Physical Characteristics and Antioxidative Capacity of Major Seaweeds

  • Seaweeds is a rich sources of dietary fibers exerting a number of physiological properties. However, the reported dietary fiber contents of seaweeds are not consistent and vary widely. Also. a limited number of studies on the biological effects of specific seaweeds have been reported. In this study, water-holding capacity, viscosity and antixidantive activity of major dietary seaweeds were measured to assess their physiological effects. Results showed that total dietary fiber contents ranged from 28 to 51% of dried weight, and large proportions of dietary fiber were insoluble fibers. Water-holding capacity was highest in sea mustard being 1310% , while laver, sea tangle, and green laver exhibited 943, 854 and 815%, respectively. The viscosity of seaweed samples was 20 to 40 cP in sea mustard and sea tangle, while laver and green laver possessed much lower values. All seaweed samples revealed a weak, albeit significant electron donating ability. Also, lipid peroxidation was reduced by 7 to 18%. However, there was no difference in antioxidative activity among seaweeds and sample concernations used. These results imply that most commonly used seaweeds possibly exert parts of their physiological effects through their water-holding, gel-forming , and/or antioxidative activities.

Changes in Biological Activities of Extracts from Herbal Chokong Pills by Manufacturing Stages (한방초콩환의 제조단계에 따른 추출물의 생리활성 변화)

  • Objectives : This study was conducted to evaluate the antioxidative and anticancer activity of the water and ethanol extracts from pickled soybean products by manufacturing stage. Methods : Yakkong (YK) was pickled for 15 days to prepare Chokong (CK) and Chokong pills (CKP) were mixed Chokong (CK) powder with vinegar. Herbal Chokong pills (HCKP) were made by addition five kinds of medicinal herbs to Chokong. Pickled soybean products by each manufacturing process were extracted with distilled water and 70% ethanol, and the extracts were tested for their antioxidative and anticancer activities. Results : The highest electron donating abilities (EDA) of the water and ethanol extracts were from HCKP among pickled soybean products and those were 81.2% and 91.5% at 1,000 $\mu$g/mL, respectively. The ethanol extracts of pickled soybean products had higher activities of EDA and superoxide dismutase (SOD) than water extracts. The highest anticancer activity was the water extracts of HCKP against both of MDA and A549 cells. Conclusions : These results suggest that herbal Chokong pills (HCKP) can be used as natural antioxidant to prevent oxidative damage in normal cells probably because of their antioxidative characteristics.

Physicochemical and Sensory Characteristics of Pickled Hen Egg and Its Calcium Content and Antioxidative Activity

  • Pickled hen egg dipped in brewed apple vinegar for 7 and 14 days was prepared and changes of weight, pH, viscosity, calcium content, antioxidative effect, and sensory characteristics were determined. During a pickling, the egg weight was increased from 62.03 g at day 0 to 91.13 and 94.93 g at day 7 and 14, respectively. The pH of the egg white and yolk, initially at pH 10.24 and 6.56, was decreased, while that of the pickling solution was increased by the pickling days. Viscosity of the pickled egg white was significantly decreased with the pickling days (p<0.05). Significant antioxidative effect was found from the pickled egg mixture (egg white:yolk=1:1). Calcium content of the egg white after 7 and 14 days of the pickling was 280-300 times higher than the fresh egg white and 1.9 times higher than fresh egg yolk. Addition of plain yogurt and honey improved the sensory quality of a pickled egg and was able to mask the unpleasant sour taste. Results suggest that, in addition to the use of pickled egg by itself, egg-based foods such as mayonnaise with enforced calcium content can be developed using a pickled egg.

Separation and Characteristics of Antioxidative Substances in Fermented Soybean Sauce (양조간장으로부터 항산화성 물질의 분리 및 그 특성)

  • Fermented soybean sauce was fractionated by gel filteration chromatography and the physico-chemical properties of each fraction were investigated for the study on the separation and characteristics of antioxidative substances in the soybean sauce. The brown coloured melanoidin fractions(MF-I) collected by Sephadex G-10 column were found to contain nitrogeneous compounds and to have strong antioxidative activity and reducing power. The freeze dried MF-I was further fractionated with Sephadex G-50 and G-100 successively and then MF-II and MF-III fractions were observed to be the most effective antioxidant and reducing power among the fractions. The UV-VIS and IR absorption spectra of the each fraction were also determined and discussed.

Radiolytic and Antioxidative Characteristics of Phytic Acid by Gamma Irradiation (방사선 조사에 의한 Phytic Acid의 분해특성 및 항산화 활성)

  • Radiolytic characteristics of phytic acid by gamma irradiation were investigated, and the antioxidative activity between irradiated phytic acid and commonly used antioxidants including ascorbic acid, tocopherol and butylated hydroxyl anisole (BHA) was evaluated. Phytic acid sodium salt dissolved in a deionized distilled water was irradiated at 0, 5, 10, 15 and 20 kGy. It was found that the level of irradiation had an effects on the degree of degradation. After irradiation, stable DPPH radical scavenging capacity of phytic acid was newly observed, and it was significantly increased by dose-dependent manners (p<0.05). Antioxidant activity of phytic acid in the oil models was higher than that of the other antioxidant during storage, and phytic acid (400 $\mu\textrm{g}$/mL) irradiated at 20 kGy especially showed the highest antioxidative ability among the antioxidants tested during 3 weeks. Results indicated that irradiation induced the radiolysis of phytic acid in an aqueous model system, and the antiradical and antioxidative activities of irradiated phytic acid increased.

Fermentation Characteristics and Antioxidative Effect of Red Mustard Leaf Kimchi (적갓김치의 발효특성 및 항산화성)

  • Fermentative and antioxidative characteristics of red mustard leaf (RML) kimchi, a traditional, fermented Korean vegetable food, were investigated. For the study, RML kimchi was made of RML, with green onion, red pepper, garlic, ginger, and sugar, and fermented at 15$^{\circ}C$. The pH was decreased and total acidity was increased during fermentation. The contents of reducing sugar, total vitamin C, and total Phenol content were 2.36%, 65 mg%, and 59 mg% at the initial stage. Although the content of reducing sugar decreased gradually during fermentation, however, the quantity of ascorbic acid decreased with the tendency of slightly increased at 6 days, and the amount of total phenol was increased. CIE L*, a*, b*values were increased until 6 days of the fermentation. In order to determine the antioxidative activity of RML kimchi itself, the model systems of RML kimchi were made with cooked beef. TBA values of RML kimchi which was fermented for 6 days showed the lowest level in model systems. Water, n-hexane, methanol extracts of RML kimchi had a considerable antioxidative activity with the inhibition of formation of peroxide during the autoxidation of linoleic acid mixtures in aqueous model systems.

Antioxidative Activities of Anthocyanins in Red Mustard Leaf Kimchi (적갓김치 Anthocyanins의 항산화 특성에 관한 연구)

  • Red mustard leaf (RML) kimchi was prepared with native Brassica juncea czerniak et coss as a major raw material and antioxidative characteristics of crude anthocyanin (CA)/refined anthocyanin (RA) isolated from RML kimchi were studied. Among crude pigment fractions, CA fraction showed a higher inhibition rate of peroxide formation in linoleic acid autoxidation system. These effects seemed to be increased with the increase of CA concentration. CA also was considered to have a role of electron donor by the experiments using DPPH ($\alpha$, $\alpha$'-diphenyl-$\beta$-picrylhydrazyl) reaction. Furthermore, various RA fractions had a higher antioxidative activity and especially RA-fraction 3 demonstrated the highest score of the antioxidative characteristics in terms of the prevention of lipid peroxidation and scavenging of free radicals.

A Study on the Antioxidative Effect and Quality Characteristics of Cookies Made with Lycii fructus Powder (구기자를 첨가한 쿠키의 품질특성과 항산화효과)

  • The purpose of this study was to investigate the antioxidative effect and quality characteristics of cookies made with Lycii fructus powder(LFP). The cookies were stored at $50^{\circ}C$ for 40 days. The LFP additive increased the moisture, ash, crude protein and volume of the cookies. When LFP was added at $5\%$ into the cookies, the spread ratio was higher than for the control, the $10\%$ and the $20\%$ LFP cookies. As more LFP was added, the L-value decreased, and the a--values and b-values increased for the color values. For the textural characteristics, springiness and cohesiveness of the control cookies were the highest among the samples, the other side, brittleness and gumminess were higher in cookies made with LFP than in the control cookies. Overall, the cookies made with $5\%$ LFP were preferred more than the other cookies, as tested forby sensory evaluation. The cookies made with LFP contained mostly palmitic acid (C16:0) followed by oleic acid (C18: 1) and stearic acid (C18:0). The acid value, peroxide value, and thiobarbituric acid value were lower in cookies made with $5\%$ and $10\%$ LFP than in those cookies made with $20\%$ LFP and the control cookies.

Antioxidative Activities of Pine Needles and Quality Characteristics of Korean Wheat Noodle with Pine Needle Powder (솔잎의 항산화활성 및 솔잎분말을 첨가한 우리밀국수의 품질특성)

  • This study examined antioxidative activities and quality characteristics of noodle produced with the pine needle powder as 0.5, 1.0 and 2.0% (v/v to korean wheat powder). DPPH radical scavenging activity, reducing power, antioxidative activities, tyrosinase inhibitory activity of the solvent fraction extracts increased in a dose-dependent manner. Especially, butanol fraction showed high DPPH radical scavenging activity, reducing power, antioxidative activities and tyrosinase inhibitory activity. The weight, volume, water absorption and turbidity of cooked noodles containing pine needle powder increased as pine needle powders were higher. When the amount of pine needle powder increased, the Hunter L (lightness) and a (redness) value of cooked noodles decreased, but b (yellowness) value increased. The texture of noodle containing pine needle powder have decreased than control using only Korean wheat powder in hardness, cohesiveness, springiness, gumminess and chewiness. The results of sensory evaluation of cooked noodles containing pine needle powder indicated that the cooked noodles with 1.0% pine needle powder showed the highest value.

Antioxidative Effect and Characteristics of Different Model Melanoidins with Same Color Intensity (색도를 동일하게 조정한 Model Melanoidin들의 항산화효과 및 특성)

  • Three kinds of model melanoidins adjusted to have the same brown color intensity were made from glucose-glycine, glucose-lysine, xylose-arginine and their antioxidative properties were determined. The antioxidative activities of these model melanoidins in linoleic acid emulsion system were determined by ferric thiocyanate method, conjugated diene contents, peroxide value and electron donating ability by DPPH. Xylose-arginine melanoidin showed the strongest antioxidative activity and electron donating ability. The antioxidative effect of melanoidin could be reliably predicted by determining peroxide value and DPPH method. Each melanoidin was separated on Sephadex G-50 column, and brown color intensity, reducing power, ninhydrin positive reaction and antioxidative activity of each fraction were determined. The antioxidative activities of melanoidin fractions showed strong correlation with their brown color intensity and especially to their reducing power. In spite of same brown color intensity, there is no big differences between these model melanoidins, thus xylose-arginine showing strongest antioxidative activity followed by glucose-lysine and glucose-glycine melanoidin. Xylose-arginine melanoidin also showed the strongest electron donating activity and broad range of reducing power when fractionated on Sephadex G-50, which was different tendency from the other model melanoidin.
