In this study, Green apple from Mungyeong area was used as material in the fermentation process. In apple fruit growing process, to produce a high quality apple fruit, some Green apple should be removed. Since the removed Green apple fruit is inedible, it doesn't have any economical value. To solve this problem, this paper proposed fermentation process to increase the economical value of raw apple as a fermentation product. This research conducted seven days, and the pH and brix value analysis was done every 12 hours during fermentation process. The experimental results show that the fermentation product under blender treatment is better than cutting treatment and without cutting treatment. Initial brix 25% is the best treatment for fermentation because produce fermentation product with a good taste and aroma than other treatment.

Two different pest control programs were applied on 8-year-old 'Ryoka'/M.26 apple trees (Malus domestica Borkh.). Lime sulfur or Bordeaux mixture with emulsified oil were applied 12 times from late March to mid-September as organic treatment, and synthetic chemicals were 7 times applied as control treatment. Over the entire apple-growing season, photosynthesis rates of apple trees were significantly lower in the organic treatment than in the control, and this photosynthetic differences were larger in July and August. Photosynthesis-related parameters such as stomatal conductance and transpiration behaved similarly to photosynthesis. The leaf area in the organic treatment was significantly smaller ($24.7cm^2$) than that in the control treatment ($30.7cm^2$). Organic leaves contained significantly less Chl. a ($15.5mg{\cdot}g^{-1}$) than did control leaves ($17.6mg{\cdot}g^{-1}$). Fruit yield per tree was significantly lower in the organic treatment (18.8 kg) than in the control (24.5 kg), because organic fruits experienced a higher rate of disease infection such as white rot (Botryosphaeria dothidae) and bitter rot (Glomerella cingulata) than did control fruits. Organic fruits had high flesh firmness but less color development (lower Hunter's a values). In this experiment, the pest control program with frequent applications of organic fungicides showed negative effects on photosynthesis and disease infection on leaves and fruits, and thus reduce the fruit quality and yield in 'Ryoka'/M.26 apple trees.
This study investigated the changes in planting environment and growing conditions of 'Arisoo' apple trees under shading net treatments. Apple tree canopies were fully covered with Blue (blue color net, mesh size: 4 mm × 5 mm), Black-A (black color net, mesh size: 4 mm × 5 mm), Black-B (black color net, mesh size: 5 mm × 6 mm), and uncovered trees were used as the control. Inside the tree canopies, the illuminance was observed as 100% (85.0 Klux) in the control, but it decreased to 75% (64.3 Klux) in the Blue, 73% (63.0 Klux) in the Black-A, and 77% (65.9 Klux) in the Black-B nets, respectively. The solar irradiance was observed as 755 w·m-3 in the control, but it was decreased to 715 w·m-3 in the Blue, 624 w·m-3 in the Black-A, and 647 w·m-3 in the Black-B nets, respectively. The average daily temperature was observed to be the highest in the Black-A net (31.8℃) while it was observed to be around 30.0℃ in the control, Blue, and Black-B nets. In addition, the average fruit surface temperature was observed to be the highest (39.4℃) in the control, but it was decreased to 38.1℃ in the Blue, 37.3℃ in the Black-A, and 39.0℃ in the Black-B nets. However, the average soil temperature, the shoot growth rate, and leaf SPAD values were not different in all the treatments. Fruit sunburn disorders were the highest in the control while it was observed to be lower in the fruits from trees covered with the shading nets. However, at harvest, the fruit quality parameters were not different in all the treatments. Overall, this study suggests that the apple trees covered with the shading nets reduced the illuminance, solar irradiance, fruit surface temperature, and fruit sunburn disorders. However, the shading nets did not affect tree growth and apple fruit quality.
The objectives of this study were to examine the ability to predict soluble solid and firmness in intact apple based on the visible/near-infrared spectroscopic technique. Two cultivars of apples, Delicious and Gala, were handled, tested and analyzed. Reflectance spectra, Magness-Taylor (MT) Firmness, and soluble solids in apples were measured sequentially. Maximum and minimum diameters, height, and weight of apples were recorded before the MT firmness tests. Apple samples were divided in to a calibration set and a validation set. The method of partial least squares (PLS) analysis was used. a unique set of PLS loading vectors (factors) was development for soluble solid and firmness. The PLS model showed good relationship between predicted and measured soluble solids in intact apples in the wavelength range of 860∼1078 nm. However, the PLS analysis was not good enough to predict the apple firmness.
After identifying species by collecting the suspended and attached algae mat inhabiting in the slow sand-filter, Spirogyra sp., Mougeotia sp. and Closterium sp. were main green algae and Synedra sp. was diatom algae. Among them green algae Spirogyra sp. was dominant species. A result of observing the life mode of apple snail for a month after introducing into the slow sand-filter, apple snail eggs were discovered on the filter walls 2 weeks after introducing, 4 weeks later lots of eggs were observed all of the slow sand-filter walls, it means there is no problem for apple snail to live in the slow sand-filter. The observation result for algae removal potential by introduced apple snail after 2 months later, slow sand-filter where apple snail were introduced, a few algal mat were observed. On the other hand, no introduced apple snail into the slow sand-filter, lots of suspended algal mats were formed in the water and attached algal mats on the sand surface as well, these algal mat induced much of operating problems.
본 연구는 갈색날개매미충의 기계유유제 처리 방법별 부화율과 산란에 의한 사과 열매의 품질 변화에 대해 조사하였다. 기계유유제 처리 효과를 보면 기계유유제 20배를 도포한 것이 평균 0.57%로 가장 적은 부화율을 보였고, 분무한 가지에서는 평균 1%의 부화율을 보였다. 기계유유제를 50배 도포 처리시 부화율이 약 35%를 보인반면 분무처리는 약 77%를 보여 편차를 고려하면 무처리와 차이가 없는 것으로 보인다. 홍로와 후지 품종에서 갈색날개매미충이 산란한 결과지와 산란되지 않은 결과지에 이듬해 사과 열매가 결실되어도 과실의 품질 차이는 통계적 유의성은 없었다. 또한 갈색날개매미충의 산란에 의한 가지의 부러짐도 없었고, 결과지 생육도 통계적 유의성은 없었다.
농가생산 사과장아찌의 품질개선을 위한 기초 자료로 제공하고자 농가생산 사과 장아찌와 시판 장아찌 11종을 대상으로 품질인자에 대한 특성을 조사하였다. 장아찌의 수분함량은 간장 및 식초 절임 장아찌가 각각 74~84%, 81~91%, 된장 절임 장아찌가 89% 그리고 고추장 절임 장아찌가 38~64%였다. 무 고추장 장아찌의 수분함량은 57~64%이었으며, 사과 고추장 장아찌는 48%로 무장아찌에 비해 낮았으나 고추장 절임을 한 감(38%)과 매실(39%)장아찌에 비해 다소 높았다. 장아찌의 적정 숙성기간을 나타내는 지표인 pH 및 적정산도는 각각 pH 3.4~5.6, 0.03~0.14%로 조사되었다. 무장아찌의 pH는 5.2~5.6 이었으며, 오이, 감, 매실, 사과장아찌의 pH는 각각 3.4~4.1, 4.1, 3.5, 4.1로 비슷하였다. 이는 전통장아찌(pH 3.03~5.36)와 비교하여도 적정한 범주에 있는 것으로 판단되었다. 사과장아찌의 당도는 30%로 고추장 무장아찌에 비해 12~18% 높았으나 감장아찌(39%)와 매실장아찌(49%)에 비해서는 다소 낮았다. 장아찌의 염도는 절임원에 따라 간장(6~13%), 된장(7%), 고추장(3~4%) 순으로 낮게 나타났다. 사과장아찌의 염도는 3.28로 간장 및 된장을 절임원으로 사용하여 상업적으로 생산된 제품에 비해 저염인 것을 확인 할 수 있었다. 색도 측정결과 사과장아찌의 명도(54.70)는 오이장아찌(50.86, 56.02)와 비슷하였으며, 적색도 및 황색도는 각각 16.21, 26.78로 무 고추장 장아찌의 적색도(7.27~11.23)와 황색도(10.62~14.69)에 비해 높았다. 관능적 특성은 무, 오이장아찌와 함께 색, 향, 맛 각각 7.00, 7.50, 7.00 점으로 기호도가 높은 것으로 평가되었다. 반면 전체적인 선호도는 6.83점으로 매실이나 무장아찌에 비해 점수가 낮았다. 전체적으로 아삭아삭한 씹힘성이 있는 장아찌를 선호하는 경향에 기인한 것으로 보이며 사과장아찌의 조직감을 개선할 필요가 있다고 판단된다.
본 실험은 '후지'/M.9 사과나무의 갈색무늬병에 의한 낙엽 정도가 수체생장과 과실품질에 미치는 영향을 조사하고자 실시하였다. 갈색무늬병에 의해 9월말 수관 전체 낙엽율이 10% 이상 되면 가용성고형물 함량이 감소되었고, 30% 이상이면 평균과중이 감소되었다. 과실의 착색과 전분 함량은 과실 주변 잎들의 낙엽 정도가 심해질수록 감소되는 경향을 나타내었다. 이듬해 개화율 및 과중, 총신초장은 전년도 낙엽율이 높을수록 감소되는 경향이 있었다. '후지'/M.9 사과나무의 과대지에서 갈색무늬병의 발생이 없는 잎은 9월 말에도 광합성속도를 약 $10{\mu}mol{\cdot}m^{-2}{\cdot}s^{-1}$ 이상 유지하여 9월 말 이후의 과실비대 및 가용성고형물 함량 증가에 영향을 미쳤다. 9월말 갈색무늬병반이 전체 잎면적의 50% 이상을 차지한 잎의 광합성속도는 건전한 잎의 30% 수준이었다. 결론적으로 낙엽구들의 과실품질 감소는 과실 내 전분 감소에 의해서 이며, 과실 내 전분 감소는 갈색무늬병에 의해 과실주변 잎들의 광합성속도가 8월 이후부터 감소되었기 때문이었다.
The management standard on soil conditions in 'Fuji' apple to produce high quality fruit were not yet made. Therefore, this study was carried out to investigate the optimum soil environmental conditions of ten contents on production of high quality fruit in 'Fuji' apple. The soil and fruit characteristics were analyzed at total 60 orchards in major apple producing areas such as Chungju, Moonkyeung, yeongju, andong, yeosan and yeongcheon (10 orchards an area). The soil environmental factors affected fruit weight was highest relative contribution in saturated hydraulic conductivity of 36.5%. The bulk density and soil pH were low as relative contribution. The fruit weight was influenced by soil physical properties more than soil chemical properties. The soil environmental factors affected sugar content were hydraulic conductivity of 28.3% and organic matter content of 18.2%. The cultivation layer depth and soil pH were low as relative contribution. The fruit coloring was highest relative contribution in saturated hydraulic conductivity 55.9%. while soil pH, cation and soil texture were low. Fruit coloring was high influenced over 70% by soil physical properties. Finally, relative contribution on fruit quality related with sugar content, fruit weight, and coloring were high influenced by saturated hydraulic conductivity of 21.% and organic matter content of 18.7% but bulk density and cultivation layer depth were low relative contribution. The fruit growth and saturated hydraulic conductivity in 'Fuji' apple were very closely related. Therefore, orchard soil management to produce high quality fruit was very importance drainage management and organic matter application. We concluded that scientific soil management is possible by qualifiable of soil management factors.
