  • Food borne pathogens are a growing concern for human health and food safety throughout the world. Milk and dairy products are commonly associated with spoilage or contamination from a wide variety of physical, microbial, and chemical hazardous. Microbiological risk analysis consists of three components: risk assessment, risk management, and risk communication, and overall objective of this process is ultimately public health protection. The microbiological risk assessment is useful tool to evaluate food safety as it is based on a scientific approach. In addition risk assessment process includes quantitative estimation of the probability of occurrence of microbial hazards to evaluate more accurate human exposure. The aim of this study is to review the microbiological risk assessment on the prevalence of bacterial foodborne pathogens in milk and dairy products.

Gut microbiome-produced metabolites in pigs: a review on their biological functions and the influence of probiotics

  • The gastrointestinal tract is a complex ecosystem that contains a large number of microorganisms with different metabolic capacities. Modulation of the gut microbiome can improve the growth and promote health in pigs. Crosstalk between the host, diet, and the gut microbiome can influence the health of the host, potentially through the production of several metabolites with various functions. Short-chain and branched-chain fatty acids, secondary bile acids, polyamines, indoles, and phenolic compounds are metabolites produced by the gut microbiome. The gut microbiome can also produce neurotransmitters (such as γ-aminobutyric acid, catecholamines, and serotonin), their precursors, and vitamins. Several studies in pigs have demonstrated the importance of the gut microbiome and its metabolites in improving growth performance and feed efficiency, alleviating stress, and providing protection from pathogens. The use of probiotics is one of the strategies employed to target the gut microbiome of pigs. Promising results have been published on the use of probiotics in optimizing pig production. This review focuses on the role of gut microbiome-derived metabolites in the performance of pigs and the effects of probiotics on altering the levels of these metabolites.

한국의 개고기 식용 정책의 개선방향 (The Direction of Reformation on the Edibility of Dogmeat in Korea)

  • 한국의 개고기 식용은 오랜 역사와 전통을 가지고 있으나 정부는 외국인들이 비난한다고 하여 축산물가공처리법에서 개를 제외시켜서 개고기는 정부의 감시를 받지 않고 유통되고 있다. 국민들의 개고기 식용 합법화요구에 행정부는 동물보호단체의 항의를 이유로 합법화할 수 없다고 하고 있지만 국민의 80% 정도는 개고기 식용을 찬성하며, 합법화해야 한다고 주장하고, 입법부는 국회의원 20명이 개고기 식용 합법화 법안을 제출하였고, 사법부도 개고기를 식육이라고 판결하였다. 서구인들이 한국의 개고기 식용을 비난하는 내면에는 순수한 동물보호도 있지만 유색인종에 대한 인종차별, 한국에 대한 쇠고기 수출량 증가, 버린 개를 애완견 사료로 사용하기 위한 관심 돌리기, 동물보호 단체의 기금 모금 등의 목적이 있다. 그리고, 정부는 국내 동물보호 관련단체를 앞세워서 개고기 식용 반대 여론을 호도하고, 농림부는 동물보호법을 관할하여 개고기 식용을 반대하는 관련 단체의 편을 들고 있으나 이들 단체는 농민들이 아니다. 나아가 정부는 개고기 식용 문제를 해결할 의지를 보이지 않고, 해결책을 제시하지 못하여 사태를 악화시키고 있다. 그래서 개고기 식용은 위생의 사각지대에 놓여 있고, 개도축 폐기물은 환경을 오염시키고 있다. 이런 문제를 해결하려면 개고기 식용을 합법화시켜서 개고기를 위생적으로 유통시키고, 환경오염을 방지하고, 세수를 증대시키고, 국가의 자존심을 확립해야 한다. 나아가, 농림부는 동물보호법을 환경부 관할로 넘겨서 멸종위기의 동물만 다루고, 정부는 개고기 식용에 대한 정확하고 객관적인 조사와 통계를 바탕으로 신뢰성 있는 정책을 펴야 한다. 그리고 한국의 개고기 음식문화를 세계에 널리 알릴 전담 부서와, 연구소를 설립하고, 민간 기구도 지원하여 발족시켜야 한다. 개고기는 한국을 대표하는 음식으로 가장 세계적인 음식이 될 수 있기 때문이다.

Effects of Feeding Purified Zearalenone Contaminated Diets with or without Clay Enterosorbent on Growth, Nutrient Availability, and Genital Organs in Post-weaning Female Pigs

  • The effects of different levels of natural clay enterosorbent on the growth, nutrient availability, and genital organs of post-weaning female pigs fed with an addition of zearalenone (ZEA) were investigated in the study. A total of thirty-five post-weaning gilts ($L{\times}Y{\times}D$) with an average body weight of 12.36${\pm}$1.46 kg were used in the test. The gilts were raised individually in metabolism cages and fed a corn-soybean meal-whey basal diet with an addition of 0 or 1 mg/kg of ZEA for 24 d with four levels of natural clay enterosorbent added in the feed. The treatments were: i) control; ii) control+2.5 g/kg clay; iii) control+1 mg/kg ZEA; iv) control+1 mg/kg ZEA+1.25 g/kg clay; v) control+1 mg/kg ZEA+2.5 g/kg clay; vi) control+1 mg/kg ZEA+5.0 g/kg clay; vii) control+1 mg/kg ZEA +10 g/kg clay. Pigs fed diets contaminated with additional purified ZEA had significantly reduced apparent digestibility of crude protein (CP), gross energy (GE) and apparent metabolic rate of GE (ME/GE, p<0.05) without changes of net protein utilization (NPU, p>0.05). Final body weight, average daily gain (ADG), average daily feed intake (ADFI), vulva length, vulva width, vulva area, relative weights of genital organ and proliferative changes of the ovary tissues in gilts fed ZEA-contaminated diet were increased (p<0.05) compared to the gilts fed the control diet. Addition of natural clay enterosorbent in the ZEA-contaminated diet showed a positive protection effect on ZEA feeding, and the protection was increased linearly or quadratically as clay content increased. However, in pigs fed a diet with clay alone at 2.5 g/kg level there was no significant impact (p>0.05) on all the parameters as compared to the control. It is suggested that feeding ZEA at about 1.0 mg/kg for 24 days might result in a deleterious effect in pigs, and addition of 5 or 10 g clay enterosorbent per kg diet can effectively neutralize the detrimental effects of the ZEA feeding.

반려동물 용품 및 화장품 산업 현황 (The Current Status of the Companion Animal products and Pet Cosmetics industry)

  • 코로나 시대에 반려동물은 우리에게 많은 위안을 주고, 가족처럼 반려동물을 여기는 펫팸족이 등장하였다. 그리고 젊은 소비자는 자신에게 소비할 금액을 줄여서 반려동물에게 소비하는 패턴을 보이는 펫푸어도 볼 수 있다. 하지만 이러한 시대적인 변화에도 불구하고 펫푸드를 포함한 반려동물 용품 및 화장품은 여전히 수입 의존도가 높고, 국내의 반려동물 화장품 및 용품에 대한 기준이 설정되어 있지 않아 화장품 안전기준 등에 관한 규정에만 의존하고 있는 실정이다. 또한 국내 반려동물 용품 및 화장품에 관한 용어도 아직 정립되지 않은 상태이다. 현재 국내 법률은 반려동물과 관련한 동물보호법 만이 존재하지만 일본에서는 반려동물 사료안전법이 2009년 6월부터 시행되었고, 미국은 연방식품, 의약품, 화장품 관리법에서 반려동물 화장품 및 용품을 담당하고, 동물보호법이 강력한 독일은 식품 및 사료에 대한 다양한 국가 차원의 법규가 있다. 그리고 식품 안전국 웹 사이트에서도 국가 규정을 정밀하게 확인 가능하다. 따라서 본 연구는 국외의 빠르게 성장하고 안정적인 반려동물 산업처럼 국내에서도 반려 동물 산업을 관리하고 개발을 뒷받침 해주는 국가 정책과 환경 등이 반려동물 용품 및 화장품 그 외 다양한 반려동물 관련 산업을 해외시장으로 수출하는데 기초자료로 반드시 필요할 것으로 사료된다.

Role of Animal Agriculture for the Quality of Human Life in the 21st Century - Review (Keynote Speech) -

  • The role of animal agriculture for the quality of human life has always been emphasized during 20th century and it is expected to be even more important in terms of food supplies and in providing additional functions in the future. The world human population has almost tripled during a period of half century. The world population of animals has increased 2~3 times (6 times for chicken) during the last 60 years, and the total amount of livestock products has increased 5~6 times (more than 10 times in pork) with higher annual growth rate (9%) in developing countries. Increased personal income certainly encouraged demand for animal products over grains and lower animal production costs resulted from scientific and technological advances. Similarly the production of total grains has more than doubled owing to the advances in agricultural science during the later part of the 20th century. The average life span of world people in 1950s was only 46 years, which will be increased to almost 66 years in the year 2000. Present date clearly indicate that the life span of people is proportional to their income (GNP) and/or animal protein intake. Animals can provide other resources than foods. The increase of human population indicates that the number of animals as well as per capita consumption of animal products will be increased in the 21st century. The other resources we get from animals are drafts, packing, riding, hunting and herding. Guiding the blind, protection and companionship are also examples of what we can expect from animals. In the very near future, animals will become major donors of organs, skin and producers of drugs or special functional foods. It may be concluded that animals are very closely associated and related to the quality of human life, and they are expected to remain the same way in the 21st century.

Effects of Catechins and Wheat Bran on the Beef Color in the Late Fattening Period of Hanwoo Steers

  • This study was conducted to evaluate the effects of dietary supplementation of catechins and wheat bran on growth performance, carcass characteristics and meat color using forty-eight Hanwoo steers. Each steer was randomly assigned to one of four treatments. Treatments were as follows: control, catechins, wheat bran, and catechins+wheat bran (CW). At the end of the feeding trial, blood samples were collected for analysis of hemoglobin and iron concentration, and then steers were slaughtered at a commercial abattoir. Catechins, wheat bran, and CW had no effect on growth performance and carcass characteristics. Percentage of myoglobin in M. longissimus dorsi was not affected by treatments. Percentage of oxymyoglobin was increased (p<0.05) by CW and maintained at the highest level (p<0.05) for CW during meat display time up to 24 h. Percentage of metmyoglobin was the lowest (p<0.05) for CW between 5 and 24 h during display time. Although blood iron concentration was not affected by treatments, total concentration of muscle iron was the lowest (p<0.05) for CW compared with that of other treatments. Therefore, the results of the present study suggest that CW may provide good protection against oxidation of myoglobin, and might be an effective dietary supplement for improving meat color in the late fattening period of Hanwoo steers.

THE SUSCEPTIBILITY OF SCALELESS MUTANT CHICKENS TO VERY VIRULENT MAREK'S DISEASE VIRUS

  • This study evaluates the susceptibility of scaleless mutant chickens to very virulent Marek's disease virus (vvMDV) inoculation. One day old chickens were inoculated subcutaneously with Taiwanese isolates of LTB-1 and LTS-1 strains, and standard strain of Md/5. Compared with the non-inoculated group the vvMDV-inoculated chickens showed decreased body weights and atrophy of lymphoid organs before 35 days old. These results indicate that scaleless chickens show the same susceptibility as the wild type chickens to vvMDV infection. Furthermore, the protective effect of herpesvirus of turkey (HVT) vaccination at 1 day old against vvMDV challenge was evaluated. Scaleless mutant chickens of treated groups showed 20-30% early death, and 85.7-100% and 12.5-14.2% had lymphomatous lesions in visceral organs and peripheral nerves, respectively. No significant lesions were observed in non-challenged chickens of the control group. The HVT vaccination did not provide an effective protection against vvMDV infection. It is concluded that scaleless mutant chickens are susceptible to vvMDV infection.

Can Exogenous Betaine Be an Effective Osmolyte in Broiler Chicks under Water Salinity Stress?

  • A CRD experiment was conducted to evaluate the effects of different exogenous betaine levels (0.000, 0.075, 0.150 and 0.225 percent) on 576 one-day-old male broiler chicks (Ross) under water salinity stress. Different levels of water salinity were made by adding 3 levels of NaCl (0, 1,000 and 2,000 mg/L) to drinking water. Feed and water were available ad libitum. Betaine increased body weight, improved feed conversion ratio, and decreased packed cell volume (p<0.05). Water salinity promoted body weight over the whole period, increased feed intake (11 to 21 and 29 to 42-d) and also improved feed conversion ratio in grower and finisher periods (p<0.01). Breast weight, water consumption (28-d and 42-d) and excreta moisture (28-d) were increased by elevating the level of water salinity (p<0.01). Interaction between dietary betaine and water salinity was significant on plasma osmolarity as well as epithelial osmolarity of the duodenum at 28-d. Epithelial osmolarity was decreased from duodenum to ileum. The data imply that betaine is involved in the protection of intestinal epithelia against osmotic disturbance which can be caused by saline water, but further research is needed to investigate the effects of betaine with higher levels of water salinity.

Beneficial Effect of Bifidobacterium longum ATCC 15707 on Survival Rate of Clostridium difficile Infection in Mice

  • Clostridium difficile infection (CDI) is the main cause of hospital-acquired diarrhea that can cause colitis or even death. The medical-treatment cost and deaths caused by CDI are increasing annually worldwide. New approaches for prevention and treatment of these infections are needed, such as the use of probiotics. Probiotics, including Bifidobacterium spp. and Lactobacillus, are microorganisms that confer a health benefit to the host when administered in adequate amounts. The effect of Bifidobacterium longum ATCC 15707 on infectious disease caused by C. difficile 027 was investigated in a mouse model. The survival rates for mice given the pathogen alone, and with live cells, or dead cells of B. longum were 40, 70, and 60%, respectively. In addition, the intestinal tissues of the B. longum-treated group maintained structural integrity with some degree of damage. These findings suggested that B. longum ATCC 15707 has a function in repressing the infectious disease caused by C. difficile 027.
