의 관능특성 분석)

  • The sensory characteristics of nine commercially distilled soju samples were determined by sensory descriptive analysis. Eight aroma attributes, as well as four flavor/taste attributes, and six mouth-feel related attributes were evaluated by 9 judges. The descriptive data set was initially analyzed for a significant overall product effect by employing a three-way mixed model analysis of variance (judges, samples, and replications) as well as two-way interactions, with judges treated as random. In addition, correlations between mean attribute ratings were calculated, and a principal component analysis (PCA) of the mean attribute ratings employing the covariance matrix was conducted. Based on the PCA, distilled soju samples were primarily separated along the first principal component, which accounted for 66% of the total variance between the samples, with high intensities of 'alcohol taste' and 'alcohol aroma' versus 'yeast aroma'. The second principal component accounted for 14% of the total variance. Soju containing high alcohol showed stronger intensities of 'bitterness', 'alcohol taste', 'alcohol aroma', as well as all mouth-feel attributes.

Aroma and Quality Characteristics of Cheongporang White Wines using Grapes at Different Stages of Ripening (포도 숙성 정도에 따른 청포랑 화이트 와인의 향기 및 품질 특성)

  • To investigate the aroma and quality characteristics of wine bestowed by the degree of ripening of Cheongporang grapes, the general quality composition, color, organic acid, physiological activity, aroma component and sensory evaluation were analyzed. The general characteristics of the wine assessed were pH 3.34~3.50, total acidity 0.46~0.67%, color intensity 0.074~0.116, lightness 98.99~99.74, redness -0.39~0.01, and yellowness was 1.52~3.10. Malolactic fermentation was not relative to the contents of malic acid and lactic acid. The total polyphenol content and antioxidant activity were lowest in C3 wines made with ripe grapes and highest in C4 wines made with mixed grapes. Aroma analysis identified 6 alcohols, 15 esters and 5 miscellaneous compounds. Compounds with higher odor activity value (OAV) were 3-methyl-1-butanol, ethyl butanoate, isopentyl acetate, ethyl hexanoate, ethyl octanoate, ethyl decanoate and octanoic acid. The C4 wine, a mixture of grapes with different degrees of ripening, had the highest ester content and ratio. The lowest values were found in the C3 wine made with ripe grapes. Results of the sensory evaluation related the C4 wine, containing a large amount of ester compounds having high OAV values as the aroma component, as the best and most preferred wine.
