  • It seems unrealistic to say that fried chicken, often known as the American soul food, has one of the biggest markets in South Korea. Yet, South Korea owns more numbers of fried chicken restaurants than those of McDonald's franchise globally[4]. Needless to say not all these fast-food commerce survive in such small country. In this study, we propose a predictive model that could potentially help one's decision whilst deciding to open a store. We've extracted all fried chicken restaurants registered at the Korean Ministry of the Interior and Safety, then collected a number of features that seem relevant to a store's closure. After comparing the results of different algorithms, we conclude that in order to best predict a store's survival is FDA(Flexible Discriminant Analysis). While Neural Network showed the highest prediction rate, FDA showed better balanced performance considering sensitivity and specificity.

Ethnic differences in attitudes, beliefs, and patterns of meat consumption among American young women meat eaters

  • BACKGROUND/OBJECTIVES: Meat eaters face conflicts over meat consumption due to recent increasing demands for reduced-meat diets to promote human and environmental health. Attitudes toward consuming meat have been shown to be culture-specific. Thus, this study was performed to examine cultural differences in attitudes, beliefs, and patterns of meat consumption among meat eaters in a group homogeneous in terms of age and sex but with diverse ethnicities. SUBJECTS/METHODS: In this cross-sectional study conducted in New York City in 2014, 520 female meat eaters (Whites = 25%; Blacks = 20%; East Asians = 35%; Hispanics = 20%) aged 20-29 completed a questionnaire consisting of a series of questions on meat consumption behaviors, which addressed amounts of consumption, cooking methods, past and future changes in meat consumption, and attitudes and beliefs regarding relationships between health and meat consumption. Logistic and multiple regression analyses were used to assess the effects of variables on meat consumption. RESULTS: Blacks had the highest annual total meat consumption (64.2 kg), followed by East Asians (53.6 kg), Whites (46.9 kg), and Hispanics (35.8 kg). Blacks ate significantly more chicken than the other ethnic groups (P < 0.001), and East Asians ate significantly more pork and processed meat (P < 0.001). Regardless of ethnicity, grilling/roasting/broiling were the preferred cooking methods, and vegetables were most consumed as a side dish. More than half of the participants expressed an intention to decrease future meat consumption. East Asians more strongly perceived meat as a festive food (P < 0.001) and were less guilty about the slaughtering animals (P = 0.11) than other groups. No differences were found between the ethnic groups regarding negative attitudes to meat consumption. CONCLUSIONS: The results show that ethnicities differ in terms of attitudes, beliefs, and patterns of meat consumption. Irrespective of ethnicity, the meat-eating participants almost unanimously demonstrated a willingness to reduce future meat consumption. It is hoped these findings aid the formulation of culturally-tailored interventions that effectively reduce meat consumption.

  • This thesis is a study on the change and the process of the development of the hygiene administration during the period of modernization of our nation which promoted by the open door policy of our country chiefly under the pressure of the foreign countries. During that period Korea had reorganized the old political system radically and introduced the western medical system. Through the close study of literature concerning the system of the hygiene administration, the laws of health and hygiene, the environmental sanitation organizations and their practical activities the author obtained the conclusions as following 1. The government passed around 40 laws of health and hygiene from the time when the bureau of hygiene was founded in 1894 to the annex of Korea to Japan. Most of the laws were believed to be established by the enforecement of Japanese government. When the epidemics were prevailing, a decree for the prevention of the epidemics was proclaimed by the Japanese president of the headquarters of national police. It is shown well that the sovereignty of Korea had been deprived. 2. After the armex of Korea to Japan, the hygiene police and the general police belonging to the bureau of national police shared the tasks of health and hygiene. This was a temporary system which had existed just during the colonial period. As for the water-supply which is the most important facility among the various environmental hygiene facilities, the rate of supply was remarkably high in Japanese rather than in Korean. 3. During the period of American military administration, it is notable that the division of hygiene in the bureau of national police was replaced by the bureau of hygiene. This period is regarded as the turning point when hygiene administration was operated by means of education along with the introuction of American system of public health. 4. Ever since the foundation of the republic government, the laws of health and hygiene which had been established during the colonial period have been put into operation without rriuch change except several regulations concerning food.

Growth, Dry Matter Partitioning and Photosynthesis in North American Ginseng Seedlings

  • North American ginseng seedlings (Panax quinquefolius L.) were grown in pots in heated greenhouses, in a cool greenhouse, or in the field, in 11 experiments at various times over 16 years. Crop establishment, dry matter partitioning, photosynthesis, radiation use efficiency and carbon budget were measured and/or calculated in some years. Once the seedling canopy, of about $20\;cm^2$ per seedling, and a leaf area index of 0.37, was established, about 40 days after germination, full canopy display lasted about 87 days. Only 16.6% of the incoming solar radiation was intercepted by the crop, the remainder falling on the mulched soil surface. Total and root dry matter accumulations in the cool greenhouse and in the field were about double that in the heated greenhouses. Partitioning of dry matter to roots (economic yield or harvest index) in the cool greenhouse and in the field was 73% whereas it was 62.5% in the heated greenhouses. The relationship between root dry matter and radiation interception during the full canopy period was linear with growth efficiencies of $2.92\;mg\;MJ^{-1}$ at 4.8% of incoming radiation and $0.30\;mg\;MJ^{-1}$ at 68% of incoming radiation. A photosynthetic rate of $0.39\;g\;m^{-2}\;h^{-1}$ was attained at light saturation of about $150\;{\mu}mol\;m^{-2}\;s^{-1}$ (7.5% of full sunlight); dark respiration was $0.03\;g\;m^{-2}\;h^{-1}$, about 8.5% of maximum assimilation rate. Estimates of dry matter accumulation by growth analysis and by $CO_2$ uptake were similar, 6.21 vs. 7.62 mg $CO_2$, despite several assumptions in $CO_2$ uptake calculations.

Characterization of North American Ginseng Rust-Spot and the Effects of Ethephon

  • Rust-spot on North American ginseng roots (Panax quinquefolius L.) is considered a physiological, not a pathological disorder. Ginseng rust-spot starts as an orange spot on the surface of the root and may spread forming a sunken, round to irregular lesion. 5 mm in diameter. Pieces of root, 7 mm in length and containing a rust-spotted lesion, were embedded in agar and sectioned using a vibratome. These sections and hand sections, cut with a two-sided razor blade, were examined using fluorescence microscopy. The 4-5 cell layers of the periderm were destroyed in the area of the lesion and orange substance:, were deposited in and around the lesion. Sections stained with vanillin-HCI and viewed using bright field microscopy confirmed that the orange substances were phenolic compounds. Scanning electron micros-copy showed that the periderm had pulled away from the root, or was completely destroyed, in the area of the lesion. The smooth surface of the lesion indicates the deposition of phenolic compounds in surrounding cells as a wound response. Roots sprayed or dipped in ethephon (1500 mgㆍL$^{-1}$ ) developed rust-spots, more so at 21$\pm$2$^{\circ}C$ than at 3$\pm$0.2$^{\circ}C$. Roots held at 21$\pm$2$^{\circ}C$ were yellowish and developed white cell proliferations. Comparable control roots also developed rust-spots likely due to the high undecomposed organic matter content of the incubation soilless mix.

Dietary patterns associated with hypertension among Korean males

  • The objectives of this study were to identify the dietary patterns associated with hypertension among Korean males. Data from the 2001 Korean National Health and Nutrition Survey of 1,869 men aged 20-65 years were used for the analysis. As an initial analysis, a factor analysis was applied to identify major dietary patterns among the subjects. Then logistic regression analysis was conducted to identify the pattern related with hypertension. As a result of the initial analysis, three major dietary patterns were identified. Dietary pattern 1 (traditional) was heavily loaded with vegetables, fish and cereal. Dietary pattern 2 (Western) was loaded with fast foods, bread, meats and dairy products. Dietary pattern 3 (Drinker) was loaded with mostly pork, beer and soju (Korean liquor). From the second stage of the analysis, there was a tendency of positive association between traditional patterns and hypertension risks. However, the tendency did not meet statistical significance level (p<0.05). In summary, unlikely findings from European and American studies, vegetables rich traditional dietary patterns did not show any protective effect on hypertension in Korean males. The Korean dietary practice, which is consuming salted vegetables instead of fresh vegetables, might have played a role in these findings. However, the full explanation of the findings remained to be answered with further investigation since none of the dietary patterns identified showed any statistical significance.

Effects of Corn Distillers Dried Grain with Soluble (DDGS) of American and Chinese Origin on Meat Quality and Amino Acid of Meat in Finishing Pigs (미국산과 중국산 DDGS의 급여가 비육돈의 육질 및 아미노산 함량에 미치는 영향)

  • This study was conducted to evaluate the effects of com distillers dried grain with soluble (DDGS) in American and Chinese on quality and amino acid of meat in finishing pigs. 120 pigs (Landrace$\times$Yorkshire$\times$Duroc, 64.50 kg average initial body weight) were used in 56 day growth assay. Dietary treatments were included CON (basal diet), ADS (basal diet + DDGS from American) and CDS (basal diet + DDGS from Chinese). The pigs were allotted into four pigs per pen with ten replicates per treatments by completely randomized design. Backfat thickness and lean percentage were not affected by treatment (p>0.05). For the meat color, redness was significantly increased in DDGS treatments compared to CON treatment (p<0.05). CDS treatment was higher than in ADS treatment (p<0.001). Water holding capacity was higher in CON and CDS treatments compared to ADS treatment (p<0.05). pH was greater in DDGS treatments than CON treatment (p<0.05), and ADS treatment was higher than in CON treatment (p<0.05). For the amino acid of meat, CDS treatment significantly increased their arginine, isoleucine, leucine and lysine compared to other treatments (p<0.05). DDGS treatment was higher than in CON treatment (p<0.001). Methinonine, phenylalanine, threonine and valine were significantly increased DDGS treatments than CON treatment (p<0.05). Cysteine was greater in CDS treatment than CON and ADS treatments (p<0.001). DDGS treatments was higher cysteine than in CON treatment (p<0.001). Proline significantly improved in CON treatment compared to CDS treatment (p<0.05). Tyrosine was greater in DDGS treatments than CON treatment (p<0.01). In conclusion, redness and amino acids of meat were affected by DDGS treatments.

Comparison of college students' behavior toward nutrition information communication between Korea and the US

  • BACKGROUND/OBJECTIVES: The expansion of menu labeling to restaurants has created a need to study customers' behavior toward nutrition information. Therefore, the purpose of this research was to compare college students' behavior toward nutrition information communication between Korea and the US. This study consisted of three objectives: 1) to compare the frequency of usage as well as degree of trust regarding smartphone-based communication channels in the acquisition of nutrition information among college students between Korea and the US, 2) to compare knowledge-sharing behavior related to nutrition information among college students between Korea and the US, and 3) to identify the role of country in the process of knowledge-sharing behavior. SUBJECTS/METHODS: A survey was distributed via the web to college students in Korea and the US. Data were collected in the 2nd week of March 2017. Completed responses were collected from 423 Koreans and 280 Americans. Differences between Koreans and Americans were evaluated for statistical significance using a t-test. In order to verify the effects of knowledge self-efficacy and transactive memory capability on knowledge-sharing behavior related to nutrition information, a regression analysis was performed. RESULTS: Significant differences were found in the frequency of usage as well as degree of trust in communication channels related to nutrition information between Korean and American college students. While knowledge self-efficacy and tractive memory capability had positive effects on knowledge-sharing behavior related to nutrition information, country had a significant effect on the process. CONCLUSIONS: This study is the first to compare customer behavior toward nutrition information acquisition and sharing between Korea and the US. Comparative research on nutrition information revealed differences among the different countries. Therefore, this study contributes to the body of knowledge on the nutrition information research, in particular, by providing a comparison study between countries.

The Sensory Properties of Imported and Domestic Pork Bellies in Korean Market (한국시장에 유통 중인 수입산 및 국내산 삼겹살의 관능적 특성)

  • To evaluate the sensory characteristics of domestic or imported chilled and frozen bellies, twelve samples were purchased and tested Sixty panels of sensory evaluation were consisted of six groups by sex and age. Frozen bellies were no difference in flavor, taste and tenderness. However, many panels favor the juiciness and acceptability of imported ones significantly compared to those of domestic ones(P<0.001). Especially, frozen bellies from northern America were tended to be more accepted than other products. The imported ones were significantly preferred to domestic ones irrespective of age. The results of sensory evaluation of frozen bellies between imported and domestic ones were also confirmed by tested people. It was significantly preferred in domestic frozen bellies(P<0.05). However, one of the domestic from C company was not significantly different from northern products, but was more favor significantly than EU ones(P<0.05). According to the age of tested panels, 20's age preferred the domestic ones of C company. In contrast, the groups of 30's and 40's age preferred the northern American produce.

Quality Comparison of Luncheon Meats (런천미트 통조림의 품질비교)

  • In order to compare the quality of canned pork products which are called collectively as luncheon meat, residual nitrite, sodium, collagen, total heme pigments and chemical composition were analyzed in 12 products of 8 companies from 4 countries. Also, the proteins of products were compared with that of pork by SDS-PAGE analysis. The level of residual nitrite was low in all the products and sodium levels were similar except in one or two products. As for collagen and total heme pigments content, among imported products luncheon meats were different from chopped meat products while domestic products were similar regardless of label distinction. Collagen contents of domestic products were similar to those of imports but total heme pigments contents were much higher Densitometer scans of gel electrophoretograms of chopped meat were more similar to that of pork than those of luncheon meat. In terms of chemical composition, luncheon meat had more carbohydrate regardless of whether they are domestics or imports. The quality of domestic luncheon meat appears to be the composite of those of imported luncheon meat and chopped meat. Accordingly, the quality standard for luncheon meat as a cheap product should be established in Korea to enable the domestic products to have a competitive power in price.
