  • The objective of this study was to evaluate whether nutrient intakes and serum biochemical indices are associated with the skin condition of humans. Anthropometric data, skin surface hydration, ceramide content, dietary intake of nutrients and serum lipids (total cholesterol, HDL-, LDL-cholesterol, TG, MDA: malondialdehyde, TAS: total antioxidant status) were obtained from 36 healthy young women. Subjects were classified into 2 groups {LM: Low Moisture Group (n = 20) , HM: High Moisture Group (n = 16)} by forehead skin hydration. The results of this study were as follows: The average age, BMI, total body water, LBM, body fat$\%$, WHR, forehead hydration, ceramide content were 20.2 yrs, 20.7, 28.81, 39.2 kg, $28.0\%$, 0.8, $44.3\%$, and 1.05 $\mu$g/$\mu$g protein, repectively. The intakes of SF A (saturated fatty acid) , MUFA (monounsaturated fatty acid) in the HM group were significantly higher (p < 0.05) than in the LM group, but zinc intakes in the LM group were higher than in the HM group. Serum levels of TAS in the LM group (1.27 mmol/l) were significantly higher (p < 0.05) than that of in the HM group (1.20 mmol/l). Whereas other lipid levels were not significantly different, intakes of vitamin $B_{6}$ and folate showed significant positive correlation with the forehead hydration (r = 0.447, r = 0.377). Intakes of calcium and phosphorus showed significant negative correlation with forearm ceramide content (r = -0.496, r = -0.485). Several associations between nutrient intakes and skin conditions were observed, indicating that changes in baseline nutritional status may affect skin health.

  • The objectives of this study were to assess food behavior and nutritional status of preschool children by using the Nutrition Quotient (NQ) for children and children's growth index. The subjects for this study were 424, 5-year old children, who enrolled in child-care centers (n = 219) and kindergartens (n = 205) in Nowon-gu, Seoul. The NQ was examined by NQ questionnaire which consisted of 19 food behavior checklist items. Their items were grouped into 5 categories: balance, diversity, moderation, regularity, and practice. Children's anthropometric measurements were performed by using InBody J05. All data were statistically analyzed by SAS 9.3 and significant difference was evaluated by Student's t-test and ${\chi}^2$-test. The rates of overweight and obesity for subjects were 11.1% and 3.3%, respectively. Total NQ score of the subjects was 65.1, which was within medium grade. The NQ score of kindergartens (66.1) was higher than that of child-care center (64.2), showing significant difference by institution type. In addition, the NQ score of obesity was significantly lower than that of normal weight subjects. The scores of balance (p < 0.05) and regularity factor (p < 0.001) were higher in kindergarten compared to child-care center. Particularly, the frequency of consumption of white milk and Ramyeon was higher (p < 0.001) and lower (p < 0.05) respectively in kindergarten compared to child-care center. Frequencies of meal regularity (P < 0.01) and breakfast eating (p < 0.001) were also higher in kindergarten compared to child-care center. These results indicate that kindergarten's children had better eating habits than those of child-care center. Overall analysis of items for food behavior checklists implies that children in Nowon-gu are short of vegetables consumption. Therefore, children and their parents need proper nutrition education and counseling to correct their eating habits and to improve their nutritional status.

  • Variables affecting bone heath of growing children were analyzed among forty nine 10-12 year old elementary students in three rural regions of north west Chungnam area. Information on age of the parents, duration of breast feeding and birth weight were collected from the guardians of the participants and nutrient intake and diet quality were assessed by average of three-day food records of participants with the help of dietitians. Bone health status was measured by calceneal broadband ultrasound attenuation (BUA) using quantitative ultrasound (QUS). Results showed that anthropometic indexes and nutrient intake levels were not different between boys and girls. However, iron intake was significantly lower in girls than in boys. Girls after menarche showed lower intake levels for thiamin, riboflavin, pyridoxine and niacin than girls before menarche. z-scores of BMI were lower than -1 and higher than +1 showed shorter breast feeding period than others but the difference was statistically non-significant. Overall, the subjects did not consume enough s of calcium, vitamin C and folic acid. Zinc intake and BMI were the most significant factors affecting BUA by the results of backward elimination in multiple regression models. Phosphorous and beta-carotene intakes showed significant negative relation with BUA. This study showed that children living in the rural area of Chungnam need extra care to keep their health and nutrient intakes especially for the nutrients known to affect growth. Tailored nutrition education needs to be more focused on the improvement of bone health status of children.

  • The purpose of this study was to compare the dietary habits, nutrient intake, bone mineral density(BMD) and bone metabolism in Korean male collegians as related to smoking situation. One hundred sixty one young adult males at the age of 20-26 participated in this study. The subjects were divided into four groups: non smoker(n=42), light smoker(n=34), moderate smoker(n=49) and heavy smoker(n=36). The anthropometric characteristics, smoking situations, dietary habits and nutrient intakes were observed. Bone status of the calcaneus was measured by using quantitative ultrasound(QUS). Bone metabolism markers including serum alkaline phosphatase activity(ALP) and N-mid osteocalcin(OC) were analyzed. There were no significant differences in height, weight, BMI, energy and calcium intake among the four groups. Iron intake of moderate and heavy smoker was significantly lower than that of light smoker. Heavy smokers consumed significantly lower vitamin C than moderate smokers, and their coffee consumption and lifetime alcohol consumption were significantly highest among the 4 groups. QUS parameters and serum ALP were not significantly different among the four groups. Serum OC levels were significantly lower in heavy and non smoker group compared to the moderate smoker group. In conclusion, heavy smokers in young male collegians had undesirable lifestyle and dietary habits, like as high consumption of coffee and alcohol, and low intake of Fe and vitamin C. Although, there was no significant difference in their current bone status from the other groups, these undesirable factors with heavy smoking may affect their bone health in the long term.

  • Nutritional assessment for the elderly can identify health status and morbidity. However, development of Nutritional Risk Index (NRI) remains limited for elderly because of difficulties in understanding physiological mechanism of elderly. This study was performed to analyze and develop Nutritional Risk Index for Korean elderly Women (Geriatric Nutritional Risk Index, GNRI). Based on literature review, factors for NRI were identified and indices were assessed by a cross-sectional survey. The survey involved Korean elderly women (${\geq}$60, n = 94) in Gwangju area, and sociodemographics, lifestyle characteristics, health conditions, dietary intakes based on 24h- recall, anthropometric measures (wt, ht, BMI, waist, hip, WHR, body protein, body fat, abdominal fat, and triceps skinfold thickness), and clinical biochemistry parameters (systolic blood pressure, diastolic blood pressure, cholesterol, HDL-cholesterol, triglyceride, total protein, albumin, prealbumin, hemoglobin, hematocrit, fasting blood glucose, HbAlc, ferritin, Zn, Ca, Na, K, Vit E, Vit $B_{12}$, folate, C-reactive protein) were examined relation to nutritional risk index. Based on literature review and data analyses, three NRIs were categorized (NRI I, NRI II, NRI III) and used for further analysis. NRI I was related to having metabolic syndrome, NRI II was related to serum albumin and body weight, and NRI III was related to food habit and health concerns. Abdominal fat (%) of elderly was correlated with each NRIs. NRI II was correlated with nutritional deficiency and higher tendency of inflammatory response, and NRI III was correlated with nutritional status which tend to be lower on aging (protein, folate, Vit $B_{12}$). NRI can serve as a useful tools in assessing health risk and nutritional status. Some modification of items in NRI and validity study are need to apply to Korean elderly.

  • The purpose of this study was to investigate the relationship among urn leptin, nutritional status, and urn lipids, glucose of 99 middle school girls residing in Kyluggi-do, Korea. Subjects were assigned to one of three groups such as underweight(BMI < 20, n=38), normal(20$\leq$BMI<25, n=36) and over weight(BMI$\geq$25, n=25) groups. The nutritional status of the subjects was evaluated by anthropometric measurements, questionnaires, 24-hr dietary recalls and blood anal),sis. The results were as follows : The mean age, body weight, height and BMI were 13.93 years, 55.19kg, 158.40cm and 21.96kg/㎡ respectively. The mean menarche age of the subjects was 12.64 years and the mean daily energy intake was 94.22% off RDA for Koreans. The energy ratio from carbohydrate fat and protein was 63: 24: 13. Underweight group showed the lowest intakes of oils and fats among three groups(p<0.05). The mean serum levels of leptin, glucose, total cholesterol, HDL-cholesterol. LDL-cholesterol and triglyceride were 10.57ng/ml 78.80mg/dl, 12.29mg/dl, 48.07mg/dl, 93.50mg/dl and 78.61mg/d1, respectively. The mean atherogenic index was 2.37. There were significant increases in serum leptin, glucose, LDL-cholesterol, triglyceride and atherogenic index of subjects with increases in their BMIs. Serum leptin showed a significantly positive correlation with BMI(p<0.001), body fat percent(p<0.001). When BMI was adjused, serum leptin showed a significantly positive partial correlations with intakes of animal protein(p<0.05), milks and animal foods(p<0.05), Serum leptin showed a significantly positive correlation with serum glucose(p<0.05) total cholesterol(p<0.01), LDL-cholesterol(p<0.001), triglyceride(p<0.001) and atherogenic index(p<0.001), however, it had significantly negative correlations with HDL-cholesterol(p<0.05). Therefore, these results suggest that the increase of serum levels of leptin may elevate the risk of cardiovascular disease and lipids and some nutrient intakes may be related with serum leptin levels. • The objective of this study was to investigate the nutritional status, biochemical parameters, lipid and electrolytes concentrations of the enteral nutrition patients according to the duration of enteral nutrition. Eighteen neurosurgery patients in the intensive care unit (ICU) at K University Hospital were subjected in this study. The duration of enteral nutrition was classified into under or over six month of period. Anthropometric, biochemical, clinical, and dietary assessments were performed. Patients' intakes of energy and protein were insufficient, from 82% to 95% of their requirements. Mid-arm muscle circumference (MAMC) and mid-am muscle area (MAMA) were significantly lower in patients over six months of enteral nutrition than those in patients under six months. The subjects were malnourished as indicated by nutrition-related parameters such as hemoglobin, albumin, total lymphocyte count (TLC), tricep skinfold thickness (TSF), mid-arm circumference (MAC), MAMC, and MAMA. Serum chloride level of the patients eve, six months of enteral nutrition was lower (94.7 $\pm$ 3.4 mmo1/1) significantly as compared to that of patients (99.3 $\pm$ 3.5 mmol/ 1) under six months. Urinary sodium and chloride levels were lower in the longer time of enteral nutrition patients than those of shorter period of enteral nutrition patients (p < .05). While serum phospholipid level was higher in the patients over six months of enteral nutrition, other blood biochemical parameters and electrolyte concentrations did not show any differences with the duration of enteral nutrition. Neurosurgery patients in the ICU undergoing long-term enteral nutrition tube-feeding were malnourished and had a variety of metabolic complications. The duration of enteral nutrition could affect the patients' nutritional status, biochemical parameters, and electrolytes balance. The patients who require nutritional support over an extended time need the continuous follow-up care and monitoring by the nutrition support team for laboratory, clinical, and nutritional assessments.

  • This study was carried out to evaluate the iron nutrition status of 212 middle school students(106 males and 106 females) residing in Seoul(13-14 years old ) using eating patterns and a measurement of anthropometrical determination and hematological indices. Fasting blood samples were taken from all subjects, serum iron (SI) and total iron binding capacity(TIBC) concentrations were measured, and transferrin saturation(TS) levels were calculated. Iron and other nutrient intakes were estimated by a semi-quantitative frequency questionnaire. The level of TS(%) which was calculated with TIBC and SI in females(20.4$\mu\textrm{g}$/dl) was significantly lower(p<0.050 than that of males (27.4$\mu\textrm{g}$/㎗). The prevalence of iron deficiency was found to be 36.7% when defined by TS(%) (<05%). Mean daily intake of total iron in the study subjects was 14mg and heme iron intake was 5.4mg(38.1%) . There was a significant negative correlation between the level of SI and the income level and a positive correlation with the level of TIBC and the income level. TIBC had a positive correlation with the anthropometric variables(Ht, Wt, BMI, RI and PIBW). SI and TS had a negative correlation with body fat percentage. There was a positive correlation between energy intake and TIBC only among females. The logistic regression analysis revealed that income level, body fat percentage , weight and energy intake were major determinants of low SI levels. Among the determinants of abnormal TIBC levels were weight , height, income level and energy intake. Finally , among those of low TS% were iron and energy intake and income level. These observations suggest that physical status, body fat percentage energy and iron intakes and income level are risk factors for iron-deficiency anemia among the middle school students in Seoul.

  • This study was performed to investigate how milk supplementation can benefit the elderly by increasing bone density but possibly harming the iron status concomitantly. Forty one elderly subjects over 65 years of age(male : 9, female : 32) participated. All subjects were apparently healthy, home staying and attending meal service for lunch at the welfare center. They were from low income area of Puchon city. One cup of milk per day was served for 10 months. The mean intake of calcium was significantly increased for females after milk supplementation. Males showed significantly increased means of triceps skinfold thickness, suprailiac skinfold thickness and waist circumference. Females showed significantly increased measurements fo three kinds of skinfold thickness, waist circumference, and hip circumference. There were no significant change in the mean bone density of lumbar spine$(L_2~L_4)$, femoral neck, ward's triangle and torchanter, but the proportion of osteopenia estimated by the T score of lumbar spine bone density was lowered from 50.0% to 34.6% for females. The mean Hb level was significantly for males. The proportion of anemia estimated by Hb(<12g/dl), Hct(<36%) and serum ferritin(<15mg/ml) were increased from 17.2% to 51.7%, from 20.7% to 44.8% and from 10.3% to 17.2%, respectively for females. It looks like milk supplementation can effect the intakes of several nutrients considered to be commonly deficient in the Korean diet fo elderly people, increase some anthropometric measurements, and decrease the proportion of osteopenia. However it can have adverse effects on iron status of females.
